I can’t believe we are finally moving into my dream home! We will be moving next week into our new home next weekend. I love the house, but I am most excited about the 20 acres that will be ours! Our three boys are at the perfect ages to enjoy running outside and going on adventures in our woods. This is what I have always dreamed of for our three boys. I know they will have fond memories of their childhood living here. My boys are the squirrel hunting, fort building, hide-and-seek playing type of boys so this land is perfect for them. My youngest is already making his Christmas list for next year and is convinced Santa is going to bring him a BB gun! As I have been setting up utilities, I was a little surprised to find out we can’t get high speed DSL. I am a little obsessed with Facebook and I usually check my email like twenty times a day! I signed up for Wildblue North-Dakota and really feel like everything is squared away now! I can’t wait to spend our first night in our new forever home!

I like to have all of my eggs in one basket (so to speak) with my television options. I am always looking for the best packages that I can get so that I can easily bundle everything together. I have been doing some research on stuff like U-verse through AT&T, which I like because that bundles your phone, T.V., and cable all together. So I perused through the internet, including http://direc.tv/ - which helped me with all of my searches for the best Direct TV packages. I think I’m going to go with Direct TV because of the promotions that they run with being able to combine all of your media into one nice neat little bill. I think that’s why I love packaging things together so much- so that I don’t have to pay bills to a million different places! If anyone has any insider information on what packages are the best, your help would be very much appreciated! (Even though I think that I am definitely going to go with a direct TV package- I just have to figure out which one!)

It's one thing to be a mom that thinks her child or children are amazing, or advanced, and the same goes with being a grandma and grandpa that feel the same way...but, it is the BEST feeling in the world to have it confirmed by a pediatrician!

I know that we are constantly amazed at how fast Lil Priss is growing up and the things she learns daily. For example, for awhile now she has been giving kisses like this... "mmmmmmwah", then yesterday, when grandpa was leaving for the store, she puckers up and made the same kissing sound we would! A real kiss! She decided she is too old for a crib. Would NOT take her naps, or sleep through the night. Soooo, her mom and dad had to go get a toddler bed, a TODDLER BED. She is a baby! But, now she is taking her naps and sleeping through the night. Ok, so that is a bit of the things we see that give us those late night conversations about how awesome and cute she is....

At 31 & 1/4 inches tall, and 21 lbs, & 14 months on the 30th of July....the pediatrician has PROCLAIMED that Lil Priss not only is WAY MORE ADVANCED than other kids her age in her language skills, but also is extremely friendly and comfortable with new people (which is HUGE if you know my daughter at all) AND she is doing a lot of things she shouldn't be able to do yet, for example climbing (which drives me crazy), walking very well and running... and lots of other things. ( I seriously could list every single thing, but then that would be bragging, but believe me, if you ask....I will fill your ears with it!)

No matter how many ups and downs we have had the past couple years, all it takes is one smile, or for her to want something in our hand and she says "thaaaaaank yooooou" so we will give it to her..yep thats enough. I can make it another day.

I give all glory to GOD. I praise HIS name. With HIM all things are possible....even a freakazoid like me can grow up and be an awesome grandma!

Well, I am almost one year old now...which is killin my mama and Grandma (you know her as Cindi). I talk all the time, and some of it you can understand such as Duckkkkk, fishhhhhhh, mama, dada, bye bye, this, that, snack, titeout (some people say timeout), bru bru and sis, yes, no, uh oh, outside, play, pretty, easy...lots of things, but right now what made Grandpa happy was when he growled at me, I growled back! I also decided to say Pa, eventually I will give him the whole name. I did say Ga referring to my grandma....I am slowly starting to walk. About a month and a half ago mama and grandma video taped me standing on my own:

Grandma still has a hard time letting me get further than an arms length away from her now.

On one of my Jeff's trips to his favorite "meat deal" store, he picked up this 9.13 lb. Pork Boston Butt that was originally $19.99, for only $9.77!!!! I was ecstatic, cause we LOVE pulled pork. And its so easy to make...my friend Ninja (shoppingninja) gave us all this awesomely delicious recipe. Just cut off some of the extra layer of fat on the bottom, which I put into a freezer bag and froze to use another time for seasoning. Put the roast into the crock pot, add some grilling seasonings, we personally like a mixture of peppercorn, garlic, & seasoned salt, then pour a beer over it all...not a cheapy lite beer either, you want a good stout type beer, like Michelob dark. And no, you dont have to be a beer drinker for this to be a part of your recipe, because everyone knows, the actual alcohol cooks off of your meat. Put the crockpot on high, and cook for about 4 hours. When it is done, and you know it is when it is literally falling apart, take it out of the crockpot and put into a container to "pull" the pork. Be sure to add some of the juice from cooking it to maintain the moistness. We prefer not to add sauce to our meat, so we can each have whatever type we want and the extra that I will freeze can be used for other recipes, not just pulled pork sandwiches. We always have bottles of traditional barbecue sauce around since when it is on sale and with a coupon you can get it for like almost nothing. But I also make two sauces and keep in jars in the fridge that we really like.

White Barbecue Sauce
2 c. mayo
1 1/2 T. salt
2 T. black pepper
6 T. white vinegar
6 T. lemon juice
4 T. white sugar
Just put into a jar and shake well. This is the most awesome sauce ever!

Eastern N.C. BBQ Sauce
1 c. white vinegar
1 c. cider vinegar
1 T. hot pepper sauce
1 T. brown sugar
1 T. cayenne pepper
1 tsp. salt
1 tsp. ground black pepper
Put all into a jar, preferrably a day or so before you want to use it, and shake it up every time you go into the fridge so the flavors can meld together.

So basically, this pork that cost $9.77, provided us with two adult portion dinners, and since my daughter and the three kiddos will be here again tomorrow, some for that and enough for another lunch will be put into the fridge and I will fill freezer bags for four more complete meals. I think we did pretty good for under $10!

Update: Right after posting about this deal, I went to Medco to check on the status of my order...lo and behold, it had been cancelled. I am usually a very positive, upbeat person...usually. Then LIFE happens, and as many times as I say that everything is fine, it will all work out, something else happens to continue to push me to the other side, the "negative - faithless - I can't handle this" side. So today I am yet again pushing and pulling myself to the side I belong on, the "positive - full of faith - I can handle ANYTHING" side.

Today is Gratitude Tuesday, or Grati-tuesday....and I am grateful, beyond grateful actually, for all that I have been blessed with:

First and foremost, a loving and forgiving God!
A wonderful family that sticks together through it all

I didn't realize, when I was given this $50 challenge, how very differently and selectively I would look at deals. I know a good deal, but this challenge has made me really think hard about whether its a "good" deal, or an "awesome" deal. So, I have not jumped the way I usually would when deals pop up. This next deal though, had an added bonus in it for me, so I jumped.

Groupon, a daily deal site, was offering 3 Redbox DVD rentals for $1, which is a savings of $2. Now that isn't amazing, but my Jeff and I do like watching a good movie together, and truly, you cant beat 3 rentals for $1. But thats not all! The $50 Challenge... Deal #1

A few days ago, I posted about a $50 challenge extended to me by a good friend. In that post I mentioned how I am supposed to use the $50 to get the best deals I can, and to see how far I can stretch it. Well, there are always deals out there, but I want to really do my very best and find the most creative ways to make the money go as far as possible.

On amazon the other day, there was a deal for Suave Naturals Shampoo, Mango Mandarin, 22.5-Ounce (Pack of 6) for $11.94. Now, if you are like me, you are saying, Yeah right, no way would I pay almost $2 a bottle for Suave even if it is the big bottles. But wait....there's more, lol.

We are just getting our stockpile started for personal care items and there was a code that took off $1.79 making it now $10.15. Ok, better, but still, not good enough...but wait, there's more! Because I use Swagbucks.com to do my internet searches, I earn amazon gift cards for free (since joining I have earned almost $200 in free gift cards), and I had $7.20 credit just sitting there, so even though I wouldn't have generally used it towards this deal, my challenge is to stretch the $50 as far as possible, so I need to keep the out of pocket very low.

His frugal deals, my frugal meals- Chicken & pork shank

One of my Jeffs last deal shopping trips landed us with a 10 lb. bag of chicken leg quarters for $3.27, and a 4.7 lb. 1/2 pork picnic shank for $4.83. There were other meats also, but these are the two I chose to dive into and see how many meals I could get out of them.

Starting with the chicken leg quarters, there were 9 huge ones, one small. So of course first was the washing, then I put 3 into a freezer bag and into freezer for a future chicken dinner. Started soaking 3 in buttermilk in fridge to prepare for dinner the next night. Took the remaining 4 and put into pot with water and boiled.

Now onto pork shank, I washed and cut off excess fat, made a spice rub and popped it into the oven to roast.

Of course then in comes my Jeff, talking about how he has been craving pork with cabbage, potatoes, and carrots. Ok, so roasting is not how I need to do this. I take it out, put it in a stock pot with water, and return it to the oven for a couple hours.

Back to the chicken... when the boiling chicken is done I take it out of water to cool. I put the water from pot into crock pot, then after getting all the good meat off the bones, put remaining bones & skin into crockpot also. I always save all ends and pieces I have cut off of veggies (broccoli, carrots, celery, onion, cabbage, etc.) and freeze in a freezer bag and I add this to the crockpot, turn on low, and leave overnight.

Now I put the cooked chicken into freezer bag, mark it and put into the freezer for a future meal, which I am thinking chicken tetrazzini, yum!

When the pork is 3/4 done, I start adding every 15 minutes - first the carrots, then potatoes and last the cabbage and onion, because we do not like mushy cabbage. And I only put in the amount of cabbage we will eat for that meal, so when we have leftovers, I can add fresh cabbage.

The next day, I remove everything from crockpot and strain the broth. I usually use mainly 1 to 2 cup size jars as that is generally the amount needed for most recipes.

I mark them, then put down into freezer chest. So, now to figure out how many meals I was able to get from 10 lbs. of chicken, and 4.7 lbs. of pork.

The pork provided 2 supper meals for 3 adults, and 2 lunch meals for 1 adult and 3 children, which is 6 supper portions, and 8 lunch portions.

The chicken provided one chicken dinner for 3 adults, plus another one dinner for 3 adults frozen for later, and the cooked and deboned chicken will provide enough chicken tetrazzini for 1 supper meal for 5 adults and 3 children, and 1 lunch meal for 3 adults and 1 child which ends up being 14 supper portions, and 4 lunch portions. Not including the 11 cups of the most awesome chicken broth ever!

So, what do you think? Do you feel we got our money's worth outta that meat? I do.
