Dilmah Real High Tea Challenge premiered in New Zealand on the professional category. I was very interested on their the extraordinary innovations inspirations from strong ethnic influences. Living in Arizona for the last 30 years I always pondered how a high tea or an afternoon tea can become part of the Arizonan culinary crowd.

Arizona has its own southwestern flavors from cooked cactus, prickly pear, margaritas, chili, Mexican food, Native American food and we seek the finest of restaurants in French, Brazilian, Moroccan, Greek, Lebanese, Italian and every eclectic fine cuisine there is to offer. Arizona appreciates an award winning chef, restaurant, hotel and/or casino its crowds flock to the premises and rave reviews soon follow. Phoenix is a hub of fine chefs and offers many culinary and mixology events through out the year waiting to see if there are any new salivating cuisine come to the forefront.
My respects go to the chefs that is able to make a great cuppa tea and work their senses, the eye, the nose and the palate to create tea food pairing, tea infused finger foods, desserts, cocktails/mocktails tied all together creating a wonderful tea experience.

Dilmah is the freshest tea and every chef uses the freshest ingredients for his/hers cuisine. The chefs keen palate is able to identify flavors and can separate the different nuances. My excitement in the Dilmah Real High Tea Challenge New Zealand placed Arizona on the High Tea/Afternoon radar. New Zealand has strong British cuisine, Polynesian culinary influences: Moari, Tongan, Fijians, Samoan, and Naiuans, and enjoying the Indian, Chinese, Malay, Japanese and Thai cuisine. Traditional High Tea meet 21st Century High Tea.

Arizona can express itself in a Southwestern sort of High or Afternoon Tea way. Now, that would be a Dilmah Real High Tea Challenge ,Arizona. Arizona would make its mark in the USA. A British tradition with a Southwestern Flair.

Puerto Rico, Land of Enchantment. Christopher Columbus found this island on his second voyage and named it San Juan after John the Baptist. Became a post for the Spanish and Europeans to make their stops before going to Mexico, Cuba and Central America. Puerto Rico now a US Commonwealth since 1952. A tropical island with surrounding islands, British and US Virgin Islands and the Dominic Republic that would include them as part of the Greater Antilles.

Red flower Flamboyon Tree

A 50 minute drive I was able to enjoy the view. Inquiring about all the variations of trees. I learned to recognize the Almond tree, Flamboyon tree that came in blue, red, green and white, the Coco tree, the Ceiba tree, Banana and Mango trees. The natural dense tropical foliage is always so beautiful to me. I am not a green thumb but appreciating the trees, flowers and plants fascinate me. A tree on a island will only be a house plant in Arizona maybe that's where I get my awe.
Coming around the bend looking up to see the chosen red flower Flamboyon tree that laced the El Conquistador Resort with the golf course welcomed you to its beautiful premises it was much more than what I anticipated.
El Conquistador a Waldorf Astoria Resort part of the LXR Resort & Hotel Collection where Praful Mehta and I met to set out to educate, share about its teas personality and how indeed Dilmah Tea can make its mark. Since I had not been to Puerto Rico before I had a chance to do some exploring and take in all that was all around me. El Conquistador is a destination unique in its surroundings 300 feet above the beach shore on the edge of a cliff and below the hotel's marina. Guests use the glass window cable cars to go to and fro from the marina and take in all the fabulous views of the ocean. Las Casita Village a colorful Spanish inspired stucco exterior made a break in the hotels landscape. Golf, Golden Door Spa, an array of Restaurants, shops, boutique's, ice cream :-), a Casino, Coqui Water Park, Palomino Island and swimming/volleyball pools.

One of the highlights for me was dinner with Gamal El Fakih Rodriguez, Praful Mehta, Dermot Connolly and Doug Zeif, Sr. VP, F &B at LXR Luxury Resorts & Hotels.

Doug Zeif's name has swirled around me a few times so meeting him was very exciting for me. In life we hear "I met your twin" maybe referring to your appearance, disposition or personality. Well, I have a dear friend that is Doug Zeif's twin so to hear him speak I could almost predict his train of thought. Doug is a great story teller, of course they are all true. Yes, I stood right there when he told his stories in Sri Lanka thousands of miles away I just seem to transcend like I was a spectator present. Vivid, adventurous and ready to interact with every scenario that presented it self with a little a bit of trouble shooting. I enjoyed his blogs that are readily listed below. Doug and Jacob's adventures and MJF blogs covering their visit are both available. I invite you to read them. The door is always open to visit the MJF Charitable Foundation. My room had an ocean view with one island straight out my Arcadia door. Palomino Island. El Conquistador's private island with horseback riding, water sports and a beach! At twilight the Coqui frog begun their unique croak. I did not recognize the croak as a frog till Praful named the sound. Thus El Conquistador has on the premises Coqui Water Park how appropriate the sound of children squealing, yelling, laughing and maybe some croaking.

Gamal El Fakih- Director of Food & Beverage had a team of managers and staff from each establishment. Las Brisas Restaurant, banquets, Las Casitas Café, Strip House Restaurant and the Golden Door Spa attended the Dilmah Tea presentation. Each location had a series of Dilmah Teas to represent. Las Brisas represented the Dilmah Gourmet series, Casitas Café Dilmah- t-series sachets, Strip House- Dilmah t-series sachets and Golden Door Spa represented the Dilmah t-series loose leaf.

Golden Door Spa will be venturing out in tea gastronomy and a hopeful Dilmah Tea Sommelier will represent the Strip House and attend the Dilmah School of Tea.

No doubt about it Puerto Rico is a coffee drinking nation. As an Arizonan it was interpretation of a show down. Praful opened up the presentation to two sessions of Dilmah pupils. I have to say I really enjoyed Praful teaching and watching the group learning the world of tea. Breaking out the tea was a door opening to talk about the tea one on one. As the conversation opened casually many caught on that Dilmah Tea represented as a pure single origin Ceylon tea, an ethical tea and that it is real tea is vital in telling the story of tea. The group comprehended the importance in proper preparation and spring or filtered water, consumers are drinking tea more for the health benefits, caffeine differentiation between tea and coffee and tea has properties that calms the nerves, rejuvenates and refreshes. Romancing of the Tea or Taking Tea was also new to many of the group. Exploring the many ways that tea is presented was a discovery.

How can I say this without sounding cheesy. Gamal's judgement and direction was very important to the management and staff. With that said I commend Gamal and Doug that their leadership has a lot to be said.

I find myself very easily returning to El Conquistador as a guest. An early morning back at Las Casitas Café drinking Dilmah's Brilliant Breakfast talking with the ladies that served me so nicely. Thank you El Conquistador for your wonderful hospitality.

Creating Afternoon or High Tea menus takes a little bit of work...... the end results are rewarding. I had annual international tea at my home for close to a decade. Summer International Bible Conference. An average of forty woman would come from Russia, Argentina, Holland, Zambia, Kenya, Czech Republic, Canada, Romania, South Africa, Australia, Great Brittan, India, Philippines, Mexico, and national ladies. A different set would come every year.

Planning the menu with the younger ladies and my faithful friends was my first step. Dear friends every year would bring their chocolate covered strawberries, another scones, Madeleines, home made soup (yes, a soup with Southwestern flair, it was the favorite always), frittata, cheese and melba toast, oriental salad, tarts and those that lived in my hometown brought their love offerings of tasty, tasty morsels. I would spend all night making the tea sandwiches. I would choose 3 sandwiches and the fourth was open game. The classic cucumber sandwich, curry egg sandwich, cranberry chicken salad with walnuts sandwich, and the fourth would be the hardest one to decide. Salmon, smoked oysters, gougeres and guilty of at the last second going through my cupboards and refrigerator and creating who knows what and pull it off successfully. Following with the small details of lemon curd, jam and clotted cream, sparkling lemonade, chocolates, printed recipes and a tea gift to bring home.

Then the fun part and the easiest, is pulling out my china for presentation. The tiered and cake plates, champagne flutes for the lemonade, tea cups and saucers, bowls, dessert plates, dinner plates, utensils, pressed napkins, tablecloths all done in the same night. Through the whole night I would have to drink Dilmah Tea. An English Breakfast when I would begin to wane. I would be alert again and would be able to methodically finish thoroughly. My last 2 annual Afternoon Teas were accompanied with Dilmah Teas. Ceylon Supreme, Rose with French Vanilla, Earl Grey, Natural Green Tea with Lemongrass and English Breakfast. Each teapot sat on a teapot warmer with a porcelain plate with the given tea. When the teapots were in place I could rest.

I love working with young girls to teach them to be attentive to the guests needs, to serve properly, how to make a perfect pot of tea, to be responsible to bring something to the table and at their age I would expect them to keep their word if they were to offer their hospitality at the Afternoon Tea. The most gratifying thing for me to see. Is to see the younger girls and ladies having conversations with the older ladies listening to their stories of living over seas or mingling with the ladies visiting from represented countries. I knew the Afternoon Tea was successful when all the ladies and myself were able to work together harmoniously that I was able to sit down myself and enjoy my cup of Dilmah Tea. The tea would do its magic. I would recollect, relax and I was able to give my complete attention to whom I was speaking with. I can almost feel its magic moment now; tea and conversation. To many of these ladies that came to my home it was a highlight and they looked forward to the next Afternoon Tea.

To serve tea in my home, you may walk in as a stranger but you will leave as a friend.

Word was out that an eighth Dilmah T-Bar was going into India. I contacted my colleague Robert Schinkel to get the details. Robert would be right there in the mix. Robert Schinkel, tea sommelier, mixologist, bartender, trainer, speaker and representative for the MJF Charitable Foundation, Robert is a strong affiliate for Dilmah. Becoming champion in 2009 in the The Sommelier competition in the Netherlands it opened doors to participate in 2010 Chefs and the Teamaker. Robert has what it takes to take the ancient herb and create many variations of a classic cocktail or pure innovations. Robert teamed up with photographer Izabela Urbaniak, Poland, and created the Dilmah Cocktails, Dilmah Mocktails, Dilmah Spa Tea recipe books. Create for yourself and take a peek Dilmah Spa Tea Mixology. Robert has had the opportunity to partner with Dilhan Fernando to launch Dilmah tea at various properties. High Tea is what a little girl naturally plays. Give her a teapot, a cup and saucer, napkins and a doll or teddy bear. She will play out the ritual with great detail.

The British industrial revolution era was my favorite time in history. The beginning of modern history. Medicine, inventions, ship building, science, photography, strong trade, exploration, the Pre Raphaelites excitement of every possibility could be possible. The British were in diverse places around the globe. The Sahara, deep jungles, the islands, the Amazon, exotic lands, the Serengeti and in most these nations are still influenced by British architecture, speech, tradition, education and high tea.

What I loved about the British is that where ever the day had set before them they made time for their tea.

The tea ritual gave the tea drinker refreshment from fatigue, to ponder the day, thought, gather ones self, nibbles and delicacies, intoxicating aroma of tea, change of conversation, a cheerful disposition and then back to the realities of life. The British understood its power. When tea was available to the common man tea hit every economic level in British society. Tea was the catalyst to taking out the hardship out of life for a moment and the oomph to finish the job well done. High tea in the desert. High tea in the jungle. High tea on board ship. High tea in a palace. High tea in the tea parlour, Tea in a humble abode.

Dilmah Tea entered the 58th Annual Fancy Food Show. A milestone for NASFT. Celebrating 60 years of retailers, distributors, restauranteurs, artisans, importers and those who connect to the food industry. It was in 1951 that the initial meetings of NASFT and came into full fruition in 1952 in New York City at Hotel Astor's ballroom inTimes Square. Jacob Javitz Convention Center is the permanent location. This year it was showcased in Washington DC with 180,000 foods and beverages that represent the best in new flavors, ideas, trends and innovations. Over 80 countries were represented.
Anticipation of a successful event was expected and a successful event it was. Dilmah USA consisted of Praful Mehta, President of Unity Brands Group, Dilmah USA, Varsha Mehta, Director of Unity Brands Group, Renise Lereche, Development Business Management of Unity Brands and Gloria Smith, Dilmah Evangelist.

As consumers, retailers, restauranteurs, distributors, etc are becoming more knowledgeable about tea and its relation to the tea pickers, source of packaging, fair trade and sustainability and listen to the Dilmah story many comment that these are not just buzz words or new marketing tools but reiterate back that Dilmah Tea is truly an ethical tea company that goes beyond fair trade. Sri Lanka....I am sure many blissful sighs came from many people who had just visited the home of Dilmah.

Dilmah Tea Drinkers from around the world came to celebrate, to learn, to experience, to taste, establish new friends, drink, eat and be merry as part of the Dilmah family.

May 7th-9th opened the Dilmah Global Partner Conference. Welcomed by Merrill J. Fernando, Founder and his two sons Malik and Dilhan. They are known for their great hospitality, generosity and assisting Dilmah Partners to achieve excellence in their nation, city or town and ultimately will make the difference in the lives of the Sri Lankan. New attendees had no idea what held before them. This conference had set itself apart from others. Dilmah Representatives from the US flew across the big blue. Praful Mehta, President of Unity Brands Group, Dilmah USA, Renise Lereche, Bus.Developing Mgr. of UBG and Courtenay Carr Russo of Tropical Delight.(Where was I, well, in Maui with my boys:-) Looking at November.)

Sri Lanka a tropical island off the southern tip of India.

Mountains, mid country, sandy beaches, lagoons, waterfalls and local conversations about the climate whether it be about the monsoons, changing winds, or the fishing conditions. Ceylon, a country famous for

its tea, there is a tea famous for its taste, Dilmah. A remarkable fresh tea that is changing many Sri Lankan lives. Sri Lankan lives are changed by a percentage of global sales that stay in Sri Lanka it provides for the MJF Charitable Foundation and Dilmah Conservation.

Mr. Fernando's favorite. It is set up in 3 categories. B1(totally blind) B2 (partially blind) and B3 (partially sighted). Prizes were distributed by Mr. Fernando, Dilhan and Malik and the Directors of the group as well as the Dilmah Global Partners who were attending the 5th Annual Dilmah Global Conference.

Another celebration enjoyed by all was the opening of the MJF Health Center at Somerset Estate. It commenced by a ribbon cutting.

All those present at the ceremony were the tea pickers, their children and the Dilmah Partner Family. An old dispensary that was renovated and reopened with modern facilities and spacious accommodations to provide health care for the tea pickers and their families, a community of 3600 people.
The MJF Health Center Sathyaraj the 1^st Medical student from the plantation was in fact born at this Center in July 1987.
The Somerset Estate Health team was adjudged the 2^nd Best HealthTeam amongst all plantations in the all island competition held recently.
This is made possible because Dilmah is truly an ethical tea company. Consumers directly see the results from purchasing a box of Dilmah Tea. Distributors and those in the hospitality industry were able to see first hand a vision fulfilled again.

The Pledge was a mission to put to action "Business is the matter of human service"

Dilmah Tea-Prescott Hotel Vendome

It has been an adventurous journey joining the Dilmah Family. It has been a little over a year and it has been the best business decision I had ever made. Dilmah a family business and now in Prescott, Arizona. Gloria's Tea Shoppe went out on the road. On its first encounter was Hotel Vendome and it was a match for Dilmah Tea. Eric and Stephanie Marichal, owners, met me at their hotel porch rocking on the their white rocking chairs and greeted me with smiles.

Built in 1917 a historic Inn associated more as a bed and breakfast was built by rancher John Benton (Jack) Jones. Rates were $1.50 for a single and $2.50 for a double.

The November 1917 issue of Yavapai Magazine featured a brief article on the new building: "For the past two years Prescott has been suffering for want of houses. To meet the urgent demand for a place to live, the attractive Hotel Vendome on south Cortez Street has been opened early in November. The structure is strictly modern. It is built of red pressed brick and its comfortable home-like appearance must solve the problems of many who are interested in house hunting."

Tom Mix a cowboy film star would stay at this western hotel a year at a time while doing silent movies. Hollywood celebrities and people from around the world would stay at this quaint inn. Tom Mix room is filled with movie memorabilia and to capture the western ambiance a claw foot bathtub to soak in. Choose packages to suit your needs. A romantic getaway with chocolates, candles, champagne and of course the bubble bath. Family suites are available and long term stays. The Vendome Christmas' are magical. Following suit with the Christmas City lighted buildings, Christmas trees, special music and the holiday spirit.

Out of curiosity I asked how they came across the Vendome. I was glad I asked. Eric has a tax business and was interested in using one of the spaces for his business. The owners gave him an offer to take it off their hands that could not be refused. Stephanie finds herself enjoying Eric's entrepreneur spirit. Stephanie has to put on her seat belt because Eric surely likes an adventure. Eric has vision for the Vendome and he is executing every plan beautifully. Stephanie is thankful she had unforeseen experience with the hotel business. Stephanie spent 3 years in schooling and traveling in Europe. Worked in London in pubs and then living 6 months at Ballynahinch Castle Hotel Connemara in Ireland. Stephanie said she knows how to make the bed properly :-). Well that says it all. That is why the great reviews nothing like the perfect slumber. It placed them #2 out of 24 hotels in Prescott for reviews at the TripAdvisor. Every visit I make, guests are always present spending

their time in the lobby playing cards or board games and enjoying the hospitality. The raves about Dilmah tea has lead them to retail Dilmah Tea. The all time favorite is Italian Almond and next in line is Pure Chamomile Flowers.

Prescott ("Preskit" as we Precottonian's say it) weather is perfect this time of year. Prescott gets San Diego weather current so we get clear skies and 70's to 80's days perfect for outside seating at the Vendome to relax in the sun while drinking tea. Prescott was once the Capital of the Arizona Territory in 1864 and was lost to Tuscon in 1867. In 1877 Prescott became the Capital again. Phoenix became the Capital in 1889 where it still resides. Prescott Courthouse Plaza is a block away in walking distance to enjoy the park (summer events in the evening), Whiskey Row, antiques shops, boutiques, restaurants, walk tours of Prescott Victorian homes and museums. Visit the famous Palace Bar/Restaurant on Whiskey Row opened in 1877 where Doc Holliday,Wyatt Earp and ranchers had there wild days. Bullet holes can be seen on the decorative tin ceilings and underground tunnels that led from the Courthouse, where the Judges could not be seen, to the Palace Bar to meet behind close doors.

On 4th of July, Prescott holds many festivities as the like of a small town parade, a boot race, Celebrate America presentation, western music held outside at the Courthouse Plaza across from Whiskey Row. Prescottonian's are proud to have the Worlds Oldest held Rodeo. Real High Tea Australia

What is the difference between High Tea and Real High Tea? I must admit many high teas in ole days gone by I boasted about the devonshire cream that was flown in from the UK, the Jasmine Pearl tea, only and checking out the dinner ware. The experience was ambiance and socializing. My love affair with tea still had the social aspect and the tea continued to accompany my mood. Just one aspect of High Tea that was set apart from Real High Tea that had changed.

In the west there is a saying" the horse does not come before the buggy."

My experience in times past was to eat my canapes so quickly and not enjoy the tea. Real High Tea, it is in the tea. It is all about the tea and it is compliments to its mate. Tea lifts up your savory or dessert and livens the palate pronouncing the hidden subtleties in a delicacy. A wonderful experience. A ritual that can be repeated in your own home. My own discovery was Dilmah's Exceptional Valley of the Kings. Brought back from Australia as a gift. Valley of the Kings is a high elevation tea that is crisp, light, sweet and enough astringency that brought out the flavor in my ginger snap cookie. I saved my ginger snap only for my tea. I would love to hear your findings.

Back to the "buggy". You must have a quality tea first that is pure, clean tasting, single origin and garden fresh before experiencing properly a good foodpairing. Begin with Dilmah.

Charitea

Dilmah gives a fine cuppa tea but it also changes lives.

Real High Tea Competition had partaken in a Charitea event to fund empowerment of children in North, South and East Sri Lanka. Dilmah partnered with Hilton Hotels August 8th through the 18th hosting a series of charity High Tea events raising funds to construct education and life skills training centers for thousands of children across Sri Lanka and in these same centers it will also provide 100 entrepreneurship grants to 'war widows' in the North of Sri Lanka. This program will be extend to benefit 1,500 women, with training and facilities for several vocations. These events will also establish the first culinary training center appropriately named 'Australia House' at the MJF foundation Center in Moratuwa. Similar Centers will then be established in other MJF Foundation Centers. One my favorite programs at Moratuwa houses is the Down Syndrome and Autism for children. My heart leaped when they covered Down Syndrome Day. How beautiful they were with their art work and the enjoyment of participating in their own talent show.

Proceeds from the Real High Tea for Charitea events will be matched dollar for dollar by Dilmah Founder Merrill J. Fernando to construct, equip and staff 'Empowerment Centres' for underprivileged children. Extending to the MJF Foundation through its MJF Kids Programme which will care for over 1,000 children.

Dilmah will establish 'Australian Houses' within each of the MJF Foundation centres. In a similar initiative to what the Foundation has undertaken already in Moneragala and Siyambalanduwa, two of the most remote and backward parts of the country.

Five Charitea Events that was launched first in Melbourne August 8 at the Hilton on the Park. Judges would include Black Hat Chef, Bernd Uber, MasterChef Australia Guest Chef and partner at Flying Fish Sydney, Peter Kuruvita with Dilmah Founder Merrill J. Fernando's son Dilhan. Adelaide, Perth, Sydney and Brisbane were included in the line up.

Two finalists would be announced at each location. Two consumer finalists selected from online entrants and competition with professional culinary teams observing high tea ideas. The Real High Tea will launch in Australia to New Zealand and on to other countries. A contemporary take on a traditional ceremony this would entail submissions of exotic variations on the High Tea theme. The Dilmah Challange required participants to emphasize the origin of their ingredients, and the use of sustainably sourced components, especially any from small, family business. They were assessed for originality, creativity, taste, respect and understanding of the specific tea, harmony of flavor, presentation and style. The Dilmah Challenge for the professional hospitality industry was given the opportunity to unleash its culinary creativity and demonstrate an understanding and respect for tea, its preparation, variety and terroir.

At the announcement of winners, Dilhan commented, "The standard of the finalists was exceptional, with very creative pairing of tea and food, the use of tea as an ingredient and tea mixology. The first Dilmah Real High Tea Challenge saw the redefinition of High Tea, beyond the very traditional cucumber sandwich and hot, milky tea of the last century, to a distinctly modern, Australian occasion where tea regained its rightful place."

Merrill J. Fernando I have yet to meet but when people that personally know of the Tea Master my ears are all open. At the Las Vegas WTE this last June, Jane Pettigrew, known British author for" The New Tea Companion" with Bruce Richardson, came to the Dilmah booth to say hello. Sharing her fondness, respect, admiration as a friend and asking about Mr. Fernando's well being. She gave us glimpses of her time in Sri Lanka with adventure and enthusiasm an inspiration to go on our voyage to Sri Lanka. Someone piped in that she was interviewing Mr. Fernando. Well I have been waiting. Through World Tea News it was published.

Merrill Fernando, Founder and Chairman of Dilmah Tea and of the MJF Charitable Foundation, has been a dedicated tea man for more than 60 years. But he is so very much more than that! Through his tenacity, integrity, vision and generosity, he has changed the Ceylon tea industry for the better and, by investing profits back into that community, has improved the lives of countless people in his native Sri Lanka.

Born in May 1930, Merrill finished his education just as Ceylon gained its independence in February 1948. His ambition was to be a tea taster and to work in the industry that made his country famous. It was during school holidays that he began to think about his future and he explains: “I spent a lot of time on friends’ tea estates and came to understand the structure, the recruitment system, and the different jobs of the workers, the supervisors and the managers. I grew to love the tea industry, but I never imagined how things would turn out later!”

In 1950, he gained a place on a new scheme that, for the first time, allowed local young men to take up apprenticeships as trainee tea tasters. But when that came to an end, he could not break into an industry dominated by the British. Tasting remained closed to people like Merrill, no matter how talented they were. Instead he took a job in the oil business, biding his time until the right opening into the world of tea presented itself.

Eventually, he was taken on by a British tea company and was sent to London to learn more about the buying and selling, blending and marketing of tea. He began to understand how teas from several different origins were purchased as cheaply as possible and blended to create the taste that suited the typical British palate. He realized that the origin of the tea was lost in the blend and that the only important factor was the price. “I saw good quality Ceylon teas going into blends and realized that the quantity being used was gradually going down and down, because the benders were sourcing cheaper teas from other countries. I could see that there was little or no future for Ceylon tea.”

And so began his quest to market not just tea but Ceylon tea and to make the world sit up and take notice of this important origin. But to do this, the basic systems and structures of the Ceylon tea industry had to change so that recognition and profits went not to the British tea companies in London but to the workers who grew and processed the teas in Ceylon. And in order to bring about those changes, Merrill had to stay focused and determined. It also meant confronting shipping companies, British institutions, government officers, people in positions of power and at times making enemies of people who had once been his friends. It was never an easy task and government controls, land reform acts, political instability and the complete restructuring of the Ceylon tea industry in the 1970s added to his problems.

Merrill already had strong connections with Russia, New Zealand, Australia, the U.S. and Canada through his earlier trading experiences and he slowly built a reputation in those countries as a reliable trader of high quality Ceylon teas. He was classed as the fourth largest exporter of Ceylon tea; he travelled widely to form personal relationships with all his customers; he advised and guided his buyers as to which teas to buy for the best quality at the best price. And gradually, he worked out a long-term plan of action: “I began to recognize the fact that customers couldn’t get the teas that they enjoyed, so I decided that I would move away from the export of bulk tea and create my own brand that would sell 100 percent pure Ceylon tea, packed at source. What I wanted to do was offer the consumer a better deal while at the same time creating a fair deal for the Ceylon tea farmers.”

And so, in 1988, Dilmah was born. The name is a combination of the names of his two sons, Dilhan and Malik, who at the time were still small boys but who Merrill considered as “my greatest asset. Both the packaging and the content of my new brand had to be excellent because it was to be the third member of my family!”

As a tea trader, Merrill has always had very strong principles about how a business should be run and how we should all behave as responsible professionals. As a kind, thoughtful, generous, committed Christian, he is guided by even stronger ethics about how we should all behave as human beings. When asked about what drives him, he will repeat his guiding mantra, “I am an ordinary farmer learning to market our tea crop without middlemen so that I can retain in my country the earnings which are taken away by traders, leaving us poor. My earnings are shared with my workers and the wider community and reinvested to make tea a sustainable industry. I have made it my duty to extend a helping hand to others and the community. If we learn to care and share with others, we will spread happiness, not create envy. If we learn to share our wealth, our world will be a far happier place for all.”

That sharing of earnings is carried out through the MJF Charitable Foundation, incorporated in 2002 with the primary aim of alleviating poverty and of helping the underprivileged, the sick and the disabled.

A percentage of Dilmah’s profits goes directly to the Foundation and the message to customers is very simple – every time you buy a packet of Dilmah tea, you are helping to put money back into the community. From its inception, Dilmah had a policy of giving back. But it was the tragedy of the tsunami that struck the south west coast of Sri Lanka in 2004 that spurred the expansion of the Foundation’s work.

Since those dreadful days, The MJF Foundation has donated vast amounts of money to help refurbish fishing boats, build an ice factory to empower the fishermen and eliminate their reliance on scoundrel middlemen, and supply the local women with sewing machines and the necessary skills to hand process beautiful linens for use in local hotels and restaurants. During the past 10 years or so, the Foundation has built homes for orphans, the blind, abused women and other underprivileged groups; it has established schools, hospices, eye clinics, vocational training establishments and hospitals; it has sponsored the construction of roads and new housing and has set up a wide range of on-going environmental programs; and it has helped a long list of individuals and families throughout the island to set up a huge variety of sustainable businesses that now employ others in the community, empower more and more people, and inspire all those who come into contact with the various schemes.

The list of projects is endless, heartwarming and a shining example to all of us and we should all take to heart what Merrill says again and again: “We came into this world with nothing, we leave with nothing. The wealth some of us acquire is owed to the efforts and cooperation of many others around us. Let us, therefore, share that wealth, while we are still around, so that the goodwill and contentment created thereby, make our world a happier place for others as well.”

If more people followed Merrill Fernando’s guiding principle, the principle that lies at the very foundation of the Dilmah Tea Company, the world would most certainly be a better place.

The story of tea is a beautiful story beginning with its ancient history, health benefits, the tea pickers and Dilmah gave it the capability to touch lives through sustainability. Dilmah a family business taken the Camellia Sinensis made it ethically sound, birthing the philosophy that business is a matter of human service. What business should be naturally. The Dilmah team was introduced to Dilhan C. Fernando. Dilhan conveyed this story of tea with passion. It rekindled and brought back to remembrance why I chose Dilmah. As a student to its teacher I too desire to replicate this story to clients, friends and family with that same passion. In between all of this the US Dilmah team initially met all for the first time. Praful Mehta, President, Unity Brands Group was able to put a few voices to our faces. Joe Belli, Daniel Patrona, Dilmah Corporate Chef and Renise Lereche, all of UBG, was included in my first meeting. David M.Wagner, Saguaro 66 Merchandising and Pete Papageorge, Century Services Inc. were included in the same meeting. Dora Su of Dandos Distributors, we had already met in San Diego we connected the following night and I brought Anna Keppel a Dilmah Tea enthusiast, it was an experience she did not expect. We all acquainted ourselves quickly since there had already been telephone conversations in the past.

Dilhan not only shared but he listened, asked questions, and asked what our wish list would be with Dilmah tea. I believe all of us did not choose to just market but chose issues and venues that were close to our hearts. The time together was fruitful and very enjoyable. The following day we would set up.

Praful and Daniel, Pure Chamomille Flowers 1st Place

It was Dilmah's first appearance at the WTE. Last year UBG had entered t-series Pure Chamomile Flowers in the Unflavored Herbal Category and landed First Place. This year competed in the Winner's Circle Competition and received First Place again. Voted with 3 colored chips for each category we even received colored chips that did not represent our category. Daniel Patrona showcased the competition.

The Pure Chamomile Flowers are harvested in Egypt. Dilmah selects the farmers and set instructions how it shall be picked for harvesting. Only the chamomile bud and flower, no stems or leaves, would be handpicked. The chamomile steeped at 180* for 4-5mins, the result an aromatic tisane with a reminiscent of apples.

Announcing Dilmah's new tea selections at the Expo was Exotic's Blackcurrant, Ginger and Honey, Blueberry and Vanilla, Lychee, Strawberry and Mango. Green Gourmet included Green Sencha and Green Jasmine Petals. Our new Dilmah Infusion's Black Decaffeinated, Peppermint and Rosehip and Hibiscus. In our Foodservice t-series Rooibos and Cinnamon Spice.

A new series was showcased "Dilmah Exceptionals" flavors included Arabian Mint with Honey, Acai Berry with Pomegranate and Vanilla, Berry Sensation, Italian Almond, Peppermint with English Toffee and Lively Lime and Orange Infusion.

Last but least we launched a new foodservice ice tea, "Chelsea Tea Selection". In various real tea flavors. It was wonderful tasting all the new teas. I asked before I took them home :-)
A surprise visitor showed up. A distant Dilmah friend from the Netherlands. William Gerretsen, Marketing Director of Dilmah/Madal Bal overseeing the Benelux countries. I always share with everyone about his photography. He might not seem to think they are professional but emotion come through his photos. I picked out a few of his photos to use on my website. The Dutch Dilmah team are my sister Dilmah team.
Passing through I finally met Kasia Vermaire, First Woman Dilmah Tea Sommelier of the Netherlands. She had written for Gloria's Tea Cuppe and now Dilmah's Frank van der Zande, as a Tea Inspired Chef and Robert Schinkel, Dilmah Tea Sommelier, Mixologist; both had participated in Chef and the Tea Maker in Sri Lanka, will resume writing for Gloria's Tea Cuppe.

WTE Stories

Rooibos is our new foodservice tisane. It is not a tea but a bush. Nutty and sweet in flavor, high in antioxidants, the list are extensive in all its health benefits. New to the states but native in South Africa where it is farmed. "Red Bush" would be another description of Rooibos. Dilhan Fernando present at our WTE booth had a visitor from a South African Rooibos vendor anxiously wanting to converse with Dilhan. His purpose was to have Dilmah purchase Rooibos from their farms. Tazo and various other companies vendor through them. Dilmah chose smaller farms in South Africa. Taught them how to harvest in the quality that would meet Dilmah standards.
We passed a sachet to the Rooibos vendor. I seem to follow him back to his booth. He stood in front of the display of different assorted grades of Rooibos. He placed the sachet next to each grade. Classic grade was his highest grade present. Dilmah's Rooibos was a higher grade than Classic and the vendor mentioned he will have to take it home to find out what grade it is. I so much appreciate Dilmah's excellence.

An Earl Grey tea enthusiast picked up from every vendor Earl Grey tea including Dilmah. Tasted every one of them and Dilmah came out Number 1. The combination of a pure single origin Ceylon tea, packaged within days after harvesting and bergamot makes a perfect marriage.

Tea check, water check, samovar check, hotel room check, registration check. It is that time when tea salons, tea companies, tea masters, tea sommeliers, tea accessories and the teapots all come under one roof at the Las Vegas Convention Center June 24 - 26,2011. I believe it will be a very successful WTE, last time I saw there was only 3 booths left, some of the classes full, and I am able to meet my Dilmah Team. It will be very exciting for me. This will be my first expo. I will not give any details now because I will have a lot to share when I get back.

Prescott Costco Children's Miracle Network

Every year Costco has a business show to sponsor and donate towards the Phoenix Children's Hospital and the National Children's Medical Center. It is the world's largest children's donation. Costco's across America participate in many different avenues and in Prescott, Gloria's Tea Shoppe with Hotel Vendome, Wild Iris Coffeehouse, Taj Mahal in Prescott, Bistro @ Royal Hawaiian and Bin 239 gave in joint donation for the Children's Miracle Network. A fund that has directly or indirectly has touched a child and placed in the care of the Phoenix Children's Hospital.

Gloria's Tea Shoppe is announcing a blog for Arizona Dilmah Tea establishments. Where each establishment will be showcasing each Dilmah Establishments history, location, events, and fun stories. Giving a sense of community and partnership through Dilmah. A five hour event and 3000 people coming through. Gloria's Tea Shoppe had displayed each Prescott Dilmah establishment, Dilmah Tea Menus, restaurant menus, Dilmah products retailed at the establishment, what and how Dilmah Tea is being served and special Dilmah Tea events at their location and business cards. Video of the Introduction of Dilmah, MJF Charitable Foundation and the Netherlands Horecava 2011 hosted by Kasia Vermaire through Sipped TV. Opportunities to share about Dilmah Tea and the MJF Charitable Foundation were a highlight. Passing out envelopes of Dilmah Gourmet and Green Gourmet was a treat for the Costco member especially since no tea tasting nor retailing could be promoted. Business' came forward to inquire and Costco members even had given suggestions where they would like to see Dilmah served.

"Business is a matter of human service" something Dilmah stands behind and Gloria's Tea Shoppe would like to implement this stance in business. Dilmah gives 10% of global sales towards the MJF Charitable Foundation and Dilmah Conservation.

Chris Oosterveen. Since my introduction to Dilmah, the Dutch Dilmah Family Team introduction was not far after. Kasia Vermaire 2010 First Woman Dutch Tea Sommelier Champion began as a skype interview that changed direction to a co author to GTC in a half a second. Chef Frank Van der Zande, a name I had recognized from the Chef and the Teamaker, I had asked Kasia to host a video interview with Chef Frank for the US audience and Chef Frank quoted 'Are you ready for the Dutch Invasion in the States" I would love to see a fruition of this invasion, William Gerretsen (a modest photographer and will find his photos on my website soon), Florence van der Poel and Janneke Heitlager of Madal Bal/Dilmah Benelux group connection followed soon after and Robert Schinkel, Dutch Dilmah Tea Sommelier Champion 2009. Robert moves so fast around the globe with Dilhan C. Fernando it was easier to just meet him in Sri Lanka in 2012 at the Dilmah School of Tea. Looking forward to Robert sharing his Dilmah Tea adventures that would excite US Dilmah tea sommeliers, They all became my Dilmah Kin. You have heard the term "Sister Cities" well they are my "Sister Dilmah Team". My partiality of course would have to cover the Venuez 2011 Dilmah Tea Sommelier Championship. Florence and Janneke helped to fulfill this coverage.
Chris Oosterveen recently established a tea room in The Hague that he says is a true "Dilmah experience". Chris stunned the judges with a Darjeeling, mint, lime sorbet and apple juice. "Served at the right temperature, great for a summer evening at the barbecue" said the jury report. For combination of dishes, the young bartender served a black Uda Watte tea ( a"cru" that sometimes is called the Pinot Noir of tea ) with a cranberry paté. A traditional presentation of Dilmah Tea Sencha Green Tea was "very pleasant" experience.
Oosterveen will later this year will travel to the International School of Tea in Sri Lanka to be trained. "This training at this institute opens doors to national and international coffee world," said a spokesman.
The Tea Sommelier competition is an initiative by Merrill J. Fernando, founder of Dilmah Tea. The zenith of innovation of preparation and presentation of tea and to apprehend all that it entails about the quality and the increase of a healthy drink. The first International School of Tea " established by the Insitut Paul Bocuse in Lyon works in this framework. The doors are open to national and international coffee world.

My heart felt prayers towards Japan at this time. The wounds of this nation are devastating hopefully recovery will be quick.

2012 plans are set for my trip to Sri Lanka. My desire was spurred by the Chef and the Teamaker event and following the Chef and the Teamaker Blog it was very inspiring and quite the teaser. Obvious my references and posts on this event seem very numerous but it can not be out dated. My heart was pulled in. I fell in love with all that Dilmah Tea represented; the Chefs, the Sri Lankans, MJF Charitable Foundation and the MJF Conservation, sustainability, Mr. Fernando and his sons Dilhan and Malik. The CTM blog was something I looked forward to reading and sitting at my spectator chair, actually being entertained and then of course my heart was wrenched here and there when the Chefs interacted with the locals and the children, my thoughts following this excursion "oh this must be shared and this Camellia Sinensis plant, it is true, it made the world go around at one time in history, well, I think it could happen again" This concept what Dilmah tea was all about, I felt, like I was sold on Amway. This is pure business but it involved masses of people and different levels at one time. Sri Lanka's history is so interesting when it concerns the Camellia Sinensis. A nation that had harvested coffee, before tea infiltrated the country, until a fungus had infected the plant and became an epidemic and ruined the crops thus had to find another crop that could replace it. The Camellia Sinensis plant worked out perfect, it would not succumb to the fungus from growing in the shade. Voilá. or Eureka a crop that would sustain herself in this climate and a great export product. A reversal that would benefit in the long run.

Mr.Fernando's vision of what a pure single origin Ceylon tea could do was not sheer luck but a passion that was fulfilled in a 40 year span.   Nothing I believe is coincidence. Dilmah supports and co-sponsored the breakfast - The South Florida Affiliate of Susan G. Komen for the Cure® hosted 3rd Annual Wake Up for the Cure Breakfast in Palm Beach.

More than 100 people joined to "Wake Up for the Cure" @ Club Colette in Palm Beach in honor of LPGA star, Morgan Pressel, and Ambassador Nancy G. Brinker, Founder and CEO of Susan G. Komen for the Cure.

LPGA star, Morgan Pressel, currently resides in Boca Raton, Florida. Some of her Amateur golf milestones include: being the youngest golfer to qualify for the U.S. Women's Open at twelve years old, and winning the U.S. Women's Amateur at seventeen years old. Morgan went on to become a Professional golfer in 2005, and won the 2007 Kraft Nabisco Championship, making her the youngest winner ever. On top of Morgan's incredible achievements in the world of golf, she has developed a passion for raising funds and awareness for breast cancer. Her mother passed away from the disease in 2003, when Morgan was only fifteen years old. In 2010, she created the Morgan Pressel Foundation with hopes of making a difference in the future. With monies raised, this foundation was able to purchase the Kathryn Krickstein Pressel Mammovan, which is in associated with Boca Raton Regional Hospital.

Nancy G. Brinker promised her dying sister, Susan G. Komen, that she would do everything in her power to end breast cancer forever. In 1982, that promise became Susan G. Komen for the Cure® and launched the global breast cancer movement. The South Florida Affiliate of Susan G. Komen for the Cure® is working to better the lives of those facing breast cancer in the local community. Dearest readers of Special K's Corner,

It has been an amazing kick off with 2011 in my work as a tea sommelier and food inspirator.

But as promised, we filmed the big Horeca event in the Netherlands in January, where we were the first ones with a Tea & Food experience.

The people were amazed and surprised, that tea could be so exciting, sexy, delicious and a source of inspiration. Chef Frank created special food bites with tea as an ingredient and I made a food & tea pairing with that. You have to imagine that our stand was more than just a table with a chef cooking. It was set up as a sushi bar, with Frank van der Zande and Robert Schinkel and I behind it, and people could come and sit every hour to experience and taste our presentation.

I talked about the history of tea, the way it grows and how it is to be produced and the quality differences. Also what we served and why we served it in this manner. so it was more that just a simple tasting session. All senses were involved from the taste buds of your tongue, to your eyes then to your nose.

It was a real pleasure to do and we got all the publicity that was possible towards our stand and the Dilmah Tea & Food Experience. I would say, enjoy the short video and follow me as a International Tea host too at http://www.sipped.tv/

When Chef and the Tea Maker was covered by GTC in July, Chile was the first country to visit GTC site.

Family and friends in Chile and other South American countries desired to read about Chef Matias Palomo from Chile. Today on Chile CNN Chef Matias shared about his gastronomic trip to Sri Lanka and the Dilmah School of Tea where he was introduced to tea in a different manner. Tea preparation is very important in a proper hot or a glass of iced tea. A cup of chilled tea will make a refreshing glass of iced tea with fruit in season, or an exclusive cocktail or a tea shake.

The School of Tea took the chefs to 9 locations in Sri Lanka. Each location represented a place that tea had its expression. Tea fields, MJF Charitable Foundation, MJF Conservation, Sri Lankan culture and culinary dishes, camping, camaraderie and learning the fine art of tea.

One of the basic points of tea is the subject of the "terroir" aspect of tea just as you would find in wine. "Terroir" means "land" in french. Tea is characterized by the climate, topography, geography, soil, weather, humidity, temperature, winds and time of day. This will denote the different varieties in tea.

Michigan and Dilmah are team players in the US. It is not surprising. The football team of The University of Michigan, the Wolverines have the most incredible fans. I had just watched a documentary on two rival football teams Michigan and Ohio. They have loyalty, spirit and fight. From generation to generation Wolverine fans show their homage, from their infant wearing a Wolverine jersey or have their graduating high school student apply for the University of Michigan, and that would be part of their family tree. Nilagama, strong and bold had surprised the taster how smooth the taste of a strong tea could be. It was the other favorite. Dombagastalawa Estate was another crowd pleaser.
Not only they enjoyed the tea but contemplating their experience of Dilmah tea was a great conversation.

I move through her morning, reading, and she is enjoying her Dilmah Mint tea. Sounds ordinary but a transition from one nation to another, well has its........a new start with a good American breakfast with Dilmah tea will make everything alright. I had my Dilmah Irish Breakfast and she had her Dilmah Mint. Then it was back to work.

She wrote what is dear to her "sustainability".

I recently was introduced to a brand of tea called Dilmah. As is prone to happen in my life, I stumbled upon the tea accidentally. It is available at the local grocery store in Lusaka, Zambia. Shortly there after, I took some photographs of my morning activities (tea included!) which were placed on my personal blog. Directly, after that I was contacted by my friend Gloria who is actually promoting Dilmah tea on her blog in the U.S. I think my life is always full of these sorts of happy coincidences!

As you all know, I whole heartily support sustainable projects, and this support often crosses over into my professional life as I love to work with sustainable organizations. I was thrilled to learn that not only does Dilmah promote sustainable tea growing, the founder of Dilmah, Merrill J Fernando, also started the MJF Charitable Foundation that helps tea growers and underprivileged workers in Sri Lanka. The MJF Charitable Foundation represents an alternative economic model, and it is much more than a charity because it represents a genuinely sustainable and fair way of doing business.

It took Merrill just under 40 years to bring his family tea, Dilmah, to consumers. The concept of a young, middle class Sri Lankan seeking to establish an ethical, producer owned tea business was at the time both controversial and fiercely opposed. Then as now, big transnational businesses controlled the tea industry. During the four decades he fought to achieve his dream, he continued to fulfill the commitment of caring for his staff and workers as comes naturally to any family business. As his business was blessed with success, his company and consequently his social justice obligation, grew.

As if that wasn't enough to convince you already, Dilmah makes a fantastic cup of tea! I've only tried out the sweet mint so far but it is superb! Dilmah's core foundation is based on integrity, ethics, quality, authenticity,freshness, and sustainability. The UN uses Dilmah as an example to other nations how sustainability can change the financial climate of a nation which Dilmah has for Sri Lanka.

I encourage you to check out their newest Dilmah promotion, The Chefs & the Teamaker, where chefs from around the world create recipes utilizing Dilmah's tea and you can too! Dilmah should be the light shining at the end of the tunnel for countries everywhere looking to take back their local industries for the betterment of their country!

The Healthy Apple

Dilmah presents many tea gastronomic events, events that had stirred many culinary, health conscience, curiosities for my friends, family and acquaintances that had led me back to Amie Valpone the author of "The Healthy Apple". ( October 11, 2010 posted in GTC "Return to Real Tea with Dilmah" a Review included Risotto with Black Trumpet Mushrooms recipe)
Amie's knowledge of Dilmah made it a perfect match for innovative Dilmah tea inspiring culinary dishes.

My anticipation was correct. The splendor of good foods and Dilmah tea, myself and other recipe suitors our palates will be satiated.

So let's begin, here we have....

Green Tea Sweet Potato Soup

4 Tbsp. olive oil
2 large sweet onions, chopped
2 Tbsp cumin
5 large garlic cloves, peeled
2 Tbsp. balsamic vinegar
1/4 tsp. nutmeg
1/4 tsp. cinnamon
5 large tomatoes, diced
5 large sweet potatoes, cut into 1/2 inch cubes
2 cups fresh baby spinach
3 large portabella mushrooms, chopped
4 cups brewed Dilmah Lemongrass Green Tea
1tsp. sea salt
1/2 tsp. freshly ground white pepper
1/2 tsp chili powder
Greek plain yogurt for topping
3 Tbsp. black sesame seeds, for topping

In a large pot over medium heat, cook onions with oil until onions are translucent. Add cumin, garlic, balsamic, nutmeg, cinnamon and tomatoes. Reduce heat to low; cover and simmer 15 minutes. Slowly add sweet potatoes, spicach, mushrooms, tea, sea salt, pepper and chili powder.

Transfer mixture, in batches, to a blender; puree until smooth. Ladle mixture into serving bowls; serve warm with a dollop of Greek yogurt and a sprinkle of sesame seeds, for topping. :-)

Now for your entreé...

Grilled Tuna with Green Tea Coconut Sauce

1 cup coconut milk
1 cup Dilmah Ginger Green Tea
2 tsp. lemon juice
2 tsp. freshly grated ginger
3 garlic cloves, minced
1 tsp. balsamic vinegar
1 Tbsp. chili powder
3 scallions, chopped
1 tsp. sea salt
11/4 tsp. fresh ground white pepper
4 6oz tuna fillets
3 cups jasmine rice, cooked
1/4 cup cashews, ground

Pre- heat grill. In a large skillet, combine coconut milk, Dilmah Ginger Green Tea, lemon juice, ginger, cloves, vinegar and chili powder. cook for 10- 12 minutes or until mixture thickens. Remove frøm heat; add cilantro, scallions, sea salt and pepper.

Brush tuna fillets with the coconut milk mixture; sprinkle with salt and pepper. Grill fish until opaque in center and grill marks appear, approximately 8 minutes per side. Serve fish atop a bed of jasmine rice with a sprinkle of ground cashews.=-)

For dessert a wonderful....

Vanilla Tea Infused Fruit

4 large plums, sliced into 1/4 inch wedges
4 large peaches, sliced inch 1/4 inch wedges
1 1/2 cups fresh raspberries
4 Tbls. sugar
1 tsp. all-spice
2 cups brewed Dilmah Vanilla Tea
1 vanilla bean

Combine fruit, sugar, all-spice and hot tea into a large bowl. Slice vanilla bean in half, add seeds from vanilla bean, then add the bean. Gently toss to coat. Set aside to cool for approximately 1 hour before serving. (yummy)
