How much do you love going somewhere where everyone is like you?  People don't look at you like you have a third eye.  Where you can eat food and not ask question after question, and then think so much about it that food no longer seems fun?

Who doesn't like carrot cake?  Put that goodness in a pancake, and let's just say....you won't have leftovers. 

Carrot cake is my husband's favorite, and it's not too far down my list as well. There is one question I get more than any other when it comes to cooking for someone who is gluten-free.....how do I make a birthday cake that will compare to a "regular" cake?

Recently, I was given some samples of del Carmen Cuban-style gluten-free black beans, and gluten-free black bean soup to try.  I love black beans, so this was definitely a welcome product to sample!

This recipe is in fact, simple, easy and quick.

I am 2/3 of the way through the month of no cheese, and I am not going to lie to you, I am not liking it.  Frankly, I am hating it.  I am following it very well, but it is getting me down.  M tells me how he actually doesn't mind it, and as long as he can have some milk in his tea, he can keep on going with this challenge.
