One of my favorites, besides Yasai Itame and Steak Salad, and I’ve found the recipe. You can also watch Wagamama’s chef Kurt Knowles’ preparation on YouTube: part 1 & part 2.

You will need:

• zucchini
• red pepper
• snow peas
• basil
• pumpkin (butternut squash)
• chicken
• rice

And for the sauce:

• curry paste
• coconut milk
• soy sauce
• lime juice
• palm sugar (optional, if you can find it in the store)

Preparation:

Cut the pumpkin into chunks and roast it in the oven at 200 degrees. Next, prepare the sauce. Heat some oil in a pan, add the curry. Add coconut milk, lime juice, soy sauce and palm sugar. Let simmer until all ingredients are thoroughly mixed. Fry the chicken on high heat in another pan. Add zucchini, peppers, snow peas and pumpkin. Add 1 serving spoon of the sauce and finally the basil. Place a ball of rice on the plate, spoon the vegetables next to it and pour over a lot of sauce. Enjoy!

Dit heb je nodig:

• courgette
• rode paprika
• limoen
• peultjes
• basilicum
• pompoen
• kip
• rijst

En voor de saus:

• curry pasta
• sojasaus
• kokosmelk
• limoensap
• palmsuiker (optioneel, als je het kunt vinden in de winkel)

Bereiding:

Snijd de pompoen in blokjes, olie ze licht in en rooster deze gaar in de oven, op 200 graden, tot de randjes net iets bruin worden. Bereid vervolgens de saus. Verhit olie in de pan, voeg curry toe. Voeg kokosmelk, limoensap, sojasaus en palmsuiker toe. Laat goed doorpruttelen tot alle ingredienten vermengd zijn. Bak in de een andere pan de kip op hoog vuur aan. Voeg courgette, paprika, peultjes en pompoen toe. Voeg 1 soeplepel van de saus toe en tenslotte de basilicum. Leg een bol rijst op het bord, schep de groenten er bij en giet er flink saus overheen. Smullen maar!
