Learn the computer basics this February in Collierville!

Are you relatively new to using computers or do you know someone who is? Whether you want to learn Internet basics, how to use email, or you want some extra training in the Microsoft Office 2007 programs, there is a great opportunity for you to gain some knowledge in Collierville at no cost.

The Collierville Burch Library will be holding free basic computer classes throughout the month of February, all you have to do it sign up!

The Lucius E. & Elsie C. Burch, Jr., Library is located at 501 Poplar View Pkwy, Collierville, Tennessee 38017 which is less than two miles from our community at Legacy Farm.

Basic Internet – Sign-up begins 1/31 for class held on 2/15;

Basic Email — Sign-up begins 2/7 for class held on 2/20.

Microsoft Excel 2007 Parts 1 & 2 – Sign-up begins 2/7 for classes held on 2/22 & 2/29.

Library staff encourages you to register for these classes in person at the library’s Information Desk beginning at noon on the indicated days. Classes will be held from 10 a.m. to 12 p.m. on the days listed above. For more information call 901.457.2601.

Make this Caramelized Onion and Spinach Dip for Your Super Bowl Party!

Whether you’re attending a Super Bowl party or you’re throwing one at your Legacy Farm apartment, you probably know that the food is a very important part of the celebration. One of the staples of a good Super Bowl party is the dip. Don’t just open a jar of salsa or buy some store brand spinach dip, try out this scrumptious recipe from our Fogelman CARES Cookbook:

Try your hand at making this delicious spinach dip!

Caramelized Onion and Spinach Dip

Ingredients:

1 Stick unsalted butter
2 sweet yellow onions, coarsely chopped
2 ½ tablespoons sugar
2 teaspoons kosher salt, divided
2 (10 ounce) packages frozen chopped spinach, thawed and completely drained
1 (12 ounce) jar marinated quartered artichoke hearts, drained and chopped coarsely
1 (8 ounce) can water chestnuts drained and chopped
8 ounces cream cheese, softened
1 Cup sour cream
1 cup mayonnaise
½ cup heavy cream
8 Whole cloves garlic, peeled ( I used the garlic that is already chopped in a jar)
1 teaspoon black pepper
1 tablespoon lemon pepper
1 teaspoon crushed red pepper flakes
2 tablespoons hot sauce
1 tablespoon freshly squeezed lemon juice
2 cups shredded Parmesan cheese

Directions:

1. Melt butter in a heavy fry pan over medium heat. Add onions, sugar and 1 ½ teaspoon salt. Saute onions until they begin to turn brown and caramelize. Place in large mixing bowl and set aside to cool.

2. Meanwhile, place spinach in a colander and press to drain liquid. Squeeze drained spinach tightly in small handfuls until almost dry.

3. Add artichokes and water chestnuts to vegetable mixture. Set aside

4. In the bowl of a food processor, combine cream cheese, sour cream, mayonnaise, cream, garlic, remaining ½ teaspoon salt, black pepper, lemon pepper, crushed red pepper flakes, hot sauce, and lemon juice. Pulse several times until well blended. ( I did not use the food processor and just mixed really well).

5. Add parmesan cheese and mix very well. Mixture will have a coarse texture.

6. Fold into vegetable mixture and mix thoroughly. Serve at room temperature or heat in oven at 350 degrees until it is bubbly and slightly browned on top. ( I prefer it hot)

7. Serve with bagel chips, pita chips, or crackers.

In this day and age, the word “insurance” is important. Not only can we insure ourselves and our family, but our health, cars and now the things we own. Before renter’s insurance was an optional step for most who were overprotective, but now, Legacy Farm strongly advises their residents to get a policy.

Most responses we’ve heard, came from people not thinking they have to insure a place they don’t own. We always make the point to say that renter’s insurance goes beyond four walls–residents items purchased are mainly covered. It’s also important to point out that whatever happens during your rental period is covered as well–regardless of liability.

It’s really not as expensive as you may think. In fact, you can save money on your policy in quite a few ways. Check out some of the ways we found from a featured article:

Organization Affiliation: Many renter’s insurance companies offer a discount for being affiliated with certain organizations. These can range from credit unions, college sororities, or just having a certain credit card. Call your service center and ask them for a list of the organization affiliation.

EFT Payments: Some companies offer discounts if you choose to have payments automatically deducted. Deductions can come from your credit card, so you don’t have to worry if the money will be in your bank account when payment time comes.
