Marlo got this creative recipe idea from an old friend, so I tested it out on my playgroup this week. The Octo-Dogs were a hit! (Thanks to Kathy W. for the clever name!)

Octo-Dog Recipe

Ingredients:

1 package of hot dogs, any kind, preferably one without nitrates
1 package of spaghetti noodles, preferably whole wheat or multi-grain
1 cup of spaghetti sauce, jarred or homemade

Directions:

Fill a large pot with water. Add a pinch of salt and bring the water to a boil.

Slice each hot dog into 6 or 8 pieces. If serving to toddlers, first slice the hot dog lengthwise to reduce the risk of choking.

Skewer each hot dog piece with 4 pieces of uncooked spaghetti. Center the hot dog on the pasta strands, as pictured below. Children could help with this step.

When the water is boiling, cook the Octo-Dogs according to the pasta package directions.

Gently warm the spaghetti sauce on the stove top or in the microwave.

Drain and rinse the Octo-Dogs with lukewarm water to prevent sticking.

Serve warm with pasta sauce on the side for dipping.

Variations:

Experiment with different kinds of sausages, pastas, and sauces. Perhaps a chicken sausage with fettuccini noodles and alfredo sauce? Or Italian sausage with angel hair pasta and pizza sauce? The possibilities are endless! Please try this recipe at home and let us know how your family likes it!

Reduced Fat Chocolate Chip Pumpkin Muffins

Recipe Summary:
Difficulty: Easy
Prep Time: 20 minutes
Cook Time: 30-35 minutes for muffins, 20-25 minutes for mini-muffins
Yield: 18 regular size muffins, or 2-3 dozen mini-muffins

Ingredients:
DRY:
2 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt

WET:
1 cup sugar
1/4 cup vegetable oil
1/2 cup unsweetened applesauce
3 large or extra large eggs
1 teaspoon vanilla extract

3 cups raw shredded pumpkin, fresh or previously frozen
3/4 cup semi-sweet chocolate chips

Directions:

Preheat the oven to 325 degrees F. Prep the baking pans with: butter and flour, nonstick cooking spray, or paper cupcake liners.

Sift the dry ingredients together: flour, cinnamon, baking soda, baking powder, and salt.

In a separate bowl, mix the wet ingredients: sugar, applesauce, vegetable oil, eggs, and vanilla.

Combine the wet and dry mixtures. Do not over-mix or you’ll get large air pockets or tunnels.

Fold in the shredded pumpkin and chocolate chips. (If using thawed shredded pumpkin, be sure to squeeze out the excess liquid and discard it.)

Once the ingredients are all incorporated, pour or scoop into muffin tins. I like to use a small cookie disher for this.

Bake for approximately 30-35 minutes for regular sized muffins or 20-25 minutes for mini-muffins. At this point, a knife or toothpick inserted into the middle of the loaf should come out clean.

Cool for 15 minutes and turn out onto a cooling rack. I found that one chopstick in each hand is a very effective way to remove warm mini-muffins without getting myself sticky.

Serve as breakfast, dessert, or snack. Great with coffee and/or ice cream.

Refrigerate leftovers. Reheat in broiler or toaster oven for best results. Can also microwave them in 15 second increments until the muffins are warm and the chocolate is gooey. Yum!

Variations:

Substitute the semi-sweet chocolate chips for chopped up pieces of holiday chocolate. Every Easter, Halloween, and Christmas, my kids always get tons of chocolate from family, friends, school, etc. If I bake the chocolate in these muffins, they eat less candy and more fruit (pumpkin and applesauce).

No need to peel the pumpkin before shredding! Just wash and cut the pumpkin, then shred it in the food processor or salad shooter. This adds color, texture, and probably fiber and vitamins as well. Thanks to readers Sandy and Jeff for the suggestions!

Hand washing is the best way to prevent the transmission of germs, even better than all the hand sanitizers on the market. Encouraging children to wash their hands before eating and after using the washroom is very important. We also teach our kids to wash their hands as soon as they come home and after handling money or library books.

My kids love to wash their hands with foaming soap pumps. They don’t need to spend as much time lathering up their hands, and the foam rinses off easily. The problem is, the pumps empty so fast and replacing them can get expensive, not to mention wastefully and environmentally unfriendly.

I have yet to see foaming soap refills at the stores, probably because a special dispenser is required to make the foam. My solution is to just refill the bottles using regular liquid soap. You need one part soap for four parts water. For example, one ounce of soap and four ounces of water. The first time I did it, I accidentally used 2 ounces of soap and 6 ounces of water to fill my 8 ounce bottle. The foam was thicker, but still worked fine.

Refilling Foaming Hand Soap Pumps are especially useful for those parents concerned about super-viruses and mutated bacteria caused by all the anti-bacterial products in use these days. I’ve only seen anti-bacterial versions of the foaming hand soaps in the stores near me. Now anyone can now make non-anti-bacterial foaming hand soap with any liquid soap. Leaps and Bounds sells a foaming soap pump bottle that has fill lines for easier measuring. The reviews for the actual bottle are mixed, but most people like the measuring lines and the refillable concept.

I prefer the Bath and Body Works Pumps. I usually buy 1 foaming bottle and the rest regular liquid soap bottles when there’s some kind of promotion or coupon (3 for $10, 5 for $15, etc.). Though they are antibacterial, my family likes the scent. I purchase all the same variety so no one even knows that the bottles were refilled! Bath and Body Works also has a Kid’s Signature line, but no refills or regular liquid soap available. They do sell 16 oz refills of their regular antibacterial foaming soaps in certain scents for about $5, but that’s really about 3 oz of soap and 13 oz of water. It’s much more economical to make your own foaming soap solution. Even more so if you stay away from the brand name products.

What other ways do you encourage your children to wash their hands? How else do you stretch your dollar at home? We’d love to hear your ideas!

If your family is like mine, you spend a lot of time shopping at warehouse stores such as Costco or Sam’s Club. The groceries are often priced at a great value, but packaged in huge quantities. Whenever I pass by the beautiful slabs of fresh salmon, I’m tempted to buy a package. If I’m not having people over, the thought of eating salmon every day for a week usually changes my mind.

We discovered a new recipe when we hosted a pot luck Christmas party with friends a few weeks ago. Our dear friend Anne borrowed our kitchen to make her new salmon dish. She brought three ingredients, assembled them, and popped them in the oven. About 30 minutes later, a delicious main course was served! By the end of the night, every delicious morsel had been eaten.

Ingredients:
1 cup mayonnaise (may use regular or low fat)
1 packet onion soup mix (any brand)
1 large salmon fillet from Costco

Preparation:
Stir the onion soup mix into the mayonnaise. Refrigerate the sauce until ready to bake.

Directions:

Preheat the oven to 350 degrees.

Place the salmon on an aluminum foil covered baking sheet. Be sure the pan is deep enough to catch any drippings.

Cover the top of the salmon with the onion-mayo sauce.

Bake approximately 30 minutes, depending on the thickness of the fish. When your kitchen fills with the scent of onions and salmon, start checking the fish. The internal temperature of the thickest portion should reach 140 degrees. If you don’t have a cooking thermometer, the fish should flake easily with a fork when fully cooked.

Remove from the oven and allow to rest for 5-10 minutes. The sauce will turn into a tasty brown crust that keeps the fish moist and tender. Delicious!

Serve over a bed of rice and a side of steamed spinach for a super healthy, easy meal.

We’ve also prepared the salmon by seasoning it with salt and pepper and grilling on a hickory plank as well as sprinkling it with Hawaiian salt and olive oil before baking. We’d love to hear how you prepare your Costco salmon.

The Motrin website is running a commercial or “Mom-Alogue” that makes babywearing seem like a painful, unpleasant thing done only for vanity. The first line of the commercial is, “Wearing your baby seems to be in fashion.” Here is another quote, “It TOTALLY makes me look like an official mom.”

I just loved wearing both of my kids in the BabyBjörn and Hip Hammock. It had nothing to do with being trendy and everything to do with comfort and convenience for my baby and myself. As long as I adjusted my babycarrier properly, I did not need any pain medication because of it.

The online babywearing community is outraged and vows never to buy Motrin brand ibuprofen again. Barb, a babywearer and former Motrin user, posted a transcript of the commercial on her blog. Jessica believes that Motrin is picking on fragile, new moms thus angering many moms.

I have not purchased any Motrin brand products recently, and I do not plan to in the future. There are many other brands and generic options available for both adults and children that work just as well, and are often a lot less expensive.

Update 11/17/08:
Motrin and it’s parent company McNeil Consumer Healthcare have heard the voices of the many outraged moms who have e-mailed, blogged, twittered, etc.

The Motrin.com site went down sometime on Sunday, November 16th. As of Monday evening, the following message replaced the controversial Mom-Alogue:

“With regard to the recent Motrin advertisement, we have heard you.

On behalf of McNeil Consumer Healthcare and all of us who work on the Motrin Brand, please accept our sincere apology.

We have heard your concerns about the ad that was featured on our website. We are parents ourselves and we take feedback from moms very seriously.

We are in the process of removing this ad from all media. It will, unfortunately, take a bit of time to remove it from our magazine advertising, as it is on newstands and in distribution.

Thank you for your feedback. It’s very important to us.”

Sincerely,

Kathy Widmer
Vice President of Marketing,
McNeil Consumer Healthcare

I just baked a double batch of Pumpkin Muffins today. I experimented with chocolate chips after seeing a friend’s chocolate chip pumpkin bread recipe. They turned out really good! Here’s the revised recipe:

Chocolate Chip Pumpkin Muffins

Recipe Summary:
Difficulty: Easy
Prep Time: 20 minutes
Cook Time: 25 minutes for mini-muffins or 35 minutes for regular sized muffins
Yield: 6 dozen mini-muffins or 3 dozen muffins

Dry Ingredients:
4 cups all-purpose flour
4 teaspoons cinnamon
2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt

Wet Ingredients:
2 cups sugar
1/2 cup vegetable oil
1 cup unsweetened applesauce
6 large eggs
2 teaspoons vanilla extract

6 cups fresh shredded pumpkin
1 cup semi-sweet chocolate chips

Directions:

Preheat the oven to 325 degrees F.

Prepare the baking pans by either buttering and flouring them, spraying the pans with nonstick cooking spray, or lining them with paper muffin liners or parchment paper.

Sift the dry ingredients together: flour, cinnamon, baking soda, baking powder, and salt.

In a separate bowl, mix the wet ingredients: sugar, vegetable oil, applesauce, eggs, and vanilla.

Combine both mixtures and fold in the shredded pumpkin and chocolate chips.

Once the ingredients are all incorporated, scoop into prepared muffin tins.

Bake for 25 minutes for mini-muffins or 35 minutes for regular sized muffins. Since ovens vary, start checking the muffins when your kitchen starts to smell really good. When the muffins are done, a knife or toothpick inserted into the middle of a center muffin will come out clean.

Cool for 15 minutes and turn out onto a cooling rack.

Refrigerate leftovers. Reheat in broiler or toaster oven for best results.

Variations:
Substitute leftover Halloween candy for the the chocolate chips! Just cut up chocolate bars into bite sized pieces and fold in with the shredded pumpkin. Hershey bars and M&M’s are the obvious choices, but feel free to experiment with Snickers, Almond Joy, etc.!

I took Sammy to the doctor last Friday for his 5 year old check up. Among other things, he was due for a flu shot. Since I had Sophie with me too, they offered to get her flu shot done at the same time as well. I agreed so that I wouldn’t have to come into the office again.

In our pediatrician’s office, they have a regular flu vaccine and an infant flu vaccine for children under age 3. I normally request the infant flu shot for both of my children because it is thimerosal-free. Sophie is not yet 3, so she would receive the infant one anyways, but I have been making special requests that Sammy receive the infant version as well.

According to the CDC, “Since 2001, with the exception of some influenza (flu) vaccines, thimerosal is not used as a preservative in routinely recommended childhood vaccines.” The FDA states: “A preservative-free version of the inactivated influenza vaccine (contains trace amounts of thimerosal) is available in limited supply at this time for use in infants, children and pregnant women. ” The older children generally get the regular or adult flu vaccine, which contains thimerosal. Thimerosal is a mercury based preservative that may or may not be linked to autism. There are numerous articles and studies both supporting and disproving the link between thimerosal and autism.

I err on the side of caution and try to avoid as much mercury as possible. However, many parents may not realize that their child’s flu shot has mercury in it. Or if they are aware of it, they may not know that there is an alternative. Since flu season is approaching, I just wanted to post this so that parents and caregivers would be aware of it and ask their pediatricians to give their children a thimerosal-free flu vaccine. Some pediatric offices only have a certain amount of infant flu vaccines, so make your child’s appointment in mid to late September to increase the chances of getting the mercury-free version.

If the infant flu vaccine is not available to your child, ask your pediatrician about the nasal flu vaccine, which is also thimerosal-free. It is marketed under the name MedImmune’s FluMist. The CDC describes in detail the brands and manufacturers of thimerosal-free flu products, but also claims that “there is no convincing evidence of harm caused by the small amount of thimerosal in vaccines, except for minor effects like swelling and redness at the injection site due to sensitivity to thimerosal.”

How do you feel about childhood immunizations and the possible link to autism? Do you believe the flu vaccine is beneficial for children? What does your child’s pediatrician say about all of this? Please share your comments below.

We were very excited to learn that the America’s first indoor LEGOLAND was opening up right here in Illinois. LEGOLAND Discovery Centre Chicago opened on July 31, 2008 in the Streets of Woodfield in Schaumburg. The official website was very detailed and descriptive, so we knew exactly what to expect. We even knew to plan on about 2 - 2 1/2 hours to work through the whole place.

TICKETS

I found a link to buy tickets online for <a title="Legoland coupon link" buy one adult admission, get one child admission free. I purchased 2 adult tickets for $39.90 and my 2 and 4 year old children were admitted for free. Once tickets are purchased online, they can be used any day within 6 months of purchase. Another benefit to purchasing tickets in advance is that we were able to bypass the long lines outside. The link that I used was an introductory promotion that was advertised only in the first week. I just learned that Baskin Robbins has coupons with the same paid adult, free child offer.

Since we saw how many people were outside waiting to get in, we decided to skip around and do the Dragon Ride and the 4D movie first. Those were the two things our son Sammy was most excited about, so we wanted to make sure we fit them in before it got too crowded or before the kids got cranky, sleepy, or hungry.

DRAGON RIDE

Sophie (age 2) was a bit scared of the Dragon Ride because it was dark, but I just sat next to her and hugged her throughout the ride. Sammy (age 4) sat with his daddy and excitedly pointed at all the LEGO animals and LEGO people throughout the ride. The Dragon Ride was the only place we were asked not to take pictures. Good thing we put our cameras away, because as the signs promised: we all got a bit wet.

4D CINEMA

The 4D Cinema was a short, cute movie called ‘Spellbreaker 4D.’ Oddly, there was no talking - just a series of noises and grunts from the Princess, the Hero, the evil Magician, etc. Sophie didn’t like the paper glasses provided, so she just watched a blurry cartoon. Sammy liked the 4D effects and kept reaching out to try to touch the swords and people approaching him. The 4D effects came not only from the movie screen, but from fans, lights, and even a snow machine!

LEGO CAFÉ

The LEGO Café is convenient for lunch or snack time. I’m not sure what they serve or if the prices are reasonable. Their chocolate chip cookies smelled really good, but we brought our own water to drink and then went to lunch at nearby Ikea afterwards.

BUILD AND TEST/MODEL BUILDERS WORKSHOP

Upstairs near the LEGO Café, there were numerous play stations with tons of regular LEGOS, LEGO Duplos, build your own LEGO race cars with lots of ramps. Even though we followed the website FAQ recommendations about going first thing in the morning or late afternoon, these areas were very crowded. We had to bypass the “Build and Test” areas, Model Builders Workshop, and the playground type equipment due to the sheer volume of children. A side note: socks are required for the indoor playground equipment (similar to the climbing tubes at Chuck E. Cheese).

FACTORY TOUR

The “factory tour” consisted of standing in one room and looking at the pretend equipment along the walls. One volunteer was chosen to push about four buttons that made the machines move and make noise. At the end, each child was invited to take a yellow LEGO brick home with them as a free souvenir. Sam and Sophie would have enjoyed this a lot more if there were less people in the room. They were not able to see very much behind the other parents and kids. They were delighted to each have their own LEGO that wasn’t a Duplo block.

BIG BRICK PLAY ZONE

There were a few quiet corners filled with huge, soft LEGO bricks. These were the best! Our kids could have spent hours here. I was hoping the store downstairs carried them, but there were none to be found.

MINILAND

Miniland is the first area most LEGOLAND visitors see, since it is right next to the cashier at the entrance. It is a great place for LEGO enthusiasts, Chicago tourists, and Chicago natives. It’s fascinating to study the details of Chicago icons built into these miniatures made completely out of LEGO bricks. The Sears Tower, Hancock building, Water Tower, Buckingham Fountain, and even the “SeaPup” speed boat are just a few of the amazingly accurate landmarks depicted here.

ADVENTURE TRAIL

After walking through Miniland, we had to wait an unusually long amount of time before we were allowed to enter the Adventure Trail section. We had to endure an unenthusiastic treasure hunting skit, but once we were inside, we walked around at our own pace. There were many LEGO animals and LEGO people that the kids enjoyed touching and posing with for pictures. Sam and Sophie enjoyed the hippo, monkeys, frogs, and alligators the best.

HALL OF FAME

There were several large LEGO sculptures of people and animals scattered throughout LEGOLAND. We particularly enjoyed the Hall of Fame that had huge LEGO characters such as Batman, Darth Vader, R2D2, Harry Potter, and Hagrid. The Hall of Fame also had another area with soft LEGO bricks to play with.

PRIVATE PARTIES

We saw several rooms set aside for private parties. The largest room can accommodate up to 50 people. Private workshops were also offered along with the highest level birthday packages. As of August 2008, party packages range from $19.75 - $29.75 per person.

LEGO STORE

The LEGO store was a bit disappointing. I expected a larger, better stocked shop. Many things my children were interested in were sold out, such as the LEGO Duplo people and the Princess Duplo set. The kids t-shirts were overpriced at $19.99. Loose LEGO bricks were $27.99/lb and sorted by size and color. I have no idea how this price compares to buying a box of assorted pieces. The $7.99 foam swords were a hit with our kids, but weapons aren’t generally allowed in our home. There were several cute key chains available for $3.99, but we did not buy any of those either.

FINAL THOUGHTS

All four of us had a great time at LEGOLAND Discovery Centre Chicago. Our only complaints were regarding the staff and the price. The cashiers at the entrance seemed flustered and were not very friendly. The employees who were dressed in costumes (Professor Brick a Brack at the Factory Tour and the Adventure Trail Tour Guide) lacked enthusiasm and weren’t good with crowd control. There were very few employees circulating around to answer questions or direct people to certain attractions or washrooms, etc. Many of the soap dispensers in the washrooms (including the family washroom) ran out of soap. Hopefully these are just temporary issues that will be worked out as the staff familiarizes themselves with their new roles.

The price of admission to LEGOLAND was comparable to an amusement park, but the actual LEGOLAND itself was comparable to a standard children’s museum. Kohl’s Children’s Museum in Glenview charges $7.50 per person and Chicago Children’s Museum in Navy Pier charges $9.00 per person. Those museums can keep kids entertained for 4 hours or even a full day, depending on the child. Kiddie Land Amusement Park in Melrose Park charges $23 for ages 6 and up and $20 for ages 3-5 & 60+

If I didn’t live 45 minutes away, I’d consider buying an Annual pass for unlimited admission during non-holiday weekdays. It’s slightly cheaper than the Premium pass that allows admission on both weekdays and weekends. I believe you have to go at least 3 times in one year to make it worth your while. They do not offer any type of family pass, so each individual has to purchase their own adult, child, or senior pass. Passes are not transferable and not available online.

LEGOLAND is a must see for LEGO enthusiast of all ages. We saw a lot of parents building towers, racing cars, and just enjoying themselves with their children. I even saw a group of teenagers entering as we were leaving. We definitely plan to go back.
Don’t forget to purchase your tickets online in advance using the LEGOLAND Coupon. Be sure to proceed directly to the entrance doors with your printout of the tickets.

Filipino Fruit Salad is a creamy, tasty dessert made with many different kinds of canned and preserved fruits. It is a staple at many Filipino gatherings. People love the way I prepare it and often ask me for the recipe.
Here’s how I make my fruit salad:

Filipino Fruit Salad is a creamy, tasty dessert made with many different kinds of canned and preserved fruits. It is a staple at many Filipino gatherings. People love the way I prepare it and often ask me for the recipe.

Here’s how I make my fruit salad:

Ingredients:
1 - 10 oz jar maraschino cherries without stems
3 - 30 oz cans fruit cocktail (or 1 - #10 can)
1 - 20 oz can pineapple chunks
1 - 15 oz can mandarin orange segments
1/2 - 12 oz jar coconut sport (aka macapuno)*
1/2 - 12 oz jar sugar palm fruit (aka kaong)*
1/2 - 12 oz jar pineapple gel (aka nata de pina) and/or coconut gel (aka nata de coco)*
1 - 8 oz pkg. cream cheese, room temperature
1/2 - 14 oz can sweetened condensed milk
1/2 - 12 oz jar or can of jackfruit (aka langka) in syrup*
*can be found in most Filipino or Asian grocery stores

Directions:

Drain & rinse the cherries, drain all fruits except the jackfruit. Set aside.

Blend the jackfruit and liquid in a food processor until smooth. Add the cream cheese and sweetened condensed milk, process until smooth.

Transfer the jackfruit-dairy mixture into a large mixing bowl. Gently stir in the rest of the drained fruits. Mix until all the fruit is coated in the creamy, white mixture.

Chill for several hours or overnight. Serve cold. Refrigerate leftovers promptly.

Variations:

For a sweeter fruit salad, use the whole can of sweetened condensed milk.

Neuchatel cheese (8 oz) or Nestle Table Cream (1 or 2 - 8 oz cans) may be substituted for the cream cheese for a reduced fat version

Amounts of fruits can be varied according to preferences and availability.

Fresh fruits such as diced apples, sliced bananas, or halved grapes may be added as well.

I hope you try this recipe and let me know how it turns out. I’d love to hear your additions or substitutions.

If your children love the Disney Channel as much as mine do, chances are you’ve already heard something from the album “Here Come the 123s” by They Might Be Giants (TMBG). I discovered this CD/DVD combo at my local public library. Both of my kids love it so much. I have already renewed it the maximum number of times, so I guess I will have to break down and purchase my own copy.

I actually enjoy listening to all of the songs myself! I have very fond memories of listening to TMBG’s “Flood” album over and over again on a cassette tape, trying to memorize the quirky lyrics. When my four year old son Sam tries to sing along with “Seven Days of the Week (I Never Go to Work),” I just have to laugh. At least he’s finally interested in learning the days of the week! Of course, this means two year old Sophie will learn them too!

The album comes with both a CD and a DVD of all the songs and music videos. There are cute little introductions to the videos by puppets named John and Jon (the members of TMBG). Some of the videos are animated while others are Sesame Street style with hand puppets. Very entertaining and cute. Not sickeningly sweet cute, though.

The 24 songs and 23 music videos are arranged in numerical order, starting with “Zeroes,” “One Everything,” etc., to “Eight Hundred and Thirteen Mile Car Trip” and others. My kids’ favorite songs right now are “Triops Has Three Eyes,” “One Dozen Monkeys,” and of course “Seven Days of the Week (I Never Go to Work).”

This was produced by Disney Sound, as was our other favorite CD/DVD combo “Welcome to Ralph’s World” by Ralph Covert. They Might Be Giants have other children’s CDs available called “No!,” “Bed, Bed, Bed,” and “Here Come the ABC’s.” I’m looking forward to listening to these albums with my children.

In the meantime, there’s a Free weekly kids video podcast! and lots of videos on YouTube. Here’s Sammy’s favorite song found on YouTube:
