just whipped up some gluten free pizza, and it was awesome! The crust is super simple to make and is cauliflower based. In my picture I burned my peppers a little while sautéing, but it was still super yummy!

Crust Ingredients:

2 cups mashed cauliflower (2 bags of frozen whole foods)

2 cups shredded mozzarella cheese (1 16oz shredded bag)

2 eggs

Oregano to taste

Directions:

Preheat oven to 450

Cook cauliflower and then mash. Dry out as much as possible

Mix eggs, mashed cauliflower, cheese, and oregon in a large bowl

Spread "dough" mixture on a baking sheet

Cook "crust" for 13-15 minutes on 450 or until top is golden brown

Remove crust from oven. Spread sauce and cheese on top. Top with whatever toppings you want!

Bake for another 10 minutes (or until cheese is melted and it looks delicious).

Notes:

My crust didn't ever get super crispy, so it had to be eaten with a fork. I think if you dry the cauliflower and make sure your crust is browned on top before adding final toppings you should be in a good place.

Mini Frittatas

I made mini frittatas for brunch and they were awesome! Grind fresh black pepper on.

Pour bacon with grease into cooked brussels sprouts.

Paleo Carrot Recipe to Replace Rice

I recently came up with a new way prepare carrots that my brother and I love. I was inspired by some awesome carrots I had at one of our fav restaurants, which is a Sri Lankan place. The idea was to prepare carrots in a manner that they could be used a substitute for rice. I also wanted to maintain an Indian/Sri Lankan flavor.

Ingredients:

Shredded Carrots (We buy ours at whole foods pre shredded, but you can shred your own)

Chicken Broth

Cumin

Chili Powder

Fresh Ground Pepper

Fresh Ginger

Butter

***DO NOT add salt, the chicken broth is salty enough***

Instructions:

Pour the carrots, spices, and chicken broth in a covered pot or pan and bring to boil. A while ago, I saw an episode of Anthony Bourdain's "No Reservations" featuring a woman called the lunch lady. She is a super famous street vendor in Vietnam, who makes a different delicious soup everyday. She buys the freshest ingredients from the market on a daily basis and changes her menu depending on what's available. To learn more about the lunch lady, read this great article from Gastronomy. I'm going to do some more Goole research and then attempt to make something similar to one of her soups. Results to come.

On the same note, this weekend I'm planning on cooking a Korean chicken stew. My friend at work brought me a sample that she made (she is second generation Korean - parents came over from Korea), and it was fantastic. I bought my whole chicken at whole foods this evening, and dropped it in the brine so it will be ready for tomorrow. Pics to come.

64oz Klean Kanteen

My brother and I wanted to get a big, stainless steel water pitcher to
have in the fridge.
