Hey Chileheads, you might be tempted to do a whole Jalapeno, but don’t.
You want a cooling, citrus-y accompaniment, not heat. I made the mistake of adding a whole Jalapeno, and it was too hot. Especially along with the heat of the Jerk seasonings on the meat.
Also, go easy on the white onion, as that particular onion packs it’s own heat.

Not a BBQ Sauce and Not a Hot Sauce – What is it?

An all purpose sauce I plan on keeping on my table at all times, Carolina Pepper Sauce has converted this thick and sweet bbq sauce lover over to Carolina “style” vinegar and pepper sauce!

If it’s not a bbq sauce. And it’s not a hot sauce. What is it?

An Everyday Condiment for Pork, Beef and Poultry

While it is made in the tradition of Carolina style bbq sauce, which is typically just vinegar, red pepper flakes, salt and pepper and maybe some ketchup in some areas, Blues BBQ Carolina Pepper Sauce is much more than that.

I’ve tried some of the usual Carolina sauces, but always went back to the thicker sweeter sauce. They all left me wanting more flavor than just vinegar and pepper flakes.

There is a ton of flavor here! It’s sweet with just a little bite.

Ingredients: tomato, cider vinegar, sugar, assorted peppers, salt, natural flavors

I asked Steve Burnham, the creator, what does “assorted peppers” mean?

Assorted peppers is a blend of mostly chile, cayenne and very, very little habanero. I did not want this sauce hot, but just a small bite.

This sauce has some body to it, so it’s not as thin as you might think. You can see the sauce clinging to the bottle in this photo.

I’m thinking the tomato along with the pepper mash Steve mentioned helps with the body.

As I write this, I’m sipping on the sauce from a shot glass. Add a little vodka, and this stuff would be a great base for Bloody Marys too!

Pulled Pork with Blue’s Carolina Pepper Sauce

We sprinkled this sauce on our smoked, pulled pork and made some awesome sandwiches with it.

It really rocks! As the label says, it’s “Music to your Mouth!” The bottle has a dropper cap, so you don’t waste any of this delicious, peppery, sweet Carolina Pepper Sauce. Mmmm.

Blues BBQ Carolina Pepper Sauce is all natural, with no preservatives and needs no refrigeration. A big plus in my book. My ‘fridge is full of sauces now.

In addition to the large 10 ounce bottle pictured here, you can also get it in a One Gallon bottle! (Remember the Bloody Mary idea I mentioned?)

Also visit BluesBBQ.net to buy this sauce and for more info.

Have you tried this sauce? Are you a fan of Carolina “style” sauces? Please leave a Comment below and let me know.

Averaging 52 Wings Per Player in 75 Minutes

I first wrote about this Iowa High School Soccer Team that planned to eat 1500 wings in one sitting back in April, in a Hot Sauce Sundaes post. They planned to meet at the King’s Pointe Regatta Grille and pull this stunt off.
King’s Pointe is a popular destination for that area, and the Regatta Grille, headed up by Chef James Gailey, was more than willing to provide the hot wings, sauce, and space.

Turns out the boys did it, and managed to eat the entire 1500 wings in one sitting, averaging 52 wings per player. A Regatta Grille spokesman said “It was the smallest guys who surprised us, they put away 70-80 [wings] each”. I think that’s amazing.

Storm Lake Tribune Update

As a follow-up story, Dana Larsen (Editor for the Storm Lake Pilot Tribune) wrote about the “Team-That-Could-Eat-1500-Wings”, in her article called “SL soccer team’s 1,500 hot wings success makes news, cops may be next for spicy challenge” and updated us on the result of the challenge. She mentioned HotSauceDaily.com and my initial post. Very cool.

We’ve Been There, Done That

Having accomplished this monumental task, the boys have said “[the] team doesn’t have the stomach to attempt to expand on that record” but the Regatta Grille is hopeful that they can host and recreate the event with the local Police and Sheriff’s Departments in the future. I see a Smackdown coming up!

Food Network Stars – A Love/Hate Thing

Amber Ambrose posted the 6 Most Annoying Food Network Stars over at DailyFork.com recently. I was inspired by a commenter (Stone) that challenged the author:

Try to find 6 Food Network stars that *aren’t* annoying. I know it’s hard work and all… but come on, you can do it!

So to amuse myself, and you, here’s my list of the 6 *Least* Annoying Food Network Stars. Or is it the 6 Most Likable Food Network Stars? It really is a love/hate thing. I’m sure you have your own list that’s completely different!

6. Guy Fieri Least annoying factor: 6.66
The Season 2 winner of The Next Food Network Star with the spikey hair hosts what I think is the most enjoyable show on Food Network – Diners, Drive-ins and Dives. How can you NOT want to “go there” and try that food? And Marilyn and I constantly Google the locations to learn more about their history, menus etc.

He’s first on this list of least annoying only because of the heavy jewelry, backwards shades (always?, really?), and over the top persona. Otherwise, I love this guy, Guy!

5. Bobby Flay Least annoying factor: 6.99
The red-headed “boy” from Brooklyn has become the “face” of FN since Emeril’s departure firing.
We saw Bobby “live” in DC last year at the Metropolitan Food Show, and yup, he’s arrogant and pushy, but the “boy” knows his grill.

And he loves ancho chiles. We also saw Paula Deen, but she’s on that “other” list!

4. Tyler Florence Least annoying factor: 7.00
Tyler has some real solid recipes and he knows his stuff.

He’s here because he’s so “vanilla”.

Kick it up a notch, Tyler! (Oops. Copywrite fail. Sorry, Emeril)

But he is like… well, a brother teaching you how to cook things.

He’s young, cool, artistic – hey, he makes cakes!

And his staff is awesome.

Extra points for being a Baltimore based local business. (Overlea, I miss ya since I was oh, 3 yrs old).

The Barefoot Contessa – Awesome kitchen, house, neighborhood, and she had a funky little shop for awhile in a little place called The Hamptons.

Shes very low key and is great on camera as a teacher.

But (hey bloggers) scooting off to type about 2 sentences to “finish this recipe” or “finish this post”… not real life.

In it’s day, Good Eats was ground breaking, solid entertainment that you learned from.

Props, characters… kinda like Sesame Street for Adults what with the puppet-tongues and puppet-foods. The Fridge-Cam? Genius.

My vote for least annoying Celeb on the FN.

There you have it. The 6 Least Annoying Food Network Stars. To me.

And no one scored a perfect 10.00 on the least annoying scale, *rant on* mainly because of the very network they work for. The FN could care less about what viewers like or dislike or want to see more of, and only about the adverti$ing dollar$ they can generate, and the fake sets, and fake rivalries (reality shows, really?) and the crap they THINK viewers want to see… over and over… again. Hello, Food Challenge/Iron Chef/Food 911/The Neeleys? Oops! *rant off*

As a footnote, in Amber’s original post, my vote for an annoying star would be Marc Summers. Sure Unwrapped was an informative show, but his cadence and silly puns were ANNOYING!

Who do you love or hate on Food Network?

John Daly Launches Website

John Daly has officially launched his BBQ products online at JohnDalyBBQ.com.

We’ve had the pleasure of trying the Rub and BBQ Sauce firsthand here at HotSauceDaily.com and I have to tell you, they have some great products!

John Daly BBQ Dry Rub

Hands down, this is our favorite rub at the moment. We’ve used it time and again on our MOINK Balls, on our chicken, and recently on some ribs.

Ingredients:

paprika sugar, spices including celery and turmeric, salt, dehydrated onion and garlic, citric acid, ground mustard seed, modified food starch, extractives of spice including paprika, FD&C Yellow #5 color, and not more than 2% sodium aluminosilicate to prevent caking.

Ok, there’s a couple of questionable additives in there, but when you buy a pre-made rub versus making your own, you’re going to get that stuff. Fear not, this rub is excellent in both flavor and texture. A little goes a long way.

John Daly BBQ Sauce

Here’s the flagship product, and it’s a winner. It’s a thin sauce, with a satiny finish. It’s not too sweet with a savory flavor and just a hint of heat.

Ingredients:

tomato sauce, worcestershire sauce, brown sugar, honey, lemon juice, Tabasco sauce, liquid smoke, black pepper, red pepper flakes, salt and spices.

Marilyn’s take:

It’s sweet, but not too much, you get a hint of Worcestershire and then the sweetness from the brown sugar and honey. The lemon is the acid that comes through nicely. I like it more than the vinegar you find in others’. The sauce is very pleasant by itself. “Put that in our beans next time!”

Brian’s take:

This sauce is going on my list of top 5 sauces to keep on hand.
I especially liked it on our barbecued chicken, which I’ll post in detail soon.

Buy John Daly BBQ Products

In addition to the Rub and BBQ Sauce, they also have a nice Salsa that we just opened last night. Stay tuned for a review of that.

You can purchase all of the John Daly products here.

The BBQ sauce comes in 10 and 20 ounce sizes. Go for the 20 oz., this stuff will go fast. Ditto on the Rub.

Also, be sure and check out The Lion’s Pit the official Blog of the John Daly BBQ folks. Randy Combs does a great job on there. Tell ‘em HotSauceDaily sent you!
