這幾天接到好多則詢問饅頭起泡與萎縮的原因？




要解決饅頭起泡與萎縮的問題，必先找出它的原因。

就像有人以為，只要將麵糰脱氣做得好，揉至光滑，

或用壓麵機壓至麵糰光亮，饅頭就會變得好...

但是卻忽略了饅頭攪拌的過程比壓麵、脱氣還要重要。



俗話說：《樹頭站得穩，不怕樹尾做風颱》

攪拌是一切源頭之始，基礎沒打好，就會出現一連串的狀況，

粉絲專頁《饅頭發酵不可忽略的關鍵》系列、在【細說饅頭】的書裡、在教學的課堂上曾提及：

饅頭一定要攪拌13分鐘（夏天）（冬天15分鐘）。

＃全程慢速手揉時閒也一樣

＃酵母建議使用低糖即發酵母

＃酵母請用速溶或即發酵母可直接加入

＃若使用活性或乾酵母請溶於水10分鐘



在攪拌的過程不難發現：

前3分鐘是麵粉成糰時間

前6分鐘麵糰還呈粗糙顆粒狀，

到9分鐘時，麵糰表面還呈粗細不均的粉糰

只有攪到13分鐘，才能呈現光滑柔潤的麵糰，而且還能換醒酵母起來工作。

酵母放入水中要10分鐘酵母才會浮上來完成發酵。





我們應該都有在睡夢中突然被吵醒的無奈，起来後也會懶洋洋、無精打彩不想工作。

酵母也—様，它的反抗就出現在饅頭的表皮裡

饅頭的攪拌也是如此，攪拌不足就會有一連串的失誤。



所以我的主張是：

饅頭一定要攪拌13分鐘。

前3分鐘是麵粉成糰時間。

後10分鐘是喚醒酵母起來工作。

這樣它才會心甘情願把麵糰發酵完整。



在發酵的過程中，麵粉分子裡的糖分未被釋放出來之前，

麵糰還呈顆粒狀，只有適當的攪拌，麵糰才能充分溶合，

保留足夠的蛋白質，讓饅頭的味道、外觀和組織都達到最佳狀態。

原始的攪拌步驟没有做好，儘管後續壓麵排氣做的再好，

蒸籠火力水氣再怎麼到位，冷水起蒸或是蒸後悶三分鐘再開蓋⋯

仍然無法挽回，最後都會顯示在樣貌上告訴你。



綜合這幾天粉絲的問題，大都提問饅頭為何蒸後起泡？

還有底部出現死皮是何原因？希望我能給個方向！



這裡有一個最基本的概念:

饅頭表面起泡，大都是：

1、攪拌不足

2、靜置不够

3、提前蒸制



饅頭表皮皺縮大都是：

1、攪拌過度

2、靜置過久

3、發酵過度

＃只要記住起泡的都是發酵不足所以饅頭生硬。

＃有皺皮或萎縮的都是發酵過頭所以饅頭鬆跨。





控制發酵的時間，主要是為了避免發酵不足或者發酵過度，

＃發酵不足，則饅頭膨脹不佳，組織偏硬。

＃發酵過度，饅頭容易塌陷回縮，組織鬆軟。



控制麵糰軟硬度，和天氣的冷熱都影響到發酵的時間。

＃饅頭太軟或天氣較熱發酵很快，蒸後的饅頭容易產生皺紋或萎縮

＃饅頭太硬或天氣較冷發酵較慢，蒸後的饅頭容易開裂或起泡。



控制麵糰的溫度，也是重要的一環。

＃溫度太高在麵筋尚未形成之前，酵母菌就提前發酵，變得組織不佳

＃溫度高酵母發酵過快，會容易失去對麵糰的控制，蒸出低質的饅頭

＃攪拌後溫度25.3~25.5為最理想，25~26之內都可以，

＃假如攪好後溫度為24度，可以等（靜置）10分鐘後再做，

＃假如攪好後溫度為27度就要馬上做，因為麵糰已經發酵再等就出現皺紋了。

＃如以上方法皆已用盡還是無法改善建議你更換麵粉，因為這麵粉可能不適合你。

1，為直捲法(又稱單酥)，即為兩次均桿長後再捲起来，這種方法大都用在比較大的餅類，例如大餅，訂婚礼餅或重量在80克以上的餅，因為重量重油皮自然多，不適合對切的油皮會增加負担。
2，為三摺法(又稱双酥)，即為桿長先三摺再桿長捲起，這種方法捲起的油皮比较長，對切後較好操作(如用直捲法對切後很短較難桿)這種油皮適用於小面積的餅，因為體積小，油皮少如一個一個包捲費時費工，所以三摺桿捲後對切比較快。
随着時代潮流，有人利用丹麥酥皮的方法發展了大包酥，三摺法與直捲法就被矮化成小包酥。
不僅如此，直酥，横酥，排酥，疊酥相継出现，由於桿捲方式不同，变化出許多巧妙的形状及花樣(如常見的荷花酥天鵝酥…等等，)]]></description>
