Chicken and broccoli stir-fry doesn’t get any easier than this recipe.  This is the second time I’ve made this and it’s much easier and faster than the chicken and broccoli recipe I tried about a year ago.  I had some fresh snow peas in the fridge too so I added them this time but that’s optional of course.

Chicken and Broccoli Stir-Fry

Ingredients:

1 – 2lbs boneless, skinless chicken breasts cut into 1″ pieces (I like the thin sliced ones)
2 – 3 cups fresh broccoli florets (frozen work too)
2 garlic cloves, finely chopped
2 teaspoons finely chopped ginger
1 cup chicken broth
3 tablespoons soy sauce (I prefer low sodium)
2 teaspoons sugar
2 teaspoons cornstarch

Directions:

1.  Heat stir-fry pan or skillet on medium heat.  Spray with non-stick cooking spray (or add 1 teaspoon sesame oil).  Add chicken, garlic and ginger.  Cook until chicken is starting to brown and is cooked throughout.

2.  Add 3/4 cup of the chicken broth, soy sauce and sugar.  Cook for another 3 – 5 minutes stirring twice.

3.  Add raw broccoli and cover.  Cook for about 5 more minutes, stirring occasionally, until broccoli is fork tender.

4.  In a separate bowl, whisk together the cornstarch and remaining 1/4 cup broth.  Add to stir-fry mixture and mix well.  Cook a couple more minutes until sauce thickens.  Serve over rice.

Phew, that is a mouth full!  If you follow any international beauty bloggers or vloggers then you’ve more than likely heard of the Rimmel Wake Me Up line.  It’s not been available in the states yet but makeup enthusiasts in other parts of the world rave about it.

I recently took a swing through the makeup section of my local K-Mart and was shocked to see something from that line in the regular Rimmel display.  They had this Wake Me Up Anti-Fatigue + Radiant Glow Concealer ($4.99) but not the foundation.  I’m hoping that’s coming soon cause I’ve heard such great things about it.

I picked up the lightest shade available, Very Fair, and it matches my skin perfectly.  The formula is quite thin and runny though.  If you’re looking for a creamier, thicker concealer, then this is not for you.

Since it is so thin, it offers very light coverage.  It does not hide larger blemishes very well and redness can still be seen after application.  It does tone down the redness some but not completely.  In my swatches below you’ll notice how one of my freckles is still visible once it’s blended out.

I find that this concealer is best for just using under the eyes to brighten you up a bit.  I don’t have really dark circles but I imagine that this won’t hide those completely either as it doesn’t mask difficult blemishes and redness.

For the little bit of darkness I have under my eyes, it does well to hide that while brightening up the area.  The best part about this Wake Me Up concealer is that it does not settle into my fine lines at all.  Even after 8 hours of wear, it stays put without creasing.

While it’s not the greatest at hiding troublesome spots or dark circles, it’s a nice under eye brightening option.  For only $5, it’s a good alternative to some of my other favorite products that I use to brighten under my eyes like the Benefit Fake Up Concealer and the Smashbox Photo Finish Hydrating Under Eye Primer.

This week I went teal with my nail polish choices.  I started off with Sally Hansen Hard As Nails Xtreme Wear in the color The Real Teal.  This is a beautiful teal green shade with blue/green shimmer in it.

After going through my collection, I realized that Julep Harper matches The Real Teal perfectly!  I decided to add this glitter polish to both of my ring fingers.  Harper is gorgeous!   It’s a blue, teal and gold glitter that looks like it was made to pair with this Sally Hansen color.

Hard Candy Stroke Of Gorgeous ($5) is a felt tip eyeliner pen available in 3 different colors.  I bought the color In The Navy to test out.  Let’s see what I think.

In The Navy is exactly as it sounds, a deep navy blue color.  I was expecting it to be just a flat matte eyeliner shade but it actually has a shiny almost metallic look to it.  I love it!

The felt tip on this eyeliner is nicely pointed at the end.  The thin pointed end lets you make very skinny, precise lines or you can make thicker lines too if you choose.  The tip is more on the firmer end and less flexible than I expected.  Maybe as I use it more it will get more flexible.

The color is very pigmented and easily transfers to the eyelids without having to apply much pressure.  It’s marketed as waterproof but sometimes waterproof eyeliners don’t hold up to my oily eyelids.  I’m pleasantly impressed by this Hard Candy eyeliner.  It stays all day without any smudging or running.

The only issue I’ve had with this particular eyeliner is that it’s a little difficult to remove at the end of the day.  It seems to almost stain a little near my lash line.  If you buy this one, I’d make sure to have a heavy duty eye makeup remover on hand.

I highly recommend this Hard Candy Stroke of Gorgeous eyeliner, it’s well worth its mere $5 price tag.  What do you think of this one?

Smashbox Be Legendary Lipstick ($19) in Pretty Social is a beautiful light pink shade.  This color is more of a nude pink and not a bubblegum or barbie doll pink. It’s a cream shade with no shimmer or sparkle.

Pretty Social is a semi-opaque shade with lots of shine.  It has a very creamy texture and feels nice and light on the lips.  Your lips stay nice and soft with this lipstick and it’s not drying at all.  It feels more like a silky balm than a lipstick.

As with most soft lipsticks, wear time is pretty minimal unless you’re aren’t drinking or eating at the time.  You will have to reapply this one often to keep a good amount of color on your lips.

I love the sleek packaging of these Smashbox Be Legendary lipsticks.  The tubes are a square modern shape in black metal with gunmetal gray in the interior.  Even though they are metal, they’re still nice and light but feel substantial and not flimsy.
