I quite like Jumpchart - Simple Website Planning and Wireframing - it doesn’t do complex layouts, but the results really do look like a mockup and not like a finished website.

There’s a SharePointUEResources PDF which contains links to online resources dealing with SharePoint user experience and branding.

I personally haven’t found a “definitive guide” in paper format yet, but have found the online resources immensely helpful in pointing me in the right direction.

For those of us just starting out in design and UX for WSS/MOSS 2007, is there a definitive book (or books) that you would recommend? I’ve been to Amazon and Chapters, but get lost in a sea of publications that don’t touch on the bullet points listed above; exactly the ones most important to me.
