<p>Every Monday night is homemade pizza night. We&#8217;ve been doing this for the past year since it is an easy meatless meal. <img src='http://manpans.com/home-kitchen-gourmet-cookware-and-cooking-blog/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  I made my dough for a while, but then we went gluten free for a month. We were testing to see if gluten was causing any behavioral and digestion issues with E, but it made no difference. But while we were on the gluten free kick, I discovered the best pre-made pizza crust from Udi&#8217;s. So now we go back and forth depending on how busy I am throughout my day.</p>

<p>We all like different toppings, so usually it&#8217;s a mixed pizza. <img src='http://manpans.com/home-kitchen-gourmet-cookware-and-cooking-blog/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  We also participate in meatless Monday, so we do fruits and veggies on the pizza- unless we have leftover chicken in the fridge. I use cheeses like fetta, ricotta, mozzarella, parm, romano, cheddar, and some mixed varieties. I also make our own sauce which is organic tomato paste, organic tomato sauce, organic italian seasoning, and organic garlic. I&#8217;m allergic to onions so we can&#8217;t use store bought stuff.</p>

<div align="justify">I had plans for so many Christmas breads this month. I wanted to revisit a stollen I made last year. Well, I actually didn’t plan to revisit the same recipe. I was going to try a new recipe and make a pretty wreath. I tried this recipe from <a rel="nofollow" href="http://manpans.com/home-kitchen-gourmet-cookware-and-cooking-blog/goto/Cooking_Light_magazine/1212/4">Cooking Light magazine</a> that I saved from last year.</div>
<p>It was going to be really festive with cranberries on top of the sugar glaze. But something went wrong. Not baking catastrophe wrong where I was crying over my dough. I almost did. I was sort of in denial that it wasn’t quite rising as it should. I was heading to a Christmas Eve party and thought by the time I’d come home, it would for sure be doubled in size. It maybe quartered in size. Or maybe it never did and I was just hoping for a Christmas baking miracle.</p>
<p>I thought maybe my milk was too cold when I added the yeast. I know that sometimes could make it take longer to rise.  I baked it anyway and figured it would be dense and just perfect to dip in my caffe’ latte that morning. It actually wasn’t as dense as I thought it would be. It just wasn’t fluffy and perfect like the one I made last Christmas. I even had some of that first batch today for breakfast and it’s softer than it was the first day. But still, no fluffy factor.</p>
<p>This is the first stollen that just didn’t rise to it’s fullest potential:</p>

<div align="justify">What really went wrong? I’m not sure. Maybe the milk was too cold and the dough needed more time. Maybe my rise temperature was too high and that caused it to be a flop.</div>
<p>*Ok-slight update to my post I’m just working on this morning. I know what happened to the 1st recipe from <a rel="nofollow" href="http://manpans.com/home-kitchen-gourmet-cookware-and-cooking-blog/goto/Cooking_Light_from_reading_readers_comments/1212/6">Cooking Light from reading readers’ comments</a> on their link to recipe. The Cooking Light recipe has you add too much sugar to the yeast. The excessive sugar is probably what killed my yeast. Did anyone else ever have this happen?</p>
<p>Why did I stray from <a href="http://www.cakeduchess.com/2010/12/daring-bakers-challenge-christmas.html">this trusty recipe</a>? I had hopes of making a lighter dough. I wanted the same thing but slightly better. Sometimes it’s best to stick with what’s worked for you. So I made my Christmas Stollen one more time from last year. It was perfection.</p>

Love it!</div>

<p>You know I’ve been busy with all this holiday baking. I’ve been baking every thing on a new wonderful cookie sheet! This was a batch of citrus glazed cookies I made (recipe to follow).</p>

I&#8217;m a huge ManPans fan because of the quality of their products and most importantly, because they are made in the USA.:)</p>
<p>Tis the season for baking and making special treats!! The <a href="http://www.manpans.com/129-3.html">Cookie Sheet</a> came in the nick of time for all our cookie and holiday bread baking.</p>

<p>The cookies came out perfectly baked on the bottoms. The pan held true to the recipe temperature and baking time. There was no need to grease the cookie sheet and the cookies slid easily off.</p>
<p>The <a href="http://www.manpans.com/129-3.html">Cookie Sheet</a> is 18&#8243; X 13&#8243; and I was able to fit 20 cookies on the sheet. The last pic was my last batch- so there are less cookies. <img src='http://manpans.com/home-kitchen-gourmet-cookware-and-cooking-blog/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  The pan is flat (no sides all around-other than the grip-lip) which is easy to use.</p>

<h6>Christmas Stollen</h6>
<h6>Ingredients</h6>
<ul>
<li>1 tablespoon active dry yeast</li>
<li>2/3 cup warm milk (110 degrees F/45 degrees C)</li>
<li>1 large egg</li>
<li>1/3 cup white sugar</li>
<li>1/2 tablespoon salt</li>
<li>1/3 cup butter, softened</li>
<li>2 1/2 cups bread flour</li>
<li>1/3 cup currants</li>
<li>1/3 cup sultana raisins</li>
<li>1/3 cup red candied cherries, quartered (I skipped this and added dried cranberries)</li>
<li>2/3 cup diced candied citron (skipped this and added 1 large orange zest)</li>
<li>6 ounces marzipan  (I did not have marzipan to do the marzipan surprise)</li>
<li>1 tablespoon confectioners&#8217; sugar</li>
<li>1 teaspoon ground cinnamon</li>
</ul>
<h6>Directions</h6>
<p>In a small bowl, dissolve yeast in warm milk. Let stand until creamy, about 10 minutes.</p>
<p>In a large bowl, combine the yeast mixture with the egg, white sugar, salt, butter, and 2 cups bread flour; beat well. Add the remaining flour, 1/4 cup at a time, stirring well after each addition.<br />

When the dough has begun to pull together, turn it out onto a lightly floured surface, and knead in the currants, raisins, dried cherries, and citrus peel. Continue kneading until smooth, about 8 minutes.<br />

Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.</p>
<p>Lightly grease a cookie sheet. (I didn’t have to with one of the loaves because I used the new ManPans baking sheet)</p>
<p>Deflate the dough and turn it out onto a lightly floured surface. Roll the marzipan into a rope and place it in the center of the dough. Fold the dough over to cover it; pinch the seams together to seal. Place the loaf, seam side down, on the prepared baking sheet.</p>
<p>Cover with a damp cloth and combine 1 tablespoon milk and 1 egg. Brush dough gently with milk mixture. <a rel="nofollow" href="http://manpans.com/home-kitchen-gourmet-cookware-and-cooking-blog/goto/link/1212/30"><img title="DSCN9828" src="http://lh5.ggpht.com/-S2zhsRyHA-Q/TvnoMpsxCOI/AAAAAAAAEGQ/EwICDWe68Ro/DSCN9828_thumb%25255B1%25255D.jpg?imgmax=800" alt="DSCN9828" width="544" height="409" border="0" /></a><br />
Bake in the preheated oven for 10 minutes, then reduce heat to 300 degrees F (150 degrees C), and bake for a further 30 to 40 minutes, or until golden brown. Allow loaf to cool on a wire rack. Dust the cooled loaf with confectioners&#8217; sugar, and sprinkle with the cinnamon.</p>

Combine 1 tablespoon milk and powdered sugar, stirring until smooth; drizzle over cooled loaves</p>

<p>Used It (<a title="4 quart sauce pan" href="http://www.manpans.com/products/4-Quart-Sauce-Pan.html" target="_blank">4 Quart Sauce Pan</a>) For The First Time Tonight.   Made a pot of dry mix soup tonight with my new ManPan sauce pan. The water came to a boil quicker in this pan than in any other pan I own and I could use a much lower heat setting to keep it up to temp. It helped make short work fixing the soup and clean up was quick and easy with the super slick finish. I love this pan and will use it every time.</p>
<p>I received my ManPans (<a title="10 inch saute pan" href="http://www.manpans.com/products/10%22-Saute-Pan.html" target="_blank">10&#8243; Saute Pan</a>) less than a week ago and have used this Saute pan  three times.  The very first time I used it I was pleased to find out  that the non stick finish was better than any I had used before.  I have  owned some very expensive pans.  Absolutely solid construction,  completely even heat and the lid vent metered the water vapor perfectly.   Only stuff inside the pan was my chicken and a tiny bit of oil, no  water build up.  Clean up was a breeze.  I was surprised at the low  burner temp it took to get the job done each time I used it.  A real  energy saver.  Out go the fancy stainless steel and big name pans from  my past. Best pan ever.</p>

I have been  using the pan constantly since then, including for a beef stew during  the blizzard last week. Sorry for the steam in <a rel="nofollow" title="Seared meat in the Manpans Saute pan" href="http://manpans.com/home-kitchen-gourmet-cookware-and-cooking-blog/goto/this_picture/181/15" target="_blank">this picture</a>, but I  wanted to show you the great sear I got on that beef – who said you  can’t get a good sear on a non-stick pan? I’m sold!!  So, I think I am going to need more of these pans. And just so you know,  Man Pans didn’t ask me to write this. <p>From Barbara S. &#8211; &#8220;I just purchased a 12 inch frypan and so far, am very, very pleased with the performance. I like the fact that the pan is light. I can lift the pan with one hand and slide food out with the other, unlike my other heavy nonstick pan that requires both hands to lift. That&#8217;s important when you are cooking and the timing is critical. I also like the fact that the pan is slightly deeper than my other frypans, that the bottom is perfectly flat so it sits on my ceramic cooktop and doesn&#8217;t rock, and that I can use it in the oven. The New York Times just had an article on non-stick pans (care and use) and I sent them a link to your website. Hopefully a product review or mention of some type in the future? I recently bought a two piece set of Calphalon non-stick skillets as the ones I had been using had seen better days. A couple of months later and they are filled with scratches despite limited use so I was very intrigued by ManPans promises which included a surface that would not scratch (yeah, sure right…huh?).</p>
<p>During the course of preparing the mushroom and onions for the beef dish, I didn’t gently move my wooden spoon across the surface like I normally do with non stick pans…nope, I used a large metal spoon to make sure they could live up to the claims that the surface would not scratch. Made in the US, eco-friendly, no change in the taste of food? Sounds too good to be true and I’m as skeptical as anyone out there but bottom line everything they promised was true. Heat was distributed evenly, the handle stays cool, and what really made my day? After preparing both the mushrooms and the onions for the beef, I simply wiped out the pan, boiled potatoes in the bottom section of the pan and added the asparagus in the steamer insert a couple of minutes before the potatoes were finished. TWO dishes, ONE pan? Perfect for my four burner cooktop.</p>
<p>No kidding, I love this pan&#8230;I not only loved the quality but this steamer pan was exactly what I had hoped for…a pan that made my job easier. What’s not to love?&#8221;</p>

But, using the Man Pans Wok side by side with my old faithful has truly opened my eyes. Using a lighter pan certainly made things much easier in the handling department. And, being made here in the USA using very environmentally friendly processes makes the Man Pans an exciting prospect. But, the bottom line is how they cook the food you are preparing … and on this level the Man Pans ran at least on par, if not better, than my trusty old Calphalon. My only complaint is with the depth of the steamer insert. Though, when you combine all of the pluses apparent in the Man Pans product, I feel as though I have found a new standard by which I will be judging cookware from here on out. I bought the 10″ wok about six mouths ago and shortly after a set  of leading other non-stick pots and pans and find myself using the wok  more often then my ‘big name pans’. This is a excellent built wok and  does all it says can do, not to be fooled by its weight! I don’t treat  it with any special treatment other than directed and has performed very  well. <p>I did so much research for a pan-I made myself crazy.  I wanted  something safe for me and my kids.  But also easy to store and clean,  since sometimes I am distracted and dinner is on the stove too long!</p>
<p>I have tried cooking everything in this pan and can not find anything  that sticks!  I even did the egg challenge and &#8212; it came clean.  I  will tell everyone to buy and use these pans!  Also, when I emailed a  question to this company, I actually got a personal reply!  Hooray for  customer service!!&#8221;</p>

<p>Doesn’t this bad boy look HEAVY?</p>
<p>Wrong. It’s <em>so</em> lightweight.  In fact, if I had to use it as a  weapon against culinary intruders, well, they’d win, as it just isn’t  weighty enough to take anyone out.  Muscle though? This pan has it in  spades.  Add to that it gets the job at hand done quickly and precisely,  and you have yourself one heck of a go-to dinner maker.</p>
<p>I’ve pretty much used it exclusively since it arrived on my front  porch, because of it’s ease and the great results I get with it.  Plus  it’s just plain gorgeous to look at.  I’ve made potstickers, stir-fry,  rice, chicken, and now, this teriyaki steamed broccoli. With or without  the steamer insert you have a very functional pan, and I think you’ll  LOVE it.  I know I do!</p>

Well I&#8217;m finally figuring out to make a good meal you need to have products that are going to help you do the job right, like the <a title="12 inch saute pan" href="http://www.manpans.com/products/12%22-Saute-Pan.html" target="_blank">12&#8243; Saute Pan</a> from Man Pans.</p>
<p>Honestly, this is my most favorite saute pan ever.  It&#8217;s large, it cooks everything evenly, it has a patent pending cool handle that doesn&#8217;t ever get hot along with a lot of other great features.</p>
<p><a href="http://manpans.com/home-kitchen-gourmet-cookware-and-cooking-blog/wp-content/uploads/2011/03/saute-pan.jpg" target="_blank"><img class="alignright size-medium wp-image-1005" style="border: 5px solid black; margin: 5px;" title="saute pan" src="http://manpans.com/home-kitchen-gourmet-cookware-and-cooking-blog/wp-content/uploads/2011/03/saute-pan-300x152.jpg" alt="saute pan" width="300" height="152" /></a>Other then it cooks amazing I absolutely love that it is by far the best clean up pan ever, when cooked with properly food rarely sticks and if it does (because of my cooking skills) it washes away clean.  Just the other day I cooked chicken in it, then I had to cook a mushroom wine sauce in it and I was amazed that all the crusted chicken didn&#8217;t stay stuck to the pan to burn but came right off and cooked in with the other food.</p>
<p>I also like the high edges so things don&#8217;t slop over and that the bottom is flat all the way to the edge making for great cooking.  The durability of this pan is excellent, I have had other pricey pans that worked great but they never held up for long.  This pan is going strong, works great and I would love to add many of the other products Man Pans  has to offer to my home.</p>

<p><span style="text-decoration: underline;">Excerpts</span> &#8211; &#8220;I got to use my new  ManPans <a title="10&quot; saute pan" href="http://www.manpans.com/products/10%22-Saute-Pan.html" target="_blank">10″ saute pan</a> to cook the bacon for this Garnet yam recipe then I just wiped the pan out and added water so I could set the steamer on top with the yams in it.  What a treat to not have to use and wash 2 different pans!</p>
<p>ManPans is a company that makes high quality, environmentally friendly cooking pans in Spokane Washington.  They do everything on site in their manufacturing facility, starting with the raw material and ending by shipping the finished product right to you!</p>
<p>ManPans was nice enough to ask me if I would like to review one of their pans on my blog and I jumped at the chance!  I had already been tweeting back and forth with them about recipes and had also been to their website to check out their pans, so I was thrilled with their invitation!</p>
<p><img class="alignright" style="border: 5px solid black; margin: 5px;" src="http://www.andreaskitchen.net/wp-content/uploads/2011/03/Recipe-Vegie-Garnet-Yams-With-Bacon-And-Chipotle-006.jpg-blog-2-300x229.jpg" alt="" width="300" height="229" />ManPans allowed me to choose which pan would fit my cooking style the best and I chose the 10″ saute pan.  When it arrived, I found that they had included the 10″ steamer insert and 10″ glass lid too.  The pan itself is unbelievably light- I weighed it just because I was curious and it only weighs 1 and 1/4 pounds.  Usually such a lightweight pan would be a bad thing because it would mean that the materials were wimpy.  That is not the case here!</p>
<p>I bought a cast iron pan several years ago and I have not used it because I don’t have a lot of hand strength and it always seemed so awkward.  This lightweight ManPans pan would be a great gift for a loved one that has arthritis or any other physical issue that makes lifting a chore.</p>
<p>ManPans are made of solid 12 gauge aluminum with a hard anodized shell with a special water based coating on top  that aids in the release of food from the pan.  These pans are not considered a non-stick pan, but if you wipe just a little bit of canola or grapeseed oil in the pan before heating it up the food will come out easily and cleanup is a breeze.</p>
<p><img class="alignleft" style="border: 5px solid black; margin: 5px;" src="http://www.andreaskitchen.net/wp-content/uploads/2011/03/Recipe-Vegie-Garnet-Yams-With-Bacon-And-Chipotle-002.jpg-blog-4-300x221.jpg" alt="" width="300" height="221" />ManPans pans heat up quickly and evenly thanks to years of research and product development.  I found that they were totally correct in saying that you can use a much lower heat setting than you are used to to cooking with.  I almost dried out the first thing that I cooked in my pan bacause I didn’t think it would be so quick and efficient.  ManPans states that you should start at less than half of your usual burner setting while you are getting used to your pan.</p>
<p>ManPans pans contain no PTFE’s, PFOA’s of fluoropolymer coatings so they are a totally safe pan to cook in, unlike Teflon coated pans where the coating can flake off over time.  You can also use metal utensils in your ManPan without any worry of scratching the hard finish.</p>
<p>A ManPans pan will tolerate up to 700 degree temperatures either on your stovetop or in your oven.  The glass lid will tolerate temperatures up to 400 degrees.</p>
<p>Another great thing about a ManPans pan is the Cool Grip handle.  It absolutely does stay cool to the touch when you use it on top of your stove.  If you place it in the oven you will need to use an oven mitt because it will get hot in there!</p>
<p>I want to thank ManPans again for providing me with such a great pan to review!  I urge people to support ManPans because they are a company that produces their environmentally responsible product here in the United States with United States workers.  ManPans has no other “competitors” that can say the same thing.</p>

<p>Oh and this seal of ECO friendly makes me smile with cheesy happiness.  I don&#8217;t want chemicals in my food, let alone cook my food on them.  Planning a family, and even just for my own health and well being I feel that ManPans really cares about the consumer!&#8221;</p>

<p><span style="text-decoration: underline;">Excerpts</span> &#8211; &#8220;It was time to put the new “Man Pans” to the grill test. Could they survive the direct and indirect heat of a Barbecue Grill? Could they be used effectively on a grill? Could I create a complete meal on the grill using the “Man Pans“? So how did the Man Pans work? &#8230;  Flawlessly &#8230;.. they are a pleasure to use.  Man Pans are very fast to heat up, making them prefect for the grill.  I was able to heat up the pans in no time, add my ingredients, shutting the grill lid and let them cook. Perfect execution. My Potato Medley cooked evenly and faster than I would have expected, no hot spots were evident. The spinach wilted quickly and the flavors were rich, no burning at all. Clean-up was a breaze, just a quick wash, even with the baked on cheese from the Potato Medley.  To say that I am thrilled with these pans is an understatement.  They held up perfectly in the grill and got the job done.   On a side note I did come home just before this meal and catch the Mrs. Outdoor Cook using my pans. Ha! I promptly scolded her for such a violation of the Man code ….. and then she promptly told me that these pans are perfect for Mrs. Outdoor Cook and preceded to tell me about the Woman code ….. grrr I have created a monster.  Just proves my point that the “Man Pans” are the perfect pans for the Wo-Man and the Man of the house and that of course gives me that last word and now I am happy.&#8221;</p>

<p><span style="text-decoration: underline;">Excerpts</span> &#8211; &#8220;I have been using my pans for almost two months now.  I love my ManPans Wok.  This pan has become my goto pan, I have used this pan to grill steaks, cook bacon, prepare soups, and I have grilled more ground meat and sausage in this pan than you can imagine.  Why do I love my new pan?  The handles don’t get hot.  I have a really nice set of pans that are stainless steel, but I have burned myself on those pans more times than I care to mention.  These handles never get got.  The handles have a good grip, don’t you want to be able to grab a pan, and easily flip around your ingredients without a utensil just like a chef?  Well, you can with this pan, it is so easy to do.  This firm handle that doesn’t get hot makes this so easy.  Food doesn’t stick in this pan, if you have used stainless steel, you know that from time to time, things stick in your pan, well not in this one.  This special coating doesn’t allow for food to get coated onto your pan.  This pan heats evenly and quickly.  You don’t have to wait too long for this pan to be ready to start your cooking.  I haven’t been this enthused about cookware in awhile.</p>

But, they are made here in the US and are known for their green environmental practices so that sounded good to me right off the bat.  When I got it out of the box, I noticed right away how lightweight it  was… even before I cooked anything I could tell there was something  different about this pan… it was a great way to test that metal utensil  thing out and I can report that the whisk didn’t leave a mark.   Fabulous.  Another thing I loved about this pan was that it was super  easy to clean  – easier than any other so-called non-stick pan I own.  I  have been  using the pan constantly since then, including for a beef  stew during  the blizzard last week&#8230; who said  you  can’t get a good sear on a non-stick pan? <p><span style="text-decoration: underline;">Excerpts</span> &#8211; &#8220;I don’t deep-fry frequently because it can be kind of a pain.  Getting the oil to maintain its temperature can be difficult and then disposing of the used oil is headache.  Some of my reticence abated recently, with the addition of a new member to my pot and pan community&#8230; Enter the <a href="http://www.manpans.com/categories/ManPans-Cookware/Stir-Fry-Woks/">ManPans 12-inch Stir Fry Wok</a>.</p>
<p>You might remember that one of our prizes in the <a href="http://www.lafujimama.com/2010/10/food-ninja-arsenal/">Food Ninja Contest</a> was a <a href="http://www.manpans.com/products/10%22-Fry-Pan.html">ManPans 10-inch Fry Pan</a>.   ManPans had sent me their 12-inch Stir Fry Wok to try out right before  we launched the Food Ninja contest, and I knew immediately that we  needed one of their pans as a prize!</p>
<p>My wok has been getting a lot of  heavy use.  I’ve made stir-fry, fried rice, and a whole plethora of  things that aren’t normally made in a wok, just because I love cooking  with it.  It is light, extremely durable, and heats quickly and evenly.  I love  the handle, a special design that never gets hot, no matter how smoking  hot the actual pan is.  I also love that it’s non-stick coating is  durable enough to withstand the use of metal utensils in it, unlike most  non-stick products.</p>
<p>A huge added plus is the fact that <a href="http://www.manpans.com/">ManPans</a> has worked hard to make their products <a href="http://www.manpans.com/pages/Eco-Green-Manufacturing.html">green</a>.   Deep-frying in the wok is a dream.  The size of the wok is perfect and  the temperature of the oil is easier to maintain than other pots I have  used. &#8221;</p>

Beyond perfect even!</p>
<p>Although I used a pan from my collection to brown the meat and cook   the beef in the oven, I had plenty planned for this pan, man. So,   remembering that my integrity can be defined by honest evaluations, I   must admit…I LOVE THIS STUFF (there, was that eloquent enough?).</p>
<p>I have a large collection of stainless pots and pans; they’re   beautiful and I love working with them but I have never had a great   experience with something that is supposed to be non stick. I recently   bought a two piece set of Calphalon non-stick skillets as the ones I had   been using had seen better days. A couple of months later and they are   filled with scratches despite limited use so I was very intrigued by <a href="http://www.manpans.com/" target="_blank">ManPans</a> promises which included a surface that would not scratch (yeah,  sure right…huh?)&#8230;</p>
<p>During the course of preparing the mushroom and onions for the beef  dish, I didn’t gently move my wooden spoon across the surface like I  normally do with non stick pans…nope, I used a  large metal spoon to  make sure they could live up to the claims that the  surface would not  scratch. Made in the US, eco-friendly, no change in  the taste of food?  Sounds too good to be true and I’m as skeptical as  anyone out there but  bottom line everything they promised was true. Heat  was distributed  evenly, the handle stays cool, and what really made my  day? After  preparing both the mushrooms and the onions for the beef, I simply wiped  out the pan, boiled potatoes in the bottom section of the pan and added  the  asparagus in the steamer insert a couple of minutes before the  potatoes were  finished. TWO dishes, ONE pan? Perfect for my four burner  cooktop&#8230; I not only loved the quality but this steamer pan was  exactly  what I  had hoped for…a pan that made my job easier. What’s not to love? No  kidding, I love this pan&#8230; &#8221;</p>
