Do You Need Full Service Catering - Part 1

As we were updating listings and ads, a thought occurred to us. We list ourselves as "full service caterers" in numerous advertisements and websites, but do clients really know what that means? Do they realize the importance or unimportance of having a "do it all" caterer? Is it just about convenience or is there something else involved? Hopefully this post will address those questions and provide you with some answers.

Our definition of a full service caterer basically describes everything that we do for and with our clients to ensure that their event runs smoothly. From the initial contact from the client, we open the discussion about event visions, menu preferences, dietary restrictions and so on. During this process we try come get a full visual of the event and how the client sees the event playing out in their mind.
Based on the information we are given we then create a custom menu for our client that takes all things into consideration. We also provide the client with all the rental items they may require to properly service their event. This would include chinaware, glassware, flatware, linens, tables, and chairs. If its an outdoor event in the fall months, we even provide outdoor heaters .

That's just the beginning, we provide the servers to come to the event location, deliver our equipment and set up the event. Let's take a dinner for example, depending on the venue, tables and chairs may already be set up, in which case we would place the table linens and folded napkins on the tables, preset the flatware and preset glasses of ice water. We usually work directly with the florist or person providing the centerpieces to ensure the tables are set up prior to their arrival.

Once the tables are set , we await the guests arrival. There is always a lead server or a catering coordinator onsite at every event to ensure that all set up has been done to the clients specifications.
It is also this person's role to be sure the timing of the food and beverage service is both timely and expedient. Much thought and planning goes into the set up of an event. For example, buffet service, depending on the space and the number of guests, how many serving lines do you need? Do you need multiple buffets ? How will the buffet flow? These are all things we take into consideration to be sure the flow of the event is achieved. There is nothing worse than a floor plan that gives no consideration to the length of time it takes to get guests served. It can be a logistical nightmare! That is why we take the additional time and effort during the planning process to be sure nothing is overlooked.

Wedding Beverages: Alcoholic & Non Alcoholic

Wedding Beverages are so important to the atmosphere and theme of your wedding. There are so many creative ways to make pretty and fun drinks for all of your guests, even if you choose NOT to serve alcohol. Culinary Art Catering has a full menu of delicious and refreshing "Mock-tails" that can be garnished and rimmed with colored sugar to match your wedding colors.

When planning your wedding beverages, it is important to consider your overall budget and the age and style of your guests. Many brides want a full liquor bar however, this incurs much more (sometimes unexpected) expense, not only in liquor product, but also the glassware and mixers and garnishes. Lots of couples offer specialty cocktails that staff can "Butler Pass" during the cocktail hour immediately following the ceremony. Try to minimize your cocktails to 2-3 complex cocktails due to time for the bartender to make. Too many ingredients make for long lines at the bar, unless they are pre mixed.

Most brides offer beer & wine bar only (or with a champagne toast). This keeps your costs minimal, but still offers drinks for your guests. It is highly recommended to offer only two wines (a red and a white), and 2-4 beer varieties, depending on the crowd. Many clients offer fresh brewed or homemade beers form local breweries. Also, do not forget about the glassware for your wine and beer. Keep in mind, many photos will be taken at the reception, so bottles of beer in guests hands does not look so great in the after photos. It is nice to offer a nice stemmed universal water goblet for your beer, or even get some plastic personalized cups, that also make a great memento for your guests.

Champagne or NO Champagne? THAT is the question. This is a very traditional wedding activity that every bride has their own ideas on. Although it is a fun to have your guests making toasts and telling stories, you do not HAVE to serve champagne. These days, you can still do the toasts, but have the guests toast with "drink in hand". It saves a little $ on champagne product and glassware too, and most guests just have a few sips then leave the rest. Or some Bride & Grooms have a "special bottle" of extra nice champagne for the bride and groom ONLY to toast with then have the guests toast with whatever drink they are drinking.

Although the alcohol cost can be a large part of your overall reception budget, it is not accepted etiquette to ask guests purchase their own alcohol (drink tickets, cash bar, etc). So try and choose to either serve alcohol or NOT serve alcohol.

If you are providing your own alcohol, also consider the physical labor of who will be picking up and transporting the alcohol to the venue, that is important to coordinate in advance. That is a lot of heavy lifting and work for the DAY OF your wedding. And don't forget the beverage ice, we usually recommend at least 2 - 3 lbs per person - more if full bar. It is best to outsource that responsibility to a liquor store or vendor that offers a full bar all inclusive package, like Culinary Art Catering.

And do not forget the coffee too, especially for the "mature" guests. Most like coffee with wedding cake after dinner.

Whatever you decide on beverages, try to have a nice variety for all guests to enjoy and have everything you serve reflect your unique style and taste. Have a great wedding - CHEERS!

Kate & Jon Tyree's Wedding

Kate & Jon had a fun"Texas Themed" Ceremony and Reception. The bride used bright spring colored floral colors with lots of whites. The food by Culinary Art Catering had a very Southern flair.

Kate (the bride), wanted to watch her brides maids before they walked into the chapel, so we cracked the door open so she could see her girls all dressed and beautiful ready to walk down the aisle. It was such a moving moment.

Of course the first dance was a Texas two step - very fun & relaxed. Guests enjoyed beer, wine & great casual and fun Culinary Art Catering food.

Cocktail hour included butler passed Hors D'oeuvres of Chicken Quesadilla Trumpets, Pork Cornbread Bites, and Breaded Stuffed Mushroom Caps Florentine.

The Dinner Buffet stations started with a Tex-Mex Caesar Salad (Romaine & Mesclun Mix with Marinated Black Beans, Toasted Corn, Grated Jicama, Croutons & Red Chili Caesar Dressing). There were two Chef Attended Stations which included ; Texas Raised Top Beef Sirloin, Served With Horseradish, Aioli, Grain Mustard, and Chipotle Barbeque Sauce, and Chicken Fried Chicken Sliders, With warm Biscuits and Honey Butter. There was also a Mashed Potato Martini Station, with delicious assorted toppings.

Wedding Sweetheart Tables vs. Head Tables

When planning your room diagram for your wedding, it is important to choose a setup that suits your personality and style. There are three ways you can go, all of which are perfectly acceptable, it just depends on your personal preference.

With the Sweetheart Table, it is always a beautiful focal point and great photo opportunity. It is usually preferable to really dress the table with an accent cloth like a sequin or specialty linen with extra heavy floral or candlesticks, depending on your decor. However, some couples do not like being at the front or eating alone in front of all the guests, but it is really a nice way to show off the bride & groom. Usually the Service Staff (like at Culinary Art Catering in Dallas), will serve the bride & groom their dinner at that table so that they do not have to go thru the buffet line (if you are doing a buffet menu).

If you have a big wedding party or large family, you may want to have a head table. This can either have the entire wedding party at that table (usually one sided facing the guests at the head of the room), or you can have your immediate family at the head table. It is also customary to have the wedding party's spouses or dates sitting with them as well. It is also nice to use a special linen for this table as well (like a sequin cloth or special satin cloth). You can also use runners on this table or mirrors with candles depending on your decor style.

Your 3rd option is to have a sweetheart table with 4-6 surrounding tables with your immediate family. It is very important to label each table, either with table numbers or names, so that when the guests go to get their food, the DJ can dismiss tables in an orderly fashion.

Whichever you choose, make it your own, and make it reflect your personality and style. Room diagrams in advance are very important, so make sure your venue provides a room diagram. Whatever you do make it beautiful and fun.

Wedding Napkin Folds and Menus

Add a great (affordable) splash of color and decor to your next event or party with a fun napkin fold and menu card. Even if you are having a buffet dinner, your guests will get excited when they see what they are going to eat for dinner and have for dessert. Use your event colors, and special style or theme, and print cute menu cards on your printer, or get professionally printed if you have the budget or want a special card stock.

If your service staff is knowledgeable (like the Culinary Art Catering Staff), use a pretty color polyester napkin (you can usually rent for about .50 - 90 cents each), and have the staff fold in a fun unique style that goes with your theme. There are tons of fun and creative napkin folds you can search online. to add a "pop" of color and style to the place-setting. Even if you do not have a charger, it really dresses up the table on the tablecloth between the flatware place-setting.

Its also nice to list the beverages (alcoholic and non alcoholic) on the card as well. And don't forget about dessert, make sure to list that too - - even wedding cake flavors. And if you have a champagne toast, list that too at the bottom on the menu card. And lastly, the menu card is also nice cost effective memento for your guests to take home afterward. #LetsParty

Wedding at T & P Station in Fort Worth

The Historic T & P Station in Fort Worth was the site for this springtime wedding. The T & P Station is Fort Worth's largest and most extravagant example of 1920's Zigzag Moderne architecture. The terminal was built in 1931 and was restored and made available for event rentals in 1999.

The bride chose a bright Spring accent color to add a lively pop to the space. The black floor length linen with the bright napkin added to the dramatic color pallete. The floral centerpieces on the guest tables and the cake with pops of the same color, tied the whole event color scheme together.

Guests were treated to a dinner buffet featuring both our Signature Spinach and Artichoke Chicken and a beef entree to select from. A bountiful and fresh green salad, whipped potatoes, sautéed vegetables and warm, fresh dinner rolls completed the meal.

The beautiful Museum of Biblical Art in Dallas, was the backdrop for this fairy tale wedding.

The ceremony was held under the skylight in the Atrium of the museum, surrounded by an

abundance of priceless art.

The pristine, all white Nuvo Room was the backdrop for a recent styled photo shoot. As You Wish Events created a fresh, fun, tropical backdrop complete with beautiful floral pieces. The head table was set with two large arrangements and several smaller floral arrangements of eye popping pink and orange lined the center of the table.

The ladies at As You Wish thought of all the details from banana leaf lined trays to snazzy menu cards with accenting pops of pink.

The menu for the shoot included a tropical shrimp shooter and a delicious, colorful and flavorfully creative mango bruschetta.

Unique Wedding at Quixotic World

Ester and Matt celebrated their "happily ever after" at a venue as unique as the couple's personalities.

The reception was held at Quixotic World in historic Deep Ellum earlier this year.

The vibrant red and black color scheme of the venue set the tone for the evening's festivities.

The menu featured a lavish buffet of cheeses, fruits and veggies for nibbling. Guests were also treated to Beef Wellingtons and a Risotto Station with a plethora of toppings included Asparagus Tips, Sun-Dried Tomatoes, Wild Mushrooms, Flaked Salmon, Artichoke Hearts, Crumbled Feta Cheese, Grated Asiago, as well as a variety of sauces. After dinner service, guests crowded the dance floor and partied the night away.
