Add to a pan start to brown adding some olive oil.







Once the rice starts to look cooked, add water and a small amount of kesar (saffron). Add mixed veggies and let it cook.













Top off with some caramelized onions, stir and ready to serve!

Start with the tamale flour and mix well.












Then wash the corn husks. Prepare your meat - tinga pollo - or your choice. 













Wrap the meat in the corn flour batter.




















Place in a steaming cooker - takes about an hour.

















Ready to serve - with cabbage salsa!

Add some salt, spices, chili powder, ajvien. Add some water and mix into a paste to create the batter.










Chop some potatoes and spinach. Add to the batter and mix well. Usually you would really deep-fry this but you can use a pan and slightly less oil too. Drop in the mix in small chunks and let them cook. Put in the microwave for 5-7mins and chop into longer slices. Leave the skin on.








Add some olive oil to your pan and then add spices - salt, garam masala and chili. In the end sprinkle just a little bit of lemon juice and ready to serve.

Chop your fresh veggies, mushroom and anything else! Mushrooms, onions, peppers and tomatoes for us.










Grate some mozzarella. You can also use fresh mozzarella.

The roots are full cooked at this time. All you need is now fry in some oiland spices.







Peel the skin and chop into pieces.







Add some oil and fry some cumin first. Give it a more than a few seconds to allow the essence into the oil.




Add the roots, salt, chili and haldi.

You don't have to use a pressure cooker but it will dramatically cut your cooking time!








Add salt and haldi and then set to cook. Once the pressure builds up turn the heat down to low and allow to cook for 5mins. Then let it slowly cool down with the stove off. (atleast 15mins).







Prepare the tadka with some cumin in oil. Start with tamarind ofcourse, remove the shell and soak in water for about an hour.

Salsa Verde - in a covered pot heat the tomatillo and chilli. Cook until well done, then blend and add salt to taste.
















Chipotle sauce -mix some chipotle peppers, onion, and tomatoes and blend them.















Tinga pollo - thaw out the chicken and cook until soft. You can use a toast-r-oven or your main big oven depending on your serving size. Lay out on the tray and add the spices and some oil - salt, garlic, parsley, basil and oregano.







Bake until they are brown and ready to serve!

Break them into pieces. You ofcourse need some Tapatio sauce!


Break the potatoes - don't use a knife.


Add to a pan with some olive oil. Add salt, basil, parsley and some oregano.


Cook until nice and brown - this is a slow process so be patient. When ready add the tapatio, stir and serve!

First the salsa verde.
Blend tomatillos, onions, serrano peppers and cilantro. Then sautee with some olive oil








Now the fried tortillas.
Cut tortillas into triangles and fry in oil until crispy. Soak the oil in a napkin!




Add these fried chips to the salsa! Top off with some queso panela or fresco.
