      <title>Sunday Roast: Beef Enchiladas</title>

&lt;p&gt;One of those Sunday Roasts that just seemed to come together. The kids were down visiting their Dad in Virginia Beach, VA - an approximately 5-hr drive, depending on traffic and weather. I wanted something I could make that would either be last minute or could simmer and wait for their arrival. It was also fairly wintery so I wanted something substantial. My Heart suggested enchiladas but I wanted something different besides the usual chicken enchiladas that I make. Beef &amp; Italian Sausage were on sale and the kids could use the extra ground beef for something they were making in the coming week and I could cook up a batch of combined meat and use some for Slow Cooker Chili later in the week.&lt;/p&gt;&lt;p&gt;&lt;div class='p_embed p_image_embed'&gt;

&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;div&gt;&lt;p /&gt;&lt;div&gt;Tuesday was Valentine's Day - I had my usual 9:15pm meeting but my Heart was coming with me to tape some interviews for an event the International Student Association (ISA) was participating in. &amp;nbsp;The plan was to go out to dinner before the meeting but my Heart picked me up from work and said that he had forgotten something at home… Surprise - he made pizza! &amp;nbsp;Stuffed crust pizza with onions, peppers, bacon on top of tomato paste &amp;amp; mozzarella.. a lovely and very delicious treat!&lt;/div&gt;&lt;p /&gt;&lt;div&gt;Wednesday my Heart ended up at an event in NYC so I stayed at work, grabbed a bite with the boss in our dining facility and went to see the University's production of the&amp;nbsp;&lt;a href="http://www.vday.org/organize-event"&gt;Vagina Monologues.&lt;/a&gt;&amp;nbsp;&lt;/div&gt;&lt;p /&gt;&lt;/div&gt;&lt;p&gt;&lt;div class='p_embed p_image_embed'&gt;

&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;div&gt;&lt;p /&gt;&lt;div&gt;Thursday: I had cancelled the meeting I normally have at 7pm because I knew I was over on the other campus for a meeting until at least 6:30pm and didn't want to risk being late… good call because I didn't leave that campus until almost 7:30. &amp;nbsp;Came home with the intention of going out but, once again, my Heart surprised me with an oddly delicious Indian Burrito filled with shredded chicken, onions, peas in a madras paste - quirky and absolutely wonderful.&lt;/div&gt;&lt;p /&gt;&lt;/div&gt;&lt;p&gt;&lt;div class='p_embed p_image_embed'&gt;

&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p /&gt;&lt;div&gt;Friday: Finally made something that was ON the menu - an adapted English "&lt;a href="http://en.wikipedia.org/wiki/Full_breakfast"&gt;Fry Up&lt;/a&gt;" … Ok… Not quite but still not bad. &amp;nbsp;&lt;a href="http://thepioneerwoman.com/cooking/2009/04/roasted-potato-wedges/"&gt;Oven roasted "chips"&lt;/a&gt;, fried ham steak, vegetarian baked beans, and two fried eggs. &amp;nbsp;Not the healthiest of meals (although the oven roasted chips had less than 2Tbsp of olive oil on them but they were still very crisp and tasty) but very satisfying on a "ski" night. &amp;nbsp;Yum!&lt;/div&gt;

&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;div&gt;Lemon Lush Dessert - I found this dessert on&amp;nbsp;&lt;a href="http://pinterest.com/mjchatter/"&gt;Pinterest&lt;/a&gt;, they called it&amp;nbsp;&lt;a href="http://www.grandmaskitchen.com/recipes/treasured-desserts/luscious-lemon-delight/"&gt;Luscious Lemon Delight&amp;nbsp;&lt;/a&gt;but that wasn't the name of the recipe I got from my then mother-in-law all those years ago but the basic recipe is the same. &amp;nbsp;I used to make this a lot in the 80's and kids remember it but can't honestly remember the last time I made it. &amp;nbsp;I remember doing it both as lemon and also as chocolate but everyone wants me to try it with either butterscotch or dulce de leche next time. &amp;nbsp;Either way - it was great to have it again. &amp;nbsp;The base is flour, butter and nuts (pecans in this case), baked until golden brown - cooled and topped with a combination of cream cheese, powdered sugar, and some Cool Whip - I didn't follow the recipe exactly on this layer because I thought the amount of powdered sugar they called for was too much.&lt;br /&gt;&lt;p /&gt;&lt;/div&gt;&lt;p&gt;&lt;div class='p_embed p_image_embed'&gt;

      <title>Burrito Experiment #10 - Smothered Burrito</title>

&lt;/p&gt;&lt;p&gt;Hot bulk pork sausage (1/2 lb), 1 can whole potatoes and onions chopped - brown sausage first then add and cook onions and potatoes. I like to keep a can of potatoes in the cupboard just for something like this.&lt;/p&gt;&lt;p&gt;&lt;div class='p_embed p_image_embed'&gt;

&lt;/p&gt;&lt;p&gt;Pour six beaten eggs over the sausage mixture - do not stir, just gently lift up the edges periodically so that the uncooked eggs can flow toward edges. Make sure that the temperature is not too high so that the bottom cooks faster than the top. When the top is starting to set, sprinkle with shredded cheese (cheddar &amp; mozzarella this time). Cover and cook until the eggs are set and the cheese is melted.&lt;/p&gt;&lt;p&gt;&lt;div class='p_embed p_image_embed'&gt;

&lt;/p&gt;&lt;p&gt;Plated, cut into pieces and topped with medium salsa. What I really like about frittata is that you can make it with almost anything. It is like a less complicated "omelet" and it is easy to stretch it by adding toast or even a salad on the side. It is also easy to keep possible ingredients on hand or can use leftover meats including taco meat and chicken. Yum!&lt;/p&gt;

There was obviously lots of rice - the fish is wrapped around rice also, which made the fish very moist. &amp;nbsp;The melted butter, lemon juice, and pepper mixture was drizzled over the fish before baking.&amp;nbsp;&lt;/div&gt;&lt;p /&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;p&gt;&lt;div class='p_embed p_image_embed'&gt;

&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p /&gt;&lt;div&gt;Friday:&amp;nbsp;&lt;a href="http://mjchatter.posterous.com/chicken-veggie-rice-bowl-with-egg"&gt;Chicken &amp;amp; Veggie Rice Bowl with Egg&lt;/a&gt;&amp;nbsp;- Ski nights (when my Heart is coming home from the ski resort where he teaches part-time) I like something that either simmers (like a soup or stew) OR something I can put together right before or after he gets home so that it is hot and perfect. This dish definitely fit the bill.&amp;nbsp;&lt;/div&gt;&lt;div&gt;Saturday was our usual apres skiing fare:&amp;nbsp;&lt;a href="http://www.libertymountainresort.com/resort-hotel/things-to-do/dining/mckees-tavern.aspx"&gt;McKee's Tavern&lt;/a&gt;&amp;nbsp;at Liberty. &amp;nbsp;The quesadillas is really huge and not a horrible deal for the price (ski resort prices are notoriously high because it is generally not convenient to leave to go somewhere cheaper) and we've found their French Onion soup is pretty delicious and is very satisfying if you are especially cold, which we both were.&lt;/div&gt;

      <title>Chicken &amp; Veggie Rice Bowl with Egg</title>

&lt;div&gt;Saw this recipe in my favorite food magazine:&amp;nbsp;&lt;a href="http://www.bbcgoodfood.com/"&gt;BBC Good Food&lt;/a&gt;&amp;nbsp;and all I could think.. perfect for a ski night. &amp;nbsp;My Heart teaches part-time at one of the local ski resorts, about an hour from home. He works Friday afternoons &amp;amp; evenings and all day Saturday (which is when I go up with him and ski). &amp;nbsp;He doesn't necessarily know when he will be off so he normally just calls me when he is on his way and I figure on about 50 minutes or so. &amp;nbsp;This dish is pretty much all last minute, except for the rice, which I cook in a Japanese rice cooker so it can sit and wait, no problem. &amp;nbsp;The original recipe is:&amp;nbsp;&lt;a href="http://www.bbcgoodfood.com/recipes/1841638/sushi-rice-bowl-with-beef-egg-and-chilli-sauce"&gt;Sushi Rice Bowl with Beef, Egg &amp;amp; Chilli Sauce&lt;/a&gt;&amp;nbsp;and&amp;hellip; well, I sorta followed it except for the chicken and sauce. &amp;nbsp;*smile* &amp;nbsp;Oh&amp;hellip; and about the magazine - yes.. they have most of their recipes on their website but I really Like to have a magazine or cookbook to look through, etc&amp;hellip; &amp;nbsp;although Pinterest is almost as satisfying. &amp;nbsp;The magazine subscription is prohibitively expensive but I found I can get it at Barnes &amp;amp; Nobles, which made me excessively happy!&lt;/div&gt;

&lt;div&gt;The chicken cooked up quick in the wok with about 1Tbsp olive oil - set the chicken aside and tossed in the veggies, stir-fried until tender-crisp&lt;/div&gt;
&lt;p /&gt;
&lt;/div&gt;
&lt;p&gt;&amp;nbsp;&lt;/p&gt;
&lt;p /&gt;
&lt;div&gt;Everything plated up on a bed of short-grain white rice (traditional Asian rice) then topped with a fried egg (over easy) and some sauce. In place of their chill sauce, I took the sauce that the chicken marinated in and cooked it up at a fairly high temp (NOTE: the marinade had raw meat in it so it Must be cooked thoroughly in order to be used for a sauce) - once it had reduced a bit, I added in approximately 2Tbsp&amp;nbsp;&lt;a href="http://en.wikipedia.org/wiki/Sriracha_sauce"&gt;sriracha sauce&lt;/a&gt;&amp;nbsp;for some heat. Oh... and we didn't put it in a "bowl" because all of our bowls are too small and the wrong shape - just FYI&lt;/div&gt;
&lt;p /&gt;
&lt;div&gt;Definitely a successful dinner - cooked up pretty quick and was very tasty although I am not sure it was hearty enough for a ski night (he comes home really hungry and needs lots of protein to make up for all that exercise!) but I know that we'll have it again and probably "mess" with the ingredients and sauces. I love the egg on top.. a really good touch! &amp;nbsp;YUM!!&lt;/div&gt;

&lt;/p&gt;&lt;p&gt;Combined gluten-free flour with thyme and freshly ground black pepper - coated the stew meat in seasoned flour then browned the beef in a drizzle of olive oil. Flouring and browning the beef before putting it into the slow cooker helps with the texture of the beef and also acts as a thickener.&lt;/p&gt;&lt;p&gt;&lt;div class='p_embed p_image_embed'&gt;

&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;div&gt;&lt;div&gt;&lt;p /&gt;&lt;div&gt;Mix in the spinach in batches - as the spinach wilts, add more until all of the spinach was wilted&lt;/div&gt;&lt;p /&gt;&lt;/div&gt;&lt;/div&gt;&lt;p&gt;&lt;/p&gt;&lt;p /&gt;&lt;div&gt;Plated up - topped the wilted spinach with shredded Parmesan. &amp;nbsp;Definitely a hit and Do Again - The chicken is tender and juicy and the drizzle adds a subtle deliciousness - Also liked the spinach this way, definitely will do it again and probably "mess" with the recipe. &amp;nbsp;YUM!!&lt;/div&gt;

      <title>Fish Monday: Pasta with Shrimp, Mascarpone &amp; Lemon</title>

&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;div&gt;For this Fish Monday, I was trying to be a little frugal because Sunday's birthday dinner was relatively expensive and no fish was on sale this week (at least not at a very good price) - we have a package of cooked shrimp in the freezer and I just found this recipe in the January issue of&amp;nbsp;&lt;a href="http://www.bbcgoodfood.com/"&gt;BBC Good Food&lt;/a&gt;&amp;nbsp;magazine:&amp;nbsp;&lt;a href="http://www.bbcgoodfood.com/recipes/1841654/pasta-with-prawns-mascarpone-and-lemon"&gt;Pasta with Prawns, Mascarpone, and Lemon&lt;/a&gt;&amp;nbsp;so that made the decision. I think I probably have to recognize that I often use recipes as recommendations though. &amp;nbsp;&lt;br /&gt;&lt;p /&gt;&lt;/div&gt;&lt;p&gt;&lt;div class='p_embed p_image_embed'&gt;

&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;div&gt;&lt;p /&gt;&lt;div&gt;The recipe called for cooking the vegetables in with the pasta but rice pasta has a rather unpleasant film, part of the reason it needs to be rinsed thoroughly after cooking, so it won't be gummy. &amp;nbsp;So, instead - in a wok, I covered the broccoli in water and brought it to a full boil and then drained it. &amp;nbsp;Again, the recipe called for some of the hot pasta water to use in the sauce but I took some hot water and tossed all of the ingredients in the wok until the mascarpone was completely melted and the sauce was starting to thicken then poured everything into the drained and rinsed pasta in the larger cooking pan. &amp;nbsp;Also, the recipe called for rotelle but my favorite brand of rice pasta doesn't seem to be making that shape/variety any more so my Heart suggested elbow macaroni&lt;/div&gt;&lt;p /&gt;&lt;/div&gt;&lt;p&gt;&lt;div class='p_embed p_image_embed'&gt;

&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p /&gt;&lt;div&gt;Plated with an additional sprinkle of chopped mint and freshly ground black pepper. &amp;nbsp;The elbow macaroni was perfect - This was a wonderful dish.. the flavors combined beautifully. &amp;nbsp;My Heart's only recommendation: More Bacon! (smile) But his serious recommendation: crispier bacon. I think if I hold out the bacon and add it at the very end that would work. Definitely a Do Again - Yum!&lt;/div&gt;
