Coconut Flakes Review & Giveaway

Tropical Traditions definitely offers the BEST coconut! I have tried the shredded coconut before and it was amazing. This time I received the coconut flakes. The flakes are larger in size, and they are fresh and ready for me to start baking. I love that it's not sweetened, it's all natural & absolutely delicious! I decided to treat my family with homemade coconut shrimp. Are you drooling yet? Well, let me tell you how I made them and see if you are willing to test out my recipe...

Step 1: I buy the frozen medium sized, deveined and peeled shrimp at Costco (I am not much for deveining the shrimp, so better have someone else do the dirty work). Defrost your shrimp, wash and use a peeling knife to open the shrimp up.

Step 2: Next you will want to prepare your batter. Take approximately a cup of flour, 1 egg and 1/4-1/2 cup of milk (depending on how thick it looks) and blend together until the batter is smooth.

Step 3: The breading is a 3 step process. First dip the shrimp into flour. Next dip into the batter. Last cover the shrimp in coconut.

Step 4: Set your shrimp to the side & heat up your oil on medium heat. I flick a little water into the oil. If it spits back at you, then you are ready to FRY!

Step 5: Depending on how large your pan is will determine how many you can fry at one time. I used a 2 quart pan, so I could only fry one - two at a time (to insure that they oil didn't boil over). You will let them cook until brown (approximately 1-2 minutes). If they start to burn, then take them off the heat and let the oil cool off.

Step 6: Place them on a paper towel to let the oil drain.

Step 7: EAT!

Now that my children are going to preschool, I have been trying to find quality programs to help prepare them for school. As a former educator, I know how important it is to start early and build a solid base to build upon. A few months ago I saw a television commercial for ABCmouse.com and thought my kids would love to play on the computer and learn. What I liked about ABCmouse.com, just by how it was portrayed on TV, was that it was interactive and involved both child and parent in the learning process.You can work with your child, and over time (depending on their age) they can progress into working individually.

Here is the commercial I watched that made me WANT to learn more:

So, what is ABCmouse.com? ABCmouse.com, an Early Learning Academy for kids between the ages of 2 and 6 (Preschool to Kindergarten). The website is ad-free, safe and has over 3,500 games and activities in the subject areas of reading, mathematics, social studies, beginning science, art and music. New content is added to the site daily. There are more than 450 custom lesson plans spanning six academic levels! This program is tailored for your child! You can create a page for each child, and the curriculum is set to an appropriate level for you child. As your child completes each lesson, he or she is guided to the next one and is motivated to continue learning by ABCmouse.com’s Tickets and Rewards System.

Above is a screen shot of Kira's homepage. Once you sign up, I encourage you to watch the the "Getting Started" video. This video will answer the most common questions that most parents have about using ABCmouse.com with their children. Basically you set up a "homepage" for each child. You can easily change from one child's homepage to the next by clicking the avatar for the child who is going to work on the computer.

To start your child on the Step-by-Step Learning Path, first make sure you are logged into the appropriate child’s account. Then go to the Classroom and click on the whiteboard. The teacher will indicate the next activity for your child to complete. Amazing lessons to learn ~ from phonics to math, art to music & so much more!

My kids are both in love with the stories. They enjoy receiving "tickets" for completing different tasks. Once the kids have received tickets, they can go "shopping" for their avatar... buying clothes, features, etc or items for their classroom. You can also set up your own reward system. My kids love the tickets, but they also enjoy tangible items... it can be something as simple as a penny or sticker.

My goal as a stay-at-home mom is to set up a scheduled time to play/work on the computer with my children. Unfortunately if I don't schedule time, I don't think about it... and I really think this is one of the best programs online (at least that I have come across). Oh, and if you are working on a laptop like I am with the kids, invest in a mouse! My kids are finding it difficult to use the keypad at this time.

Dipped Oreo Cookies {How To}

Here is how I made them...

You will need the follow ingredients: Oreo Cookies (or go cheap like me and buy the fake Oreos), white chocolate chips, and sprinkles. That's it... 3 ingredients to make this simple, fun treat!

Step 1: Melt the white chocolate chips in a microwave safe dish. I find it best to heat for 30 seconds, stir and repeat until the chocolate is smooth. Takes about 3 minutes.

Step 2: Dip the cookie into the melted white chocolate. Then place on cookie sheet with wax paper.

Step 3: Add sprinkles.

Step 4: EAT!

Okay, so I am sending these to preschool with the kids on Valentine's Day... and I made a few for my husband to take to work.

I got this idea from Pinterest... but modified it to make it quick and easy.
