<p>The food guru will be hosting three, 30-minute cooking demonstrations in her pop up kitchen at <a href="http://www.robinatowncentre.com.au/">Robina Town Centre</a> on May 25.</p>
<p>As an added bonus, visitors to <a href="http://www.robinatowncentre.com.au/">Robina Town Centre</a> who spend more than $50 at any fresh food store or outlet between May 23 and June 19 will receive a Kikki-K recipe organiser with 10 of Justine&#8217;s recipes.</p>

<p>To celebrate her Gold Coast arrival, Justine has shared two of her favourite recipes below with <em>GCM</em> readers. Enjoy!</p>

<p><strong><span style="text-decoration: underline;">Pork cutlets with Asian mushroom and bok choi stir-fry</span></strong></p>
<p><strong><span style="text-decoration: underline;"> </span></strong></p>
<p>Serves 4</p>
<p>Time: 30 minutes</p>
<p>1 tbs. vegetables oil</p>
<p>4 pork cutlets, around 250g each</p>
<p>Salt and pepper</p>
<p>&nbsp;</p>
<p>2 tbs. vegetable oil</p>
<p>1 knob ginger, finely grated</p>
<p>2 clove garlic, finely chopped</p>
<p>350g mixed mushrooms, such as shitake, oyster, black fungus and shimeji</p>
<p>1 bunch bok choi, cut in 4 and cleaned well</p>
<p>1 tbs. soy sauce</p>
<p>3 drops sesame oil</p>
<p>2 tbs. Shaoxing wine</p>
<p>1 tbs. chilli soybean paste (or any chilli past or sauce of your liking)</p>
<p>1 bunch spring onion, cut into 3 cm batons</p>
<p>&nbsp;</p>
<p>Heat vegetable oil in a large frying pan on a medium heat. Season the chops with salt and pepper and fry for 4-5 minutes on each side, turning frequently.</p>
<p>Rest the meat for 2 minutes once cooked.</p>
<p>While the chops are cooking heat a wok on high heat. Add the vegetable oil then the ginger and garlic. Add the mushrooms and fry for 1 minute or until lightly coloured. Add the bok choi and the soy, sesame oil, wine and bean paste. Stir-fry for another few seconds and then finally add the spring onions. Toss all the ingredients one last time.</p>
<p>Distribute the mushroom stir-fry between four plates then top with the pork chop.</p>

<p>&nbsp;</p>
<p><strong><span style="text-decoration: underline;">Easy Raspberry sorbet</span></strong></p>
<p><strong><span style="text-decoration: underline;"> </span></strong></p>
<p>Serves: 6-8</p>
<p>Time: 3 hours</p>
<p>600g frozen raspberries, defrosted</p>
<p>1 cup of caster sugar</p>
<p>100ml water</p>
<p>1 ½ tsp. lemon juice.</p>
<p>1 egg white</p>
<p>&nbsp;</p>
<p>Make a sugar syrup by bringing to the boil the sugar and water. Allow it to thicken slightly before taking off the heat and cooling slightly.</p>
<p>Process raspberries in a food processor and strain through a sieve to remove the seeds.  Mix the sugar syrup and lemon through the raspberry puree and pour into a large tray that will fit into the freezer. Freeze until almost frozen.</p>
<p>Now break up the iced raspberry puree and process again in the food processor. With the motor still going slowly add the egg white until well combined and glossy.</p>
<p>Place this sorbet mixture into a container and re-freeze until set before serving.</p>
<p>Note: To make this sorbet extra glossy and smooth, process the mixture again after freezing for the second time.</p>

<p>Future Music Festival, we meet again. As expected, the festival continued through the torrential rain and mud at Doomben Racecourse, Brisbane which couldn’t have been the nicest introduction to the headlining artists. The set times changed dramatically with Avicii calling in sick and Rita Ora having a throat infection which meant most main stage acts had elongated sets including the Stafford Brothers and Temper Trap.</p>

<p><a href="http://www.thetempertrap.com/">The Temper Trap</a> drummer, Toby Dundas was kind enough to take five out of his band&#8217;s hectic touring schedule to answer a few questions for <em>GCM</em>.</p>
<p><strong><em>Congratulations on a big 2012 for Temper Trap, what were some of the highlights of your tour and of course completing your album?</em></strong></p>
<p>The album going #1 and then playing two nights at the Opera House. Spending a week on a train as part of the Africa Express Tour. Performing at the AFL Grand Final and opening for Coldplay and winning a couple of ARIAs was a nice way to finish off the year.</p>
<p><strong><em>Have you had much of a chance to think about new tracks/do any writing for album three?</em></strong></p>
<p>We had a break from touring over the last three months so we have been in our practice space most of that time working on new tunes.</p>
<p><strong><em>And lastly, what is the worst or funniest situation you’ve ever been in at a concert or festival? </em></strong></p>
<p>Festivals are obviously a different vibe. We were actually at a festival like today that was pouring down with rain. It was just before we were supposed to head onto stage when we were told it was too dangerous because of the torrential rain to finish our act so we went up on stage to apologise to the crowd and they ended up throwing food and shoes and bottles at us! I’m hoping that doesn’t happen again today!</p>
<p>The Sunshine State became the Sodden State with heavy rain hitting Brisbane for <a href="http://www.futureentertainment.com.au/futuremusicfestival/">Future Music Festival</a> however these Brissie punters didn’t let a little mud underfoot get in the way of a party even with a few casualties along the way.</p>

			<content:encoded><![CDATA[<p>Here at <em>GCM</em> we love nothing more than checking out what threads the local fashionista&#8217;s are wearing. With this in mind we welcome our new contributor Alicia Rose from <a href="https://www.facebook.com/trend.gc?fref=ts">GC TREND </a>and Gold Coast Blogger. Alicia Rose will be keeping us in the loop with the latest trends seen about town, who was wearing them and where they were snapped.</p>
<p>Alicia Rose is originally from Melbourne and has been based on the Gold Coast for just over a year. Currently running popular fashion network GC TREND, this city’s official fashion and lifestyle social network, she keeps busy being in the know with the latest news in fashion, dining and events here on the Gold Coast. Also currently developing GC TREND’s up and coming sister blog, Gold Coast Blogger, a behind the scenes personal scope, Alicia aims to engage an audience and strong following nationally, to expose what the Gold Coast truly has on offer.</p>
<p>With a background in modeling, acting and fashion design and styling, Alicia has a strong knowledge of the Australian fashion and entertainment industry, and has experience working closely with several established Australian designers and widely known film and television productions.</p>

<p>Amazeballs</p>
<p>Makes 12-15 balls</p>
<p>Ingredients:</p>
<p>2 cups quinoa oat flakes or Forage porridge (gluten-free option) or rolled oats.</p>
<p>1 cup pitted dates, roughly chopped</p>
<p>1/2 cup of shredded coconut</p>
<p>1/2 cup sultanas</p>
<p>1/2 cup almonds</p>
<p>2 tbs organic peanut butter</p>
<p>1 tbs cocoa powder</p>
<p>2 tbs honey</p>
<p>2 tbs water</p>
<p>1 tsp vanilla extract</p>
<p>Method:</p>
<p>Put all ingredients apart from the water into a food processors and blend until it has the consistency of breadcrumbs. Add the water and continue to process until it becomes sticky enough to roll into balls.</p>
<p>Use a tablespoon to measure the mixture and roll into firm balls. Roll in coconut to make the outside look pretty and store in an airtight container in the fridge.</p>
<p>Note: You will need to make sure the peanut butter is a good quality pesticide free variety. If your guests are anaphylactic and cannot consume peanuts you might like to add a different type of nut butter or cold pressed organic coconut oil instead.</p>

			<content:encoded><![CDATA[<p>With Mother&#8217;s Day just around the corner we decided to dedicate our feature story this issue to the women in our community who have spent their lives, and often livelihoods to helping others. When we started researching The Nurturers we were amazed at the number of women in our community who have a passion to provide for those in need and help out those less fortunate. To nurture is to nourish, to educate and to help grow or develop cultivate. We hope you enjoy reading the inspiring stories of this select group of amazing Gold Coast women.</p>
<p>1. Andrea Lee</p>
<p>CEO of <a href="http://www.ohana.org.au">Ohana for Youth</a>, a not-for-profit organisation that gives teenagers as alternate avenue to complete their schooling. Just this month she has opened the doors at Arcadia College, an exclusive institution for students who have disengaged from mainstream schooling. Andrea is passionate about every teenager receiving an education.</p>

<p>2. Julie Marsh</p>
<p>Mother-of-three, part-time university student and regional assistant at Master Builders Queensland, Julie is passionate about assisting women in the building industry. Julie recognises the important role women play in small to medium size businesses and wants to ensure these women feel supported and equipped with the tools to ensure their businesses survive. She has created Women in Building, a networking group and was awarded  the 2013 IWD Community Service Award.</p>

<p>3. Ruth Knight</p>
<p>Ruth has worked with homeless youth for most of her adult life however these days she focuses her attention on young mums and teenage girls. Ruth created <a href="http://www.lifehouse.org.au">Lifehouse Project</a> to support homeless mothers on the Gold Coast. She has since gone on to create a program called Girls with a Purpose to teach young women about self esteem. From this program the concept of the Princess Party was born. Ruth is also a mother of two and has her own consulting company. She is also studying a PHD in not-for-profit management. In 2000 Ruth was acknowledged for her work with homeless youth with a Centenary Medal.</p>

<p>4. Susie Douglas</p>
<p>She has been involved with politics for years as a councillor and was formerly the senior vice president of the Queensland National Party and spouse of a state independent member of Parliment, however, at her very core Susie Douglas is a devoted mother of four with a passion for her community. She is also a breast cancer survivor.</p>

<p style="text-align: left;">As the CEO of <a href="http://www.fsg.org.au">FSG Australia</a>, Vicki Batten sits at the helm of one of Gold Coast&#8217;s largest community organisations. She is passionate about lending a hand to those who are trying to get ahead in life and has been instrumental in creating programs and infrastructure to assist those in need. She is also a mother of four and a grandmother to 10.</p>

<p style="text-align: left;">Sue Spence has always been passionate about natural horsemanship and now she uses these skills through her company <a href="http://www.horseshelpinghumansaustralia.com">Horses Helping Humans</a> where she teaches effective communication skills, self-confidence, trust and respect. From high-flying corporates to troubled teens, Sue has helped thousands with her program.</p>

			<content:encoded><![CDATA[<p>It&#8217;s almost clock-off time and a weekend full of dinner dates and catch-ups is just around the corner. If you are in need of a little hair inspiration to shock the pants off your girlfriends this Friday night then we have just the look for you.</p>
<p>Our inbox has been jam-packed this week with trend reports and beauty updates as designer&#8217;s showcase the next big thing at MWFWA. One designer that stood out from the crowd and that was Gold Coaster Leah Madden&#8217;s latest collection for White Sands. Yes the collection was to die-for but what really caught our attention was the hair created by Paloma Rose Garcia from Oscar Oscar as Redken MBFWA Hair Director. The style featured gently tousled S-shaped waves with a distinct 1960&#8242;s feel.</p>

<p>“I met Leah and she showed me a couple of samples from the collection; the printswere really soft with a 50s, 60s feel to it and I wanted that softness to come through the hair. It’sthe backcombing at the crown which is really key to accentuate the 60s feel,” explains RedkenHair Director, Paloma Rose Garcia backstage.</p>
<p>Get The Look:</p>
<p>1. Apply Redken Rootful 06 to the root area for lift. Follow by moussing the hair with Guts 10 for body and volume. Apply to roots and work the product through the midlengths to ends. Completely dry off the hair.</p>
<p>2. Create a low side part. Use the centre of your eye as the starting point, pulling back diagonally to the crown.</p>
<p>3. Start curling on the lower side, beginning with the lengths at the back. Spray each section first with Fashion Works 12 hairspray, wrapping the hair towards the face. Pin to scalp and leave to cool.</p>
<p>TIP: Don’t curl above the brow to keep a relaxed wave rather than bouncy curls.</p>
<p>4. Remove pins and shape wave with a soft bristle brush. Finish with Fashion Works 12 tohold style in place.</p>
