Seriously, what is better than a big pot of melted cheese?&lt;/p&gt; &lt;p&gt;And I have such great girlfriends, who were willing to spoon cheese out onto their bread instead of glutening the whole pot! Right down the street from my work, this little muffin was incredible! Soft, moist with just the right amount of lemon punch. I know when it’s a billion degrees this summer, I will be wishing for rain. But this week, I’m over it. I’m ready for a long stretch of sunshine. Irritated but not angry, I grabbed a banana and a yogurt and headed out the door. &lt;/p&gt; &lt;p&gt;But on my drive to work, I remembered the blog post I read last night. A blog post that I know will stay with me for the rest of my life. &lt;/p&gt; &lt;p&gt;Some images can’t be unseen, and as much as I would love to turn a blind eye to world hunger, I can’t.&lt;/p&gt; &lt;p&gt;And for that I am both grateful and sad.&lt;/p&gt; &lt;p&gt;Grateful that God keeps giving me these doses of perspective, and sad that I live in a world where someone is eating cookies made of dirt. &lt;/p&gt; &lt;p&gt;As a person who eats gluten free, I often feel as if “there is nothing I can eat”. But my friends, there are people who actually have NOTHING they can eat. And so they satiate that pang of hunger with a cookie made of dirt. A cookie made of DIRT. &lt;/p&gt; &lt;p&gt;We may not be able to eat gluten, but there are so many wonderful things we can eat. So today, I encourage you to take a glimpse into the huge issue of world hunger. Both are good, but we didn’t have cilantro on had last night, so Buffalo Ranch it was!&lt;/p&gt; &lt;p&gt;The only thing that could make this salad better would be crispy bacon. Saturday was a big sale day at work, so I didn’t make it home until well after 7pm. &lt;/p&gt; &lt;p&gt;I don’t know about you, but my supper schedule is pretty prompt. I like to eat around 6:30, and 5:30 would be even better. Delicious…yes. Low in calories…not so much. So I snagged this Daiya pizza last week, hoping that it would be good. &lt;/p&gt; &lt;p&gt;Well…..&lt;/p&gt; &lt;p&gt;I won’t say it’s bad….but…it’s not good. &lt;/p&gt; &lt;p&gt;First, let’s look at the baking instructions:&lt;/p&gt; &lt;p&gt;&lt;a href="http://lh5.ggpht.com/-0hPDYUVRwyk/UZla3P7X76I/AAAAAAAAHOM/dxjsGRnzFYk/s1600-h/photo%25255B5%25255D.jpg"&gt;&lt;img style="background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px" title="photo" border="0" alt="photo" src="http://lh4.ggpht.com/-HBUUwnGX6l0/UZla32F_enI/AAAAAAAAHOU/OyPGs-HcQVM/photo_thumb%25255B2%25255D.jpg?imgmax=800" width="512" height="690"&gt;&lt;/a&gt;&lt;/p&gt; &lt;p&gt;500 degrees? Interesting. I followed the instructions perfectly and at ONLY ten minutes:&lt;/p&gt; &lt;p&gt;&lt;a href="http://lh4.ggpht.com/-4ShIVPkwclA/UZla45brHXI/AAAAAAAAHOc/pqHSpaL17HA/s1600-h/22%25255B5%25255D.jpg"&gt;&lt;img style="background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px" title="22" border="0" alt="22" src="http://lh5.ggpht.com/-niQ_E3A5Blw/UZla5-ykCwI/AAAAAAAAHOk/uyUkYpZYQAI/22_thumb%25255B2%25255D.jpg?imgmax=800" width="510" height="687"&gt;&lt;/a&gt;&lt;/p&gt; &lt;p&gt;My pizza was burnt on one side completely, and a some of it had bottomed out. &lt;/p&gt; &lt;p&gt;And I don’t have a notoriously hot oven. So I’m not really sure that that was about. &lt;/p&gt; &lt;p&gt;Once I trimmed off the burnt edges, I will say that the flavor of the pizza was good, meaning that the big chunks of garlic were delicious! But the crust…even though burnt….didn’t taste all the way cooked. &lt;/p&gt; &lt;p&gt;So would I buy it again? No. &lt;/p&gt; &lt;p&gt;But I will try to recreate the garlic and mushroom combo on a &lt;a href="http://udisglutenfree.com/" target="_blank"&gt;Udi’s&lt;/a&gt; gluten free crust – Yes!&lt;/p&gt; &lt;p align="right"&gt;&lt;strong&gt;What about you? That I would give up a yummy home-cooked supper to exercise. That I would research shoes to help me work out better. &lt;/p&gt; &lt;p&gt;But friends, that is what Zumba has done to me!&lt;/p&gt; &lt;p&gt;&lt;img src="https://fbcdn-sphotos-c-a.akamaihd.net/hphotos-ak-snc6/216256_10100406948394356_1889409379_n.jpg" width="504" height="504"&gt;&lt;/p&gt; &lt;p&gt;I am positively obsessed with Zumba!&lt;/p&gt; &lt;p&gt;It is such an amazing workout! I don’t think I have sweat as much working out in a LONG time. And I’m not some amazing dancer, but it doesn’t matter! No one is looking around. Everyone is looking at our amazing instructor and concentrating their hardest!&lt;/p&gt; &lt;p&gt;I had actually gone down a pants size right before starting Zumba, but now I’m getting ready to go down again!&lt;/p&gt; &lt;p&gt;&lt;img src="https://fbcdn-sphotos-e-a.akamaihd.net/hphotos-ak-ash3/943583_10100406902376576_1364218053_n.jpg" width="498" height="498"&gt;&lt;/p&gt; &lt;p&gt;I had to buy new workout pants because my old pants kept sweating off my body! It’s hard to keep up when you’re yanking up your pants every 10 seconds. &lt;/p&gt; &lt;p&gt;And I never get bored. And I never give up! There is something about the length of time you’re dancing, combined with the changing of moves, that keeps you moving even though you’re exhausted.&lt;/p&gt; &lt;p&gt;The calories burned are pretty motivating too…..&lt;/p&gt; &lt;p&gt;&lt;img src="https://fbcdn-sphotos-g-a.akamaihd.net/hphotos-ak-prn1/37052_10100405672875506_1208949122_n.jpg" width="487" height="487"&gt;&lt;/p&gt; &lt;p&gt;I’m so happy that my co-worker Katie and great friend Elizabeth got me started! I was so intimidated to Zumba before, and I hate that it kept me from this workout for so long! I love it!&lt;/p&gt; &lt;p&gt;Plus, we’re lucky here in Durham to have the BEST Zumba teacher ever – Lu! Her smile lights up the entire room! She has so much energy, and makes you feel like you’re doing a great job….even if you’re the most uncoordinated person in the group. &lt;/p&gt; &lt;p&gt;Zumba gives me so much energy. It keeps me motivated during the week to be more active, and gives me an AMAZING happiness after glow. &lt;/p&gt; &lt;p&gt;So yeah, I’m one of those people now. &lt;/p&gt; &lt;p&gt;I am CRAZY for Zumba. I wish I could do it everyday. I wish the class lasted longer than an hour. Hopefully there’s an end in sight, meaning that the rain is supposed to high tail it out of here tomorrow, but I’ll believe it when I see it….or don’t see it.&lt;/p&gt; &lt;p&gt;To cheer me up this morning, I had my new favorite breakfast. I wouldn’t call it my “go-to” breakfast, but it’s really just a bunch of empty carbs. It’s local too, and I can get a big ol’ bag of it for less than $2. &lt;/p&gt; &lt;p&gt;Every week I pick up a bag, not always knowing what I’m going to do with it. But I know I can add a little bit to a stir fry, a soup, or a smoothie easily. &lt;/p&gt; &lt;p&gt;Last week I forgot to buy romaine lettuce. Funnily enough, I didn’t realize it until I went to pack my salad for lunch that morning. Kale to the rescue!&lt;/p&gt; &lt;p&gt;&lt;a href="http://lh3.ggpht.com/-ztP8okX1bJU/UYefpB5fPAI/AAAAAAAAHMI/LjSnVH7Cn6o/s1600-h/kale%252520salad%25255B4%25255D.png"&gt;&lt;img style="background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px" title="kale salad" border="0" alt="kale salad" src="http://lh5.ggpht.com/-5dO-qI6cioM/UYefs4bC84I/AAAAAAAAHMM/2HeEqt9c0pI/kale%252520salad_thumb%25255B2%25255D.png?imgmax=800" width="518" height="526"&gt;&lt;/a&gt;&lt;/p&gt; &lt;p&gt;In a large bowl, I combined small, bite-size pieces of kale with 2-3 tablespoons of that super yummy &lt;a href="http://www.glutenhatesme.com/2012/05/easy-cilantro-shallot-vinaigrette.html" target="_blank"&gt;Cilantro Shallot Vinaigrette&lt;/a&gt; that I love. To me, the key to a good kale salad is: THE MASSAGE.&lt;/p&gt; &lt;p&gt;Once I added the vinaigrette to the salad, I used my hands to basically knead the kale with the vinaigrette for about 5 minutes. That cuts the bitterness from kale, and makes it less tough. Massaging the kale also reduces it in size a bit, so I keep massaging until that happens. &lt;/p&gt; &lt;p&gt;Then I added sliced roma tomatoes and big chunks of avocado. Mmmmmm avocado. &lt;/p&gt; &lt;p&gt;Packed it up and enjoyed it for lunch later that day! And you know, the vinaigrette had enough acid in it, that the avocado barely browned! &lt;/p&gt; &lt;p&gt;Next time, I would love to add some shaved purple cabbage and carrots for more crunch. They literally had a list of like 10 farms on the wall that their offerings for the night came from, and the cool thing is that I actually recognized the names!&lt;/p&gt; &lt;p&gt;All of their meats come from local meat vendors that I know, love, and trust. I knew the meal was going to be special, but I had no idea it would be the best meal I’ve eaten in a LOOOOOONG time!&lt;/p&gt; &lt;p&gt;&lt;a href="http://www.wakingupjournal.blogspot.com/"&gt;Parrish&lt;/a&gt; and I were having trouble choosing, so we decided to share a few different dishes. Our first course:&lt;/p&gt; &lt;p&gt;&lt;img src="https://sphotos-a.xx.fbcdn.net/hphotos-prn1/11993_617273501634987_1275936011_n.jpg" width="501" height="501"&gt;&lt;/p&gt; &lt;p&gt;gluten free shrimp dumplings&lt;/p&gt; &lt;p&gt;Crispy, chewy, and full of flavor. I can’t event remember the last time I ate a nice crispy dumpling! And in a restaurant?! Probably never. Ugh. So good. &lt;/p&gt; &lt;p&gt;Our second course:&lt;/p&gt; &lt;p&gt;&lt;img src="https://sphotos-b.xx.fbcdn.net/hphotos-ash4/428510_617274518301552_904783220_n.jpg" width="504" height="504"&gt;&lt;/p&gt; &lt;p&gt;the best thing I’ve ever eaten. Ever. Ever. Seriously. Ever.&lt;/p&gt; &lt;p&gt;Toasted Seaweed rolls filled with pork belly, shiitake mushrooms, sweet red peppers, and cilantro. &lt;/p&gt; &lt;p&gt;I can’t even describe it. I’m not going to do it justice. Salted pork belly is delicious on its own. Throw in shiitake mushrooms deep in flavor and a hint of crisp, sweetness from the peppers. Man. So good. &lt;/p&gt; &lt;p&gt;Third course:&lt;/p&gt; &lt;p&gt;&lt;img src="https://sphotos-b.xx.fbcdn.net/hphotos-prn1/922802_617275274968143_923094061_n.jpg" width="495" height="495"&gt;&lt;/p&gt; &lt;p&gt;A flavorful broth with DELICIOUS bits of brisket, local greens, local egg, spongy rice cakes, and scallion.&lt;/p&gt; &lt;p&gt;So much flavor. So many textures. Honestly I was tempted to snatch Parrish’s spoon and eat it all myself. &lt;/p&gt; &lt;p&gt;The final course:&lt;/p&gt; &lt;p&gt;&lt;img src="https://sphotos-b.xx.fbcdn.net/hphotos-snc6/168224_617275668301437_365457162_n.jpg" width="492" height="492"&gt;&lt;/p&gt; &lt;p&gt;The perfect portion of a gluten free chocolate torte. Rich, sweet, dark, chocolatey. I know I’ve said it like 10 times already, but….&lt;/p&gt; &lt;p&gt;SO GOOD!&lt;/p&gt; &lt;p&gt;Over 75% of &lt;a href="http://kimbapcafe.com/kimbap-menu/" target="_blank"&gt;Kimbap&lt;/a&gt;’s menu is gluten free! Win, Win, Win. &lt;/p&gt; &lt;p&gt;Yes, it does take a little bit of time, but it’s worth it for me. &lt;/p&gt; &lt;p&gt;And I’m not saying that I ALWAYS feel like doing it. Yesterday was a prime example of lacking motivation. &lt;a href="http://www.wakingupjournal.blogspot.com/"&gt;Parrish&lt;/a&gt; and I had a big, FUN weekend with &lt;a href="http://www.glutenhatesme.com/p/gluten-free-bride-to-be.html" target="_blank"&gt;MOH&lt;/a&gt; and friends. So by the time Sunday rolled around, all I wanted to do was lay around. &lt;/p&gt; &lt;p&gt;But I reminded myself of my busy week, AND all that I want to be able to accomplish. Which is nothing when compared to how much time and sanity it will save me through out the week. Plus I caught up on The Office while I prepped!&lt;/p&gt; &lt;p&gt;It was mostly cleaning, chopping, and roasting. Easy enough. I said yes, not realizing how busy my life was about to become. Long story short, I’m just now getting around to trying it AND I wish I had tried it sooner!&lt;/p&gt; &lt;p&gt;Each serving of pasta only has 20 calories and no fat. When first opened, these noodles smell like fish. Don’t despair, simply rinse and then rinse again under cold water. In no way do they taste like fish or should they taste like fish. It must be a side effect from being packed in water. &lt;/p&gt; &lt;p&gt;Second tip: Pre-cut these noodles! They are incredibly long, so when you prepare them in a recipe, pre-cut the noodles before serving.&lt;/p&gt; &lt;p&gt;And third: don’t let the above two tips scare you! I will definitely be buying these noodles again. BUT we enjoyed the smaller more intimate setting, and I personally thought that some of the stalls had better looking produce than the Downtown stalls. &lt;/p&gt; &lt;p&gt;We picked up some gluten free soups that I can’t wait to tell you about later this week. What I love most about this recipe, is that you aren’t actually making a veggie burger. Instead, you are making a veggie burger BUN! &lt;/p&gt; &lt;p&gt;Take that gluten! We don’t even need you in this recipe!&lt;/p&gt; &lt;p&gt;You can find the &lt;a href="http://www.101cookbooks.com/archives/001567.html" target="_blank"&gt;recipe HERE on 101 Cookbooks&lt;/a&gt;. &lt;/p&gt; &lt;p&gt;If you’re just making it for two, just halve the recipe! That’s what I did. It makes three large sized veggie burgers. &lt;/p&gt; &lt;p&gt;You can stuff it with whatever you like! We chose robusto cheese, fresh guacamole, and sunflower shoots. Luckily I still have some cut veggies and grab and go fruit left over. So this week I was focused on breakfast. &lt;/p&gt; &lt;p&gt;I don’t know what it is about breakfast that always leaves me stumped. &lt;/p&gt; &lt;p&gt;I’m usually rushing out to go to the gym, and breakfast is more like an after thought. Dijon Mustard&lt;/p&gt; &lt;p&gt;1 tbsp honey&lt;/p&gt; &lt;p&gt;2 tbsp finely minced shallot&lt;/p&gt; &lt;p&gt;1/2 tsp. salt ; 1/4 tsp. pepper&lt;/p&gt; &lt;p&gt;1/2 cup heavy cream&lt;/p&gt; &lt;p&gt;Start by poaching the garlic in the olive oil. To do this, place the olive oil and the garlic in a small saucepan and allow to cook on the stove at medium low for about 20-25 minutes, or until the garlic softens and browns. Set aside to cool completely.&lt;/p&gt; &lt;p&gt;Once cool, remove the garlic carefully and roughly chop.&lt;/p&gt; &lt;p&gt;Combine vinegar, mustard, honey, garlic, shallot, salt, and pepper in a medium bowl. Whisk well. It’s got a vinaigrette bite with a creamy finish. Vacations are fun. But routines are also fun. Packed lunches and meal planning are fun. Well…at least, they’re fun to me!&lt;/p&gt; &lt;p&gt;So in the spirit of fun, I spent a big chunk of time yesterday buying groceries, prepping veggies for snacks, and juicing. As a child I had a constant playmate. We rarely fought. We’d play G.I .Joe’s together and have them come home to Barbie after a long day at war. (Barbie didn’t seem to mind the size difference)  &lt;p&gt;As teenagers, we still had a lot of fun together. Weekends were spent playing video games or having movie marathons. Eesh.  &lt;p&gt;As an adult, being a twin is still fun. Hard but fun. My brother’s job keeps in Los Angeles, WAY over on the west coast. Unfortunately it’s just IN ADDITION to that. &lt;/p&gt; &lt;p&gt;What’s causing the CLOUD? Who knows. Really. I don’t know. I can speculate that maybe it’s my looming BIG birthday. Now only 4 days away. Or it could be my lack of exercise this week due to my declining health. &lt;/p&gt; &lt;p&gt;I guess the cause doesn’t really matter. I can’t pin point it. Instead, I am determined to shake it off. And friends, God is ready for me to shake it off too!&lt;/p&gt; &lt;p&gt;Last night I was at Target waiting for my prescription. Due to an error at my doctor’s office, I ended up sitting and waiting for two hours. Typically I would be happy to spend two hours in Target. But not yesterday. &lt;/p&gt; &lt;p&gt;So I’m sitting on this bench and I can feel the cloud. I was feeling terrible, and was literally throwing myself a pity party. Then a woman just started talking to me. &lt;/p&gt; &lt;p&gt;She told me how her one year old daughter has the flu, and multiple pharmacies were out of the medicine she needs. She had driven around town only to wait for hours and get turned away. She had to miss work, and she lives pay check to pay check. She was frustrated and tired, but once she told me this, she started telling me funny stories about her daughter. Her face lit up and she started laughing as she relayed her daughter’s latest triumph. She wasn’t going to let her day get her down. &lt;/p&gt; &lt;p&gt;And it hit me. Perspective. &lt;/p&gt; &lt;p&gt;WHAM!&lt;/p&gt; &lt;p&gt;It is so easy to become completely self-involved. (Ummm…hello! I write a personal blog!) I could have sat on that bench and been selfish; I could have only thought about myself. &lt;/p&gt; &lt;p&gt;But God continues to open my heart AND my eyes. This world is FULL of other people. And there are WAY WORSE situations than double ear infections plaguing millions of people.&lt;/p&gt; &lt;p&gt;Perspective. &lt;/p&gt; &lt;p&gt;So take that negative CLOUD. Get outta here. Because today I choose to see the world for others. Time is FLYING by; I still feel like it should be February! &lt;/p&gt; &lt;p&gt;The plus side of it being April means that it’s only SEVEN days until my birthday! The negative side of that is that I only have SEVEN days left in my 20’s!&lt;/p&gt; &lt;p&gt;But – let’s not talk about my looming entry into the 30’s club. INSTEAD let’s talk about the dreamy weekend I had!&lt;/p&gt; &lt;p&gt;Saturday was a little bit of a work day, in that my co-worker and myself attended a city-wide event to represent One World Market.The event was a GIANT Easter Egg Hunt. Plus, I seriously love little kids. They would get so excited when they would score a point. So stinkin’ cute!&lt;/p&gt; &lt;p&gt;&lt;a href="http://www.wakingupjournal.blogspot.com/"&gt;Parrish&lt;/a&gt; came along to help. The proximity of food trucks to the event may have had something to do with that, but either way, I am lucky to have such a supportive partner!&lt;/p&gt; &lt;p&gt;Sunday Parrish and I had a pretty laid back morning. Gluten free pancakes were made; Groceries for the week were bought. &lt;/p&gt; &lt;p&gt;After lunch Parrish and I headed to my parent’s house to celebrate Easter and have supper together. It was a great visit; I am so thankful to live within two hours of my parents!&lt;/p&gt; &lt;p&gt;LUCKILY we made it home in time to watch two of our favorite shows: The Walking Dead and The Game Thrones. I knew they were gluten free, plus they were easy to prepare. As it turns out, a line dancing class was scheduled at the same time as the last half of our Zumba class!&lt;/p&gt; &lt;p&gt;I was skeptical…&lt;/p&gt; &lt;p&gt;&lt;a href="http://lh3.ggpht.com/-eAdtPe4gLwM/UVD5brxQhmI/AAAAAAAAG_k/RE4PKYjj7sk/s1600-h/photo%25255B5%25255D.jpg"&gt;&lt;img style="background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: inline; border-top: 0px; border-right: 0px; padding-top: 0px" title="photo" border="0" alt="photo" src="http://lh4.ggpht.com/-r-ns3KYfUVs/UVD5cMnPEBI/AAAAAAAAG_s/D8qzMknFNIc/photo_thumb%25255B2%25255D.jpg?imgmax=800" width="517" height="527"&gt;&lt;/a&gt;&lt;/p&gt; &lt;p&gt;but most everyone in Zumba stayed to finish. Even Lu, she’s amazing, stayed and kept dancing. In the end…sweat is sweat right? And MAN, did I ever sweat!&lt;/p&gt; &lt;p&gt;When I got home I was pretty hungry, so I just started cooking components. What a FUN weekend!&lt;/p&gt; &lt;p&gt;Saturday’s Girls Day to find my sister Susan a wedding dress was a success! Group USA at Concord Mills is the best! They let you look through dresses yourself, and you can all go in the dressing room to help the bride. No sales attendant needed!&lt;/p&gt; &lt;p&gt;The day ended with a big family supper and a late night dance party! &lt;/p&gt; &lt;p&gt;If you’ve never turned up the tunes and had a dance party with your nieces, I highly recommend it. You will go down in history as the funnest aunt/uncle ever…with the &lt;strike&gt;best&lt;/strike&gt; funniest dance moves. &lt;/p&gt; &lt;p&gt;Sunday morning I woke up feeling a bit frazzled. Their burgers are delicious, and they focus fiercely on sourcing from local food producers. They actually make their own gluten-y buns, but keep Udi’s on hand for their gluten free customers. &lt;/p&gt; &lt;p&gt;The above burger was topped with cheddar, bacon, an over-easy egg (duh!!),and garlic aioli. &lt;/p&gt; &lt;p&gt;Their fries are cooked in a shared fryer, but when you have a burger like this: who cares?!&lt;/p&gt; &lt;p&gt;*********************&lt;/p&gt; &lt;p&gt;I have this weekend off from work, and I’m headed to meet up with &lt;a href="http://www.glutenhatesme.com/2010/01/love-sissie.html" target="_blank"&gt;bestie&lt;/a&gt;, my mom, sissie, and my niece Chloe to go wedding dress shopping.
