<p>On another note, we are very proud and happy about the revitalized look at Homebrew School, especially our All Star class. 			<content:encoded><![CDATA[<p><strong>Add Freshness to your Homebrew; Dry Hop!</strong></p>
<p>Hop pellets are easy to use, and can provide a good quality aroma,<br />
bitterness, and flavor to your beer. However, I’ve noticed every time<br />
that I dry hop a beer, it just tastes so fresh. It gives that extra zest<br />
of flavor and aroma, and your tongue just swells with bitterness.</p>
<p>Dry hopping is pretty simple. Check your local homebrew store (LHBS), and see<br />
what fresh hops they have sealed in their endless vault of hops. A lot<br />
of the time, LHBS have a wide variety of hop leaves that can be placed<br />
in your secondary fermentation vessel, preferably a glass carboy. Rack<br />
your beer into secondary fermentation, and simply put the hop leaves<br />
into the fermentation vessel. Leave it for 10-14 days, and you’ll notice<br />
a huge difference in how your beer smells and tastes once you rack into<br />
your bottling bucket and keg.</p>
<p>Be sure that your hop selection matches the beer style. Experiment<br />
and try new hops out, but don’t go over the edge and ruin the desired<br />
outcome of your homebrew. Cheers!!</p>

			<content:encoded><![CDATA[<p>Leaves changing color, temperatures dropping, and carboys ready to be filled. Fall<br />
is right around the corner, time to consider all the Fall brews you could make. Let<br />
me just say that Fall is the best time to brew. It’s beautiful outside, football season, and everything else in between. I love fall. And I love fall beers, too. </p>
<p>Some beers to consider brewing for this season. I would start off with an  Oktoberfest. Munich is about to celebrate the greatest beer festival in the world, so why not join in by brewing your own Oktoberfest. I am also a fan of a good Nut Brown Ale in the fall.<br />
Something about the warm, chocolaty and caramel notes tastes so good this time of<br />
year. A solid pale ale goes so well with some buffalo wings while watching football.<br />
The famous Pumpkin Chunkin in Delaware makes me think of brewing my seasonal<br />
classic, the Pumpkin Ale. Even a Pumpkin Porter hits the spot, too. </p>
<p>With so many options, and so little time, you mine as well clean all of your gear, and brew ‘til you fall.</p>

			<content:encoded><![CDATA[<p>Meet My Friend, Glass Carboy</p>
<p>For many years, I did my primary fermentations in a plastic, True Brew bucket,<br />
and did my secondary fermentation is a glass carboy. Recently, I asked<br />
myself, “You know, what would it be like if I did both my fermentations in a glass<br />
carboy? How would it affect the taste of my brew?” I had a go with an IPA, and<br />
sure enough, the taste seemed different, and much better. This IPA was crisp,<br />
smooth, and a good session beer, and I attribute the flavor to fermenting in a<br />
glass carboy.</p>
<p>Now, fermenting in a plastic fermentation vessel has its advantages. First, it’s<br />
cheaper and easier to clean than a glass carboy. Buckets can be replaced<br />
cheaply. It is a good way to start out as a homebrewer, and I would recommend<br />
it to anyone who is interested in brewing beer.</p>
<p>But, if you are willing to invest a little money to create a good quality brew that<br />
surpasses what you’ve been brewing, begin fermenting in glass. It makes a<br />
huge difference in the quality of your beer, and it will change everything you<br />
know about brewing. Cleaning may be hassle, trying to wash away the little<br />
specks of yeast stuck to the glass. But, homebrew shops have plenty of tools<br />
to make your glass carboy clean as a whistle. Shops also have carboy carriers<br />
that make lifting carboys really easy, so it would be good to invest in one of those<br />
too. Dropping a glass carboy full of your delicious brew would be a disaster<br />
unthinkable.</p>
<p>Lastly, using a glass carboy allows you to see they mysterious wonder behind<br />
fermentation. Looking at the bucket, you have to wonder, “What is going on in<br />
there?” You’ll never have to ask that question again if you ferment with a glass<br />
carboy. Take a quick peek, and see the glory of fermentation, with your new<br />
friend, glass carboy.</p>
