<p><strong>Beef Wellington</strong> is a preparation of beef tenderloin coated with pâté (often pâté de foie gras) and <em>duxelles</em>, which is then wrapped in puff pastry and baked. The origin of the name is not clear, although it is commonly accepted that Beef Wellington is named after Arthur Wellesley, First Duke of Wellington, a Brittish general that defeated Napoleon at Waterloo (Belgium), bringing an end to the Napoleonic era of European history.</p>
<p>My recipe today is a variation of this traditional British dish (which some indicate would be inspired by the French <em>Boeuf en crôute</em>): I have used pork tenderloin, and wrapped it in a French baguette dough. I do not know what Napoleon would think of this recipe that is named after his defeater, but I am sure that he would take his hand out of his jacket to pick one piece of this Wellington baguette.  </p>

<p>Baguette: </p>
<li class="ingredient">250 g bread flour</li>
<li class="ingredient">5 g fresh yeast</li>
<li class="ingredient">165 ml water</li>
<li class="ingredient">5 g salt</li>
<li class="ingredient">Decoration (optional): lace and cornstarch</li>
<p><em>Duxelle</em>:</p>
<li class="ingredient">25 g butter</li>
<li class="ingredient">2 shallots, finely chopped</li>
<li class="ingredient">1 cup mushrooms, sliced</li>
<li class="ingredient">1/5 cup Madeira or Oporto wine</li>
<p>Filling:</p>
<li class="ingredient">1 pork tenderloin</li>
<li class="ingredient">foie gras, 50 to 100 g</li>

<h4 class="instructions">Directions</h4>
<ol class="instructions">
<li>Put flour and yeast in a bowl and combine. Add water and salt. Use a large spoon or pastry scraper to mix everything together. Take the dough out of the bowl and knead. You will feel the dough become elastic after kneading for about 5 minutes. Knead the dough for 5-10 minutes or until the dough is soft, pliable, smooth and slightly shiny. Put the dough into a lightly floured bowl and cover with a cloth. Let the dough rise in a warm place until its size doubles (1 hour depending on the room temperature)</li>
<li>Prepare the <em>duxelle</em>. Heat a frying pan and melt the butter. Add shallots, and cook gently, stirring from time to time. Finely chop the mushrooms, and add them to the pan.  Cook, stirring frequently, until mushrooms appear dry and are beginning to brown; about 5 minutes. Add salt and pepper, and then Oporto wine. Cook, stirring frequently, until the wine has evaporated. Remove from heat and let cool.</li>
<li>When our baguette dough is ready, place it on a lightly floured surface, and shape it to a large oval, the size of your pork tenderloin. Spread the duxelle and pâté down the centre of the dough, and place the meat on top in the centre. Fold the dough over lengthways and turn the parcel over a baking sheet with parchment paper, so that the join is underneath.</li>
<li>Let the bread rest for 30 minutes, whilst preheating oven to 400 ºF (200 º C). Decorate your bread placing a large lace over the bread, and then sprinkle with cornstarch. Remove carefully the lace, and bake your Wellington baguette for about 20 minutes </li>
<li>Remove from the oven, and let it cool about 15 minutes before slicing it</li>

<li>I did not sear the meat before placing it in the dough, because searing does not &#8220;seal&#8221; the juices. Although often said to &#8220;lock in the moisture&#8221; or &#8220;seal in the juices&#8221;, searing has been demonstrated to result in a greater net loss of moisture versus cooking to the same internal temperature without first searing. Nonetheless, it remains an essential technique in cooking meat for several reasons:<br />
1- The browning creates desirable flavors through caramelization and the Maillard reaction.<br />
2- The appearance of the food is usually improved with a well-browned crust.<br />

<li class="ingredient">1 tsp baking powder</li>
<p>Whipped cream: </p>

<li class="ingredient">1 tbs sugar</li>
<p>Chocolate frosting (two ways):</p>
<p>First option (hard chocolate cover)</p>
<li>350 g dark chocolate (12 oz)</li>
<p>Second option (fudgy chocolate cover)</p>
<li>200 ml heavy cream (4/5 cup)</li>
<li>50 g butter (3,5 tbs)</li>
<li>250 g dark chocolate (9 oz)</li>

<li>Start by making the cake. Preheat oven to 180 º C (350º F) and grease the mold (I used cake release spray). Place eggs and sugar in a medium bowl, and beat on high speed until thick and pale.</li>
<li>Beat in the oil</li>
<li>By hand, stir in the sifted flour and baking powder, and mix well</li>
<li>Pour the mixture in the mold (fill 3/4 capacity) and bake for 20-25 minutes. Remove from the oven, let it cool for about 15 minutes, and then unmold carefully and let cool completely.</li>
<li>Then prepare whipped cream to fill the cake. In a bowl, place cream (very cold) and sugar, and beat until light and fluffy.</li>
<li>Slice cake in two, and fill with the whipped cream. Then choose if you want a crunchy chocolate frosting, or a smoother one</li>
<li>For a <strong>hard chocolate cover</strong>, choose &#8220;first option&#8221; ingredients.</li>
<li>Clean the mold we used for baking the cake. Melt chopped chocolate (using a double boiler or the microwave)</li>
<li>Pour it in the mold, until the bottom of the mold is completely covered with chocolate. Cut off the borders of the cake using a sharp knife, and place it inside the mould. Then fill the mold completely with chocolate, and place in the fridge for a couple of hours to set. Once set, remove the mold from the refrigerator, and unmold<br />
carefully</li>
<li>For a <strong>creamier chocolate cover</strong>,  choose the &#8220;second option&#8221; ingredients. Pour cream on a medium saucepan, bring to boil, remove from heat, and add chopped chocolate and butter. Allow to rest for a few minutes, and then stir until dissolved.</li>
<li>Place cake on a wire rack, and pour frosting over it, being careful to cover the cake completely. Place in the fridge for a couple of hours to set</li>

<p>I am doing a cooking course at a culinary school, and one of our first activities was to create different desserts which involved grilling fruit. Fruit is perfect for the grill because it is so easy to prepare and the heat of the grill whether, induction, electric, gas or charcoal, will add fantastic flavor to any fruit. The natural sugars in the fruit will caramelize over the fire, concentrating the flavors by reducing the water. The process is also very simple: you will need sliced fruit, and some melted butter to prepare the most basic grilled fruit. Hard fruits like apples, and pineapples are the easiest to grill since they hold their shape and texture while cooking. Softer fruits like peaches, or plums will become too soft if overcooked. You will need to be more attentive of this kind of fruit,and if you are preparing them on a charcoal grill, I suggest you using aluminim foil to keep the fruits from falling through the grilling racks. </p>
<p>With many fruits you can simply cut them in half and, with most fruits you can leave the peels on. This helps hold them together whether you eat the skin or not. It is best to grill fruit over medium heat on a very clean cooking grate. To keep the fruit from sticking to the grill, lightly brush them with melted butter. You can also try marinating the fruits in a combination of your favorite spices and your favorite alcohols. A mixture of rum, brown sugar, cinnamon, honey, vanilla,&#8230; Let your imagination run wild and you’ll find what a great addition grilled fruits can be!!!</p>

<li>Place carefully the apple mini pies on the grilling pan, apple side down, and cook for 3 minutes, until apple is tender and caramelised. Turn the mini pies carefully, and cook about 3 minutes more, until pie dough is crusty.</li>
<li>Serve the hot mini pies with a dollop of vanilla icecream on top, and some caramel sauce</li>

<p>The name for this potato salad in Spain is &#8220;ensaladilla rusa&#8221;, or Russian Salad. It seems that the original version of the salad was invented in the 1860s by Lucien Olivier, the chef of the Hermitage, one of Moscow&#8217;s most celebrated restaurants. The exact recipe — particularly that of the dressing — was a jealously guarded secret, but it is known that the salad contained grouse, veal tongue, caviar, lettuce, crayfish tails, capers, and smoked duck. </p>
<p>There are many versions of this Spanish recipe, and all of them are delicious! You could add some chopped pickles, green olives, shrimps or red peppers. </p>

Potato salad: </p>
<li class="ingredient">4 potatoes</li>
<li class="ingredient">1 carrot</li>
<li class="ingredient">2 eggs</li>
<li class="ingredient">1 cup boiled or steamed peas</li>
<li class="ingredient">1 can tuna, drained</li>
<p>Homemade mayonnaise: </p>
<li class="ingredient">1 egg</li>
<li class="ingredient">350 ml extra virgin olive oil</li>
<li class="ingredient">pinch of salt</li>
<li class="ingredient">2 tbs vinegar</li>
<p>Crab pâte:</p>
<li>1 can anchovies, drained</li>
<li>1 can mussels, drained</li>
<li>15 crab stichs</li>
<li>2 tbs mayonnaise</li>
<li>1/2 sweet onion</li>
<li>1 tbs dry Sherry wine (Fino)</li>
<li>50 g butter, room temperature</li>
<p>To decorate:</p>
<li>12 quail eggs, hard boiled and peeled</li>

<ol class="instructions">
<li>Place potatoes and carrot in boiling water until they are cooked through (about 25 minutes). Remove from water and let cool, whilst hard boiling the eggs (it will take about 15 minutes). Remove from water and let cool. Peel potatoes and carrot, chop into very small cubes. Chop hard boiled eggs as well, mix with tuna and peas, and reserve in the fridge whilst preparing the mayonnaise</li>
<li>Place all mayonnaise ingredients in a thin bottomed mixing container, place the stick blender at the bottom of the container, and blend until the mixture emulsifies. Don’t lift the blender: keep it at the bottom until the bottom of the mixture starts to really thicken and turn to mayonnaise. Once the bottom half of the mixture has turned to mayonnaise, you may lift up the mixer to finish mixing in the oil at the top. Taste<br />
and add more salt or vinegar if needed.</li>
<li>Add the mayonnaise to the potatoes and mix thoroughly. If necessary, add more mayonnaise. Smooth top of potato salad, and cover with more mayonnaise, preparing for decoration. Reserve in the fridge</li>
<li>Now were are going to prepare our crab pâte. Chop all ingredients, and place in a mixing container (excepting butter). Blend until smooth. Take 150 g pâte (store the remaining pâte in the fridge, inside an airtight container to dip anytime you want) and mix it with 50 g butter.</li>
<li>Fill a piping bag with the crab pâte, cut a small hole at the end, and then very slowly pipe the &#8220;nest&#8221;, building up the side of the nest going round and round. Keep in the fridge</li>
<li>Just before serving, decorate with hard boiled quail eggs</li>

<li>To boil quail eggs, place them in small saucepan with water, bring to boil, and then count about four minutes (soft boil)</li>

<li class="ingredient">200 g sugar</li>
<li class="ingredient">200 ml whipping cream</li>
<li class="ingredient">150 g butter, soft</li>
<li class="ingredient">350 g flour</li>
<li class="ingredient">1 tbs baking powder (16 g)</li>
<li class="ingredient">pinch of salt </li>
<li class="ingredient"><a href="http://www.edible-glitter.co.uk/acatalog/Multicoloured_Sugar_Confetti-_50_grams.html" target="_blank">Sugar Confetti</a> (90 g) </li>
<p>Vanilla Buttercream (<a href="http://www.pepinho.com/2007/02/crema-de-mantequilla-butter-cream.html" target="_blank">i-recetas</a>):
<li class="ingredient">100 g sugar</li>
<li class="ingredient">30 ml water</li>
<li class="ingredient">2 egg whites (pasteurized, preferably)</li>
<li class="ingredient">300 g butter, room temperature</li>
<li class="ingredient">1 tsp vanilla extract </li>
<p>Decoration:</p>
<li>More confetti sugar (about 40 g)</li>
<li>Whipped cream for the clouds</li>
<li>Sweet/Sour Rainbow Strip</li>

<h4 class="instructions">Directions</h4>
<ol class="instructions">
<li>Preheat oven to 350 ºF </li>
<li>Prepare 3 5,9 inches (15 cm) cake pans (butter and flour the bottom and the sides of the pans)</li>
<li>In a large bowl, place eggs and sugar, and beat on high speed until light and fluffy</li>
<li>Add cream and butter, and mix well</li>
<li>Add flour, salt and baking powder, and beat just until combined</li>
<li>Pour batter into pans and bake for 20-25 minutes </li>
<li>Leave the cakes in their pans on a wire rack for 10 minutes and then turn out to cool. Gently turn cakes back up, so the tops are up</li>
<li>When cold (the cakes can be frozen<br />
or kept on an airtight container for a few days) trim any doming or top crust from cake layers using a very sharp serrated knife</li>
<li>Now we are going to prepare the vanilla buttercream</li>
<li>In a small saucepan over medium heat, bring sugar and water to a boil. Continue boiling for a few seconds, and set aside. Meanwhile, place egg whites in the bowl of a standing mixer fitted with the whisk attachment, and beat on medium-high speed until stiff. With mixer running, add syrup to whites in a stream, beating on high speed until the meringue is cold. Add butter bit by bit, beating until spreadable, 3 to 5 minutes; beat in vanilla. If icing curdles, keep beating until smooth.</li>
<li>Line a serving plate with pieces of paper parchment (so that they can be easily removed with you have finished with decoration). Place the bottom cake layer on top of your serving plate (it this is your first time frosting a cake, you might need to <a href="http://www.foodnetwork.com/how-to/how-to-frost-a-cake/pictures/index.html" target="_blank">have a look at the proccess step by step</a>)</li>
<li> Place 1 dollop frosting on top of the cake layer, and spread evenly with a small offset palette knife. Gently place 2nd cake layer, face up, on top, another dollop frosting, and finally the third cake layer on top. Put a generous scoop of frosting over it, spreading evenly with a small offset palette knife and working your way down the sides until you have a thin layer of frosting over the entire cake. Freeze until set, about 15 minutes.</li>
<li>After removing the cake from the freezer, finish frosting. Place a frosting dollop on top and move the frosting along the side of the cake, removing the excess as you turn the cake. Clean and moist the spatula between every swipe for a perfect finish on your mini cakes</li>
<li>Using a piping bag with a round medium tip, place two clouds at opposite sides of the cake. Bend one strip of the rainbow candy, and carefully place it onto the clouds . Remove carefully paper parchment from the serving plate, and enjoy!</li>

<p>If painting is not your thing or let&#8217;s say it is, but your skills are secret yet to the world, you might want to try this technique to decorate hard boiled eggs this Easter: lend a personal touch to your decor by dressing your eggs in a paper napkin pattern that catches your eye! When properly stored (3-4 days in the fridge), these easter eggs can be safely eaten afterwards. I suggest you using them to prepare these delicious <a href="http://www.larecetadelafelicidad.com/2011/05/cookies-chips-chocolate-huevo-cocido.html" title="Receta de cookies de huevo cocido" target="_blank">hard boiled egg cookies</a>, which are my sons&#8217; favorites.</p>

<li>Take the napkins and separate printed top layer. Discard lower sheets. Cut every napking into four squares</li>
<li>Dip brush into the beaten egg whites and apply an square on the front center of the egg (the back will have a hinge). Dip brush into egg whites and gently smooth the napkin from the center out.</li>
<li>Cut off excess napkin, and let the egg dry on a paper towel</li>
<li>For a glossier effect, when dry, wipe the eggs with vegetable oil (using a paper towel)</li>

These are the cookies that I prepared my son Jorge for his third birthday (you can see a pic <a href="http://instagram.com/p/WPALe-nKn0/" target="_blank">here</a>). I did not have much time to prepare something more elaborate, and I needed a quick and easy recipe for him to bring to school on that special day. They were a huge success, so I decided to repeat them and share them with you. This time, the cookies have been prepared by my children: Pablo and Jorge. To make the recipe easier for them, we skipped the first steps, and just put all the ingredients in a bowl, and they mixed them using their little hands. (Messy, but funny!)  This way the cookies surface turned out a litte more cracked and uneven, but they are just as delicious!</p>

<li class="ingredient">100 g brown sugar (1/2 cup)</li>
<li class="ingredient">100 g white sugar (1/2 cup)</li>
<li class="ingredient">1 tsp vanilla extract</li>
<li class="ingredient">175 g butter, room temperature (3/4 cup)</li>
<li class="ingredient">1 egg and 1 egg yolk </li>
<li class="ingredient">300 g flour (2 and 1/2 cup)</li>
<li class="ingredient">pinch of salt</li>
<li class="ingredient">1 tsp baking soda</li>
<li class="ingredient">about 200 g (1 cup) M&#038;M (or similar chocolate candy)</li>
</ul>

<h4 class="instructions">Directions</h4>
<ol class="instructions">
<li>Preheat oven to 180 º C (350 º F), and cover three baking sheets with paper parchment</li>
<li>In a large bowl, whisk together the flour, baking soda, and salt beat the butter and sugars until light and fluffy. Add the egg and egg yolk, beating until well combined. The add in the vanilla extract, and mix.</li>
<li>Add the flour, salt and baking soda to the creamed mixture and using a spatula mix just until incorporated</li>
<li>Divide batter into 25-30 portions, and using your hands shape every portion into a ball. Place them on the prepared baking sheets, quite separated since they will spread in the oven.</li>
<li>Using the palm of your hand, flatten each ball into a patty</li>
<li>Cover cookie with M &#038; M&#8217;s. Gently press the candies into the dough</li>
<li>Bake for 10-15 minutes, until they are golden brown on the edges. Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool</li>

<p>Roasted garlic hummus:</p>
<li class="ingredient">1 head of garlic</li>
<li class="ingredient">400 g cooked chickpeas, drained (14 ounces)</li>
<li class="ingredient">2 tbs <em>tahini</em></li>
<li class="ingredient">1/2 tsp cumin</li>
<li class="ingredient">juice of 1 lemon</li>
<li class="ingredient">4 tbs extra virgin olive oil</li>
<li class="ingredient">Salt and pepper, to taste</li>
<li class="ingredient">1 tsp smoked paprika</li>
<p>Carrot patches:</p>
<li class="ingredient">fresh baby carrots</li>
<li class="ingredient">fresh cilantro or parsley sprigs</li>

<ol class="instructions">
<li>To roast garlic, preheat oven to 375° F. Cut off the top of the head of garlic so that the tops of most of the cloves are exposed slightly. Drizzle with a little olive oil and salt, and wrap in tin foil. Roast garlic in oven for about 30-45 minutes. Remove from the oven, and allow to cool. Using your fingers, squeeze roasted garlic out of each clove.</li>
<li>Add all hummus ingredients to a food processor, and blend until smooth. If you find that the hummus is too thick, you might add some more olive oil, or water. Chill for an hour, or more. Serve cold, sprinkled with paprika and some more extra virgin olive oil. You might serve it with baby carrots, crudités, or warm pita</li>
<li>For a fun healthy snack, serve hummus in small terracota pots with baby carrots. Just before serving, poke a hole in the top of each baby carrot with a toothpick and insert a sprig of cilantro or parsley into each hole. &#8220;Plant&#8221; a couple of baby carrots in each pot, and enjoy!</li>

<p>Chocolate Cream filling:</p>
<li class="ingredient">4/5 cup heavy cream</li>
<li class="ingredient">7 oz dark chocolate</li>
<li class="ingredient">1/4 cup butter</li>
<p>To decorate:</p>
<li class="ingredient">about 4 or 5 chopped Oreo cookies</li>
<li class="ingredient">chocolate chips</li>

<li>To make the crust, using a food processor, blend Oreo cookies until the texture of coarse meal or crumbs. Add the melted butter and blend until well combine. Place the mixture into a 4&#215;14 fluted rectangular tart pan (mine has a removable bottom for easy removal of the finished tart) and press onto the bottom and up the sides evenly. Freeze the crust whilst preparing the chocolate filling</li>
<li>In a medium saucepan, bring cream to the boil. Remove from heat, add chopped chocolate and butter, and let rest for 5 minutes. Then stir until dissolved. Pour chocolate filling over oreo crust, and decorate with some chopped oreo cookies and chocolate chips</li>
<li>Chill for 2 hours at least, preferably overnight. Unmold, serve, and enjoy!</li>

<p>To prepare this bread loaf I have used <a href="http://www.doodlecook.com/collections/doodle-bread/products/doodlebread-kit-cocoa" target="_blank">this kit that Doodlecook gifted me</a>. It includes a silicone tin, a heart doodle shaper, a squisher, instructions and enough bread mix to make your a cocoa bread loaf. Although as I said before, the kit comes with a bread mix (all natural ingredients) I decided to prepare my own dough, using boiled beet water to dye the dough.</p>
<p>If you do not have this kit, and still want to prepare this kind of bread loaf, I would suggest trying <a href="http://www.sheknows.com/food-and-recipes/articles/975551/pumpkin-pound-cake" target="_blank">this technique</a> I have seen for cakes, I think it might work for breads as well (although I believe you will have to freeze the bread shapes) Alternatively, you might use a normal tin loaf, combined with one of <a href="http://www.amazon.com/Norpro-Piece-Canape-Bread-Mold/dp/B0000VLYP4" target="_blank">these molds</a>, and follow the recipe below.</p>

<li class="ingredient">300 g strong bread flour</li>
<li class="ingredient">25 g fresh yeast</li>
<li class="ingredient">150 ml milk</li>
<li class="ingredient">50 g melted butter, cold</li>
<li class="ingredient">7 g salt</li>
<li class="ingredient">2 tbs honey</li>
<li class="ingredient">15 g boiled beet water</li>
<li class="ingredient">15-30 g strong bread flour</li>

<h4 class="instructions">Directions:</h4>

<li>Put the flour and yeast in a bowl and combine. Add milk and butter. Add salt and honey. Use a large spoon (or pastry scraper) to mix everything together.</li>
<li>Take the dough out of the bowl and knead. You will feel the dough become elastic after kneading for about 5 minutes. Knead the dough for 5-10 minutes or until the dough is soft, pliable, smooth and slightly shiny</li>
<li>Divide de dough in three portions</<br />

<li>Take one portion back into the bowl, add beet water and about 15 flour. Knead until combined, adding a bit more flour if it is too sticky</li>
<li>Oil well the heart shaper (or mold), place in the middle of the baking tin, and pop the coloured dough into the middle heart shaper.</li>
<li>Pop the remaining dough portions into the corners of the tin. Use the squisher to push the dough down into the mold</li>
<li>Leave the dough rise for an hour or two, until it has doubled size</li>
<li>Very gently remove the heart shaper or mold. Preheat oven to 350º F</li>
<li>Place the tin in the oven (upright) and bake for 25-30 minutes</li>
