<p>These coconut flour biscuits have helped me in the moments where I have craved something biscuit-or-bread-like. In living the paleo life, you really just occasionally want to pair a meal with something like a biscuit, but NOT a biscuit, because you know how it would make you feel afterwards! It all started the night I made roasted tomato &amp; basil soup, which is SO good. But, the craving for a grilled cheese sandwich to pair with it, was slightly overwhelming, so I set out to make something that would stand in it&#8217;s place&#8230; and these coconut flour biscuits did the trick!</p>

<li class="instruction" itemprop="recipeInstructions">In a medium skillet, sautée the apples, water, and 1&frac12; teaspoon of the cinnamon until the apples are the consistency of chunky applesauce or apple pie filling. Allow the mixture to cool before combining with the egg mixture.</li>
<li class="instruction" itemprop="recipeInstructions">In a medium-sized mixing bowl, whisk the eggs, melted coconut oil, coconut milk, coconut flour, &frac12; teaspoon of cinnamon, baking soda, and salt until well combined. Add the cooled apples, reserving &frac14; cup for a garnish.</li>
<li class="instruction" itemprop="recipeInstructions">Spoon egg and apple mixture into parchment cup lined muffin tins—1/4 cup each. Gently spoon about one teaspoon of the remaining apple mixture onto the top of each muffin.</li>

				<content:encoded><![CDATA[<p>Sometimes I find that we often write about our successes and not-so-often our failures in the land of social media/blog world. This week I had two failed paleo meals and I&#8217;m here to tell you all about them!</p>
<p>This week I am attempting <a href="http://kellyca.in/17dU0r1" target="_blank">emeals</a> paleo plan that I got for a mega deal from Groupon. ($5 for an entire year &#8211; due to some groupon bucks I had! score for a deal!)</p>
<p>I have so much fun posting pictures as I learn to cook and eat differently. We&#8217;ve (my fam and me) have been eating <a href="http://www.kellycain.com/paleo/" target="_blank">Paleo</a> for about a month now and needed some fresh ideas for meals and <a href="http://kellyca.in/17dU0r1" target="_blank">emeals</a> really supplied that with their paleo plan (grocery list included, score!) Sometimes, I found, branching out means failed meal attempts&#8230;</p>
<p><strong>This week there were two of those. </strong></p>
<p>Lemony Tuna Salad &#8211; which was just not my speed &#8211; Jer ate it and was fine with it!</p>
<p>Curried Pulled Pork &#8211; was ick. I really don&#8217;t like pork and I think that was my issue, not the recipe</p>
<p>BUT &#8212; I tried! So, two failed recipes that won&#8217;t be featured in my kitchen ever again. I&#8217;ll get back on track posting pictures and recipes as soon as I pick one that I love and want to share with you!</p>

<p><strong>tuesday</strong>- lemony tuna salad (on sale at HT), slow roasted plum tomatoes (already on hand)(this was not my fave, at all &#8211; but i&#8217;m not really a fan of tuna, go figure!)</p>

<p><strong>friday- </strong>out to eat! &#8211; it&#8217;s always good to get out of the house on a friday night</p>
<p><strong>saturday-</strong> lettuce fajitas &#8211; i will use pepper&#8217;s and onions from thursday night&#8217;s meal with chicken &#8211; this will be my first time sans flour tortillas, wish us luck!</p>
<p><strong>sunday- </strong>taco salad &#8211; using ground turkey</p>
<p><strong>snacks:</strong></p>
<p>kale chips</p>
<p>paleo energy bars {nut butter, pepitas, dark chocolate, dates, ground almonds} &#8211; these are SO good!</p>

<p>So, as you can see I did have some ingredients on hand and this helps a great deal with the weekly budget. Since we buy in bulk lots of times, I will have lots leftover for the next week, and the next. Other than that I bought a lot of things I needed at harris teeter, and one or two things at Trader Joe&#8217;s! <p>My friend, <a href="http://lifeglimpsed.com/" target="_blank">Ashley</a>, is writing her grocery plan on $100 a week, she has an additional child than we do, so that certainly accounts for that $25 difference. Check out <a href="http://www.kellycain.com/paleo/" target="_blank">her blog</a> for some great ideas and encouragement for eating on $100 a week!</p>
<p>Since I am brand new to Paleo, and I think maybe some of you might be new to embrace it too! Because of that, I am excited to share with you our meal plan each week and occasionally post some pictures of my meals.</p>
<p>We shop at Costco and Harris Teeter &#8211; we buy some select things at Trader Joe&#8217;s and Whole Foods, but I might up my purchasing of produce there until farmer&#8217;s market season.</p>
<h1><strong>Our plan:</strong></h1>
<p>We budget $300 a month for groceries, which breaks down to $75 a week. We are able to eat with real food (I buy organic and local when I can) for this amount. I plan for only dinners and usually lunchtime is leftovers or something simple. I make one or two snacks as well each week. Other than that we snack on almonds, cranberries, snap pea crisps (which does have grain), veggie straws (grain also), and/ or strawberries.</p>
<p>We usually take a family trip to Costco as is customary and we just love it there! I usually buy organic meats, almond milk, and some produce here (staple items).</p>
<p>Then, I sit down on Sunday nights with my computer and emeals &#8211; and start going through the list. I then order online from<a href="http://www.harristeeter.com/" target="_blank"> Harris Teeter</a> (it&#8217;s also great if I forget something, I just call and they&#8217;ll add it to my order!) for order pick up &#8211; believe me, this is the best way for me to stay on track and not impulse buy. The amount of money I spend on the monthly pickup is way less than what I would spend impulse buying.</p>
<p>I then place the order, pick it up on Monday to be ready to cook dinner. When I meal plan I take into account the week ahead, I look at our schedule and see what we have going on at nights and plan accordingly. Sometimes on those nights I&#8217;ll plan easy meals or just left overs. I also look at the weather and I plan soups/chilis for colder nights.</p>

<p>I started changing the way I eat.</p>
<p>Remember my <a href="http://www.kellycain.com/tag/seven/" target="_blank">7 journey</a> I started in January? If you don&#8217;t I&#8217;ll give you the short version -the goal was to eat only 7 foods for one month. It challenged me to my core, it ripped my little cheez-it &amp; diet coke loving heart to shreds, why? well because it helped me to start thinking about food differently. Not only that, but when whole-wheat bread was one of my foods and my stomach was in knots every night&#8230; I knew something was off. As soon as I elimanated the whole wheat bread/gluten I felt much better. Way better.</p>
<p>There are so many food buzz words these days</p>
<p>clean eating, gluten free, paleo, low-carb, low-fat. All of these can be a confusing mix when you are just trying to figure out how to eat healthy. Which is where I found myself 3 months ago.</p>
<p>Once my diet was gluten free &#8211; I was still noticing the reality that I needed to go a step further to feel even better. That was when I moved into Paleo.</p>
<p><strong>Paleo is this:</strong></p>
<p>Veggies</p>
<p>Meats</p>
<p>Oils, Nuts &amp; Seeds</p>
<p>Some Fruits (Berries)</p>
<p><strong>Avoiding:</strong></p>
<p>Dairy</p>
<p>Sugar</p>
<p>Wheat/Grain</p>

<p>One of the great things about eating paleo is that I&#8217;m rediscovering foods in a new way. Before, I probably never would have thought of roasting cabbage, but now I am forced to think differently about the foods that I am consuming.</p>
<p>We enjoyed our roasted cabbage as an alternative to the corned beef and cabbage combo on St. Patrick&#8217;s day!</p>

<li class="instruction" itemprop="recipeInstructions">De-stalk the kale, cut into 1-inch bits, like you would want to snack on.</li>
<li class="instruction" itemprop="recipeInstructions">Toss in a bowl with olive oil and sea salt, how much you use depends on your taste, try tossing it with less first, then add as you go. (I added too much salt the first go-round, try adding less, you can always add more)</li>
<li class="instruction" itemprop="recipeInstructions">Place on a single layer on a baking sheet</li>
<li class="instruction" itemprop="recipeInstructions">Bake at 275 for 20 minutes or until crispy</li>

				<content:encoded><![CDATA[<p>Can delicious and gluten free be in the same sentence? Why yes, yes they can! This delicious gluten free pizza recipe is about to prove that to you!</p>
<p>Tonight, (because the chicken planned to use for dinner had not yet completely defrosted) it was time for plan B!</p>
<p>&#8230;and I had a hankering for pizza! Since we went wheat free in January, life has not been the same. I think long &amp; hard now before I meal plan. Back in my wheat days we would make pizzas, chicken pot pie, cupcakes, pasta, soups with pasta, and life was just dandy and full of flour. But now, life is different &#8211; meal planning takes a bit longer, groceries are more expensive, but we feel good about the decisions we are making for our health. Nutrition doesn&#8217;t have to be so confusing. Eating foods that come from the ground is the way to go. I haven&#8217;t crossed the barrier to officially paleo yet, but slowly but surely. I got a bunch of recipes for this week&#8217;s meal plan from <a href="http://nomnompaleo.com/">Nom Nom Paleo</a> &#8211; I can&#8217;t wait to try the <a href="http://nomnompaleo.com/post/4207543396/damn-fine-chicken#">Damn Fine Chicken</a> (her title, not mine).</p>
<p>I tried making cauliflower crust pizza a few days ago, and while it was good, it was not quite for me. I was amazed at how the cauliflower took on the likeness of dough after the water was squeezed out&#8230; but I still think cauliflower&#8217;s taste is a bit too strong to fully replace some type of flour base &#8211; be it gluten free, or not. I am planning on blogging the recipe and the results later.</p>

<li class="instruction" itemprop="recipeInstructions">Place yeast in a bowl with one cup warm water, let stand for 10 minutes or until foamy.</li>
<li class="instruction" itemprop="recipeInstructions">Preheat oven 450 degrees</li>
<li class="instruction" itemprop="recipeInstructions">Put flour, oil, salt, and stevia in a bowl, mix together, add yeast mixture when ready.</li>
<li class="instruction" itemprop="recipeInstructions">Grease pizza stone using olive oil</li>
<li class="instruction" itemprop="recipeInstructions">Form dough into circle on the stone (I found that it was too difficult to transfer from counter to stone without it tearing)</li>
<li class="instruction" itemprop="recipeInstructions">Brush olive oil on dough</li>
<li class="instruction" itemprop="recipeInstructions">Bake in 450 degree oven for 15 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Top pizza as usual, place in oven on high broil on bottom rack for 4 minutes. Or until cheese is melted just the way you like it.</li>
