      <![CDATA[<p style="float: left;">There are many techniques for preserving opened wine, but the latest Genesis unit from Napa Technology is a perfect home, single-bottle preservation and dispensing system. Launched in November, the patented IntelliCork not only preserves wine after opening, but is the only system on the market that has the ability to preserve sparkling wine or Champagne as well as still wine. With IntelliCork, still wines last for up to two months after you uncork them, and sparkling wines last for up to five days.</p>
<p>Once the system is placed on an uncorked wine, oxygen is removed from the bottle and replaced with inert argon gas (WineGas). The preserved wine can then be dispensed at will. The IntelliCork can be removed from the dispenser, allowing additional bottles to be preserved. With additional IntelliCork heads, you can preserve and enjoy as many bottles as you like.</p>
<p>A Genesis unit was sent to me recently for evaluation. I found it preserved open bottles of still wine for two weeks (I did not go beyond this time interval) and sparkling wine for five days. The preserved wines remained pristine. It works for wine bottles with either a screw cap or cork, and cleaning and maintenance are minimal. I can definitely recommend it.</p>
<p>A recent price adjustment at $249 makes Genesis less expensive than its competitors. The Genesis Wine &amp; Champagne Preserving System includes one IntelliCork for preserving still wine, and one capsule of WineGas. An Elite Genesis system ($399) includes an IntelliCork for both still and sparkling wines, and two capsules of WineGas.</p>
<p>The WineGas capsules can preserve up to 60 glasses of wine. Additional capsules ($39.99) and additional IntelliCork heads ($49.99 for still wine, $69.99 for sparkling wine) are available.</p>

<p>Sure, it’s contrary to the Cyber Monday theme. But that’s mostly the point. “We’re still old school, and we take mail orders and telephone orders,” said Tim Bucciarelli of Formaggio Kitchen in Cambridge, Massachusetts. “You want things to be just right for your holiday party, so lots of people call and need their questions answered. We’re much more hands-on and customer service-oriented.” The retail shop — which first opened in 1978 and is widely known for directly sourcing unique cheeses, oils, and spices — normally does 40% of its annual business during the two months of November and December. Almost half of their shipment orders are transacted by telephone. “For us it’s a lot of fun,” Bucciarelli said. “We solicit input from all our staff to create our own Best Of… gift guide. You’ll choose your row, monitor growth and progress via webcam, participate in harvest and winemaking if you want, and receive a case of high-quality Barbera at the end of the year. <p>You may have noticed wine preservation systems when you’re out and about in restaurants, wine bars, and retail shops. They’re effective and efficient, and they help to take the sting out of purchasing a high-priced wine when you may not want to finish the whole bottle. The system is now available for home use as well, with a counter-top wine preservation product called Genesis, from Napa Technology. It removes the oxygen from an open bottle of wine, either still or sparkling, and preserves it for up to two months. <p><strong>When You Need It Simple: Food Pairing, Delivered</strong></p>
<p>Thanks to more open DTC shipping laws, it’s easier than ever for wineries to ship bottles directly to the consumer. But what if perfectly suited food pairings came along with it? And what if those pairings illustrated a fun, why-didn’t-I-think-of-that business partnership? Silverland Bakery (who <em>did</em> think of it…) partnered with Monterey-based Estancia winery to create bakery bars meant to match the producer’s popular Chardonnay and Pinot Noir wines.       <![CDATA[<p>The Genesis device is the latest in a wide range of wine preservation devices available to help preserve the wine while drinking it. In the range of preservation options, the Genesis device is a giant leap from just stuffing the cork back in the bottle, both in terms of the technical ingenuity of the system and the price point, but it brings features and opportunities for private as well as wine business utility.</p>
<p>Created by Napa Technology, the Genesis builds on the technology used in the WineStation, a wine preservation and dispensing system used primarily by restaurants and wine bars since 2007.</p>
<p>The core of the system is the IntelliCork closure and dispensing head, which is the same for Genesis and the WineStation. After removing the original closure, the IntelliCork dispensing head is used to reseal the bottle, and in case of a still wine, a tube attached to the dispensing head is placed inside the bottle.</p>
<p>When the bottle is attached to the Genesis device, WineGas, a food grade Argon gas, is pushed into the bottle creating the pressure that pushes wine out through the dispensing head and protecting the wine from oxygen exposure inside the bottle.</p>
<p>According to the <a href="http://www.genesispreserve.com/?utm_source=advisor-article&amp;utm_medium=web&amp;utm_campaign=genesis-review" onclick="__gaTracker('send', 'event', 'outbound-article', 'http://www.genesispreserve.com?utm_source=advisor-article&amp;utm_medium=web&amp;utm_campaign=genesis-review', 'Genesis website');" target="_blank">Genesis website</a>, the system can preserve still wines for up to 60 days and sparkling up to 5 days. We tested out how well the system preserves a bottle of Zinfandel after four weeks, tasting the wine with weekly intervals.*</p>
<p><strong>Day 7</strong>: The wine was still fresh and full flavored, but had opened up a little from first opening, as if it had been allowed to breathe in the glass for 30 minutes.</p>
<p><strong>Day 14</strong>: The wine had lost a little bit of its freshness, but preserved its bold fruit flavors and did not seem oxidized.</p>
<p><strong>Day 21</strong>: No discernible change from week two.</p>
<p><strong>Day 28</strong>: Though still delicious, the wine had lost most of its freshness and resembled a bottle that had been opened a day or two.</p>
<p>Four weeks may seem like a long time to drink a single bottle, but part of the idea of the Genesis is that you can drink from multiple bottles of wine at the same time. The device comes with two IntelliCorks for still wine and one for sparkling, the pro version has more, and you can buy them separately too if you need more.</p>
<p>We also tested the Genesis on a bottle of sparkling wine. The Intellicork for sparkling works a little differently. You cannot dispense through it, but instead it seals the bottle and the WineGas repressurizes the bottle.</p>
<p>Three days after first opening and tasting the bottle of Prosecco, the wine still had sparkle and freshness.</p>
<p>We considered the trials a success, but is the Genesis right for you? With a price tag of $499, it’s clearly not for everyone, but targeting a niche of premium wine consumers and tasting rooms that pour library or limited edition wines. A niche it shares with the Coravin system.</p>
<p>It’s worth noting a few differences between the Genesis and Coravin systems. While the Coravin does not remove the original cork closure and promises much longer preservation times, the Genesis has the advantage of working on all closure types, not just natural cork, and it can be used for sparkling wines as well.</p>

<p>Either <a href="http://www.genesispreserve.com/" target="_blank">Genesis</a> system dispenses preserved wine an ounce or glass at a time to allow tasting or service without consuming (or wasting) the remainder of the bottle. Since both <a href="http://www.genesispreserve.com/" target="_blank">Genesis</a> systems come with multiple IntelliCorks (10 commercial or 3 residental) multiple varietals can be opened at any time and stored outside the machine.</p>
<p><a href="http://www.napatechnology.com/" target="_blank">Napa Technology</a> presented a champagne that had been open 4 days and red and white still wines that were opened on October 17, 2014 (10 days).  All of the wines tasted fresh, but I had not tried a recently opened bottle of the varietals, so I was unable to tell any changes in the wine.  I would have preferred a newly opened as well as a 30 day bottle for comparative purposes.</p>
<p>The obvious advantages over a <a href="http://www.coravin.com/" target="_blank">Coravin</a> Wine Access system (which I have been happily using for almost a year) are the <a href="http://www.genesispreserve.com/" target="_blank">Genesis</a> system will work on any type of closure (screw top, natural cork or synthetic).  Additionally, the <a href="http://www.genesispreserve.com/" target="_blank">Genesis</a> system works on champagne / sparkling wine as well as still wine.</p>

The convenient size will work in most settings and accommodates 750 ml and magnum size bottles in a free standing model.</p>
