• 1 tablespoon olive oil&lt;br /&gt;
• 1/2 cup minced onion (about 1/2 small onion)&lt;br /&gt;
• 1 clove garlic, minced&lt;br /&gt;
• 4 to 6 cups broth, chicken or vegetable&lt;br /&gt;
• 1 (14-ounce) can whole tomatoes, crushed through your fingers or coarsely chopped&lt;br /&gt;
• 1 (9-ounce) package fresh tortellini or 4 servings dried tortellini&lt;br /&gt;
• Coarse grained salt and cracked black pepper&lt;br /&gt;
• 10 ounces fresh or frozen spinach, defrosted and chopped&lt;br /&gt;
• 1/4 cup freshly grated Parmesan, very loosely packed&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Directions&lt;br /&gt;
1. In a 3-quart soup pot, heat olive oil over medium high heat. Sauté the onion and garlic, stirring often until onions are translucent, about 5 to 7 minutes. &lt;br /&gt;
2. Add broth and tomatoes, turn heat up to high, and bring to a boil. &lt;br /&gt;
3. Add the tortellini and cook according to package instructions. When tortellini is almost done, add spinach and taste, adjusting seasonings with salt and pepper. &lt;br /&gt;
4. Serve immediately. Garnish each serving with a sprinkling of Parmesan.&lt;br /&gt;

We had these for dinner last night, and they were delicious. &amp;nbsp;I make Chicken Enchiladas frequently, but sometimes it&#39;s good to go meatless.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Black Bean Enchiladas&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Serves 3-4&lt;br /&gt;
&lt;br /&gt;
Ingredients:&lt;br /&gt;
&lt;ul&gt;
&lt;li&gt;1/2 yellow onion, coarsely chopped&lt;/li&gt;
&lt;li&gt;1 16-ounce can black beans, drained and rinsed&lt;/li&gt;
&lt;li&gt;1 cup frozen white corn&lt;/li&gt;
&lt;li&gt;1 1/2 cups cheese, shredded and divided - I like a Cheddar Jack mix&lt;/li&gt;
&lt;li&gt;1 10 oz. can Enchilada Sauce, mild, I like La Victoria.&lt;/li&gt;
&lt;li&gt;10 white tortillas, 6 to 8 inch.&lt;/li&gt;
&lt;/ul&gt;
Directions:&lt;br /&gt;
&lt;ol&gt;
&lt;li&gt;Preheat oven to 400 degrees. &amp;nbsp;Spray bottom and sides of&amp;nbsp;&amp;nbsp;a 9x13 baking pan.&lt;/li&gt;
&lt;li&gt;In a medium bowl, mix together the onion, black beans, corn, and 1/2 cup of the cheese.&lt;/li&gt;
&lt;li&gt;Warm 2 tortillas at a time, in the microwave, for 20 seconds.&lt;/li&gt;
&lt;li&gt;Scoop a scant 1/2 cup of the veggie mix into one of the tortillas, roll it up, and place in the pan, seam side down. Repeat with the remaining tortillas, warming and filling, until the all the mix is used.  It should make 9 or 10 enchiladas. Pour the entire contents of the can of Enchilada Sauce over the enchiladas and sprinkle it with the remainder of the cheese.&lt;/li&gt;
&lt;li&gt;Bake at 350° for 30 minutes.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Leftovers will keep for up to a week in the refrigerator.&lt;/li&gt;

The original recipe was Impossibly Easy Chicken and Broccoli Pie. &amp;nbsp;I used mixed vegetables, carrots, peas, green beans; because broccoli has too much potassium for Bob to handle. &amp;nbsp;I think this would be great with Swiss cheese, too.&lt;br /&gt;

       Or use the same amount of mixed veggies&lt;br /&gt;
1     cup shredded reduced-fat sharp Cheddar cheese (4 oz)&lt;br /&gt;
1     cup cut-up cooked chicken breast&lt;br /&gt;
1     medium onion, chopped (1/2 cup)&lt;br /&gt;
½    cup Bisquick Heart Smart® mix&lt;br /&gt;
1     cup fat-free (skim) milk&lt;br /&gt;
¼    teaspoon salt&lt;br /&gt;
¼    teaspoon pepper&lt;br /&gt;
2    eggs or 1/3 cup fat-free egg product&lt;br /&gt;
2-4 dashes of Tabasco sauce&lt;br /&gt;

Step one&lt;br /&gt;
&lt;br /&gt;
Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Layer the veggies, 1/2 cup of the cheese, the chicken and onion in pie plate.&lt;br /&gt;

Step Two&lt;br /&gt;
&lt;br /&gt;
In medium bowl, stir Bisquick mix, milk, salt, pepper, eggs&amp;nbsp;and Tabasco with wire whisk or fork until blended. Pour into pie plate.&lt;br /&gt;
&lt;br /&gt;
Step Three&lt;br /&gt;
&lt;br /&gt;
Bake 20 to 25 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake 3 to 4 minutes longer or just until cheese is melted. Cool 5 minutes to let it “set”.&lt;br /&gt;

&lt;li&gt;Enough chicken pieces for your family.&lt;/li&gt;
&lt;li&gt;Sour Cream&lt;/li&gt;
&lt;li&gt;Shaved Parmesan Cheese&lt;/li&gt;
&lt;li&gt;Italian Style Bread Crumbs.&lt;/li&gt;
&lt;/ul&gt;
&lt;br /&gt;
I had a huge 1 pound chicken breast. &amp;nbsp;I set the oven to 350°, cut the chicken breast into cutlets, and sprayed my baking pan with cooking spray.&lt;br /&gt;
&lt;br /&gt;
Next, place the chicken pieces into the sprayed pan, top each piece with about a Tablespoon of sour cream, then about 1/2 T. of shaved&amp;nbsp;Parmesan&amp;nbsp;Cheese. &amp;nbsp;Now, sprinkle&amp;nbsp;everything&amp;nbsp;with Italian-style bread crumbs. &amp;nbsp;That&#39;s it for the prep!&lt;br /&gt;

Bake for 40 minutes and serve with pasta of your choice and a green vegetable.&lt;br /&gt;

This is a really easy entree&#39;. &amp;nbsp;You marinate the chicken at least two hours, up to overnight, then bake it! &amp;nbsp;I used 3 boneless skinless chicken breast, for less fat, and halved the marinade ingredients. &amp;nbsp;I served the chicken with rice pilaf and a green vegetable.&lt;br /&gt;

&lt;li&gt;2 t. black pepper&lt;/li&gt;
&lt;li&gt;2 t. dried oregano leaves&lt;/li&gt;
&lt;li&gt;Chicken parts to equal 3 or 4 pounds&lt;/li&gt;
&lt;/ul&gt;
Method:&lt;br /&gt;
&lt;br /&gt;
Put the marinade ingredients in a large zip lock bag, shake to mix.&lt;br /&gt;
Add the chicken pieces, close the bag and refrigerated at least 2 hours, up to overnight. &lt;br /&gt;
Preheat the oven to 375°. &lt;br /&gt;
Place chicken pieces in a baking dish. &lt;br /&gt;
Cook uncovered for 35 to 40 minutes, checking for doneness.&lt;br /&gt;

&lt;li&gt;4 stalks celery (washed and medium diced)&lt;/li&gt;
&lt;li&gt;1 zucchini (washed and medium diced)&lt;/li&gt;
&lt;li&gt;3 cloves fresh garlic (chopped finely)&lt;/li&gt;
&lt;li&gt;1 tsp dried oregano&lt;/li&gt;
&lt;li&gt;1 tsp dried basil&lt;/li&gt;
&lt;li&gt;1/2 cup heavy cream (optional)&lt;/li&gt;
&lt;li&gt;3 tbsp extra virgin olive oil&lt;/li&gt;
&lt;li&gt;28 oz can crushed tomatoes&lt;/li&gt;
&lt;li&gt;6 cups chicken stock&lt;/li&gt;
&lt;li&gt;Kosher salt-to taste&lt;/li&gt;
&lt;li&gt;Fresh ground black pepper -to taste&lt;/li&gt;
&lt;li&gt;1 cup very small pasta, I used Ditalini.&lt;/li&gt;
&lt;/ul&gt;

Method:&lt;br /&gt;
&lt;ol&gt;
&lt;li&gt;In a large pot, heat the olive oil and saute onions, celery, and carrots over medium high heat for 8-10 minutes.&lt;/li&gt;
&lt;li&gt;Add zucchini and garlic; saute until tender about 4-6 minutes.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Add chicken stock, tomatoes, basil, oregano, chicken.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Simmer soup for 20 minutes.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Add the pasta and simmer for another 10 minutes.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Season with salt and pepper. &amp;nbsp;&lt;/li&gt;
&lt;/ol&gt;
&lt;br /&gt;
Serve with with grated&amp;nbsp;parmigiano&amp;nbsp;reggiano and rustic bread!

If you&#39;re on Pinterest, it was hard to miss this recipe a couple of weeks ago. &amp;nbsp;It sounded delish, and I wanted to try it. &amp;nbsp;I hesitated because of all the sodium. &amp;nbsp;We&#39;re pretty low sodium, here at the Prytz house. &amp;nbsp;I&amp;nbsp;modified the recipe and it&#39;s delicious.&amp;nbsp; This is my recipe.&lt;br /&gt;
&lt;br /&gt;
Chicken Taco Chili&lt;br /&gt;
&lt;br /&gt;
1 large yellow onion, diced&lt;br /&gt;
1 can black beans, drained and rinsed&lt;br /&gt;
1 can kidney beans, drained and rinsed&lt;br /&gt;
1 can vegetable broth&lt;br /&gt;
Frozen white corn, enough to fill an empty bean can&lt;br /&gt;
16 oz can tomato sauce&lt;br /&gt;
28 oz can diced tomatoes&lt;br /&gt;
1 packet chicken taco seasoning (much lower in sodium.)&lt;br /&gt;
1 t, chili powder&lt;br /&gt;
2 boneless skinless chicken breast.&lt;br /&gt;
&lt;br /&gt;
Put all the ingredients in the crockpot. &amp;nbsp;Don&#39;t layer, just dump them in and stir it up, a bit. &amp;nbsp;Cook on High for 6 hours, or on low for 10 hours. &amp;nbsp;Before serving remove the chicken breast and shred the meat, using two forks. &amp;nbsp;Makes 8-10 servings.&lt;br /&gt;

We ate from this recipe for several nights. &amp;nbsp;I served it in shallow bowls, over rice. &amp;nbsp;It was filling and&amp;nbsp;healthy.&lt;br /&gt;

&lt;br /&gt;
Ingredients:&lt;br /&gt;
&lt;ul&gt;&lt;li&gt;2 teaspoons olive oil (preferably extra-virgin olive oil)&lt;/li&gt;
&lt;li&gt;3 Spanish onions, cut in half lengthwise and thinly sliced&lt;/li&gt;
&lt;li&gt;1 garlic head, large, cloves separated, peeled and cut in half&lt;/li&gt;
&lt;li&gt;3 large shallots, cut in half lengthwise and thinly sliced&lt;/li&gt;
&lt;li&gt;4 cups low-sodium chicken broth&lt;/li&gt;
&lt;li&gt;1 tablespoon fresh thyme, chopped&lt;/li&gt;
&lt;li&gt;1/4 teaspoon salt, or to taste&lt;/li&gt;
&lt;li&gt;1/4 teaspoon freshly ground black pepper&lt;/li&gt;
&lt;li&gt;1/4 cup brandy&lt;/li&gt;
&lt;li&gt;1/4 cup fresh Parmesan cheese, grated&lt;/li&gt;
&lt;/ul&gt;&lt;br /&gt;
Directions:&lt;br /&gt;
&lt;ol&gt;&lt;li&gt;Set oven rack at the lowest level; preheat to 450 degrees.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Combine onions, shallots, garlic and oil in a large shallow roasting pan. Roast for 20 to 25 minutes; stirring every 5 minutes, or until the onions are golden.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Remove from oven and pour in one-fourth of the chicken stock. Stir liquid in the pan, scraping the bottom to loosen and dissolve any caramelized&amp;nbsp;bits.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Transfer the onion mixture to a soup pot and add brandy, thyme and the remaining chicken stock. Bring to a boil; reduce heat to low and simmer, covered, for 30 minutes.&amp;nbsp;&lt;/li&gt;
&lt;li&gt;Season with salt and pepper.&lt;/li&gt;
&lt;li&gt;Top with Parmesan cheese when serving.&lt;/li&gt;
&lt;/ol&gt;&lt;br /&gt;

Wonderful Banana Cake&lt;br /&gt;
&lt;br /&gt;
Ingredients:&lt;br /&gt;
&lt;ul&gt;&lt;li&gt;1 (18.25 ounce) package yellow cake mix&lt;/li&gt;
&lt;li&gt;2 very ripe bananas, mashed -&amp;nbsp;&lt;/li&gt;
&lt;li&gt;{I used 3, because I had them, and increased the baking soda to 1 1/2 t.}&lt;/li&gt;
&lt;li&gt;1 teaspoon baking soda&lt;/li&gt;
&lt;/ul&gt;&lt;br /&gt;
Directions:&lt;br /&gt;
&lt;ol&gt;&lt;li&gt;Prepare yellow cake mix according to package directions.&lt;/li&gt;
&lt;li&gt;Mash the bananas with the baking soda and stir into the cake mix batter. Pour batter into one greased and floured 9x13 inch baking pan.&lt;/li&gt;
&lt;li&gt;Do not preheat oven. Place uncooked cake in oven and turn oven on to 350 degrees F (175 degrees C). Bake for 1 hour. Let cake cool thoroughly and then refrigerate.&lt;/li&gt;

&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;ul&gt;
&lt;li&gt;Spray vegetable cooking oil&lt;/li&gt;
&lt;li&gt;1 (15 oz) can black beans, drained and rinsed&lt;/li&gt;
&lt;li&gt;2 T minced garlic in oil. (jar found in the produce section of your supermarket.)&lt;/li&gt;
&lt;li&gt;1/2 t. dried oregano&lt;/li&gt;
&lt;li&gt;1/4 t. cayenne pepper&lt;/li&gt;
&lt;li&gt;3 T. canola oil&lt;/li&gt;
&lt;li&gt;1 medium red onion&lt;/li&gt;
&lt;li&gt;1 cup chopped zucchini&lt;/li&gt;
&lt;li&gt;3/4 cup shredded carrot&lt;/li&gt;
&lt;li&gt;1 cup frozen white corn, thawed&lt;/li&gt;
&lt;li&gt;pepper and sea salt to taste&lt;/li&gt;
&lt;li&gt;3 whole wheat tortilla wraps (12&quot; size)&lt;/li&gt;
&lt;li&gt;1 cup prepared mild chunky salsa&lt;/li&gt;
&lt;li&gt;1/2 cup shredded Mexican cheese.&lt;/li&gt;

&lt;li&gt;Preheat oven to 350°. &amp;nbsp;Spray 12 inch pie plate with cooking spray, set aside.&lt;/li&gt;
&lt;li&gt;Mix beans, garlic, oregano, and&amp;nbsp;cayenne&amp;nbsp;in a small bowl, set aside&lt;/li&gt;
&lt;li&gt;Heat canola oil in medium skillet, medium heat. &amp;nbsp;Saute´ onion for 5 minutes, add zucchini, carrot and corn and saute´ for 3 minutes. &amp;nbsp;Season with the pepper and salt. &amp;nbsp;Pour into&amp;nbsp;colander&amp;nbsp;to drain any excess oil.&lt;/li&gt;
&lt;li&gt;Place one tortilla wrap in the pie plate. &amp;nbsp;Top with 1/3 of bean mixture, 1/3 vegetable mixture, and 1/3 of the salsa. &amp;nbsp;Make two more layers for a total of 3 layers. &amp;nbsp;Top with the cheese&lt;/li&gt;
&lt;li&gt;Bake uncovered for 30 minutes. &amp;nbsp;Cut into wedges to serve. &amp;nbsp;&lt;/li&gt;

My husband, Bob, has become &quot;close&quot; to vegetarian for health reasons. &amp;nbsp;He can still have small amounts of chicken, turkey and fish, but other meats are verboten.&amp;nbsp;&amp;nbsp;This recipe is&amp;nbsp;completely vegetarian,&amp;nbsp;delicious&amp;nbsp;and very fast and easy to make.&lt;br /&gt;

3 T. olive oil&lt;br /&gt;
1 small yellow onion, finely chopped&lt;br /&gt;
2 garlic cloves, finely chopped&lt;br /&gt;
1 small potato, diced&lt;br /&gt;
1 stalk celery, finely diced&lt;br /&gt;
1 small carrot, finely diced&lt;br /&gt;
2 tomatoes, diced&lt;br /&gt;
5 cups vegetable broth&lt;br /&gt;
1/4 t. fresh thyme, chopped&lt;br /&gt;
1 can small white beans, drained &amp;amp; rinsed &lt;br /&gt;
1 can red beans, drained &amp;amp; rinsed&lt;br /&gt;
8 oz mini ziti pasta, (roughly 2 cups)&lt;br /&gt;
salt &amp;amp; pepper to taste&lt;br /&gt;
shaved Parmesan cheese for topping&lt;br /&gt;
&lt;br /&gt;
Heat olive oil in large sauce pan (I use a Dutch oven). Add onion, garlic, potato, celery and carrot. Cook on medium heat for 3-5 minutes. Add tomatoes and cook an additional 3 minutes.&lt;br /&gt;
Add broth, beans, pasta, thyme, salt and pepper. Bring to a boil, then reduce heat to med-low and simmer for 10-12 minutes until the pasta and potatoes are cooked.&lt;br /&gt;
&lt;br /&gt;
Ladle into bowls and serve with Parmesan sprinkled on top.&lt;br /&gt;
&lt;br /&gt;
Serves 6 - 8.&lt;br /&gt;

&lt;ul&gt;&lt;li&gt;12 oz. can Chunk White Albacore in water, drained.&lt;/li&gt;
&lt;li&gt;3 sweet&amp;nbsp;gherkin&amp;nbsp;pickles, diced.&lt;/li&gt;
&lt;li&gt;2 stalks of celery, diced.&lt;/li&gt;
&lt;li&gt;1/4 cup of sliced almonds.&lt;/li&gt;
&lt;li&gt;Best Foods Olive Oil&amp;nbsp;Mayonnaise.&lt;/li&gt;
&lt;/ul&gt;Put the first 4 ingredients in a medium bowl and moisten well with the Mayo. &amp;nbsp;Serve on bread or toast; our favorites are Sheepherders or Whole Wheat. &amp;nbsp;Add a slice of cheddar, if your diet or taste buds allow.&lt;br /&gt;

This morning I had 4 very ripe bananas staring at me. &amp;nbsp;What to do , what to do? &amp;nbsp;They were too ripe to slice, so I decided to make Banana Nut Bread. &amp;nbsp;I went to my recipe file and discovered I was missing ingredients for my two favorite&amp;nbsp;Banana Nut Bread recipes. &amp;nbsp;So, I did what any modern cook would do, I went on the internet to find a recipe that used the ingredients I had. &amp;nbsp;I found this recipe &lt;a href=&quot;http://simplyrecipes.com/recipes/banana_bread/&quot;&gt;here&lt;/a&gt;, and simply added walnuts.&lt;br /&gt;
&lt;br /&gt;
Mrs. Hockmeyer’s Banana (Nut) Bread&lt;br /&gt;
&lt;br /&gt;
Prep time: 5 minutes&lt;br /&gt;
Cook time: 1 hour&lt;br /&gt;
&lt;br /&gt;
INGREDIENTS&lt;br /&gt;
• 3 or 4 ripe bananas, smashed&lt;br /&gt;
• 1/3 cup melted butter&lt;br /&gt;
• 1 cup sugar (can easily reduce to 3/4 cup)&lt;br /&gt;
• 1 egg, beaten&lt;br /&gt;
• 1 teaspoon vanilla&lt;br /&gt;
• 1 teaspoon baking soda&lt;br /&gt;
• Pinch of salt&lt;br /&gt;
• 1 1/2 cups of all-purpose flour&lt;br /&gt;
• 1 cup chopped walnuts&lt;br /&gt;
&lt;br /&gt;
METHOD&lt;br /&gt;
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour and walnuts last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.&lt;br /&gt;
Yield: Makes one loaf.&lt;br /&gt;

Pre-heat oven to 375 degrees. &amp;nbsp;Grease muffin cups, or use paper liners. &amp;nbsp;(I just sprayed a squirt of Pam in each cup, and wiped it with a paper towel.&lt;br /&gt;

STEP TWO:&lt;br /&gt;
&lt;br /&gt;
In a small bowl mix dry ingredients, then cut in butter. &amp;nbsp;This is the hardest part of the entire process.&lt;br /&gt;

&lt;br /&gt;
&lt;ul&gt;&lt;li&gt;1/4 cup sugar&lt;/li&gt;

I haven&#39;t been posting here, lately, for a couple of reasons. &amp;nbsp;Number one is I haven&#39;t been doing much cooking, and that&#39;s lead to lack of creativity. &amp;nbsp;How have I gotten away with &quot;not much cooking&quot;? &amp;nbsp;Bob&#39;s had some health issues and he literally refused to eat at home. &amp;nbsp;No, it wasn&#39;t mental health. &amp;nbsp;We begin eating dinner at a&amp;nbsp;restaurant, daily. &amp;nbsp;It became a welcome habit, that I&#39;m determined to break. &amp;nbsp;We&#39;ll still eat out after I teach Tai Chi, because on those nights we usually dash off to play cards or dominoes, or host at our house. &amp;nbsp;And perhaps one additional night. &amp;nbsp;But I going to work hard on breaking the cycle. &lt;br /&gt;

The crust is crisp and the inside is soft and flavorful.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;
&lt;/div&gt;BANANA - WHEAT QUICK BREAD&lt;br /&gt;
&lt;br /&gt;
2 c. flour&lt;br /&gt;
3/4 c. whole wheat flour&lt;br /&gt;
1 1/2 c. sugar&lt;br /&gt;
1 1/2 tsp. soda&lt;br /&gt;
1 1/2 tsp. salt&lt;br /&gt;
2 thinly sliced ripe bananas&lt;br /&gt;
1/3 c. butter, softened&lt;br /&gt;
3 tbsp. orange juice&lt;br /&gt;
2 eggs&lt;br /&gt;
1/2 c. chopped walnuts&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 325 degrees. Butter and flour a loaf pan. In a medium bowl, whisk all the dry ingredients together, set aside.  In large bowl, blend the &quot;wet ingredients together. Slowly stir in the dry mix.  When blended, beat mixture 3 minutes at medium speed with a hand mixer. Pour into greased pan. Bake 60 to 65 minutes or until done. Cool on wire rack for 5 minutes, then remove from pan. Cool and enjoy!&lt;br /&gt;

1/2 cup  crumbled Blue Cheese&lt;br /&gt;
1 cup  dried Cranberries&lt;br /&gt;
1 cup  glazed Walnuts&lt;br /&gt;
Pear Vinaigrette Dressing, recipe below&lt;br /&gt;
&lt;br /&gt;
Toss all ingredients in a large bowl.  Serves 10 – 12.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Pear Vinaigrette Dressing&lt;/b&gt;&lt;br /&gt;
&lt;div&gt;
&lt;b&gt;&lt;br /&gt;&lt;/b&gt; ½ cup Extra Virgin Olive Oil&lt;br /&gt;
½ cup Pear Vinegar&lt;br /&gt;
¼ teaspoon Salt&lt;br /&gt;
1/8 teaspoon pepper&lt;br /&gt;

Put all ingredients in small container, cover and shake to mix.&lt;/div&gt;

Pineapple-Coconut Loaf&lt;br /&gt;
&lt;br /&gt;
1 1/2 cups sweetened shredded coconut&lt;br /&gt;
1/2 cup (1 stick) unsalted butter, room temp, plus more for pan&lt;br /&gt;
1 1/2 cups all-purpose flour (spooned and leveled), plus for pan&lt;br /&gt;
1/2 teaspoon baking soda&lt;br /&gt;
1/2 teaspoon salt&lt;br /&gt;
1 cup sugar&lt;br /&gt;
3 large eggs&lt;br /&gt;
1 cup sour cream&lt;br /&gt;
1 can (20 ounces) pineapple chunks in juice, drained well&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 350 degrees. Spread coconut on a rimmed baking sheet. Bake until lightly toasted, tossing occasionally, 10 to 15 minutes; set aside. Butter and flour a 9-by-5-inch (8-cup) loaf pan; set aside. In a medium bowl, whisk together flour, baking soda, and salt; set aside.&lt;br /&gt;
&lt;br /&gt;
Use an electric mixer on high speed to beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Reduce speed to low, and alternately add flour mixture in three parts and sour cream in two, beginning and ending with flour mixture. Mix just until combined (do not over mix).&lt;br /&gt;
&lt;br /&gt;
Use a rubber spatula to fold pineapple and 1 cup coconut into batter. Spoon into prepared pan, and smooth top; sprinkle with remaining 1/2 cup coconut. Bake until a toothpick inserted in center comes out clean, 65 to 70 minutes (cover pan with foil&lt;br /&gt;
halfway through). Let cake cool in pan 15 minutes. Remove from pan, and transfer to a wire rack to cool completely.&lt;br /&gt;
&lt;br /&gt;
Keeps at room temp, wrapped in plastic, up to 2 days.&lt;br /&gt;
