On my last visit to Chinatown, I bought candied ginger and had not used until yesterday.
I decided then, to bake this apple cake, because I'm still looking for the taste of ONE apple cake that I ate in college, is not the same,of course, but it was delicious, moist and spongy and I hope you enjoy
