<p>2 bananas, sliced<br />

<p>Gently combine all of the fruit with the dressing and place into attractive serving dishes. Lightly sprinkle with unsweetened coconut flakes.</p>

<p>At a recent party, a two year old I adore had a full blown, way beyond the normal two-year old, melt down. So, she and Dad left the party early and when they got home to Mom, who gave the little one protein which immediately settled her down.</p>
<p>Mom had recently observed that her daughter seemed to require protein every few hours, or had severe temper tantrums. So this was the perfect time to double check the theory and it again proved true.</p>
<p>This begs the question, since studies say sugar doesn’t affect the behavior of children, could the behavior issues actually be caused by the lack of protein? This very conscious mom was really paying attention and her awareness of nutrition and her own child really paid off. I wonder how many children are given drugs, when it’s really a matter of a need for more protein, more often, in their diets. This family eats very healthy, balanced meals. No processed foods, mostly organic, lots of fruits, veggies and whole grains. What about the kids that head out after a breakfast of sugary cereals, or sweet rolls or nothing at all?<br />

<p><strong>Easy Healthy Breakfast Recipe # 1</strong></p>
<p><strong><em>Chestnut mushroom with scrambled eggs</em></strong></p>
<p><em>Serves 2</em></p>
<p>2 tbsp extra-virgin olive oil</p>
<p>2 large chestnut mushrooms (wiped and stalks removed)</p>
<p>2<span style="position: static; text-decoration: "> spring onions chopped diagonally</span></p>
<p>2 large eggs</p>
<p>1 tbsp mustard</p>

<p>Place a mushroom in the center of each plate and top with scrambled eggs.</p>
<p>Garnish with chopped chives and season with the freshly ground black pepper to taste.</p>

<p>2 eggs</p>
<p>1 c Santa Fe frozen mixed vegetables (black beans, peppers, and corn)</p>
<p>1 flour tortilla</p>
<p>1/2 c low-fat shredded Cheddar cheese</p>
<p>1/4 c salsa</p>
<p>Mix the eggs and vegetables and spread the mixture on a plate coated with nonstick spray. Cook in the microwave for 1 minute, stir with a fork, and microwave again until the eggs are cooked and the vegetables warm. Pile onto a flour tortilla, top with shredded Cheddar cheese and salsa, fold, and eat.</p>
<p>Per serving: <em>530 calories, 36 g protein, 53 g carbohydrates, 18 g total fat, 6 g fiber</em></p>

<p>2 Large eggs</p>
<p>2 tbsp milk, fat free</p>
<p>1/2 tsp cinnamon</p>
<p>1 tsp soft tub margarine</p>
<p>4 tsp light pancake syrup</p>
<p>Break two eggs into flat-bottomed bowl.</p>
<p>Thoroughly whisk in milk and cinnamon.</p>
<p>Dip bread slices, one at a time, into egg mixture in bowl</p>
<p>Make sure you wet both sides with the egg mixture.</p>
<p>Re-dip until all the egg mixture is absorbed into the bread.</p>
<p>Adults heat a large, non-stick skillet over medium heat and add butter.</p>
<p>Place dipped bread slices in skillet.</p>
<p>Cook for 2½-3 minutes per side, or until both sides are golden brown.</p>
<p>Kids: Drizzle the toast with syrup. Serve when warm.</p>

•	A child&#8217;s mouth is more sensitive than an adult&#8217;s so food should be warm or cool, (not hot or cold);<br />
•	Flavors should be mild, not spicy as a child has more taste buds than an adult<br />
•	Serve smaller portions to avoid waste and give your child a sense of accomplishment when he or she finishes her meal. Don&#8217;t encourage overeating or fussy eaters by forcing a child to eat everything on the plate if they don’t do it on their own.<br />
•	To introduce a new food, try serving it with a favorite food.<br />
•	If your child appears to have lost interest in the meal, or to dawdle, give him/her a reasonable time to eat (20-30 minutes) then quietly but firmly remove the food. Most children will eat when they are hungry. Do not force the issue.<br />
•	Likes and dislikes may appear suddenly. Be casual about these new food preferences. If no one pays special attention to these quirks, they will soon be forgotten.<br />
•	If your child prefers to eat with their fingers try giving them small sandwiches, raw veggies, meat cut into bite sizes, fruits and cheese cut into small pieces, and crackers spread with peanut butter, humus, yogurt or cottage cheese.<br />
