<p>We&#8217;ve had more requests for this carrot cake that Mom made, over all the &#8220;fancy ones.&#8221;  I don&#8217;t know where she got it, but made it as early as I can about remember.  Try it, follow the recipe, you won&#8217;t be disappointed!</p>
<h3>Ingredients:</h3>
<p><span style="text-decoration: underline;">Cake:<br />
</span>2 c. flour<br />
1 t. soda<br />
1/2 t. salt<br />
2 t. cinnamon<br />
1-1/2 c. vegetable oil<br />
4 eggs<br />
2 c. sugar<br />
3 c. grated carrots</p>
<p><span style="text-decoration: underline;">Frosting:  (We double this)</span><br />
8 oz. cream cheese, softened<br />
1 box (1 lb) powdered sugar<br />
1 c. grated or chopped pecans<br />
1/4 c. butter or margarine, softened</p>
<h3>Directions:</h3>
<p><span style="text-decoration: underline;">Cake:<br />
</span>Sift together flour, soda, salt &amp; cinnamon. Set aside.</p>
<p>Cream together oil &amp; sugar. Add eggs one at a time, beating well after each addition. Add this mix to dry mixture. Stir in grated carrots, mix well.<br />
Bake in 3 greased and floured cake pans (round) at 350 F. 35-40 minutes.</p>
<p><span style="text-decoration: underline;">Frosting:</span><br />
Mix creamed cheese with butter or margarine. Beat well. Add powdered sugar about 1/3 at a time, mixing and beating well after each addition. Stir in pecans and mix well. Use to frost top, sides &amp; layers of 3-layer cake.</p>
<p>It&#8217;s so much easier and doesn&#8217;t make much difference if you skip the nuts on the sides of the cake, which is what we usually do.  Would love to hear your feedback!</p>

<p>Thanks to our southern cook, Pat King, for this recipe!</p>
<p>Ingredients:<br />
2 cans French-cut green beans<br />
1 medium onion, cut in rings<br />
8 strips bacon<br />
1/2 c. slivered almonds<br />
6 T. sugar<br />
6 T. vinegar</p>
<p>Directions:<br />
Drain beans and put in 1-1/2 quart casserole dish. Place separated onion rings over beans. Fry bacon strips and save drippings. Cut the strips in halves or quarters and lay over the onion rings. Sprinkle almonds over bacon. Add sugar and vinegar to bacon drippings and heat. Pour over casserole.</p>
<p>Marinate several hours or overnight. Bake 45 minutes at 450. (We&#8217;ve always baked covered).</p>

			<content:encoded><![CDATA[<p><img class="alignright size-thumbnail wp-image-2350" style="border: 0px;" title="05-12REMAXHOUSEREPORT" src="http://www.topekahomesearch.com/blog/wp-content/uploads/2012/05/05-12REMAXHOUSEREPORT-175x120.jpg" alt="Thumbnail of REMAX May 2012 National Housing Report" width="175" height="120" />The national median home price rose for the third straight month in April, indicating that a housing recovery is strengthening in 2012.  In the 53 metropolitan areas surveyed by the RE/MAX National Housing Report, median home prices were 3.2% higher than March and a solid 5.9% higher than April 2011.  After 18 consecutive months of year-over-year price declines, February was the first month home prices experienced an increase.  How, March and April have followed suit creating a positive trend.  The market continues to show strength with home sales 4.1% higher than April 2011.  April becomes the 10th month sales have pushed higher than the same month a year earlier.  Inventory, Months Supply and Days on the market are all trending lower.  With current levels of sales and inventory, an expected up-tick in foreclosure properties could be absorbed if they come to market over a reasonable time frame.</p>

			<content:encoded><![CDATA[<p><img class="alignright size-thumbnail wp-image-2297" title="chart" src="http://www.topekahomesearch.com/blog/wp-content/uploads/2012/05/chart1-175x120.jpg" alt="RE/MAX Leads the Industry in Topeka Kansas (Image)" width="175" height="120" />RE/MAX agents continue to be the most productive real estate professionals – by a wide margin.</p>
<p>In the <a title="RE/MAX Shines in Topeka Kansas" href="http://www.topekahomesearch.com/blog/wp-content/uploads/2012/05/REALTrends_Charts2012.pdf">annual REAL Trends 500 study</a> – an independent ranking of the Top 500 U.S. brokerages – RE/MAX Sales Associates averaged 15.1 transaction sides last year. That figure was twice as high as the collective average of all agents in the study who are not affiliated with RE/MAX (7 transaction sides).</p>
<p>It was also twice as high as the averages posted by national competitors such as Coldwell Banker (7.2), Century 21 (6.9) and Keller Williams (6.9).</p>
<p>In fact, when the 500 brokerages were ranked by per-agent transaction sides – the most meaningful measure of productivity – RE/MAX claimed the top 18 spots and a dominant 44 of the Top 50.</p>
<p>Overall, 116 RE/MAX brokerages made the rankings; no competitor had more. And RE/MAX also led all national franchises in total sales volume per agent with $3 million, 60 percent more than the average of all other agents in the survey.</p>
<p>The survey results were yet another reminder that RE/MAX Sales Associates outsell the competition year after year.</p>
<p>&#8220;Since 1997 it’s been true that nobody sells more real estate than RE/MAX. Some may brag about their numbers, but quality and performance are what consumers look for,&#8221; says RE/MAX CEO Margaret Kelly. &#8220;RE/MAX agents are performing well at a critical time when housing is starting to improve, making them the best choice to help homebuyers and sellers in today’s market.&#8221;</p>

			<content:encoded><![CDATA[<p><img class="alignright size-thumbnail wp-image-2281" title="pinkpyrex" src="http://www.topekahomesearch.com/blog/wp-content/uploads/2012/05/pinkpyrex-175x120.jpg" alt="Image of pink Pyrex baking dish" width="175" height="120" />I have a green Pyrex bowl that my mother always used for macaroni &amp; cheese, rice pudding and the oyster dressing (we, as kids, knew to stay away from that) to take to the big family Thanksgiving dinners.  I never let it out of the house, and macaroni and cheese  tastes so much  better in that bowl to this day.  After we did a little kitchen remodeling to our 50&#8242;s kitchen, I got a bit into turquoise and bought a few turquoise Pyrex pieces.  Apparently, I am now getting hooked, because I bought a large pink 4-quart bowl (with the &#8220;pour&#8221; handles) and this is my latest piece.  It&#8217;s pink and about 1-1/4 quart.  I may keep going for a little while &#8211; it makes me feel good!  Of course, I&#8217;m from the 50&#8242;s, my house is from the 50&#8242;s, and I still watch a little Leave It To Beaver.  I love eBay!</p>
