The other day when the clouds were strikingly gray and the sun disappeared behind them, we hit the streets assuming it&amp;#39;s going to rain. I have been meaning to photograph the essence of monsoons in India and the early rains this year were quite promising. But, as nature had it, it didn&amp;#39;t rain. The pleasant weather however had the streets bustling with people (and animals) eager to enjoy the street food with family and friends.&lt;/div&gt;

&lt;span style="text-align: left;"&gt;The daily produce is laid in front of us on the ground on a wide Indian motif printed, bright and summery red square cloth. We sit on it, with our legs folded, crossed under. &lt;/span&gt;&lt;span style="text-align: left;"&gt;Perhaps a posture only Indians can relate to as relaxed.&lt;/span&gt;&lt;span style="text-align: left;"&gt;  We teasingly argue about who gets which task to perform. The herbs have to be washed and dried, the cluster beans deveined, the stem plucked of the green chilies and the most sought after task - peel and cube the mangoes, so that one would enjoy sucking the last remaining flesh off the seeds after it&amp;#39;s all done. It&amp;#39;s messy, but none of the vivid mustard color flesh can go to waste, the king of fruits deserves that respect. &lt;/span&gt;&lt;/div&gt;

Is it summer yet? It is here in &lt;a href="http://www.journeykitchen.com/2011/10/udaipur-city-of-lakes.html"&gt;Udaipur&lt;/a&gt; or at least the sight of watermelon is a good sign. Watermelon evokes sweet childhood memories of sitting around a round cutting board, mom meticulously and flawlessly slicing the melon while we sat waiting for our slices and contemplating whether the melon was sweet enough or will require a sprinkle of black salt. &lt;/div&gt;

The long absence from the blog needs a post of its own. And that I’ll save for another day. Today though, I wanted to talk about turning twenty five. Truth is, I have never been a date person. In matter of a month  decisions were made, suitcases were being packed and for the first time we were not shopping till we dropped before heading to India. The less things we take, the less we will miss the place, my mom said in her soft yet confident voice. We were leaving Kuwait for good. And not enough words were being exchanged.  There was the pressing question of &amp;#39;Where am I going?&amp;#39;. Am I really going home or leaving home?&lt;br&gt;

I sat on the staircase cuddling the bundle of clothes I had tied in my mom&amp;#39;s &lt;i&gt;dupatta &lt;/i&gt;(a multi purpose long scarf worn by South Asian women). The scent of my mom&amp;#39;s on the &lt;i&gt;dupatta&lt;/i&gt; was reassuring that I wasn&amp;#39;t far from home. Far as much as a couple of metres feel like when you are a 10 year old. Dad and I had got into an argument over the volume of the television which disturbed his precious afternoon nap. I protested as I always did until dad went ahead the unplugged the wire. Tears rolled down my cheeks as I went to my room.&lt;/div&gt;

The windows are kept open all through the day, without the fear of cold air braving into our head. Until all of a sudden the sky turns to a neon orange, visibility goes down to zero and our little apartment is flooded in dust. &lt;div class="MsoNormal"&gt;&lt;span style="font-family: inherit;"&gt;Today’s recipe is inspired from a traditional sweet recipe from the city of Kolkatta called &lt;i&gt;Mishti Doi,&lt;/i&gt; which M has childhood memories of. Mishti Doi is also called &lt;i&gt;Lal doi&lt;/i&gt; meaning red yogurt due to it characteristic reddish color. It is made by caramelizing milk and then setting fresh yogurt in earthen pots. Considering I always have dulce de leche on hand, sweetening my hot chocolate and drizzling it over everything I bake, I figured it will work great for adding that caramelized flavor for &lt;i&gt;Mishti doi. &lt;/i&gt;&lt;/span&gt;&lt;br&gt;

Growing up I only remember occasional traces of shredded beetroot in our salads, often overshadowed by many other ingredients, such that I could barely remember their taste. In my own kitchen, I often bought beetroot because &amp;#39;I need to eat healthy stuff&amp;#39;, but not until recently have I started appreciating it. My favorite juice these days is beetroot juice, that says something.&lt;br&gt;

In a desperate attempt to lose couple of pounds I declared a ten day soup diet. Winter means hot spicy comfort food, standing near the stove while cooking a pot full of soup, hot chocolate every morning, lying on the bed all day with a warm cozy blanket and not worrying about what to wear at work (everything can hide behind a coat including the not so in place curves). Every season, after  every meal, we would sit around my mother while she meticulously peeled  and chopped the fruits for us. Summer were often more labor-some for her  as she sliced oranges and watermelons for a family of six. In winters though, we each would be handed a custard apple, clementine or  tangerine right after the meal. &lt;br&gt;

When I learned this, I started stuffing his hate foods into invisible pockets of puff pastry, in sandwiches and meatballs. Like you might know by now, I have an obsession about such things. When I have my obsession under control, I also serve his love food such as lentils as snacks.&lt;/span&gt;&lt;br&gt;

&lt;div style="text-align: justify;"&gt;Food has not been on my top of my mind lately and hence the lack of posts. When my mind is void of any food creativity, I fall back on food that I grew up with. Food that doesn&amp;#39;t require me to think much or work much. Food that I can throw in a pot and be assured of delicious endings. And when it comes to simple comfort, soups top my list.  One of my favorite part about Bohra cuisine is the soups. Unlike the general Indian cuisine, Bohras make a lot of soups. They are often served along side rice dishes, to sip on while one eats the rice. &lt;/div&gt;&lt;br&gt;

&lt;div style="text-align: justify;"&gt;Paneer was nothing but a &amp;#39;cheap filler&amp;#39;  we siblings used to complain to mom, asking for meat instead.  Like all things we didn&amp;#39;t like, we ganged up against her, protesting to not eat it, leaving her with little option but to cook us what we liked. That&amp;#39;s the power of having 3 siblings. I used it. Paneer vanished from our lives.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Knowing M and his family&amp;#39;s love for paneer I prepared my self to mentally gulp down paneer after marriage. Then the day came. Everyone at home demanded to eat my mother in law&amp;#39;s paneer roll, which made my mother in law quite happy. &amp;quot;Easiest thing to make! Let me teach you how to make it&amp;quot; she said. I followed her to the kitchen, wishing all along a change in plan. While she fried her paneer to beautiful golden brown she told me about their humble starting as a family. &amp;quot;Meat was not always an option and paneer was my go to healthy &amp;#39;filler&amp;#39; for the children and they loved it&amp;quot; she smiled with pride.&lt;br&gt;

Almost, embarrassed by his tone, I blurted out, I was just curious how they got that paneer to be so soft and spongy. Not expecting an answer, after all his business relied on it, I looked up at M, who was clearly annoyed he was getting late, the shopkeeper like a true Indian salesman said &amp;quot;You have to buy milk from us for that&amp;quot;. Mom has warned me not to buy milk from him already &amp;quot;Way to expensive and its as thin as water&amp;quot; she complained.&lt;br&gt;
