Of course, where else will I get such recipes, hahaha in the baking group. They look appetizing so I tried them and here is the outcome. I was thinking maybe I can make different kind of cookies, put two kinds of each in a holiday box and gift them to DH families. Yeah, that depends if I feel like it making different cookies. But it is good idea 👍👍.
DH was complaining because he is not very fond of plain flour cookies. He likes them with peanut butter (cannot make because DD have an allergy to peanuts), chocolate chips, etc., but not cheeses. Me in the other hand does not like chocolate or chocolate chips. hahaha.

I got this on the group I belong in. Shredded fresh cassava (my local grocery store called it yuca), coconut milk, condensed milk, evaporated milk. eggs, sugar, butter, and vanilla. For toppings coconut milk, condensed milk, and two egg yolks.

If you like to try them just goggle the recipe. My recipe is a quarter of what most posted. I can't eat the whole recipe, that would take me a year or so to finish hahaha. And yes, I am the only one that eat them in this household. Looking at the pictures my co-members post in the group makes me want to try them. One slice is perfect for me. But since I cannot cook just one slice, I have to divide the recipe to the smallest amount I can.

My children loves chicken nuggets, tenders, and strips. I found this recipe on my FB wall and I just have to try them for the sake of picky children. My youngest said it tasted just like the chicken strips at Great Adventure sells. And the best part is, my household eat it. Yes, all of my children and even my husband. I am a happy camper!
I have so much mushrooms growing in my property. A lot of inedible kind, so what a lady to do? Join a mushrooms identification groups. I do try to remember all the edible kind. I will worry about the poisonous kind later. So, Chicken of the woods is one of the edible kind I found nine feet high on a dead tree in my backyard. Of course I asked so much questions before harvesting them. When I felt confidence enough, I picked it, wash the way the pro-mushrooms hunters suggested, and how to prepare. I opt on sauteing them in olive oil, garlic, onion, and I mixed green pepper slices and shrimp. Boy that thing gave me so much gas, and the earthly smell is over powering everything. Next year, if my family is still here, I will try deep frying it like regular chicken and have to see if I like them better. I still have left over in the freezer. And my husband forbid me to try any wild mushrooms while he is at work hehehe.

From spring to late fall before the last first frost so many posts about the mushrooms they found. Mostly double posts because I guess they do not read anything. It's tiresome sometimes hahaha.
I found four edible mushrooms (confidently identifying) in my yard this year. I will have to post them singly for my own record. Chicken of the woods is the only one I tasted because my husband told me not to do so much at one year. He was scared for me hehehe. So, next year I can try another edible one. I can't wait.

This favorite of mine is very costly. Why you asked? Well, I ate it alone, and cooking one potato in a regular oven is a waste of electricity, in my opinion. I will be so happy if I can cook seven or even ten in one go. But no, not in this household 😄.
What's not to like with bake potatoes? I can't tell you because I love them with chili and cheese, bacon bits and cheese, sour cream and chives, and above (broccoli and cheese). Those are the bake potatoes Wendy's sells. Hahaha, yup Wendy's got me hooked with those potatoes. I haven't made the bacon and cheese, because Wendy's uses different kind of bacon. It's like pull pork but dry 😋, not the same as bacon bits you buy from your local grocery store or pieces of bacon you cook yourself. I have no idea where to get it. However, if I want it bad enough, home cooked bacon will do just fine.

**Note: I just checked Wendy's website and the picture of their bacon and cheese potato is not I was talking about. Those (now) are slices of regular bacon. I guess they don't use it anymore.

Do you remember the Yema cake I made a few weeks back? Well, i can't think of anything to do with the extra Yema cake frosting so I made this. A sweet milk candy. Pastilla is another Spanish word we inherited from Spaniards. Pastilla is Spanish word meaning "PILL." It makes me wonder if they used this to make children in the very early years to take their pills. 😄😉 Wrapping them in a sweet milk candy before giving the pill.

Anyhow, so I mixed powder milk and a little of butter while being warm in a pot. I used butter to prevent sticking. I cooked it in low heat until I the mixture is firm. You can also add lemon zest or any flavoring you want during this period. I transferred it to glass baking dish, flatten and cool in the fridge.

Then I sliced then and roll on the surface covered with cling wrap. Rolled to get a long log and cut into 1 1/2 inch long. Rolled in some sugar, I got creative here and used the sugar I used for sugar cookies and white sugar too. Filipino usually wrap them with different color cellophane or candy wrapping paper.

Since I am the only one eating this, there is no point on wasting nice papers 😃😄, fingers are as good. If you notice I am making a lot of Filipino sweets lately. There is a chance we will move in the Philippines in the future, so, I am practicing making sweets to sell as one source of income when we get there.

Like I said, I'm not into sweet kind of person, but it doesn't mean I can't earn money doing sweets.

Thanks to tasty.co for this recipe. I've change the recipe a bit because there are way too much pasta than the chicken and broccoli. Four member of my family can eat this as part of our weekly menu.

Ingredients for 4 servings

2 tablespoons olive oil
2 chicken breasts, cut into 1 inch (2cm) pieces
salt, to taste
pepper, to taste
½ cup yellow onion, about half an onion, diced
2 cloves garlic, about 1 tablespoon, minced
1 can 14.5 oz chicken broth
1/2 cup water
8 oz pasta shells
4 cups broccoli, or one head of broccoli
1/4 teaspoon cayenne powder
1/2 teaspoon nutmeg
1 cup milk
2 cups shredded cheddar cheese

Preparation

Heat olive oil on medium heat in a large pot. Add chicken breasts, season with salt and pepper, and allow the chicken to brown on one side.

Flip chicken, then add onions and garlic as the second side browns.

Once the chicken has browned on both sides, add chicken broth, water, and pasta to the pot.

Stir all ingredients, cover the pot with a lid, and bring to a boil. When it begins to boil, uncover and stir. Bring the heat to low, stir, then cover and let simmer for 20 minutes or until the pasta is al dente.

After 20 minutes has passed, uncover and add in the broccoli. Stir continually as the broccoli steams until the rest of the liquid evaporates.

Add milk and cheddar cheese and stir until the cheese melts and you have a smooth cheese sauce.

Add salt and pepper (to taste), cayenne, and nutmeg. Stir once more, then you’re ready to serve.

Enjoy!

By the look of my creation, I did not pound the chicken thin enough. It's still too thick. I had to fry then finished cooking it in the oven. The pan frying did not reach the middle. The taste is still the same. I think I cut this too soon. I cannot see the cheese inside 😁, it might have oozed out.

My family rarely helped when planning on what to eat. And then I always end up a week supply of lunch or dinner because they do not like what I made. Two of my children will taste it. One will always eat anything, he's twenty-eight years old. And the other three will dig up anything they want from the freezer.
Of course this is my plate, with rice 😋. That is my weakness, others are mashed potatoes. Don't get me wrong I do love a nice whipped mashed potatoes with brown gravy on top. Hmmm, now I am getting hungry thinking about it.

Yummy!!! My youngest son loves them, but complaint about his jaw hurting while chewing the caramel. We went apple picking over the weekend. I told everyone to pick the biggest ones they can find. Was I wrong with that. I should have told them to pick small ones. One apple is way too big for one person to eat when covered with caramel. 😁
We only picked four kinds. Two for eating (golden and red delicious) and the other two I can't remember the names. I wanted to use the unknown for baking. You can see below, I cut-up the apples. However, the caramel refuses to stick on it.
I'm sorry to disappoint you all, but DH don't want to stop at our local grocery store to get the ingredients for homemade recipe. Lucky enough, the orchard is selling the caramel and candy instant mix for fresh apples.

They said it is very popular cake nowadays in the Philippines. I wouldn't know I haven't lived there for for many decades 😃. I only remember yema sweet candy. It's made with egg yolk, condense milk, and chopped roasted peanuts. "YEMA" is spanish for yolk. We inherited the word from our spanish conquistador.

It is mostly a chiffon cake with yolk, and condensed milk sauce/icing/frosting (depending on how thick you made it). Top with shredded cheese. If you have a sweet tooth just like my husband you will love this. However, with someone like me. this will be way too much sweet.

I will still make it but when I do, I will cut the sugar in half or maybe just put 1/3 cup. The icing is enough to make it in the category of cake.

When I get tired of the same dish, I tweak it by adding anything I feel like eating that day. 😄 I know I am not the only one? Am I? I grew up eating vegetables and I do love them. When we go out in a restaurant, I always pick a dish with a lot of vegetables in it.
I am guilty of using instant sauce, it's from a packet. I cannot copy how to make it myself. I do grow the main ingredient on the sauce but I'm not good on taste and make it myself. I know someone that can do that. But not me. I am talentless hahaha.

Cooked the pasta according to the box direction. Then I cooked the divined/shelled shrimp (1/2 lb) with butter, set aside and saute the asparagus in the same pan with a little olive oil. I mixed the packet sauce with milk and olive oil (in a saucepan) simmer until thicken (make sure you stir). And I mixed everything together. Viola! Dinner!
What to do with a surplus of bell peppers? One recipe above. I just love the color of green, red. and yellow bell peppers. I cooked this with seeded and peeled tomatoes. I can't find the recipe right now, but I am sure you can find something similar if you google/bing it. I saute the cut-up meat in olive oil, onions, and garlic. Then add the tomato slices and wait for the meat to tender. Mixed in the peppers, cook until you reach the peppers consistency that you like. (I like mine with a little crunch left) Season with salt & pepper. I also add a few sprinkle of dried hot pepper flakes for some zing. It's delectable!

Instead of prosciutto, I mixed it with bacon. It's very easy to do. You cook four pieces of bacon, removed from the pan then add chopped onions and minced garlic. Then you add one bunch of asparagus, cut about one inch. Add the cut up bacon, and salt & pepper to taste. Viola!

These is not an experiment. Whenever I get tired of normal cooking, I make it differently. I like bacon and asparagus and that is what I got. Sometimes I even cook all the vegetables in my refrigerator. Just mix them all in the pan and seasoned.

So, what food do you cook without recipe? 😋
Another copy-cat canning of mine. 😃 When it comes to american food I don't have my own recipe. Since everyone was talking about pineapples on sale what else am I going to do. Make stuff with on sale pineapples and here is one of them.

If I have a lot friends this thing will be a seller. But since i don't, well, this will be in my pantry until i eat them. I enjoy making things in the kitchen, who knows maybe I will open a little bakery in my house since this property is still considered a business property. Something to think about to earn the payment for my very expensive property tax.
Remember the group I told you about a few post back? Yup, I got the idea from them. The pictures of food and recipes they share looks really good. I need to make my own and try them. With this recipe, my youngest and only daughter like it. DH does not like anything with fruit, but he will eat it when someone else gives it to him. He will not eat anything I make. I am still mad at him about the pumpkin cake he got two years ago. Ha! I told him I can make it if he wants it. He said, "I can't say no." However, he can say NO to me with no problem. Thanks DH!
I have enough blueberries from my 6 bushes and made this delicious easy dessert. You might say, 6 bushes? That I should have gotten more, right? Well, actually this is the very year that I actually able to harvest some. Before, I can only get a handful, for my whole harvest. I got three cups this year. Showing below is only one cup.

The caterpillars ate the flowers the first year. The deer enjoyed the leaves for two years. And I got really angry this year complaining I never gotten any good harvest so, I fenced and netted the area. I sprayed urine outside the fence and added a few tablespoonful of used ground coffee around the trunks. I am planning on putting a taller posts and double the wiring on top of each other so that the deer can't jump inside. I have a four feet tall fence around it right now, and that fence it like nothing to them. It never touch their belly, plus they are not scared of me/us.
Thank you so much SallysBakingAddiction.com for the recipe. I did not follow the direction to the T, I omitted the sprinkled sugar and I made my glaze with added lemon rind.

I been in love with Gyro since the mid-90's and every time I am around Italian or Gyro restaurant I need to have one. I used to work for a fast food restaurant inside the food court of a big mall and right across from the place I worked at was a Gyro Place. Usually all of the manager (myself included) will buy food that we share with assistant/co-managers and one of them bought this. I said I wanted to taste, and sure enough, I was hooked.
Even my youngest one loves it. I did some research and bought all what I needed to make it. Mind you, it was the hottest week in my area and using anything in house to make heat was making the whole house hotter than the outside temperature. I opt out on air conditioner to save money, so I cooked the meatloaf looking meat outside on the grill. Oh boy! It was scrumptious, it lasted a while too because only my youngest son and I eats it. I think one batch can feed a party of ten. Maybe I can serve them when we decide to have a party during summer.
Shawarma is one of the world's most popular street foods, especially in the countries of the Levant and the Arabian Peninsula.
<span style="font-family: "helvetica" , "sans-serif"; font-size: 10.5pt;">Knead the mixture on the
counter for 10 minutes - just like you're kneading bread. You may want to
use a dough-scraper to help keep the counter clean. (I do). Pick that meat
up and SLAM it into the counter, continuing to do so for the 10 minutes.
This is key to getting the correct texture. I'm no Alton Brown, but I
think the thing we're doing here is melting the fat so that we get a nice
smooth texture in the end.

<span style="font-family: "helvetica" , "sans-serif"; font-size: 10.5pt;">Form into a flat loaf - I like
to put the meat onto a piece of wax paper, and flattening it into a
3" high slab rectangle. I cover it with another piece of wax and use
a rolling pin to flatten it out, just make sure you straighten out the
edges to form a rectangle so that when it comes time to slice, they are
nice and even.

<span style="font-family: "helvetica" , "sans-serif"; font-size: 10.5pt;">Bake the loaf on a broiler pan
(or pan with raised edges, because it will leak grease!) at 350 for about
an hour. Alternatively, you can grill it over coals, that's my favorite
way, just be sure to turn often so as to distribute the juices.

<span style="font-family: "helvetica" , "sans-serif"; font-size: 10.5pt;">Allow to cool for at least 10

I only do toppings when my family goes to a gathering and have to bring a dish. So with this homemade strawberry sauce I can finally eat some with toppings. I'm not really sure if I will like it, but hey, it's worth a try. Plus I got these strawberries really cheap so, why not.

I used the low sugar pectin for this. I wish I can make my own pectin but my apple trees are barely alive because of caterpillars and deers. I finally got the caterpillars in control this year, but since it was getting bushy with leaves the deer can't help themselves but eat it. So, before they sprout again next year i will put a fine nettings on all of them. That will stop the caterpillars and deers from eating the leaves. And maybe, maybe it will be healthy enough to flowers and fruits.
I'm not really active on any of them but I do learn a lot. And this is one of them during spring this year. Everyone was talking about picking dandelion blossoms and making it to anything they enjoy.

And since I haven't tried dandelion jelly before, I told myself, why not. I even gave one jar to one of my DH co-worker because he said he heard about it and wanted to try it. I am very eager to share especially to the young generation that knows a little about wild plants medicinal benefits.

I picked about a bucket full, removed all the greens (well sort of), seep in hot water over night and made the jelly the next day. I could have easily made two batches, but since I am the only one who tries anything around my household I only made one batch. You can find a lot of recipe online, I don't have to share one here. My recipe is only mine because I'm a little rebel when it comes to my own usage of can or preserves items.

Lastly, make sure you read about the health benefits (the pros and cons) of any wild edible plants before doing it for the first time.

And I thought of "RAW YOGURT." How do you make raw yogurt? Let's think about the word "raw" here for a second. Isn't raw means "uncooked."

Yes, the problem begin there. It isn't raw if you cook the milk to boiling. I thought that since the word raw that you can make yogurt without cooking. So, why call it raw if it's been cook? Is this how people do it now a days. Twist the meaning of any words to make it sound better and healthier. Really people?

This is my copy-cat version I got from delish.com. The hard part is making the crescent roll dough, it takes a long time. However if you just wanted to buy a pre-made one, it would be easy. I also use my homemade pumpkin puree for this recipe and my family like it.
Unless they say they are coming before hand we don't invite them. And when we do invite them they tend to not show up and give us some lame excuse on why they never showed up.

However, this year DH long time friend invited his family to our house. Sure, I'll cook, just make sure you show up, I utter to DH. Which they did, but they had to live early because of his children & ex-wife.
I started preparing for this event on Monday before Thanksgiving.

I had to go back to the grocery store on Wednesday (the day before) because I forgot some key ingredients for some of the dishes. That place was a mad-house. Note to self: get everything early enough to avoid crowds.

We turned the living/dining/kitchen area of my late FIL (in-law suite) into a big dining room. As you can see below. I think we can still fit another table there. 25x15 room, I told DH if we remove the two rooms, we can have a much larger party room @ 25x30. The tables & chairs are some collection of my MIL, accumulated through-out the years. You will be surprise on how much stuff she hoarded.
