<p>Hey everyone! It seems many of you have been quite busy with your baking endeavors. Those colorful cookies are quite impressive! The holiday season is certainly inspiring creativity in the kitchen.</p>
<p>Due to my recent accident + the niece is a working lady now, we haven&#8217;t been able to paint the kitchen red. However, last weekend we set aside some time and had a blast in the kitchen! Among the things we made were this delicious Virgin Pina Colada. It&#8217;s so good, we&#8217;re obsessed! We might have gotten a bit carried away<br /> and drank like three glasses each. Thankfully, it was alcohol-free, or we might have gotten a bit too wild! *Grins*</p>

<p>A Pina Colada is believe to originate from Puerto Rico. It is usually a boozy treat with coconut cream, rum, and pineapple; mostly serve with a little cute umbrella which I wish I had! As this is a virgin version, I skipped the rum. Even without the alcohol, this was pure bliss. Sipping on it, I felt like I was on a tropical island with crystal-clear waters and soft sand. It&#8217;s amazing how this simple drink has a magical way of transporting you. Or maybe it&#8217;s just my wild imagination! Either way, this creamy, sweet, and refreshing concoction is definitely a taste sensation.</p>
<p>You&#8217;ve got to try this Virgin Pina Colada recipe! It is exceptionally delicious and sure to become a frequent favorite. I&#8217;m already adding pineapple on my shopping list for my next grocery run!</p>

<p>It&#8217;s my favorite time of the year!</p>
<p>Even though I don&#8217;t celebrate Christmas, I love the vibes that this festive spirit brings. The dazzling lights, vibrant decorations, and joyous melodies fill the shopping centers. It is always all mesmerizing! Oh, and the food! The scrumptious panettone, the delightful log cake, and a whole host of other yummies; what not to love?</p>
<p>I feel that potatoes are an indispensable component of a traditional Christmas side dish, much like the elves are to Santa Claus! A potato dish spells comfort to me especially if it involves butter + fresh herbs just like these delicious fondant potatoes. Fondant potatoes are a delightful French side dish that&#8217;s elegant and pretty much goes with everything on your Christmas table!</p>
<p>These fondant potatoes might look fancy, but they&#8217;re incredibly easy to make. Simply brown potato cylinders or thick, rustic slabs on the stove, then add some stock, garlic, and fresh herbs. Finish by adding butter, taking the dish off the stove, and popping it into the oven. Bake until the potatoes have absorbed all the deliciousness and are tender. I went for russet potatoes for this recipe as I love how they always end up fluffy.</p>

<p>The hardest part of this recipe is to achieve uniform potato cylinders. So basically you are supposed to skin and cut the potatoes into circles, but it&#8217;s optional. You can cut them into round thick slabs using a knife or like in my case, I used a cookie cutter as my knife skills aren&#8217;t up to par. Alternatively, feel free to skip the shaping of the potatoes and just remove the skin and cut the potatoes into thick slabs. I promise that the taste is equally delicious regardless as the flavor is the star of the show, not the shape!</p>
<p>If you need a show-stopping Christmas side dish, look no further. These delicious fondant potatoes are perfect for special occasions, yet easy enough for a weeknight dinner, next to your grilled chicken or even plain old sausages!</p>

<p>Kerala&#8217;s picturesque scenery, adorned with swaying coconut palms, serves as a testament to why coconut features prominently in its culinary repertoire. Complemented by an array of freshly ground spices, the region&#8217;s extensive network of rivers and coastline sustains a bustling fishing sector, elevating seafood to a cherished staple on every Kerala dining table.</p>
<p>While my mother proudly considers Singapore her home, her story traces back to her father, who embarked on a journey from Kerala to forge a new life in this vibrant city. His choice to wed my grandmother and establish roots here laid the foundation for the subsequent generations, including myself.</p>

<p>Even though I didn&#8217;t have the chance to fully embrace the diverse strands of my identity due to my grandpa&#8217;s passing when I was young, I&#8217;m thankful for the legacy left behind by my Kerala ancestors. My journey of self-discovery has led me to explore the vibrant flavors of Kerala cuisine.</p>
<p>As I mentioned earlier, seafood plays a significant role in Kerala cuisine, so let&#8217;s begin with a mouthwatering Kerala Coconut Prawn Curry. This delightful dish can be prepared with or without coconut milk to suit your taste preferences. If you prefer, you can substitute coconut milk with regular milk.</p>
<p>This recipe keeps it real with everyday ingredients, but don&#8217;t underestimate the power of its diverse spices, including the aromatic fresh curry leaves. While some prefer the tang of tamarind pulp, the juicy tomatoes offer a delicious alternative.</p>
<p>This curry is wonderfully complemented by a speedy and delightful pineapple cucumber pickle (or salsa, if you prefer). While it&#8217;s optional, trust me when I say it&#8217;s delicious and worth trying. It takes just minutes to prepare and adds a burst of flavor to your meal. Don&#8217;t hesitate to give it a try – it&#8217;s a tasty addition you won&#8217;t regret!</p>

This Chicken Caesar Salad Pasta is just delicious! It&#8217;s like the best of both worlds; the creamy, garlicky goodness of a Caesar salad combined with the satisfying comfort of pasta which also adds up as a hearty base. <p>This Triple Chocolate Mousse is an amazing combination of three types of chocolate. Dark chocolate layer, followed by semi sweet chocolate mousse in the middle and then white chocolate mousse on top. It is the pure ultimate cure for a serious chocolate craving. Just basic ingredients, all good stuff we like: chocolate, cream, sugar, eggs and butter. I know there are many recipes out there that uses no eggs. Yes, you can make these eggless and it would still be delicious but it does not have the same texture as those with eggs. The eggs when whipped, contribute to a particularly light and fluffy texture in classic mousses.</p>

Melt in the microwave in 30 second bursts, stirring in between, until smooth. Add sugar and continue to beat whites until firm peaks form.</div></li><li id="wprm-recipe-13223-step-1-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Beat yolks and vanilla till light and pale.</div></li><li id="wprm-recipe-13223-step-1-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Fold egg yolks into cream using a rubber spatula. Some streaks is fine.</div></li><li id="wprm-recipe-13223-step-1-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pour chocolate into cream yolk mixture. Fold through.</div></li><li id="wprm-recipe-13223-step-1-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add 1/4 of beaten egg whites into chocolate mixture. Fold through until incorporated.</div></li><li id="wprm-recipe-13223-step-1-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pour chocolate mixture into egg whites. Refrigerate for 10 minutes.</div></li><li id="wprm-recipe-13223-step-2-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pipe the dark chocolate into your serving dish, refrigerate for 10-15 minutes.</div></li><li id="wprm-recipe-13223-step-2-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Then pipe the semi sweet chocolate mousse, refrigerate for 10-15 minutes.</div></li><li id="wprm-recipe-13223-step-2-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Finally, pipe the white chocolate mousse. If you are not very particular about getting the perfect lines for your mousse, you do not need to refrigerate in between the layering. I didn't!</div></li><li id="wprm-recipe-13223-step-2-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Do refrigerate the mousse for at east 6 hours, preferably overnight.</div></li><li id="wprm-recipe-13223-step-2-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">To serve, garnish with whipped cream and berries.</div></li></ul></div></div>

Season the water with 1/2 tsp of salt.</div></li><li id="wprm-recipe-13231-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Bring the potatoes to a boil until they are fork tender.</div></li><li id="wprm-recipe-13231-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">While the potatoes are cooking, heat the butter in a skillet over medium-low heat. Stir till you can see brown bits appear on the bottom of the pan. Cook just 1 minute longer and then turn off the heat.</div></li><li id="wprm-recipe-13231-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Drain the potatoes and return them to the pot. Use a ricer or mash the potatoes. Add in the sour cream, 3/4 of the brown butter (reserve a bit for the top of the potatoes), the chives and salt and black pepper.</div></li><li id="wprm-recipe-13231-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Taste and season the potatoes with more salt if needed.</div></li><li id="wprm-recipe-13231-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Once the potatoes are well mixed, transfer them to a 8x8 inch baking dish.</div></li><li id="wprm-recipe-13231-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Top with more chives and drizzle the remaining brown butter on top.</div></li><li id="wprm-recipe-13231-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Bake for 20 minutes, until the mash is a bit crisp on top.</div></li><li id="wprm-recipe-13231-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Serve hot.</div></li></ul></div></div>
