Our very own VP told us that he wouldn’t take public transportation in fear of being coughed on and catching the flu, even though millions of Americans rely on subways, buses and trains to commute to work daily.  The media has missed a major point that needs to be addressed. You cannot “catch” the flu (swine, bird, or even the common cold) unless your body’s immune system is weakened. So what can we do to boost our immunity which is responsible for fighting off viruses, bacteria, and even cancerous cells? A mini lesson in immune anatomy is probably a good first step. So here goes: &lt;br /&gt;&lt;br /&gt;Lymph What?&lt;br /&gt;The lymphatic system makes up 1/6th of our entire body. There is more lymph in our body than blood. Lymph is the fluid that sits in between our cells and acts as the sewage system collecting waste and debris. It moves through the lymphatic vessels to the lymph nodes where it is filtered. Exercise, massage and a healthy alkaline diet help move lymph through the body efficiently. &lt;br /&gt;&lt;br /&gt;Thymus Who?&lt;br /&gt;Thymus sits below your thyroid and above your heart and is the mediator of the whole immune system.  The thymus produces T lymphocytes which are white blood cells that are responsible for cell mediated immunity which helps resist infections by bacteria, yeast, fungi, parasites and viruses. &lt;br /&gt;&lt;br /&gt;The Mean Spleen  &lt;br /&gt;The spleen's functions include: producing white blood cells; engulfing and destroying bacteria and cellular debris; and destroying worn-out red blood cells and platelets. &lt;br /&gt;&lt;br /&gt;There is no single magic bullet to boost your immune system. This system works only holistically to combat its relentless attackers. It’s fuel must combine all of the following: a healthy diet, lifestyle, mindset, exercise program, and nutritional supplementation when needed. Can you guess what the most important ingredient of this wellness soup is?....... CONSISTENCY. &lt;br /&gt;&lt;br /&gt;In order to be successful at anything in life you have to be consistent. Your state of health and the immune system are no exception to this universal rule. Lance Armstrong didn’t win his races and beat cancer from skipping workouts and eating junk food. Bruce Lee wasn’t one of the greatest fighters because he sat on his couch and watched reality TV. Champions train every day. In general, we need to take greater responsibility for our health and not look to vaccines or pills to do the job for us. We need to train our bodies every day and nourish them with the proper fuels to do so. I haven't done it in a while but I have come across a new favorite product for people with similar lifestyles to mine; busy, athletic, active, and trying to find balance and peace to promote health and wellness. &lt;br /&gt;&lt;br /&gt;I have come across Tiger Balm's new product which is a neck and shoulder rub. I have been using it on my neck and shoulders, where I hold tension (and I'm sure I'm not the only one). My mother has even been using it on her hands to relieve pain in her joints. &lt;br /&gt;&lt;br /&gt;I have been a long time fan of tiger balm as a martial artist when you could only find it in obscure places like in Chinatown pharmacies. So, now that you can find it in Duane Reade I just had to let you know. A cup of kale supplies 93.6 mg of calcium (9.4% of the daily value for this mineral) for only 36.4 calories. In contrast, a cup of 2% cow's milk provides 296.7 mg of calcium, but the cost is high: 121.2 calories and 14.6% of the day's suggested limit on saturated fat. So more calcium for less calories. If you aren't ready to eat batches of kale, start slow by throwing chopped kale into stir fries, soups or pasta dishes like this one below:&lt;br /&gt;&lt;br /&gt;1/2 (16 ounce) package whole-wheat pasta (your favorite shape) &lt;br /&gt;2 tablespoons olive oil &lt;br /&gt;1/2 large onion, sliced  &lt;br /&gt;2 cloves garlic, minced &lt;br /&gt;1 teaspoon red pepper flakes &lt;br /&gt;1 tablespoon drained capers &lt;br /&gt;1 (2 ounce) can anchovy fillets, drained and quartered  (Optional) &lt;br /&gt;1 cup canned diced tomatoes, undrained &lt;br /&gt;3 cups coarsely chopped kale &lt;br /&gt;1 (4 ounce) can sliced black olives, drained &lt;br /&gt;1/2 cup grated Parmesan cheese, or to taste &lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. &lt;br /&gt;&lt;br /&gt;Meanwhile, heat olive oil in a large skillet over medium-high heat. Add onions, garlic, and red pepper flakes. Cook and stir until the onion has softened and begun to turn golden brown, about 5 minutes. Stir in capers, anchovy fillets, and diced tomatoes, and bring to a simmer. Stir in kale, and simmer over medium-low heat until wilted and tender, about 10 minutes. &lt;br /&gt;&lt;br /&gt;Once the pasta has cooked and been drained, stir into the puttanesca along with the black olives. Add the water, stock and greens and let everything cook until tender. About 10 minutes or less. Put leafy greens in towards the end so they don't become mushy. Add your seasonings. Use a hand blender to puree the soup or, blend in batches in a regular blender—be careful because this is hot and splatters easily. Some may say that Peanut Butter Cups covered in chocolate aren't healthy. But they are a lot healthier than what you find in the supermarkets. When you or your kids want something that resembles candy without the crazy amounts of sugar, HFCS, and artificial chemicals and preservatives, this is a great treat. &lt;br /&gt;&lt;br /&gt;1 cup peanut butter (natural and creamy)&lt;br /&gt;1/2 cup sugar&lt;br /&gt;1 1/2 cups of vegan chocolate chips&lt;br /&gt;1/4 teaspoon salt&lt;br /&gt;12 paper muffin cups&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;Cut the top half of the muffin cups to where they are about half the original height.&lt;br /&gt;&lt;br /&gt;Melt the chocolate chips either over the stove on low heat or putting them in a waterproof bag and dunking them in hot water.  &lt;br /&gt;Using a spoon or paint brush spread the chocolate evenly within the muffin cups making sure you fill the crevices on the sides.  Place the coated muffin cups in the freezer so that the chocolate hardens.&lt;br /&gt;&lt;br /&gt;In a separate bowl combine the peanut butter and salt and fold in the powdered vegan sugar.&lt;br /&gt;&lt;br /&gt;When the chocolate cups have hardened put the peanut butter mixture into the microwave for 1 minute.  Wait a minute for it to cool and then bring out the chocolate cups.&lt;br /&gt;&lt;br /&gt;Spoon the peanut butter into the chocolate cups leaving a little room for the top layer of chocolate. You have the option of putting the top layer of chocolate on now or after the peanut butter has hardened in the freezer. Both ways work just as well in my opinion. Whether it is true or not, oysters are loaded with zinc, which helps boost the immune system. &lt;br /&gt;&lt;br /&gt;Chili Peppers: The heat that comes from these bursts of fire is from capsaicin. It raises our pulse and releases endorphins. Add it to pasta or sprinkle it (dried) onto some greens to give it the extra kick.  &lt;br /&gt;&lt;br /&gt;Fennel: Also used as a digestion aid, the Egyptians considered this veggie a libido enhancer. Try it in a salad or plain and raw in between courses. &lt;br /&gt;&lt;br /&gt;Truffles: The musky scent of truffles were said to enhance the senses according to the ancient Greeks and Romans. They are expensive so use sparingly. This year brings an added pressure to some with economic trouble looming in the forecast. So how do we keep our heads above water and our immune systems from plummeting? &lt;br /&gt;&lt;br /&gt;1. Most importantly, mental health and sanity through this season is key. Stress breaks down the immune system and makes our bodies more vulnerable to foreign invaders like the flu. Remember that the holidays don't have to be about expensive gifts and pretty wrapping paper. If money is a concern suggest a "Secret Santa" plan with friends and family. Perhaps instead of spending money, spend your time and volunteer at an organization that needs help. This year especially charities are hurting and can use our time and resources. If you don't have time or money to give, do a massive house cleaning and donate old clothes, blankets, and gadgets. This will also help you manage your spiritual health as well by feeling good by being of service as well as purging things that no longer serve you to let in newness for the new year. &lt;br /&gt;&lt;br /&gt;2. Boosting your immune system from the inside out is another key to remember this season. Load up on foods that are high in antioxidants like pomegranite seeds, green tea, blueberries, and even spices like cinnamon and oregano. Vitamin C rich foods like papaya, kale, kiwi, broccoli and of course ,citrus fruits, are also great to add to your arsenal. Don't put your fitness routine on hold, now is when your body needs it the most. Remember the healthier you are the more immune you are to "catching" a cold. The overwhelming doom and gloom news leads to panic and fear. Fear, in turn leads to stress which happens to be a silent killer. When faced with constant stress, our bodies start to pump out hormones that can lead to obesity and high blood pressure while our minds tend to turn to martinis, cigarettes, anger or depression which in turn cause more internal stress. A lose-lose scenario. &lt;br /&gt;  &lt;br /&gt;Everybody needs an outlet for stress and exercise is the perfect antidote. Exercise is an investment of time and strength but yields great assets over time. Exercise can lower blood pressure, cholesterol levels, and weight and at the same time increase your metabolism, confidence, and endorphin levels making you feel more energetic than before you started. It’s almost instant gratification! If committed to a ritual of exercise as a part of your lifestyle for the long haul (along with eating well, of course) than you will significantly reduce your risks of heart disease, cancer, and stroke, the top three U.S. killers according to the National Center for Health Statistics (http://www.cdc.gov/nchs/FASTATS/lcod.htm). You will also lower your risk of diabetes which is number 6 on the list. Sounds like a win-win, right?  &lt;br /&gt;&lt;br /&gt; So how many times a week should one invest in exercise? Some people (including some of my clients J) seem to think that twice a week is a sufficient deposit. However, current guidelines set by the American Heart Association and ACSM (American College of Sports Medicine) for adults under the age of 65 are: &lt;br /&gt;&lt;br /&gt;Moderately intense cardio 30 minutes a day, five days a week&lt;br /&gt;Or&lt;br /&gt;Vigorously intense cardio 20 minutes a day, 3 days a week&lt;br /&gt;And&lt;br /&gt;Eight to 10 strength-training exercises, eight to 12 repetitions of each exercise twice a week. &lt;br /&gt;&lt;br /&gt;Just keep in mind that these guidelines are set for the average American. If you consider yourself in better shape than the average American (which I hope you all strive for at least that), than we need to up the ante on these guidelines. Working harder for better results will set you ahead of the pack. And you don't have to share your results with anyone else. They're all yours!  &lt;br /&gt;&lt;br /&gt;Some things, like the stock market, are just out of our hands. Our health is one major thing that we have control over. And your body is the best asset you can invest in. There’s only about 10 weeks left before 2009. A lot can be accomplished in 10 weeks. Enjoy!&lt;br /&gt;&lt;br /&gt;INGREDIENTS:      &lt;br /&gt;&lt;br /&gt;What you need:  &lt;br /&gt;A blender  &lt;br /&gt;18 oz tofu (firm or extra firm)&lt;br /&gt;2 cups canned or cooked pumpkin  &lt;br /&gt;2/3 cup pure maple syrup&lt;br /&gt;1 teaspoon vanilla&lt;br /&gt;1 teaspoon ground cinnamon&lt;br /&gt;1/2 teaspoon ground ginger&lt;br /&gt;1/4 teaspoon ground nutmeg&lt;br /&gt;1/4 teaspoon ground cloves&lt;br /&gt;1 unbaked 9-inch pie crust &lt;br /&gt;(you can buy a whole wheat one)&lt;br /&gt;                  &lt;br /&gt;What you do: &lt;br /&gt;Preheat oven to 350°&lt;br /&gt;Blend tofu in the blender until smooth&lt;br /&gt;Add remaining ingredients and blend well&lt;br /&gt;         &lt;br /&gt;Pour the mixture into the unbaked pie shell and bake for 50 minutes. I look forward to "pumpkin season" every year to make them!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;1 cup all-purpose flour &lt;br /&gt;3/4 cup whole wheat flour &lt;br /&gt;3 tbsp of agave nectar (or maple syrup) &lt;br /&gt;2 tsp baking powder &lt;br /&gt;1 tsp pumpkin pie spice &lt;br /&gt;1/4 tsp baking soda &lt;br /&gt;1/8 tsp salt &lt;br /&gt;1 beaten egg &lt;br /&gt;3/4 cup soy milk &lt;br /&gt;2 tbsp melted butter &lt;br /&gt;1/2 cup canned pumpkin &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Preheat oven to 375 degrees. In a large bowl stir together flour, agave nectar, baking powder, pumpkin pie spice, baking soda and salt. In a small bowl combine egg, soymilk, and butter; stir in pumpkin. Add to flour mixture and stir until moistened. Spoon batter into muffin cups, filling each about 2/3 full. Bake in the oven for 15 to 18 minutes or until a wooden toothpick inserted in centers comes out clean. Serve warm. Makes 12 muffins or double the recipe for a bigger batch! &lt;br /&gt; &lt;br /&gt;&lt;br /&gt;Healthful Hint: For vegan muffins replace the butter and egg with applesauce.   &lt;br /&gt;&lt;br /&gt;YUM IT UP: Add nuts and raisins for a more complete muffin. Or turn it into a cupcake with a creamcheese frosting!
