Call me old fashioned, but I love a good new year's resolution. My problem, like so many other resolution seekers, is that I'm a never-follow-througher. All the best intentions can carry my sorry butt a couple of weeks (tops), but after that I fall apart like a week-old clearance toy.&lt;br /&gt;&lt;br /&gt;Inspiration found me in December and we had a long chat over coffee about my approach to life.&lt;br /&gt;&lt;br /&gt;She said, "Krystle, you need bite-size goals that will lead you to long-term habits. That's where real change happens."&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;That's when the idea of "monthly challenges" became my plan for 2012. Each month I'll take on a new challenge and just like that, new habits will be born.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;January jumps in with 31 days of eating completely vegan.&lt;br /&gt;&lt;br /&gt;This shouldn't be a huge step for me since I've been a vegetarian for almost 2 years, and eat mostly vegan at home, but it's a challenge I want to test myself with. AND I made my own nontoxic cleaner. I usually use 7th Gen, but I was &lt;span style="font-style:italic;"&gt;motivated&lt;/span&gt; today. PLUS we're saving money for a house so I'm looking at any possible ways to save dough.&lt;br /&gt;&lt;br /&gt;...&lt;br /&gt;&lt;span style="font-style:italic;"&gt;Sidenote:&lt;br /&gt;Yay, we've finally had it with the apartment. It has great recipes for making your own all-purpose cleaner, toilet scrub and drain-no-more-cloggy elixir. I used those 3 today when clean-sweeping our place.&lt;br /&gt;&lt;br /&gt;This blog (that I've sadly neglected) also had a &lt;a href="http://krystleroseblog.com"&gt;good polishing&lt;/a&gt; today. Since we took the pictures for her, I thought it'd be fun to share my tattoo and my fiance's tattoo with you.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Krystle:&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style:italic;"&gt;When I was 19 I decided to get a tattoo because I had admired them on other people for so long. I knew my own tattoo needed to be something I would always love so I started sketching a horse running. It felt right. For me it represents my childhood and a future dream to own a farm for retired horses.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;img src="http://img.photobucket.com/albums/v115/KLily330/IMG_0822_600x400.jpg" alt="Krystle's tattoo" width="600" height="400" /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Ryan:&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style:italic;"&gt;My favorite tattoo is a modified version of an illustration taken from the Book of Kells, an 8th century Irish illuminated manuscript. I got the tattoo recently, when my girlfriend Krystle and I went to Ireland, and I surprised her by proposing. We found her ring together in Galway, a seaside town in the West of Ireland. I wanted an engagement memento of my own, and while we were eating lunch after getting the ring, we noticed a tattoo place across the way. On a whim, we went to see if they had any appointments available. We were in luck, and this custom tattoo place, which is usually booked months in advance, happened to have a cancellation for that afternoon. &lt;br /&gt;&lt;br /&gt;I don't know what the tattoo means to the 8th century monks that originally drew it, but to me, it will always be a symbol of my love for Krystle and a powerful memory of the proposal and our engagement.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;img src="http://img.photobucket.com/albums/v115/KLily330/IMG_0782_600x400.jpg" alt="Ryan's tattoo" width="600" height="400" /&gt;&lt;br /&gt;&lt;br /&gt;Isn't that sweet? Creating my Krystle Rose "empire" is no easy task. If you stole my sketchbook you'd question my sanity from all the ideas I've scrapped to pursue new ones.&lt;br /&gt;&lt;br /&gt;But isn't that life?&lt;br /&gt;Going down one path, only to discover a new one that feels more exciting.&lt;br /&gt;&lt;br /&gt;I'm learning that it's okay to be in a constant state of change. If I wasn't evolving as a person, how boring and stale life would become. &lt;br /&gt;&lt;br /&gt;I'm at the point now where I need to decide if I'm going to code the site myself or hire someone. I rarely second guess myself or ask for opinions.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;When I want something I just go for it. &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Examples: &lt;br /&gt;• cutting all my hair off&lt;br /&gt;• getting a tattoo&lt;br /&gt;• bangs&lt;br /&gt;&lt;br /&gt;I enjoy life by jumping right in … so why is dyeing my hair such a big deal? I saw a lot of old stuff (I mean &lt;span style="font-style:italic;"&gt;really&lt;/span&gt; old) and after a while it was difficult to admire every piece of furniture, china set, chipped paint swatch and restored wood beam. Some of these buildings have survived fires, earthquakes, hurricanes and war. The sidewalks are uneven, large chunks of plaster are missing on buildings (exposing brick) and the tallest church in the city is leaning to one side. A local described it as being "&lt;span style="font-weight:bold;"&gt;Charleston charm&lt;/span&gt;." I completely agree.&lt;br /&gt;&lt;br /&gt;&lt;img src="http://img.photobucket.com/albums/v115/KLily330/Charleston14_middleton.jpg" alt="Charleston SC Vacation 2011" width="600" height="450" /&gt;&lt;br /&gt;&lt;img src="http://img.photobucket.com/albums/v115/KLily330/Charleston5.jpg" alt="Charleston SC Vacation 2011" width="600" height="800" /&gt;&lt;br /&gt;&lt;span style="font-style:italic;"&gt;&lt;a href="http://www.middletonplace.org/"&gt;Middleton Place&lt;/a&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Our visit to Middleton Place was peaceful and inspiring. It differed from Magnolia Plantation because it hadn't been restored to its original grandeur. We wandered through a tourist-free labyrinth of paths to discover one of the largest live oaks I've ever seen. It was so large and ancient that cables and poles were holding the branches in place so they wouldn't just break off. Native Americans had once used that very tree as a marker when traveling through the area.&lt;br /&gt;&lt;br /&gt;Nature is an amazing thing.&lt;br /&gt;&lt;br /&gt;&lt;img src="http://img.photobucket.com/albums/v115/KLily330/Charleston6.jpg" alt="Charleston SC Vacation 2011" width="600" height="800" /&gt;&lt;br /&gt;&lt;img src="http://img.photobucket.com/albums/v115/KLily330/Charleston7.jpg" alt="Charleston SC Vacation 2011" width="600" height="800" /&gt;&lt;br /&gt;&lt;br /&gt;On the flip-side, people can create some amazingly &lt;span style="font-style:italic;"&gt;creepy&lt;/span&gt; places. This eery castle-looking thing used to be the city jail. It was built to hold 100 inmates, but at one time had held closer to 600. Whether or not you believe in ghosts, just standing outside this building gave me an uneasy feeling. I couldn't even stand by the front doors for very long without the hairs on the back of my neck standing up. Ryan wanted to take the jail tour but we ran out of time by the time we took these pictures (phew!).&lt;br /&gt;&lt;br /&gt;We had (to my excitement and dismay) signed up for a graveyard tour. As it turns out, Charleston is very haunted. Our tour guide made sure to tell us multiple times that, "bodies are buried everywhere in Charleston." Oh great.&lt;br /&gt;&lt;br /&gt;Like I said before, whether or not you believe in ghosts, you can't deny that some places just give you a weird feeling. Like an old graveyard at night. I've been on ghost tours before, but had never taken a picture that "captured" anything … strange. Here's the same shot 2 different ways. The first picture hasn't been adjusted at all. He said it was possible to see small orbs that (according to him) were spirits. Believe it or not, I still think this shot is pretty cool and creepy.&lt;br /&gt;&lt;br /&gt;The last leg of our trip was spent in Asheville, NC. The vegetarian options were outrageous. You know you've found a happenin' place when you search for "vegetarian" on Yelp and more than 3 options pop up. After searching through pages of yummy choices, we settled on the &lt;a href="http://laughingseed.jackofthewood.com/"&gt;Laughing Seed Cafe&lt;/a&gt; and &lt;a href="http://rosettaskitchen.com/"&gt;Rosetta's Kitchen&lt;/a&gt;. I missed sunshine, flipflops, the smell of sunscreen and more sunshine. I needed this vacation, badly.&lt;br /&gt;&lt;br /&gt;I tend to overpack on roadtrips. Books, magazines, CDs, audio books and snacks are strategically packed within reach, only to be ignored as I stare out the window or chat with Ryan. Maybe it's a comfort thing. Knowing I have enough supplies to live in the car for a week allows me to relax. Or maybe I'm the rare one that enjoys daydreaming for 11 hours straight.&lt;br /&gt;&lt;br /&gt;We drove to Knoxville, TN, the first night and enjoyed much-deserved margaritas with my parents and sister (who were driving separately). You could say we got a little tipsy and Ma and Pa told us stories about their wild and crazy years BC (before children). Then the party train continued chugging all the way to Folly Beach, SC.&lt;br /&gt;&lt;br /&gt;Without giving a play-by-play of the entire trip (because let's be honest, no one wants me to rub it in that badly), I'll share some highlights. I didn't think so when he scared the crap out of me. There I was, relaxing on a bench after touring Magnolia Plantation, waiting for my father and Ryan to finish trolling the gift shop (a common theme) and Sir Toad-a-lot jumped on my exposed leg with his cold, wet, squishy self. They were more impressive than the redwoods because I could admire their supersized, knotted branches up close. If not pterodactyls, definitely the Swiss Family Robinson. It was just a dream, then. Something added to the life list for later.&lt;br /&gt;&lt;br /&gt;A little over a year later, we've booked a vacation to Ireland for this September. Eeep!&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.travelzoo.com/top20/"&gt;Travelzoo&lt;/a&gt; had an amazing deal and we went for it. That's usually how it goes for us. Within an hour we've booked a trip that we had maybe only mentioned once or twice. Keeping the love alive through spontaneity. ;)&lt;br /&gt;&lt;br /&gt;We'll be driving around the country, staying at castle hotels for 7 nights. There's a ton to do before then to prep. Neither of us have traveled outside the country (besides Canada) so we'll be figuring out exchange rates and other international travel things. I need to buy a better camera. It's like my body and brain go into hibernation and there's nothing brewing in the ticker until the temps rise to at least 50.&lt;br /&gt;&lt;br /&gt;Luckily for me, Spring was finally kissed by her true love and awakened from her long slumber. It's about time.&lt;br /&gt;&lt;br /&gt;This morning I had a blast of inspiration to paint something. The contestants use gadgets and complicated techniques to infuse flavor into every bite. I might be wrong in this assumption, but I doubt families are storing liquid nitrogen in their pantry. Top Chef is good t.v., but in real life I prefer simple food. &lt;br /&gt;&lt;br /&gt;In no way does that mean I eat bland food. I enjoy bold, often spicy flavors that would make a grown man cry. Believe me, I've witnessed this.&lt;br /&gt;&lt;br /&gt;For me, simple food shows off the natural flavors of the ingredients and isn't hard to prepare.&lt;br /&gt;&lt;br /&gt;Ryan and I invented what we call a "&lt;span style="font-weight:bold;"&gt;tri-part meal&lt;/span&gt;." It usually consists of a potato, a grain and a green vegetable. One of our favorites (shown above) is a tri-part meal of sweet potatoes (with salt, pepper and thyme), steamed spinach and couscous. This equation has become my go-to meal for nights when Ryan is working late and I need to make dinner myself (eeeek!).&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Simplicity is a beautiful thing because it allows me to focus on what's important.&lt;/span&gt; Preparing complicated meals stresses me out, so I opt to skip that part of my day and instead choose foods that are less fussy. Problem solved.&lt;br /&gt;&lt;br /&gt;Tri-part meals are also nice because I can easily mix it up when I get bored. Maybe I'll try a new bean this week and pair it with a favorite grain and green. It hasn't felt right. Now it's snowing again in Michigan and there's nothing to do but write.&lt;br /&gt;&lt;br /&gt;It's hard to go through my google reader lately. After the current world events, it doesn't seem like a good use of my time to look at "pretty things" day after day. I love my bloggers and I am proud of the community coming together to raise money for Japan, but I've been questioning larger things. Is it enough to donate a little money and call it a day? I feel like I'm capable of doing so much more, you know? &lt;br /&gt;&lt;br /&gt;I could dig wells, save kittens, lead a design crusade for the environment. I don't know. Since I can't (shouldn't) eat a baked potato for lunch everyday, what else will hit the spot?&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style:italic;"&gt;Can I have a big salad?&lt;br /&gt;A big salad?&lt;br /&gt;It's a salad, only bigger, with lots of stuff in it.&lt;br /&gt;I can bring you two small salads.&lt;br /&gt;Could you put it in a big bowl?&lt;br /&gt;We don't have big bowls.&lt;br /&gt;All right, just get me a cup of decaf.&lt;br /&gt;We have Sanka.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;I call it my random salad surprise – open the fridge, grab whatever is calling to me in that moment and pile it on. This time it was leftover quinoa, assorted peppers, black olives, half of an avocado, pepper and raspberry vinaigrette on spinach and mixed greens.&lt;br /&gt;&lt;br /&gt;It's bulky, filling and satisfying. Especially when I throw in a side of pita chips + hummus and chocolate soy pudding.&lt;br /&gt;&lt;br /&gt;I happen to be the slowest eater on the planet and this lunch took me 50 minutes to graze through. I knew there was a reason I moved 6 minutes away from work. I guess that goes for a lot of things – playing music, cooking a fabulous meal, meeting a deadline, taking the perfect picture of your cat yawning – when someone gives you thumbs up, it feels good.&lt;br /&gt;&lt;br /&gt;When I stumble across something that inspires me I tend to squirrel it away without mentioning to the creator that I like their work. With sites like &lt;a href="http://pinterest.com/krystlerose/pins/"&gt;Pinterest&lt;/a&gt;, I'm able to save the things I like to reference later. You know … when I have time. I don't know about you, but I rarely go through everything I've "saved for later." The internet moves so fast, with new, shiny things to amuse me. &lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;I'd like to make it my goal to slow down a little.&lt;/span&gt; To take time and properly comment on blogs I enjoy or message an artist/crafter/writer and tell them how great I think they are.&lt;br /&gt;&lt;br /&gt;It's time to soak up the love and pass it on to the next deserving, hardworking, passionate person. Toodles cheese. Ta-ta coffee creamer.&lt;br /&gt;&lt;br /&gt;For some people, that probably sounds impossible. You might be thinking, &lt;span style="font-style:italic;"&gt;"I could never give up cheese. I love macaroni and cheese, cheesy enchiladas, mozzarella-covered pizza and parmesan on my pasta."&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;I confess, I love those things too. The fantastic thing is, I still enjoy them … but with vegan ingredients.&lt;br /&gt;&lt;br /&gt;I decided to transition into the world of vegans when I noticed I felt like crap every time I ate a dairy-filled meal. I'd eat cheese pizza and bread dripping with garlic butter for dinner, and literally 5 minutes later I felt like I wanted to die. Without getting into too much detail, my body wasn't reacting well (if you know what I mean).&lt;br /&gt;&lt;br /&gt;If veganism isn't your cup of honey-drenched tea, I understand. &lt;span style="font-weight:bold;"&gt;I'm not about to get all preachy.&lt;/span&gt; Ugh, I hate that. Who do those snobby-types think they are, anyway? My plan is to share a few things along the way that I'm too stoked to hold in. Like how I found the most amazing recipe for vegan chocolate chip cookies that everyone in the world should try. Stuff like that.&lt;br /&gt;&lt;br /&gt;It's a transition that I'm taking slow and learning as I go. I'm going to screw up a lot, and you're welcome to make fun of me. I completely crashed yesterday and slept for 12 hours. Ryan and I, in the 3 years we've been dating, have only taken trips to the west coast – San Francisco, LA, Portland &amp; Seattle. We'd drag our pop-up camper behind us and set out on some random adventure. Usually it involved visiting historical monuments because my dad is really into ... well, history. From what I've read, Charleston will certainly satisfy a history buff.&lt;br /&gt;&lt;br /&gt;Did I mention my mom, dad and sister are going too? We're sharing a 3 bedroom condo right on the ocean.&lt;br /&gt;&lt;br /&gt;I was happily surprised to discover that Charleston is vegetarian-friendly. Here are a few veggie/vegan restaurants that I've found so far:&lt;br /&gt;&lt;br /&gt;• &lt;a href="http://www.thehealthysprout.com/home"&gt;The Sprout&lt;/a&gt; (all vegan)&lt;br /&gt;• &lt;a href="http://www.alluettes.com"&gt;Alluette's Cafe&lt;/a&gt;&lt;br /&gt;• &lt;a href="http://threelittlebirdscafe.com"&gt;Three Little Birds Cafe&lt;/a&gt;&lt;br /&gt;• &lt;a href="http://www.tasteofindiacharleston.com"&gt;Taste of India&lt;/a&gt;&lt;br /&gt;• &lt;a href="http://yourpie.com"&gt;Your Pie&lt;/a&gt;&lt;br /&gt;• &lt;a href="http://www.fiveloavescafe.com"&gt;Five Loave Cafe&lt;/a&gt;&lt;br /&gt;• &lt;a href="http://soulveg.net"&gt;Soul Veg&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Vegan "soul food" exists, people. And apparently it's in South Carolina.&lt;br /&gt;&lt;br /&gt;I'm still researching things to do while we're there. Antiquing will be a big part of that plan – it's also the reason why we're driving separately from my family. What if I find the perfect couch? Everyone gets weird notions like this out of the blue, right?&lt;br /&gt;&lt;br /&gt;I'm pretty sure the motivation came from having 8 shadow boxes sitting around the apartment with no one to claim them. The gallery show, that I was a part of in December, had finally tracked me down to pick up the rejects. So of course I sent Ryan over there to do my dirty work.&lt;br /&gt;&lt;br /&gt;He also agreed to tag along on my shopping trip to Michael's and Salvation Army in search of props. I didn't expect it to be so much fun. I rarely buy things just because I like them. I have to feel a "can't live another moment without this" vibe to spend money on anything other than food.&lt;br /&gt;&lt;br /&gt;True to form, I gravitated to beautiful old candlestick holders. It's a weakness of mine. I also love the India inspired tea light holder with old wax drippings on the inside.&lt;br /&gt;&lt;br /&gt;For each shadow box, I created different arrangements of these new props and a few other things I had around (like Buddha).
