The <a href="http://teamzip.ning.com/">Team ZIP</a> member ran 52 marathons in 52 weeks, and most recently, a 202-mile solo run in under 50 hours.</p>
<p>“I love beef,” exclaimed Rauschenberg when interviewed after his solo run. “When I was running my 202-mile solo run, I was sending out live tweets. At mile 118, I tweeted, ‘I want a steak.’ I’m definitely a big fan of eating protein through beef, both before and after a race. I try to educate people that beef has a place in a well-balanced diet. This is something that works for me. You always hear about eating a lot of carbohydrates before a race, but for me, it’s protein. Beef isn’t the fatty thing it’s accused of being.”</p>
<p>Without a doubt, Rauschenberg is a strong advocate for the beef cattle industry. As an ultra-marathoner, author and speaker, Dane is well-equipped to share his expertise with health-conscious people. <p>Heading back to school usually means hectic schedules.  However, even in a time crunch, it is important to cook up meals that are nutritious and tasty.  Get up and go beef burritos makes the grade for ease and family appeal. This recipe is a fast fix that the kids can help make and even take in their lunches.</p>
<p><strong>Ingredients</strong><br />
1 pound boneless beef top sirloin steak, cut 1 inch thick<br />
1/2 teaspoon dried Mexican seasoning salt<br />
2 eggs, slightly beaten<br />
2 egg whites, slightly beaten</p>
<p>2 tablespoons water<br />
4 medium spinach or flour tortillas (10-inch diameter), warmed<br />
1/2 cup prepared thick-and-chunky salsa<br />
1/2 cup shredded reduced fat Cheddar cheese<br />
Toppings: Fat free dairy sour cream, additional prepared thick-and-chunky salsa (optional)<br />

<strong>Instructions</strong><br />
1. Cut beef steak lengthwise in half, then crosswise into 1/8 to 1/4-inch thick strips. Combine beef strips and Mexican seasoning in medium bowl; toss to coat.</p>
<p>2. Spray large nonstick skillet with cooking spray; heat over medium-high heat until hot. Add 1/2 of beef; stir-fry 1 to 3 minutes or until outside surface of beef is no longer pink. Remove from skillet. Repeat with remaining beef. Season with salt, as desired; keep warm. Wipe out skillet using paper towels, if necessary.</p>
<p>3. Combine whole eggs, egg whites and water in small bowl. Spray same skillet with cooking spray; heat over medium-low heat until hot. Add egg mixture; cook and stir 1 to 2 minutes or until scrambled and just set.</p>

<p>These steaks are traditionally prepared in a skillet to capture all the meaty juices for the peppercorn sauce. However, you can grill the steaks and prepare the sauce on the side, if desired.</p>
<p><strong> </strong></p>
<p><span id="more-869"></span></p>
<p><strong>Ingredients</strong></p>
<p>1 tbsp (15 mL) mixed peppercorns or black peppercorn<br />
2 beef grilling medallions, about 1 inch thick (6 oz/175 g each)<br />
1 tsp (5 mL) vegetable oil<br />
1/4tsp (1 mL) salt</p>
<p><strong>Peppercorn Sauce:</strong><br />
2 tbsp (25 mL) butter<br />
1 tbsp (15 mL) minced shallot<br />
2 tbsp(25 mL) brandy<br />
2 tbsp(25 mL)  red wine<br />
1/4cup (50 mL) sodium-reduced beef broth<br />
2 tbsp(25 mL) whipping cream<br />
<strong><br />
Preparation:</strong><br />
Using mortar and pestle or in resealable plastic bag using bottom of pot, crush peppercorns.</p>
<p>Brush steaks all over with oil; coat with peppercorns. In large skillet, fry steaks over high heat, turning once, until desired doneness, 10 minutes for medium-rare. Sprinkle with salt. Transfer to warm plate; tent with foil and let stand for 5 minutes before slicing across the grain.</p>
<p>Peppercorn Sauce: Meanwhile, in same skillet, melt butter over medium heat; cook shallot until softened, about 1 minute. Add brandy and wine; cook, stirring and scraping up any brown bits until reduced by half, about 1 minute.</p>
<p>Add beef broth; cook until reduced by half, about 2 minutes. Strain into heatproof bowl. Wipe out skillet.</p>
<p>Return sauce to skillet. Add cream; simmer until thickened, about 1 minute. Add any accumulated juices from steak. Serve with steaks.</p>

<p>According to the <a href="http://www.latimes.com/">Los Angeles Times</a>, for years, evidence has been mounting that extensive use of antibiotics in livestock, particularly to promote growth or prevent the spread of disease in crowded pens, has resulted in the development of drug-resistant bacteria. The FDA wants meat producers to consult more closely with veterinarians to determine when it is prudent to use antibiotics and which ones to use.</p>
