      <title>Quick Zucchini Pancakes</title>

	Makes 8 to 10 pancakes&lt;/p&gt;
&lt;p&gt;
	&lt;strong&gt;ingredients:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;
	- 2 medium zucchini grated&lt;br /&gt;
	- 1 cup rice flour&lt;br /&gt;
	- 1 cup chickpea flour&lt;br /&gt;
	- 1 tsp teaspoon salt&lt;br /&gt;
	- 1 / 3 cup nutritional yeast&lt;br /&gt;
	- 2 / 3 cup to 1 cup water (depending on size and moisture zucchini)&lt;br /&gt;
	- 1 tsp tablespoons olive oil&lt;/p&gt;
&lt;p&gt;
	&lt;strong&gt;Preparation:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;
	1. Mix all ingredients in a bowl.&lt;/p&gt;
&lt;p&gt;
	2. Heat a lightly oiled pan and pour the batter with a ladle.&lt;/p&gt;
&lt;p&gt;
	3. Grill small pancakes over medium heat, 4-5 minutes per side.&lt;/p&gt;
&lt;p&gt;
	Variations: Try with other vegetables in season.&lt;/p&gt;

      <title>Beets and caramelized fennel with orange</title>

	&amp;nbsp;&lt;/p&gt;
&lt;p&gt;
	&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;
	- 3-4 medium beets, peeled and diced&lt;br /&gt;
	- 1 medium fennel&lt;br /&gt;
	- 1 tsp tablespoons olive oil&lt;br /&gt;
	- 1 tsp brown sugar&lt;br /&gt;
	- Juice of 1 / 2 lemon&lt;br /&gt;
	- Juice of 2 oranges&lt;br /&gt;
	- Dried thyme&lt;/p&gt;
&lt;p&gt;
	&lt;strong&gt;Preparation:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;
	1. Wash the fennel, remove the branches from the top (discard) and the first outer layer if necessary. Cut the fennel in half and remove the core. Cut the fennel into small dice.&lt;/p&gt;
&lt;p&gt;
	2. Saute the fennel and beets in a pan for about 5 minutes. Add brown sugar and cook some minutes more (do not burn).&lt;/p&gt;
&lt;p&gt;
	3. Add the thyme and lemon juice and stir for about 1 minute.&lt;/p&gt;
&lt;p&gt;
	4. Add orange juice and reduce for 20 minutes uncovered, stirring occasionally to coat of orange juice.&lt;/p&gt;

	- 1 / 2 tablespoons tamari sauce or Bragg&lt;/p&gt;

	1. Steam the beans a few minutes (they should remain crisp). Cool under cold water.&lt;/p&gt;

	- 1 / 2 teaspoon chili powder&lt;br /&gt;
	- 1 / 2 teaspoon paprika&lt;br /&gt;
	- 1 / 2 teaspoon Sea Salt&lt;br /&gt;
	- 1 / 2 teaspoon Turmeric&lt;br /&gt;
	- 1 pinch black pepper&lt;br /&gt;
	&lt;br /&gt;
	&lt;strong&gt;Preparation:&lt;/strong&gt;&lt;br /&gt;
	&lt;br /&gt;
	1. Peel the potatoes (if they are organic, you can only brush them) and cut into sticks.&lt;br /&gt;

- 3 cloves garlic, pressed &lt;br /&gt;
- 6 cups of water &lt;br /&gt;
- 2 teaspoons of dried marjoram &lt;br /&gt;
- 2 teaspoons of miso &lt;br /&gt;
- 6 slices of toasted bread, cubed &lt;br /&gt;
- 2 cups (200 g) of Swiss cheese (or cheddar), grated &lt;br /&gt;
- Salt and pepper to taste &lt;br /&gt;
&lt;strong&gt;&lt;br /&gt;
Preparation: &lt;/strong&gt;&lt;br /&gt;
&lt;br /&gt;
1. Melt the butter in a saucepan and add oil. Add onions and sauté until lightly browned. &lt;br /&gt;
&lt;br /&gt;
2. Add garlic and cook 1 minute more. Add water and marjoram and bring to a boil and simmer 20 minutes uncovered. &lt;br /&gt;
&lt;br /&gt;
3. Melt the miso in the soup and season with salt and pepper to taste. &lt;br /&gt;
&lt;br /&gt;
4. Pour the soup into 6 ovenproof bowls. Sprinkle bread cubes and add the grated cheese on top. &lt;br /&gt;

	2. Saut&amp;eacute; onion and celery in oil until onion is translucent. Add the tofu mixture and saut&amp;eacute; a few minutes.&lt;br /&gt;

	3. Fill the bottom of a 9 inch x 13 inch baking dish with the tofu mixture. Add the carrots and beans in a single layer. Add another layer of potatoes.&lt;br /&gt;

	4. In a small bowl, mix cream of tomato, soy milk and vegetable juice. Sprinkle the dish with the sauce.&lt;br /&gt;

	1. Combine all ingredients to create peanut sauce. Add the tofu to the sauce, cover and marinate in refrigerator for several hours (at least 1 hour). &lt;br /&gt;
	&lt;br /&gt;
	2. Cook a few minutes the zucchini and peppers in grapeseed oil. Book. &lt;br /&gt;
	&lt;br /&gt;
	3. Cook the egg noodles as directed on package. Drain well. Pour the sesame oil and mix. &lt;br /&gt;
	&lt;br /&gt;
	4. Heat the tofu and marinade in a saucepan. &lt;br /&gt;
	&lt;br /&gt;
	5. Arrange noodles on individual plates. Evenly distribute the sauce, tofu and vegetables. &lt;br /&gt;
	&lt;br /&gt;
	Can also be served over rice vermicelli.&lt;/p&gt;
