Guest Recipe: 5 Affordable One-Pot Chicken Meals

I love one-pot meals. They are so easy to make and even easier to clean. I also love to save money when I cook. The thing I find difficult is digging up great-tasting chicken recipes my family will love. I mean, I always have tons of boneless, skinless chicken breast on hand, but the same old recipes get boring and bland after a while. Thankfully, I discovered Pinterest and my family is eating better than ever! Here are five great, affordable, recipes I’ve tried and love:

Chicken Roll Ups – This is a super easy and tasty and even portable meal idea! Everyone loves crescent rolls and this recipe is so easy to personalize it is not even funny. I added finely chopped and cooked veggies to mine, plus some garlic and onion because my family LOVES that. I had to double the recipe just to feed four, so if you’ve got big eaters like I do, that might be a good idea.

Taco Bake – I substituted chicken for the hamburger in the recipe, and it came out great! Just boil the chicken and then shred it before adding the rest of the ingredients. The nacho cheese Doritos on top make for a nice crunch, and the crust of crescent rolls make this ultra-yummy. A fun Mexican themed meal that kids will love!

Cheesy Chicken and Wild Rice Casserole–This yummy and healthy meal is filled with something I adore. Wild rice! The mix of regular white rice and wild keeps this affordable, and still just as tasty. The veggies will make you happy while the cheese sauce has the kids lapping it up. Really good.

To Die For Cream Cheese Chicken Enchiladas–Back to the Mexican theme, these great tasting and easy enchiladas were mild enough for the whole family to enjoy. Just be careful of what ‘level’ sauce you buy. I added a few finely chopped veggies to mine to make this an easy one-dish meal. And it doesn’t get any cheaper than beans and rice, right?

Chinese Cabbage Salad–Finally something green, right? Well, this recipe actually doesn’t call for any meat, but I added diced boiled chicken to make this a great one dish meal… at least for those who like salad. My family does, so it works for us. I love the substitutions in this recipe, as I too find it difficult to buy peanut oil. I added the ‘oriental’ flavor packets from the Ramen noodles to the dressing to give it more kick. Ramen and cabbage, what’s cheaper than that, right?

I hope this picture puts into perspective what you are actually purchasing when you buy energy efficient light bulbs. I think if brands packaged their light bulbs like this more people would take a second glance at them on the shelves after they balk at the price. Go ahead… steal my brilliant idea GE.

Michael and I have been loyal to energy efficient light bulbs for years! You could consider us people who experiment with new technology as soon as it comes out and drops in price. You might be turned off at the initial investment of light bulbs but it does pay off and you can check how much you could save by switching. You don’t even have to do it all at once.

Incandescent < CFL < LED

I wouldn’t be a frugal person if I told you that you had to run to the store {right now-this instant-what are you waiting for} and buy these bulbs. A frugal person waits and strikes when the coupon and sale stars align. That is exactly what we did and not once have we paid full price for a light bulb. We are actually in the process of recycling all of our CFL bulbs for LED bulbs because those are EVEN BETTER! You can reference this sale that I posted for Walmart last week and you can also print out this $2 coupon!

Keeping with my main tip of swapping your bulbs over time I am here to tell you that you should start right now if you are looking to maximize the sale cycles! By 2014 all light bulbs that don’t meet the 30% efficiency minimum standard will be phased out. So in order to not be caught with your pants around your ankles you should get started. Technology really has come a long way with light bulbs and this legislation is really for the greater good of our pocketbooks.

Maybe you have already bought some energy efficient light bulbs and went to flip the switch to pee and you realized you were going in a dimly light room? *Raises Hand* I can 100% raise my hand and say that this is the story in my house and I am guessing one of the reasons I am always cleaning the front of the toilet, but I digress. GE makes ‘instant on’ bulbs so you don’t have to worry about that anymore. If the package doesn’t say instant on then they probably aren’t the ones you are looking for. My Walmart didn’t carry the decorative instant on bulbs so we are still on a hunt for them!

Shopping for light bulbs can be pretty overwhelming because there are SO MANY CHOICES! Even Michael, who is a light bulb Nazi, walked up and down the aisle comparing all of the options and their price. I would count your bulbs, determine what you need and want before heading to the store to buy. The best decision that you can struggle with is what to do with the savings! For our household we put all of our extra money into making our project home more efficient and what we want. Project by project we are spending money to save money but slow and steady wins the race. One day we will be able to look at our beautiful house with pride! Until then… we look at it and think, “One day!”

The love for technology starts early in our house! Michael got a kick out of light bulbs while we were there. We were in the light bulb aisle for a very long time so I had to keep him entertained. Don’t you dare judge me for taking him out in his pajamas! It was 8:15 pm when we left to go to the store so just in case he fell asleep on the way home we kept him in his PJs.

The Adventures of the Amateur Gardener

It’s that time of year again. The leaves are bright and green, the smell of fresh cut grass fills the yard; summer has almost arrived. It also means it’s time that I wage war with my backyard and all of it’s creatures. Except this year, I’ll be on top. Forget the pretty little garden gloves to protect my polished little nails, I’m going in bare hand and bare foot ready to tame the beasts of my, I repeat MY yard. I have my weapons of choice and I’m going in for all the glory. Come the end of September I hope I’m not hanging my head in defeat, for the second year in a row.

Let’s call this the “before” shot

I love to garden! Whether it be flowers, veggies, herbs, and anything else I can find that might make it with my green thumb! While my flowers (attempt to) make my yard look pretty, my veggie garden isn’t just there for fresh summer food. I try with all of my might to grow enough veggies in my garden to last the winter, canning and freezing what I pick in hopes to save a buck or two in the process. Yes, it is alot, and I mean ALOT of work but it pays off. With a 7, 2 and 11 month old demanding most of my attention, my garden is also a spot for me to have some Mommy time. Don’t get me wrong, 90% of the time my kids are right out there with me pushing dirt (the youngest trying to eat it) planting seeds and using their little plastic hoes and shovels to learn not only about how plants grow, but also how to grow a sustainable garden so years from now when I’m gone, they will know how to do this themselves and pass the wisdom down to their children. But that 10% of me watering in the morning, or picking weeds as they nap is heaven to me. Just to have the sound of the creek near my house and the birds flying above does something to my soul. The garden helps me find my inner calm within my world full of child chaos.

Having a garden can be so frustrating! Some years my garden is fantastic, abundant and I can’t give some of my food away fast enough to keep up with the non stop production of my plants. Other years, like last year I just want to sit down and have a good cry because it seems nothing is going right. This year is my year though. (I hope)

Soil What?

If you have never started a garden in your yard, it is a good idea to take a sample of your soil and have it analyzed. Here in the good ol’ mitten, you can send your soil to Michigan State Universityand they will tell you what you need to do over the next few years to help make your garden top notch. It costs a small fee, but well worth it in my opinion because you could spend double that using garden soils and fertilizers trying to fix your unknown problem all on your own!

Plant Death?

It is also important to look at the trees and plants around your garden. Do you see a Walnut Tree?? Go ahead and forget about buying those nice tomato plants you saw at the green house, that walnut tree will just kill them. Some plants are very sensitive to Walnut trees and they will not live in soil that is near one. There are many plants though that do thrive with these trees around, so don’t give up hope! Check with your local green house or where you buy your plants to see if they have up to date lists on intolerant plants. With new types of flowers and plants made each year the list is ever changing.

Make sure your garden is in the most sun possible. Check for any animals that can cause your garden harm. For example, my friendly little woodchuck and I have been feuding for years. And they are not easy to get rid of! (I won’t kill it, I just can’t) Think about putting a fence up around your garden to help minimize little critters coming to snack on your hard work while you sleep. If you have woodchucks, dig a trench and set your fence down into it to help eliminate them planning ”operation I want those greens” and digging their way under your barrier. I was not smart enough to do that last year, a mistake I won’t make again! I hope my little friend knows I mean business this year, he is going down! There are many other critters than can plague your garden and we will get to those down the road as I begin battle with them in my own garden.

Many words come to mind when I see this creature…..and woodchuck isn’t one of them!

Finally, think about what you would like to plant. Keep in mind things you need to cook (and sometimes can) with such as herbs. My herbs will be in both pots and my garden this year in hopes I will have better luck when it’s time to harvest. Figure planting at least 2 of each item, in case one plant doesn’t make it. My tentative line up this year consists of

Tomatoes- Cherry, Plum and Big Boys! Can you feel those canker sores coming!!
Green Beans- a must have in my house hold
Zuchinni- fried or in bread, my garden is never without!
Summer Squash
Butternut Squash
Okra
Pie pumpkins – Forget canned pumpkin pie filling, fresh is where it’s at!
Broccoli
Melon
Yellow/ Orange Peppers- Green is great, but my son prefers Yellow andOrange.
Onion
Basil
Parsley
Oregano
Thyme
Rosemary
Sage

I am so excited to get to my local green house this week and pick out my yummy plants! The above list is tentative, especially if I find a plant or ten that call out to me once I get to Walker Farms! Typically I also plant corn, but this year I’m taking a much needed break. My corn just doesn’t produce well. The stalks are too thin and I tend to get the fungus that can grow on them. Hopefully in a few years when my soil is a bit stronger I can bring corn back.

So bust out those overalls and bring on the straw hats! Hell or high water this garden is going to be the best garden I have ever grown! Why? Because I’m blogging about it silly! And who wants to read a blog about all the ways to fail at a garden? I am sure there will be an epic fail or two like there always is with me, but I am going to try my hardest to show you how it’s done. In an amateur way of course, let’s be honest I know; and you soon will too that I am no where near being a pro. (But I am getting there)

Do You Make Your Bed?

My little boy is growing up, doesn’t he look so old in this picture with his big boy bedding?! He is 10 months old right now but if I blink he is going to be a … TODDLER! He is a walking champ, trying to crawl up to get into the chairs, eats EVERYTHING and is babbling his brains out where it actually sounds like words. I pretty much know that he is going to say Da-Da first but I am OK with it.

Does Bedding Make You Crazy?

Daddy Michael is completely OCD when it comes to bedding. I am not even joking because he can not sleep if the pillow is flipped upside down or the opening is pointed towards the inside of the bed. I like to rile him up before bed and flip it all around just to see how insane he is. You guys are sitting on the other side of the monitor and are thinking that I am exaggerating right now, aren’t you?

It gets pretty funny, as I sit here laughing to myself, because he will just ask me, “What is wrong with you?” Then he will try and sneak attack moving my pillow the ‘proper’ way. I can be a total wench to him because I will wait until he falls asleep, flip around the pillow and in the morning I say, “Look Babe, you are still alive!” He grumbles and proceeds to think I am absolutely batty. Really, me the crazy one? I can sleep with my pillow upside down, inside out and flipped whatever way but you still call me crazy!

The best idea ever is a pillow case that zips. I don’t know about you but I can break a sweat trying to get my pillow into a pillow case and king sized pillows are the worst! Zipper pillow cases are one of the best inventions ever! Now if this only came in a king sized set Michael would think that I am the best Wife ever! If he came home and found the bed made he would think that I did something so terrible that I was trying to make up for. His eyes might just bleed from the shock and amazement of having a bed made that he didn’t do himself. I crack myself up but it is true, I am pretty lazy!

The ultimate test wasn’t if it was baby approved, if it was easy enough that Mrs Lazy would do it or if it was comfortable. The true test was if it would be cat approved. Since Bandit has been laying on the bed since I put this on it, I am going to say it is cat approved.

No one really knows what true sacrifice is until you become a Mother. From the moment you find out that you are pregnant your whole world changes, for the better, and you look at things in a new light. The same is very true for someone with a mission to become healthier. I don’t mean someone who is dieting. I mean someone who truly wants/needs to live a healthier lifestyle. Taking part in this month’s Champions for Kids SIMPLE Service Project was a breeze because our household is actively making lifestyle changes.

In case you missed some of our recent #JennieOCFK changes you should read about our healthier butter popcorn and our strawberry and banana ice cream. I have a additional recipe from this past weekend but I haven’t published it yet. I used turkey sausage to make some meatballs and I had to get very creative on the sauce because my girlfriends are on a very specific diet and they can’t eat much of anything. Their diet doesn’t allow for dairy, grains, corn, or added sugars. They are crazies if you ask me but to each is own! When I get a presentable picture I will share the secret recipe!

Just in case you want a sneak peek at the ingredients I used to make meatballs that weren’t terrible but still followed their diet, here you go! Now you have to stay tuned because you are just that intrigued.

I think the ice cream had the biggest impact on our savings because I literally just used some old bananas to make it. I didn’t have to leave the house to buy any ingredients when I was wanting some ice cream. I even used my small portioned sized bowls so I was not eating as much of a good thing. There is no point in letting things spoil because that wastes money!

Once you get in the habit of donating you will become addicted to the high you get! I relate it much to going to the gym, once you start you don’t want to stop but sometimes starting is hard. It gives you the same rush of endorphins and I ride it out until the next month rolls around. The hardest part for me is choosing which organization to work with because there are so many fabulous ones out there! I couldn’t imagine skipping a month now.

While this is one of my smaller donations I have to remind myself of quality over quantity. This meat is going to be appreciated so much and it is healthy for them! My donation consisted of turkey sausage, turkey burgers, ground turkey, turkey franks and that is just the meat portion of my goodies! Turkey is such a lean meat and Michael can hardly tell the difference, if at all.

So many groups in the Flint area really could use the help from donations so I try to stick with the smaller groups who aren’t advertised as much. I feel like they are easily overlooked and have missions that will touch your soul. Here are some tips to find a local charity.

How to Find a Charity:

Do a Google search and see what pops up.
Ask another group that you have worked with if they have any recommendations.
Check with your friends and family because someone you know donates!

I found Motherly Intercession for this month’s donation through Weiss Advocacy Center. Of course Weiss would have loved for me to come back for a second month but I want to spread the love all throughout Flint! Think of it like shopping Mom and Pop stores versus big box stores. Help them help others through growth! As a collective team we can mobilize our future generations!

Do you remember by posts about my experience with Shaklee Cinch products? If not here is my week 4, week 3, week 2, week 1 and where I started back in January. I should really do an update on where I am right now but for now, here is a guest giveaway from someone who got to try out Shaklee’s cleaning products!

I was fortunate enough that Renee, a mom and an independent distributor for Shaklee, asked me to do a review for Shaklee’s products. I had heard of Shaklee before, but I knew next to nothing about them. After a very pleasant phone call with Renee, she taught me that Shaklee was the first company out there to offer environmentally friendly products. At the end of the call I could not wait to try out the products she was sending me!

Renee sent me 16 oz. bottle of Basic H2, a 3 pack of Get Clean Spray Bottles, 9 oz. jar of Scour Off Paste, and 16 oz. of Dish Washing Liquid Concentrate, along with a packet of information.

I want to first share some information on each product with you.
Basic H2:

Safe: Nontoxic, no toxic fumes, no hazardous chemicals, fragrance free, mild on your hands, pH balanced, and no chlorine.
Here’s the household uses for Basic H2: General cleaning, windows, mirrors, glass, pots & pans, floors, dusting, fruits & vegetables, handwashing woolens, nylons and all fine fabric, spot remover, aquariums, removing fish odors, removing boat algae, reducing odors in diaper pails (I use Basic H2 for this the most), wallpaper, frying vats, and many more.
Personal uses include: Hands, Bathing, removing gum from skin, carpet or clothes, painting and dyeing, cleaning shoes, and cleaning eye glasses (another one I use frequently).
You can use it for automotive uses, such as washing your car, cleaning the engine (will not affect paint, gaskets or insulating material!), cleaning the battery terminals, and helps get tires off easier when you’re changing them.
There’s many other miscellaneous uses as well! The list just goes on and on!

Dish Wash Liquid Concentrate:

Completely safe (non-toxic, hypoallergenic, does not contain chlorine, is mild on your hands, is pH balanced, and has no hazardous chemicals)!
Very powerful (tough on grease, has long-lasting suds, and can use very little and it goes a very long way (one of the best parts).
The second best part is that it is green; has natural ingredients, is biodegradable, has no phosphates or dyes, comes in recyclable packaging and is safe for septic-systems and graywater.
Can also use for grout & tile, pans & stained dishes, pots, pans and PYREX, oven cleaner, mineral deposits in toilet bowl, and tough stains in sink.

Scour Off:

You can use scour off on baked enamel, chrome, ceramic tiles, stainless steel, glass, porcelain, and most hard metal surfaces. (Do not use on gold, brass, copper, sterling silver, corian, or surrel.)
There are many uses for the kitchen, bathroom, outdoors, and vehicles!
Scour off is biodegradable, pH balanced, certified Kosher, and has no toxic fumes, no alkalis, and has a pleasant scent.

I used the Basic H2 on my kitchen stove. Here is a before picture:

How gross, right? We had had a party the night before, so that would be why it’s so nasty. I figured what better time than now to see if Basic H2 actually worked! All you need are one of the spray bottles, the Basic H2 and I used a rag.

You just fill the spray bottle with water, then put a 1/4 teaspoon of Basic H2. Then you just spray and wipe away! I let a couple of the spots soak because it was pretty stuck on, and it wiped away so easily! Here is the after picture:

What a huge difference! Another great thing about the Basic H2 is that there are absolutely no fumes! I can’t even begin to tell you how much I hate cleaning because of the fumes almost all cleaning solutions put off. It’s so nice not having to deal with it anymore!

Next, I used the Dish Wash Liquid Concentrate.

I didn’t take any pictures of the process because, well, who wants to look at dirty dishes? I didn’t want to subject my readers to that! Haha! But let me tell you – I will not be using any other dish washing liquid! It got off grease and dried on spots on all the dishes, and I hardly had to use any of it! I swear, you can barely tell I used any of the stuff! This bottle will last me a long time!

The Scour Off I used on the rims of our tires. Unfortunately I do not have any pictures of the before and after because our camera started acting up, but they have never been so clean! It was so easy to use, and although there is a slight scent to the paste, it was actually a pleasant one!
