It’s been a while, but I needed to post this recipe for me to refer back again and again. It’s arguably one of the easiest dessert I’ve ever made and the best part is there’s no turning on your oven involved over the hot summer! It’s a dessert that you can make ahead of time and serve whenever needed.

As you can tell, I’ve already made this recipe a couple of times (hence the different pans). I’ve made it for us, for gatherings, and even another time since the girls requested it. I’m actually surprised how much Ellie and Thea love it. There’s coffee, just a tad of rum, and all the things I did not care for as a child. Coffee was an acquired taste for me and I didn’t like the taste until I was in high school. Apparently, our kids are not the same as me.

It’s a dessert that the kids can easily help with. They helped dip the ladyfingers in coffee, spread the filling, and sprinkle cocoa powder on top. There’s really no wrong that you can do with this recipe.

I use Rodelle Gourmet Cocoa Powder with any recipe that asks for cocoa powder. The Dutch Processed, rich chocolate flavor is what makes my desserts. There’s nothing better.

I think making less than ten cookies from an entire batch of cookie dough really is the way to go. There’s something about sitting down and eating one hearty cookie that beats eating four cookies at a time.

Life is so different baking with two littles around since they’re constantly sitting by my side, asking me what I’m doing next, and asking if they can eat some cookie dough. The girls are truly such wonderful listeners and will wait patiently until I tell them they can eat a cookie. They’ve got this whole thing down.

White chocolate tends to be really sweet in desserts, so I was careful not to put too many in. The ratio was just right for these cookies. The key to these gigantic cookies is letting them sit once they’re out of the oven. It’s tempting to eat right away, but don’t do it! Trust me. Just wait.

Have you ever heard of Funeral Potatoes? Apparently they’re a big thing in the Mormon world and I’ve never heard about them until now. How is that possible?

It’s basically all of the things that you shouldn’t eat too much of in one dish. It has loads of butter, cheese, potatoes, sour cream, and potato chips (as if the rest weren’t enough).

This dish is heavy. There was no way our family of four could even put a dent in it. You need like 20 people to help you eat this dish. Keep the servings small and you’ll enjoy it more.

If you serve this, definitely serve it with a ton of veggies on the side because your body is going to need something to balance itself out.

In case you don’t have a box of Funfetti mix handy, you can always whip up a batch of your own Funfetii cookies. These are really just sugar cookies with sprinkles.

This dough is so beautiful. Just look at it. I need to invest in some fun sprinkles. I don’t have any right now in my pantry except for the jimmies you find at the grocery stores.

These cookies are just slightly crispy on the edges and have a chewy center.

My little tester couldn’t wait to snatch one up after I took this photo.

This is the best cookie recipe I’ve made in probably the last ten years. Believe me when I say this is good. I couldn’t even wait to post it. I baked them today, took photos, and immediately got on my computer as soon as the girls fell asleep.

Honestly, I haven’t felt this inspired with my blog in a while. I even updated the PHP, got my Pinterest button to work again, and updated allllll the things. I feel like my blog just got a second breath. Speaking of, I need to give a shoutout to the tech support at HostGator. THEY’RE AWESOME! I spent two nights trying to figure out things with making my blog secure again and they solved my issue in literally eight minutes via chat. Coders are magical fairies.

Ok, back to these cookies. This picture above is from having no patience and picking it up ten minutes after I took them out of the oven. They look super under-baked, but they really just need time to sit. I promise they’ll toughen back up with time to the perfect consistency.

See what I mean? Do you believe me now? Patience is key for these. Also, making gigantic cookies that are normally four servings each is the way to go. I don’t know if I’ll ever make a regular sized cookie again.

This is my first recipe from A Bountiful Kitchen and it’s veryyy impressive. They really do taste, look, and feel like Levain cookies. Levain cookies are still my favorite cookies on earth. I haven’t found another like it… until now.

Are you guys tired of baking banana bread yet? I saw this on Instagram from Chelsweets and knew I had to try it immediately. When people claim and make something else “banana,” it ends up looking exactly like banana bread in different shapes. This one actually looked different.

Oh boy, it is different. These are dense, flavorful, and chewy. They’re much more of a bar than a bread. It’s what it claims to be!

I let them cool completely before digging in since I baked them at 10PM at night. They were so good in the morning! I bet they would have been better warm, but I’ll never know. Half of the pan is already gone since my DH and children (mostly DH) devoured it.

This is the first recipe I’ve tried from Chelsey, but I’ve been a long time follower of her on Instagram. She makes the most beautiful cakes!

My kids are obsessed with Oreos. Obsessed as in they’ll open up every cookie and eat all the frosting before giving me back the broken chocolate cookie parts.

I don’t blame them. I would’ve done the same thing if I was four years old. Now, I know better. The crispy chocolate cookie part is my jam. Put us together and we’ll finish an entire Oreo cookie. That’s what parents are for– to eat all the things their kids don’t eat.

These were a teeny tiny bit sweet for me, but I don’t think you can do much about that making a cookie with cookies in it. The texture was great. The edges were crispy with a chewy center. I’d make them again!

I didn’t chill the dough and these turned out just fine. I normally ALWAYS chill the dough. I had these in the oven so quick that Thea came out of the play room asking, “Mama, what’s that smell?”

I made half rolled in sugar and put M&M’s on the other half because…. kids. Of course, Thea just picked all the M&M’s out as she ate the cookie and was done after there were no more M&M’s.

This is a great, solid recipe from Live Well Bake Often. These cookies are soft, hold together well, and light. I actually like them as is– no sugar or candy. They’re pretty sweet so you can omit rolling them in sugar if you want.

Whoa, WordPress has changed quite a bit since I’ve last created new content. I have no idea what I’m doing or how to format this post. I don’t even know where my recipe box went! Please bare with me as I try to figure out how to walk again in this blog world.

We just moved into a new house during this pandemic and it’s been tough not being able to go grocery shopping whenever I want. I can’t just bake things as I come across them since my pantry is not stocked. Luckily, I had everything in my very limited cabinet to make this apple crumble.

This is so good. I don’t know if it’s because I haven’t baked in a while or what but this really hit the spot. My DH even ate all of the topping and he doesn’t like oats or baked apples.
