Our kitty, creatively named Kittie-Pie, isn’t a fan of our new family member, which happens to be a fluffy puppy! She’s convinced our home is now a house of horrors, and she can’t seem to escape the madness! Tolerance isn’t her thing — and neither is facing her fears apparently. She just runs away. It makes us laugh. Well, in honor of her, I created a wide-eyed kitty!

Big Nummies: Sweet Curry Popcorn

The only thing I wanted for Mother’s Day (or my Birthday) was an old fashioned air popper, popcorn maker. And, guess what? That’s exactly what I got!! I looked up some recipes and decided to come up with my own. This one is a bit on the spicy side, but it’s OH. SO. DELICIOUS!!!

Ingredients

1/2 c. popcorn kernels

2 Tbs butter

1Tbs honey

1 tsp curry powder

1 tsp paprika

1-2 tsp sea salt

Instructions

Pop your popcorn kernels either stove top in hot oil, or in a popcorn maker. While it's popping, melt butter and honey together in a sauce pan, or in the microwave. Mix the seasonings together. Drizzle half of the honey butter mixture over the popcorn, along with half of the seasoning mixture. Stir popcorn to evenly coat. Drizzle the remainder of the honey butter mixture, along with the seasoning and stir. Serve warm.

Notes

Don't forget the napkins. Also, serve with a beverage, because it may get spicy!!

Out of all the fun food animals I have made, I realized I haven’t made a horse! Crazy! Horses are so fascinating, with their agility, power, beauty, strength and generally loving nature. Whenever I see horses in a galloping across a field or grazing in a pasture, I always feel a certain peace and comfort. They’re just beautiful animals. Anyway, I decided to whip up a cutie-pie horse for this week that your little ones will adore.

eggo waffle off: paw print ice cream sandwich

It’s day 7, and the last day of Chief Waffle Officer week!! It’s been fun trying to think outside the box, and come up with fun, original ideas for Eggo. I hope you have been inspired to be creative with your own waffles, and possibly enter your very own recipe into The Great Waffle Off contest, where you could win $5,000!!!

In honor of my youngest daughter’s Birthday, which happens to be today, I whipped up a simple fun paw print treat. For the last several years she has wanted only puppy related presents for Birthdays and Christmas! If it has anything to do with a puppy, she’s ecstatic, regardless of what it is!! Well, these ice cream sandwiches are in place of her regular Birthday cake this year. She approves and is in heaven!! I may or may not have let her eat them for breakfast!!!

Ingredients

Eggo Minis

Breyers ice cream

cool whip

kisses

chocolate chips

Instructions

Toast Eggo Minis according to directions on package. Gently separate each waffle. Divide in half. Put a dollop of cool whip on half of the waffles. Cut the tips off of the kisses and put in place on cool whip. Put chocolate chips in place as shown. Place each paw print waffle on a plate and into the fridge. Put a plate in the freezer. Place a spoonful of ice cream on each remaining waffle, for bottom part of the sandwich, and place each one on the plate in the freezer. Keep in fridge/freezer until time to serve. Simply place the paw print waffle on top of the ice cream waffle and serve.

Savory Dinner: L’Eggo my Quiche Eggo

It’s day 6 of Chief Waffle Officer week! If you haven’t checked out the recipes showing up on the Eggo Facebook page, you should!! I hope it inspires you to create your own fun creative recipe for The Great Waffle Off contest, where you could win $5,000!!!

My family LOVES bacon broccoli quiche for dinner. It’s my hubby’s favorite meal, but he adds an obscene amount of hot sauce to his!! I wondered, if molding Eggo Homestyle Minis would work as the crust for mini quiche, and wouldn’t you know it, they do!! Not only are they delicious, but they make your home smell terrific whilst baking!!

Mini Bacon Broccoli Quiche Eggos

Pair with salad and fruit, and you have a simple meal!!

These would be great for parties too!!

Mini Bacon Broccoli Quiche Eggo

Ingredients

3 four piece Eggo Homestyle Minis

1/4 c. broccoli {cooked}

1/4 c. bacon {cooked and crumbled}

2 eggs

1/4 c. milk

shredded cheese

dash onion powder

dash garlic powder

dash sea salt

dash black pepper

Instructions

Pre-heat oven to 350°. Toast waffles per directions on the package. Once toasted, pull mini waffles apart and gently mold each waffle around a tart shaper, or a small bottle of sprinkles. Place shaped waffles into a mini cupcake pan. Pull florets off the broccoli and place in each waffle. Put several crumbles of bacon into each waffle. In a cup, mix eggs, milk, onion powder, garlic powder, salt, and pepper. Slowly pour egg mixture into each waffle, filling to the top. Place a pinch of shredded cheese on top of egg mixture. Put into heated oven and bake 15 min, or until eggs are fully cooked.

We had a mini family vacation over Easter weekend and now we’re finishing up Spring Break — so naturally it’s time for something fun and crazy! This little monster will be great for girls, who will think he’s pretty adorable, and for the boys, because, well, he’s a monster!

It’s Chief Waffle Officer day 5! There are so many great waffle ideas out there! Here’s another snack you can try. If you like cannolis, or crepes, this recipe is for you!! Combine cream cheese, greek yogurt, a dash of powdered sugar, and of course, Eggo Drizzlers, for this delicious treat!! So simple. So yum.

Creamy Blueberry Eggo Crepes

Ingredients

2 Eggo Blueberry Drizzlers

1/4 c. cream cheese

1 tube blueberry Choboni greek yogurt

powdered sugar

blueberries

Instructions

Mix together cream cheese and yogurt until smooth and creamy. Add a dash, or seven, of powdered sugar until desired sweetness. Toast Drizzlers according to directions on package. Warm topping packet according to directions on package. Place toasted waffles on a flat surface. Gently flatten each waffle using a rolling pin, or bottle. Place a tablespoon-ish of the cream mixture into the center of each flattened waffle. Fold one end into the center. Fold the other end, using a dab of the mixture to "glue" it into place. Repeat. Place each waffle on plate. Drizzle the topping on top of the waffle crepes. Add fresh blueberries for garnish and extra yumminess. Sprinkle powdered sugar on top for more fantasticness. Serve warm.

It’s day 4 as Chief Waffle Officer!
I hope you are getting inspired to create your own fun recipe for The Great Waffle Off contest!!

Wafflers are perfect for a beaver tail, so I whipped up a simple breakfast that your littles will love!!! Complete with his stack of bacon logs for his home!! And we all know that bacon makes every meal better!!

Ingredients

1 Eggo Pancake

1 Eggo Wafflers

bacon

2 blueberries

slice of banana

Instructions

Cook bacon according to directions on package. Once bacon is cooked, toast pancake and wafflers per directions on the package. Once toasted, pull the waffler apart. Set one half aside for the tail. Cut one end off the other half, and cut in half, for the ears. Cut the remaining wafflers half into six pieces. Four for the feet, one underneath the body and one to prop up the tail. Cut a blueberry in half for the eyes. Use other blueberry for the nose. Cut the banana slice in half and use for teeth. Arrange on a plate and enjoy!!

I used Eggo Wafflers Brown Sugar Cinnamon Roll.
