<p>the first 8 hours of my day were spent in quickbooks hell.. i was reconciling bank accounts like it was my job. oh.. wait.. it is my job.</p>
<p>after work i came home and ate more granola and cereal than what is deemed acceptable by society. i absolutely, positively have zero self control when it comes to really tasty granola. it&#8217;s not a pretty sight.</p>
<p>i made it to the gym today for the first time since last thursday. i still feel like garbage, but i was sick of being a slug. i did a 25 minute biceps/triceps workout followed by 20 minutes on the bike reading a mag. nothing too crazy, but it was good to get moving and work up a sweat.</p>
<p>after the gym i headed to dinner with some lady friends. we went to trio and i had chicken noodle soup, salad, and wine. cure for the common cold? perhaps. i definitely felt better when i left.. but i have a feeling that had to do with the company, not the food.</p>
<p>i still had to swoop by the store on my way home. i finally made it back to my kitchen a bit after 10 PM and i got to work on my late night project… pie.</p>
<p>my co-worker&#8217;s birthday is tomorrow, and instead of buying a typical cake at costco, i wanted to make him one of his favorite desserts. my boss is his dad, so it wasn&#8217;t too hard to figure out what dessert to make. he emailed his wife and she quickly emailed back a recipe for a dessert i had never even heard of. my boss said they call it better than sex pie. i have heard of better than sex CAKE (and have made it SEVERAL times).. but never better than sex pie.</p>
<p>i haven&#8217;t tried this pie, so i am not sure it lives up to its name.. but i guess we will find out tomorrow!</p>
<p>i thought i would share the recipe with you guys.. and i am calling it cream cheese pudding pie until i make my own judgment about the whole better than sex label. i followed her recipe aside from the fact that i made my own whipped cream&#8211;i grew up eating fresh whipped cream and i won&#8217;t be buying cool whip any time soon. or ever.</p>
<p><img style="border-bottom: 0px; border-left: 0px; display: inline; border-top: 0px; border-right: 0px" title="IMG_1975" border="0" alt="IMG_1975" src="http://mealsandmovesblog.com/wp-content/uploads/2012/02/IMG_1975.jpg" width="550" height="340" /><strong><span style="text-decoration: underline">       <br /></span></strong><em>recipe from my boss&#8217; wife. makes one 13 x 9 inch pie.     <br /></em><em>takes about 30 minutes to make, at least 2 hours to chill.</em></p>
<p><span style="text-decoration: underline">ingredients</span></p>
<p>for the crust:</p>
<ul>
<li>1 1/2 c (180 grams) all purpose flour </li>
<li>3/4 c (6 oz) salted butter, softened </li>
</ul>
<p>first layer:</p>
<ul>
<li>3/4 c (6 oz) heavy whipping cream </li>
<li>3 T sugar/evaporated cane juice </li>
<li>1/2 t vanilla extract </li>
<li>1 c (8 oz) cream cheese, softened </li>
<li>1 c (110 grams) powdered sugar </li>
<li>milk to thin, if needed </li>
</ul>
<p>second layer:</p>
<ul>
<li>3 cups cold whole milk </li>
<li>one large package of jello chocolate instant pudding </li>
</ul>
<p>third layer:</p>
<ul>
<li>1 c (8 oz) heavy whipping cream </li>
<li>1/4 c (60 grams) sugar/evaporated cane juice </li>
<li>a few chocolate chips </li>
</ul>
<p><span style="text-decoration: underline">directions</span></p>
<ol>
<li>heat oven to 350 degrees. </li>
<li>combine butter and flour in a mixer with paddle attachment (or mix&#160; by hand.) </li>
<li>line a 13 x 9 inch pan with foil or cooking spray. press mixture into pan evenly. </li>
<li>bake until golden brown, about 15 minutes. </li>
<li>meanwhile, combine 1/2 c heavy whipping cream, 3 T sugar, and 1/2 t vanilla in a mixer with whisk attachment (or use hand mixer) and beat until it is whipped cream. </li>
<li>add cream cheese, powdered sugar, and milk (if needed) and mix until combined. you should have a thick, smooth mixture. </li>
<li>layer this mixture onto cooled crust. </li>
<li>next, combine cold milk and pudding mix in a mixer and beat for two minutes (or mix with hand mixer) until pudding thickens. let stand five minutes. </li>
<li>pour pudding over cream cheese layer. </li>
<li>combine remaining whipping cream and sugar in a mixer (or use hand mixer) and beat until you have whipped cream. </li>
<li>spread the whipped cream over the pudding layer. </li>
<li>use a microplane to shave chocolate over the top of the pie. </li>
<li>chill for at least two hours before serving (but overnight is best.) </li>
</ol>

<p>last night we had our first of many traveling family dinners. this one was at my brother’s house and the theme was mexican. the way our family dinners work is the host family makes the main course and everyone else brings some sort of contribution to the meal. yesterday’s main dish was pulled pork taco salads!</p>

<p>baked chips and popped chips. of course there was a healthy chip showdown.</p>

<p>the results were mixed.. half of those who tried the chips preferred the baked, the other half preferred the popped. i personally liked the baked, so that’s what i went with for my taco salad.</p>

<p>there were a couple festive beverages at the fiesta.</p>
<p>margaritas &amp; pina coladas made to order in the blender. virgin, of course, except for the one year olds. their tropical drinks contained rum.</p>

<p>and then there was the horchata that i made from scratch, based off <a href="http://allrecipes.com/recipe/lolas-horchata/" rel="nofollow" target="_blank">this recipe.</a></p>

<p>to make enough horchata, i did two batches. for each batch, i combined 1 1/2 cups long grain white rice (uncooked) with 3 cinnamon sticks (about 3” long each) and 7 cups of water in the blender.  i blended this mixture for about 3 minutes on high, then put it in the fridge overnight. i repeated with another batch.</p>
<p>the next morning, i strained the mixture using cheesecloth and a sieve (extra, extra strained! this was marshall’s idea.) i strained BOTH batches into the large pitcher together. once it was strained, i added 3 T mexican vanilla, 1 cup half &amp; half, 1 cup skim milk (it’s all we had, i would have used whole or 2% here if i had it), and ~1 cup evaporated cane juice (you could use white sugar here, too.) i gave it a good stir and then set it in the snow to chill until we headed to dinner. horchata is meant to be consumed cold, so i served it over ice cubes.</p>
<p>i tested it out on the one year olds.. even though it contained no rum. that was a letdown, i am sure.</p>

<p>no fiesta is complete without dessert. i was in charge of that and made alton brown’s tres leches cake.</p>

<p>i followed the <a href="http://www.foodnetwork.com/recipes/alton-brown/tres-leche-cake-recipe/index.html" rel="nofollow" target="_blank">cake recipe</a> exactly. alton brown’s recipes are always a hit in my kitchen, so i figured i better not mess with a good thing! i did omit a bit of the sugar in the whipped topping and i added strawberries for a little extra pizzazz!</p>
<p>tres leches cake is basically sponge cake that is soaked in three types of milk overnight, then topped with whipped cream.</p>

<p>it’s as ridiculously tasty as it sounds. the milks started seeping out right when i cut into the cake.</p>

<p>you can see how dense the cake is and it’s completely drenched in the triple dose of milks. this creates the perfect texture.</p>

<p>oh, and in other news.. i have come down with some sort of sore throat/cough/cold thing. i haven&#8217;t worked out since last thursday and i feel like butt. speaking of butt, yeah i had my colon hydrotherapy session on saturday. it went well. i am not quite ready to write about it yet. those sort of posts take a lot out of me.. and it&#8217;s a lot easier to write about cake. so that&#8217;s what you get for today :)</p>

<p>i had a bunch of perishables and got a little worried.</p>

<p>found this in the yard this morning. the box is empty, FYI. we have kept the chicken stock on the garage floor for over a year, but he JUST NOW decided he wants to eat (drink) it. why, randy.. why?!?</p>

<p><strong>4. speaking of doggy daycare…</strong></p>
<p>i am looking into it! <a href="http://sweatstudysleeprepeat.wordpress.com/2012/02/17/flashback-fridayscout-turns-one/" target="_blank">my basset hound loving blog friend, betty,</a> takes her pup, scout, to daycare and he comes home pooped every night. (by the way it is her dog, scout&#8217;s, first birthday! happy birthday, scout!)</p>
<p>marshall and i leave penny and randy for hours and hours during the day. it’s not fair. they need to be entertained. i have shopped around and read reviews and they now have an interview scheduled at desert dog daycare—it’s $24 a day for both of them. not bad, not bad at all. plus it’s close to my office, so it would be very convenient. oh, one more plus is that my sister in law stacy’s pup goes there, so they would be able to play with their cousin!</p>
<p>they have to pass the interview which consists of hanging out with the other dogs for 7 hours without misbehaving.. so cross your fingers that all goes well. as long as there are no larabars around, i think they will do fine.</p>
<p><strong>5. this weekend is the first of many traveling family potluck dinners.</strong></p>
<p>my sister in law lindsay is a genius. my whole family (minus my sister in california) lives in the same town, but we rarely ALL get together. linds decided that once a month, a family will host a sunday dinner. the host family will make the main dish and every one else will bring side dishes and dessert.</p>
<p>sunday we are all going to lindsay and doug’s for taco salad. i am in charge of dessert. i want to keep with the theme, so i am going to make tres leches cake! i did some googling and <a href="http://www.foodnetwork.com/recipes/alton-brown/tres-leche-cake-recipe/index.html" rel="nofollow">alton brown’s recipe</a> has the best reviews. i am not surprised, alton’s recipes are always a hit.</p>

<p>so i haven’t talked about my gut issues for awhile, have i? well if you have been following that whole thing.. here’s the latest. warning: i am going to talk about poop. i stopped taking the amitiza almost immediately after i started because it caused way too much pain. i stopped taking it about a week before mexico. anyway, i pooped once in mexico and that was because i took a laxative. i took it because i was dyyying and it was an absolute last resort. you see, i am not supposed to take laxatives because my whole problem is i have a lazy colon, and laxatives just make a lazy colon even lazier and trick it into thinking it does not have to do its job.</p>
<p>soo, anyway, i came back from mexico and have pooped twice since then. that means that i have gone three times in the past 3 weeks. oh, and i have been in extreme pain. really really reallllly painful pain. it blows. my GI doctor is kind of failing me right now. he wants me to get another test done that would cost a whole bunch of money, and since it is a new year, that means i would have to meet another $1000 insurance deductible.. plus pay 20% of all tests after the deductible is met. oh, and depending on the results of this test, i would either have to have part of my colon removed or i would have to take medicine for the rest of my life.</p>
<p>YEAH! that sounds awesome.</p>
<p>i have only gone to one GI for my problems. before i do this super expensive test, i want to get some second opinions. i also want to try some alternative methods for relief. i am looking into other doctors, both standard GIs and naturopaths (if you know of any in utah, let a sister know!) but in the meantime, i need to clean out my freaking pipes!!</p>
<p>a few of you lovely blog friends have turned me onto the idea of colon hydrotherapy.  it’s basically exactly what you are thinking (if you are thinking anything…) they go into your colon with filtered water, waste is softened, loosened, and removed. it’s similar to a colonoscopy cleanse, but without all the not-eating-for-two-days, taking-a-zillion-laxatives, and sitting-on-the-toilet-for-hours business. it cleans you out. it’s like an oil change. for your butt.</p>

<p>i know it’s not a solution to my problems, but it at least will give me a little relief. it’s basically like getting a massage. if you have back problems, a massage feels great! it doesn’t fix the problems, but man.. you sure feel great for a little while afterward. that’s what i am after with this colon hydrotherapy appointment.</p>
<p>it’s tomorrow. at three o’clock. i am excited.. and a liiiittle nervous. you better believe i will keep you posted!</p>

<p>maybe because he is lending a helping hand? but why only three fingers? last time i checked, the majority of humans had four fingers. to be honest, he kinda creeps me out. i don’t think i would want his three-fingered helping hand to have any part in making my dinner.</p>
<p>anyway, creepy mascot aside, i tried to see which version of hamburger helper the recipe i am going to share with you compared to. i quickly found that there were at least four (of their 40 flavors) that were basically the same thing: beef pasta, salisbury steak, creamy stroganoff, and cheesy beef pasta. i mean, i am sure they all have different ingredients, but i am almost certain they all taste the same. they are all described as “pasta &amp; hearty sauce”—and that’s definitely what my recipe is.</p>
<p>but healthy.</p>

<p><em>servings: 4<br />
total time: 30 minutes</em></p>
<p>ingredients:</p>
<ul>
<li>3 cloves garlic, peeled &amp; minced (or 1 T jarred)</li>
<li>1 leek, diced</li>
<li>8 oz mushrooms, diced</li>
<li>12 oz ground beef (i used top sirloin)</li>
<li>1 T dried oregano</li>
<li>1 T dried parsley</li>
<li>1/2 t sea salt</li>
<li>1/2 t black pepper</li>
<li>6 oz elbow macaroni</li>
<li>2 cups low sodium beef broth</li>
<li>1 cup water</li>
<li>1 T cornstarch + 2 T water, mixed</li>
<li>1/2 cup nutritional yeast</li>
<li>1 cup plain nonfat <a href="http://chobani.com" rel="nofollow" target="_blank">chobani</a> greek yogurt</li>
<li>hot sauce and additional yogurt, for garnish (optional)</li>
</ul>
<p>directions:</p>
<ol>
<li>heat a large, deep skillet over medium-high heat and coat with cooking spray. add garlic and sauté for a minute or two.</li>
<li>dice the leek and mushrooms.</li>
<li>add these veggies to the skillet and sauté for a few minutes.</li>
<li>if you are grinding your own beef, do this now. i use my food processor to grind my own beef.</li>
<li>add the ground beef, oreganoa, parsley, salt, and pepper to the skillet and sauté until it is cooked through.</li>
<li>add noodles, broth, and water to the skillet. turn heat to high and bring to a boil.</li>
<li>once it is boiling, cover the skillet and reduce heat to low. simmer until noodles are cooked through, about 8 minutes.</li>
<li>pour the cornstarch+water mixture into the skillet and stir to combine.</li>
<li>add nutritional yeast and stir to combine.</li>
<li>add yogurt and stir to combine.</li>
<li>if necessary, simmer on low until any remaining liquid absorbs.</li>
<li>serve immediately, garnishing with additional yogurt and hot sauce, if desired.</li>
</ol>

<p>well, the results are in. the <a href="http://mealsandmovesblog.com/2012/02/14/valentines-day-rambles-and-a-giveaway/#comments" target="_blank">majority of us</a> like the LOOK of facial hair on dudes but don’t like the scratchy, painful scruffness that comes when kissing a bearded fellow. now you know.</p>
<p>so, i have to post about valentine’s day because i know i will want to look back to see what i did. let’s face it: i have no memory and if i didn’t have this blog i’d be completely hopeless when it comes to recalling events.</p>
<p>i went to the gym last night for an easy 40 minutes on the bike while reading the latest issue of shape mag. i made the assumption that we’d have leftovers since we really have a lot of leftovers in our fridge, but marshall had other plans. he asked how long i’d be gone and there was a grocery bag on the counter with secret ingredients, so i knew he had a plan up his sleeve.</p>
<p>when i got home from the gym, the house smelled incredible. he had been hard at work making fish tacos!</p>

<p>marshall made me ground beef tacos on valentine’s day in 2009, 2010, and 2011.. but in the past year, he has developed a love for fish (yay!) so he went out of his way to pick up some fresh corvina from the <a href="http://mealsandmovesblog.com/2011/04/23/special-delivery-2/" target="_blank">fish market</a> and made a special valentine’s meal.</p>

<p>i was really impressed with his culinary skills. for the fish, he sautéed tomatillos, red and green peppers, onions, and cilantro and then placed it on the fish with a squirt of lime, then broiled it. it tasted fantastic! he made it up on his own.. i think he needs to do that more often!</p>
<p>he had already fried a stack of tortillas so we could eat right when i got home.<br />

<p>he also had a line up of fixings: colby jack cheese (grated lovingly by hand), his famous guacamole, and <a href="http://chobani.com" rel="nofollow" target="_blank">chobani</a>.</p>

<p>there were also black beans warming on the stove, which were a great addition to the tacos.</p>

<p>i seriously “mmmm”-ed out loud while devouring the tacos.</p>

<p>i went back for a third, then we polished off the guacamole together with a bag of chips while having a deep discussion. about hot sauce. we were eating three hot sauces: valentina, frank’s red hot, and tabasco. we had a long, detailed discussion about which we thought was spiciest, which was our favorite, and what foods each one went best on. that’s the conversation content of a married, childless couple. yep, single ladies, that’s what you have to look forward to! get excited!</p>
<p>even though we say “no gifts”—there were gifts. it happens. marshall got me this baby french press for my office. i squealed! isn’t it sooo cute?!</p>

<p>put my contigo water bottle in there for size reference.</p>
<p>he also got me a crock pot that he *thought* had a delay-start timer.. but it was actually like the one we already have.. where you can set it to cook for X amount of time and then it switches to “keep warm.” well, this keep warm feature can make certain dishes over-cook on the days i am at work for 9+ hours.  i wanted a pot that allowed me to set it out, but it wouldn’t switch on to start cooking until 10 AM or so.. and then the meal would be perfectly done when it was time for dinner. WELL—after a little googling, turns out they don’t make those because it’s a health hazard and bacteria can brew while the uncooked food is sitting on your counter. hmm. darn it. but i thought it was cute that marsh got it for me—or at least <em>tried </em>to. it really is the thought that counts!</p>
<p>oh, and i got this guy. he has a heart in his throat and i love him.</p>

<p>lucky for me, he shaved it off this morning.. but it was funny to see him with a mustache all night long. i told him he looked like a cop. definitely the icing on the cake for a fabulous at-home valentine’s day celebration. oh and yes, i got marshall a gift too, and thought i was being sneaky breaking the “no gift” rule. i actually had been planning to buy him this wireless trackpad for a few weeks anyway, so i just gave it to him yesterday morning. we are such rule-breakers. (i just typed “rule breakfast” by mistake—what’s wrong with me?)</p>
