<p>As an Italian-Greek American married to a Greek American husband who loves to eat, I’m often found in the kitchen cooking delicious Mediterranean meals and testing recipes for my videos, blog, a book in progress, our date nights and my “Well Being for the Body and Soul” <a href="https://www.youtube.com/watch?v=C8zl4YNj4hg&#038;list=PLPVzlTiGp72NeEbtN54WTBLWMScfkq9zV" rel="noopener" target="_blank">TV and video segments</a>. Awhile back, my husband helped me discover that I also had Greek roots through <a href="https://refer.23andme.com/s/cynthiadaddona">23andMe.com</a> genetic testing. This explained why I am so intrigued and find a lot of joy in researching and experiencing the Mediterranean culture, lifestyle, cuisine and recipes. </p>
<p>Back in 1995, I discovered I had a wheat-gluten intolerance. As a food lover, I was feeling down until I began adapting recipes, many of them from the Mediterranean Diet.  I found I was able to create visually beautiful and delicious dishes that are super healthy, gluten-free and low glycemic.  The Mediterranean Diet is mainly plant-based and low on the meats and sweets, but it can also be easily adapted for vegetarian, vegans, paleo and most dietary needs. It offers a nice variety of vegetables, fruit, legumes, nuts and grains, herbs, spices and healthy fats such as extra virgin olive oil.  Whenever possible, eat organic to keep the accumulation of toxins, heavy metals and pesticides out of your body. </p>

<p>I’ve realized that positive times at the table while eating healthy and delicious food can definitely contribute to the wellbeing of one’s relationships. This has been part of my happy and healthy marriage to my husband.  Since 2005, when we first became engaged, my husband and I have had weekly date nights.  Date Nights are something we look forward to.  We also found that the Mediterranean Diet contributed to helping him during a health challenge. When I was single I created my own a weekly date night that consisted of doing something inspiring and cooking or eating a good meal out with myself.  That’s a lot of delicious date nights! <p>Each week, my husband and I take turns planning our weekly date nights.  I’m blessed that he’s been inspired by me to cook too!  The guidelines are that the person whose week it is makes dinner.  For us it is often Mediterranean.  They also choose an arts and entertainment activity for the evening. We occasionally budget for a night out to a favorite Mediterranean restaurant . One couple I talked to had their date night once their kids went to bed.  Another couple had a weekly lunch date.  Whatever works for your schedule is best.  If you have children you can also schedule a family meal night in addition to your date night. It can be bonding to have everyone, including children, cook together or just as a couple.  Make extra for the week too!</p>

<p>A very memorable and romantic Mediterranean dining experience was when I was in Greece directing and hosting my <em>#1 New York Times</em>’ About.com culinary travel documentary <a href="http://www.moderndaygoddess.com/site/store/dvd/" rel="noopener" target="_blank">A Greek Islands Destination Cooking Class</a>.  It took place at a top gourmet, Slow-Food Greek restaurant in Santorini, overlooking the Aegean Sea.  I was also married in Santorini in a village wedding.  </p>

The healthy Mediterranean way of living and eating combined with the principles I wrote about in my women’s wellness book for nurturing the body, mind and soul have helped me and many other look and feel like their radiant selves. </p>
<p>In addition to savoring times at the table, whether solo or with others, being physically active is also key to longevity.  Research has shown that napping (popular in the Mediterranean) or meditating reduces stress and contributes to longevity, as well. The Mediterranean Diet has also been shown to reduce the risk of developing chronic diseases and increasing brainpower. <p>My Grecian Goddess Greek Village Salad that was inspired by the salad we shared on our first dates causing love at first Mediterranean bite!</p>
<p><strong>Recipe for A Grecian Goddess Greek Village Salad</strong>:<br />
Ingredients:<br />
3-4 tomatoes quarted<br />
* 6 oz feta cheese in cubes<br />
1 medium sized cucumber sliced and quartered<br />
1 sliced red onion (optional)<br />
2 medium sized red peppers sliced<br />
1/2 cup-1 cup Kalamata olives<br />
3-4 tablespoons of extra virgin olive oil<br />
sprinkle of dried, ground oregano,<br />
squeeze of 1/2 lemon and/or 1 teaspoon of apple cider vinegar, depending on sweetness of lemons<br />
Sea Salt  to taste</p>
<p>Method:</p>
<p>Mix bite size sliced ingredients, olives and toss with olive oil, oregano, lemon to taste. Add feta cheese on top and serve.<br />
Optional ingredients include: apple cider vinegar to taste depending on sweetness of lemon.<br />
Spinach, or arugula, or baby romaine. You can also add garbanzo beans or avocado. I highly recommend using organic produce whenever possible. Be creative and have fun!</p>

Each year my mother would celebrate the fresh and sweet tomatoes of the season by creating a delicious salad in a matter of minutes. Now I also celebrate them on the west coast by creating this recipe inspired by the memory.    </p>

<p>Tomato Basil Salad Recipe<br />

<p>3 large tomatoes or a combination of two handfuls of small and large tomatoes cut into wedges </p>
<p>¼ teaspoon garlic powder </p>
<p>¼ teaspoon sea salt or sea salt to taste</p>
<p>2 tablespoon of extra virgin olive oil</p>
<p>2 tablespoons of basil scissor cut </p>
<p>1 sprig of basil to garnish</p>
<p>(Note: For good health go organic whenever possible.)</p>
<p>Wash tomatoes and basil, cut and place in bowl. Sprinkle with sea salt and garlic powder. Drizzle with extra virgin olive oil. Mix together and garnish with basil sprig. This is a fragrant and delicious dish to enjoy.  </p>

<p>Delicious Mediterranean Baked Zucchini and Yellow Squash</p>
<p>I volunteer in a community organic garden and our weekly harvest included some beautiful squash. Squash dishes remind me of my grandmothers from the Mediterranean who cooked squash often when in season! This can be made with or without dairy.</p>
<p>3 to 5 pieces of a combination of washed and yellow or zucchini squash<br />
1 teaspoon ground fennel powder<br />
1 teaspoon of garlic powder<br />
1 teaspoon of dried oregano<br />
1 teaspoon of thyme<br />
1 teaspoon of dried or 2 tablespoons of fresh minced mint<br />
*Optional: 1/4 cup of Pecorino cheese (made from sheep’s milk)<br />
and/or 5 teaspoons of ghee (clarified butter) or clean butter (hormone free and grass<br />
fed dairy)</p>
<p>Cut the squash into quartered slices. Put spices on squash first and then drizzle with olive oil and if you wish add 5 teaspoons of dollops of clean butter or ghee .</p>
<p>Cook at 350 degrees for 30 minutes or more until squash is soft. Enjoy!</p>

<p>Awhile back I was invited on a trip to the delicious Greek island of Crete, which is where the research for the Mediterranean Diet originated.  As a lifestyle journalist (food-travel-wellness) and an independent filmmaker, I join a small group of print journalist.  During my visit I was delighted to experience, first-hand, farm-to-table Mediterranean cuisine, the culture, ancient history, village life and the warm, friendly people. The fact that Crete is the island where the Mediterranean Diet&#8217;s longevity research took place was extra special for me as I enjoy researching how food and lifestyle affects one&#8217;s well-being. A 15-year research study, started in the late 1950&#8217;s, was called the Seven Countries Study. It confirmed that Cretan villagers had the lowest heart disease rate in the world giving the Mediterranean Diet its gold standard. This resulted in contributions which made it possible for me to finish my romantic culinary travel documentary, Crete Under the Grecian Sun, that I hosted and directed on the Greek island of Crete, the birthplace of the Mediterranean Diet and Lifestyle longevity research. This documentary has been nominated for a Los Angeles Taste Award and was the opening night selection for the London Greek Film Festival. </p>
<p>I am an Italian-Greek American with an acting and improvisational comedy background. I also have experience as a freelance lifestyle journalist covering arts and entertainment, food, travel, cultures, well-being and Eco-living. In addition, I authored a national book Diary of A Modern Day Goddess, a lighthearted wellness book for nurturing one’s body, mind and soul. <p>Like all good heroic journeys there have been challenges along the way toward completing this documentary. One of the challenges was when my beloved husband James (A Greek-American; founder of <a href="http://www.celebrategreece.com/products/62-under-the-grecian-sun-crete" target="_blank">CelebrateGreece.com</a>) was eventually diagnosed with an environmental illness. Gratefully, he is now on the mend through the help of continuous prayer, a great environmental medical doctor and our following an eco-lifestyle that avoids toxins and includes eating the anti-inflammatory Mediterranean Diet. I thank everyone for their prayers and good wishes. Fortunately, I love to cook and James loves to eat! We often call ourselves The Goddess (me-Cynthia) and The Greek (my husband James) and with my Greek god doing much better now, I am able to return to my creative work. <p>Farewell Jay Leno!  You will be greatly missed for your gentle spirit, everyman&#8217;s humor and your graciousness to your guests and to the public. </p>
<p>When one meets Jay in person you quickly discover what comes across onscreen, that you are a nice guy with a special talent for putting an audience at ease and making us laugh. After watching Jay’s final show and very touching farewell message, we wanted to share our own Jay Leno moment with this video.</p>
<p>This video tape is from the archives when I was in Greece and decided to put my talents as an Author, comedian &#038; lifestyle journalist of ModernDayGoddess.com &#038; CelebrateGreece.com to create a tape asking Jay if I could be a roving goddess correspondent for his Tonight Show during the Athens 2004 Olympics.<br />
Eventually I met Jay and after having a nice conversation with him at one of his California personal appearances/performance, he asked me what work I did. I happened to be prepared, so I personally handed him this tape (yes, a VHS tape!) and he graciously accepted it. When follow-up was done to see if this American-Italian-Greek  Modern Day Goddess could be an Olympic, Tonight Show correspondent in Greece it was discovered that the Tonight Show does not air during the Olympics &#8212;  and I should have called the Today Show to be a correspondent! Oh, well. It was fun making this video in Santorini and at the Acropolis. On this tape, you can enjoy some humor and fun while I am interviewing tourists and even a horse in Greece.  FYI, I was also a page at NBC for the Tonight Shows starring Johnny Carson in the 1980&#8217;s.   What a wonderful era of comedy with the likes of Steve Allen, Johnny Carson, and Jay Leno!</p>
<p>Finally, my husband Dr. James Stathis (Founder of CelebrateGreece.com) was also with me when we met Jay. When Jay asked him &#8220;What do you do for work?&#8221; he told Jay that he was a dentist who also enjoyed documentary filmmaking. To which Jay, without hesitation, quipped back &#8220;Ask your mother&#8230;you are a dentist with a little camera!&#8221;</p>

<p>As always the Santa Barbara International Film Festival turned out to be an art and entertainment extravaganza. SBIFF Director Roger Durling and his team continue to attract major talent that include Academy Award® winners/nominees, talented independent filmmakers from around the globe that result in happy film goers, of which I am one.  Seeing inspiring and uplifting films, documentaries and tributes are some of my favorite things to do for date nights. So being able to go to a film festival is a heavenly buffet! And for it to be in the town of Santa Barbara where I live is another blessings.  While we weren’t able to attend all 11 days of the festival, we did get to attend the Daniel Day Lewis Tribute, The Fund for Santa Barbara reception and few inspiring indie films noted below. </p>

<p><strong>Daniel Day Lewis Tribute</strong><br />
During Daniel Day Lewis’ tribute, he spoke openly and candidly about his life and work to an audience of 2000 members at the beautiful Arlington theater in Santa Barbara. As a rambunctious youth, Daniel found his calling for acting after being cast in a school play at a progressive boarding school outside of England, a school that focused on creativity. To me, Lincoln, the man, and Daniel Day-Lewis’ portrayal of Lincoln are very inspiring. Both have the courage, persistence, and centered-ness to do what needs to be done. Steven Spielberg’s film, <a href="http://www.amazon.com/gp/product/B009AMANH4/ref=as_li_tf_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=B009AMANH4&#038;linkCode=as2&#038;tag=wwwmodernda0e-20" target="_blank">Lincoln</a>, tells the story of the incredible challenges the 16th President overcame to win the Civil War and achieve the passage of the 13th Amendment into the United States Constitution, which prohibited slave ownership.</p>

<p>Daniel also talked about discovering his own rhythm of the need to rejuvenate in between working on films, which he intensely prepares for.  Once he agreed to work on the film with Spielberg, he asked for a year to research Lincoln and prepare for the role – which certainly shows in the film. Daniel said he has found that taking time off, sometimes for a year or two, to be with his family and/or to pursue other creative endeavors suits him quite well. He said he doesn’t select a film unless it speaks to his creative soul, which he said for creative people is the key to being happy with one’s life and doing great work.  I wanted to say bravo to Daniel, since I feel the same way about the need for an artist incorporating inner rest, relaxation and creative expression time into ones life.  At the tribute, Sally Field presented the Montecito Award to Daniel Day-Lewis. In the film, she also gave an amazing performance of a historical figure &#8211; Mary Todd-Lincoln, the President’s strong and vulnerable wife.  Also presenting at the Tribute was Director, Screenwriter and Producer Michael Mann.</p>

<p>On the red carpet we also spoke to Jim Gianopulos, Chairman and CEO of Fox Filmed Entertainment. When I asked Jim what trait inspired him about Lincoln, he said it was Lincoln’s calm through all of his personal issues, including the issues of his wife Mary. Along with Lincoln’s calm I have always been inspired by Lincoln’s persistence in life. His chronology is often used in Motivational talks for how he continued no matter what occurred. Here is message about perseverance that was incorporated into a <a href="http://www.amazon.com/gp/product/B0065PL96S/ref=as_li_tf_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=B0065PL96S&#038;linkCode=as2&#038;tag=wwwmodernda0e-20" target="_blank">motivational poster</a>. Message: “He failed in business in 1831. He was defeated for state legislator in 1832. He tried another business in 1833. It failed. His fiancée (Ann Rutledge) died in 1835. He had a nervous breakdown in 1836. In 1843 he ran for Congress and was defeated. He tried again in 1848 and was defeated again. He tried running for the US Senate in 1855 and lost. The next year he lost the nomination for Vice President.  In 1859 he ran for the Senate again and was defeated again. Finally, in 1860, the man who signed his name A. Lincoln, was elected the 16th President of the United States. The difference between history&#8217;s boldest accomplishments and its most staggering failures is often, simply, the diligent will to persevere.  Winston Churchill’s famous quote “Success can be defined as moving from failure to failure with enthusiasm,” could have well been inspired by the venerable Mr. Lincoln.”   What a message for all of us to remember when faced with life challenges.   And if you haven’t seen the movie Lincoln I highly recommend it.<br />

During the film festival, we also attended The Fund for Santa Barbara reception, at the Arts and Letters Café, which provided a chance to mingle with the judges, staff and independent filmmakers who have created films that are a catalyst for social change.  </p>

<p>We met one of the passionate producers of <a href="www.act4entertainment.com/projects/angels-in-exile" target="_blank">Angels in Exile</a> (South African/USA) film Adam Paul Smith. Angels in Exile is about an 8-year journey that challenges viewers to look past the homeless youth in Darbun (Africa) ad see them for what they are&#8230;children.  It is directed by Billy Raftery and narrated by actress Charlize Theron.  To see other Social Justice Award nominees go to here.. This years Winner of the 2013 Fund for Santa Barbara Social Justice Award for Documentary Film 2,500 cash award was <a href="http://www.TheRevolutionMovie.com" target="_blank">Revolution: Save the Humans</a> a stirring new documentary by Canadian Filmmaker Rob Stewart which examines the mortal dangers facing marine life around the globe.  A documentary that was a four-year journey across 20 countries. For a complete list of the </p>

<p>In the VIP lounge that was decorated in gorgeous Moroccan/Mediterranean  style (sponsored by UGG) we also met producer Julie Snyder and Writer/Director Brad Hall of Picture Paris, which screened last year at the Santa Barbara Film Festival. The film short is about an ordinary suburban mom who dreams of a life changing trip to France with her husband, only to discover that Paris isn&#8217;t exactly what she pictured. Brad (of SNL fame) told me he wrote Picture Paris after his son went off to college and he and his wife Julia (Seinfeld, SNL, Veep) were devastated by empty nest syndrome. <a href="http://www.pictureparisfilm.com/" target="_blank">Picture Paris</a> is also a festival success story since it was picked up by HBO and is also on HBOgo. </p>
<p>Some of the Inspiring Indie Films at this Years 2013 SBIFF Festival<br />
While there were 11 days of films and events to see, we did get a chance to see a few and learn about others that are tie-in with the romance/food/wisdom/film theme of RomancingTheTable.com. </p>
<p>I enjoyed the documentary Peru Sabe: Cuisine as an Agent of Social Change, which was part of the film festival’s “Screen Cuisine” programming. (Local restaurant also joined in with the festival creating film feasting menus with a film theme called Film Feast Santa Barbara  Sbfilmfeast.com.)  The film Peru Sabe, told the story of how a new cooking school in an impoverished area of Peru was giving a future of hope to youths via several year training in the culinary arts.  I’ve always felt that certain culinary/cooking experiences as well as quality times at the table have the potential change lives, so I was glad to see this documentary. The Santa Barbara Film Festival Audience Award winner went to <a href="http://www.spinningplatesmovie.com/" target="_blank">Spinning Plates</a> that was part of the screen cuisine. It is about three restaurants; extraordinary for what they are today as well as for the challenges they have overcome.</p>
<p>I also saw Retreat, which was a documentary that followed the trials and tribulations of 35 Westerners as they meditated their way through an intense eight-week retreat in Thailand, all the while led by Santa Barbara’s own Alan Wallace of the <a href="http://www.sbinstitute.com/node/1837" target="_blank">Santa Barbara Institute for Conscious Studies</a>.  A practitioner of daily meditation myself for the past 15 years, I marveled at those who were devoting eight or more hours a day to their meditation life.  It inspired me to add at least an extra 10 more minutes to my already 15 minute daily meditations! </p>
<p>The best International Film Festival award went to the Austrian film, called Coming of Age which is a drama about two people at age 80, who prove beyond all doubt that nobody is too old for young love. </p>

<p>I just love books! My dad gave me my first positive thinking book when I was ten and I&#8217;ve been hooked every since. It was the <a href="http://www.amazon.com/gp/product/0743234804/ref=as_li_tf_tl?ie=UTF8&#038;tag=wwwmodernda0e-20&#038;linkCode=as2&#038;camp=1789&#038;creative=9325&#038;creativeASIN=0743234804" target="_blank">Power of Positive Thinking</a> by Norman Vincent Peale &#8211; how one&#8217;s thoughts create our reality and if you can believe it you can achieve it. My father who was the son of Immigrant parents &#8211; and didn&#8217;t go to college said whenever he wanted to learn something he would see if there was a book written on it and there usually was. I feel the same way. I love reading a good book and I have quite an extensive library of books that have inspired me. Thank goodness for my library card because I&#8217;ve run out of bookcase space to hold more books. I see myself as an archaeologist of the soul &#8211; who enjoys unearthing my soul&#8217;s essence and inspiring others to discover the treasures within. Books have had a very positive impact on my life, which is part of the reason I was inspired to write my first book <a href="http://www.moderndaygoddess.com/site/store/book/">Diary of A Modern Day Goddess</a> &#8211; a lighthearted guide to nurturing your body, mind and soul. I know the impact of positive words and ideas on one&#8217;s life and I wanted to share with other&#8217;s what I&#8217;ve learned so I could contribute to their well-being through the use of my writing, speaking, TV work and wisdom. </p>
<p>I have many books that I love but I just chose a few for this video. They include <a href="http://www.amazon.com/gp/product/0375759913/ref=as_li_tf_tl?ie=UTF8&#038;tag=wwwmodernda0e-20&#038;linkCode=as2&#038;camp=1789&#038;creative=9325&#038;creativeASIN=0375759913" target="_blank">Broken Open</a>, by Elizabeth Lesser which I learned about on Oprah, <a href="http://www.amazon.com/gp/product/1401926525/ref=as_li_tf_tl?ie=UTF8&#038;tag=wwwmodernda0e-20&#038;linkCode=as2&#038;camp=1789&#038;creative=9325&#038;creativeASIN=1401926525" target="_blank">You Can Heal Your Life</a> by self-help pioneer Louise Hay who discovered that loving one&#8217;s self is the way to heal every area of your life, <a href="http://www.amazon.com/gp/product/0060594896/ref=as_li_qf_sp_asin_tl?ie=UTF8&#038;tag=wwwmodernda0e-20&#038;linkCode=as2&#038;camp=1789&#038;creative=9325&#038;creativeASIN=0060594896" target="_blank">The Success Principles</a> by Mega-successful Coach and Chicken Soup for the Soul co-creator Jack Canfield who offers the tried-and true steps that make living a successful life attainable, Being a goddess who love to cook &#8211; <a href="http://www.amazon.com/gp/product/B0023RT0GS/ref=as_li_tf_tl?ie=UTF8&#038;tag=wwwmodernda0e-20&#038;linkCode=as2&#038;camp=1789&#038;creative=9325&#038;creativeASIN=B0023RT0GS" target="_blank">The Oprah Magazine Cookbook</a> &#8211; Yum!, the inspiring stories and recipes from &#8211; <a href="http://www.amazon.com/gp/product/1400062896/ref=as_li_tf_tl?ie=UTF8&#038;tag=wwwmodernda0e-20&#038;linkCode=as2&#038;camp=1789&#038;creative=9325&#038;creativeASIN=1400062896" target="_blank">The Hallelujah Table</a> by Dr. Maya Angelou who I had the honor of meeting when this gracious icon came to speak in Santa Barbara. Then <a href="http://www.dailyword.com/" target="_blank">The Daily Word</a> of Unity&#8217;s prayerful affirmations, <a href="http://www.amazon.com/gp/product/0932194826/ref=as_li_tf_tl?ie=UTF8&#038;tag=wwwmodernda0e-20&#038;linkCode=as2&#038;camp=1789&#038;creative=9325&#038;creativeASIN=0932194826" target="_blank">Time for Joy Affirmations</a> and one of my favorite authors from the early 1900&#8217;s who was part of the New Thought movement &#8211; Florence Scovel Shinn&#8217;s <a href="http://www.amazon.com/gp/product/0875162576/ref=as_li_tf_tl?ie=UTF8&#038;tag=wwwmodernda0e-20&#038;linkCode=as2&#038;camp=1789&#038;creative=9325&#038;creativeASIN=0875162576" target="_blank">The Game of Life</a>. She has powerful affirmations and stories that always inspire me. One of her affirmations that I say often is may &#8220;The divine plan of my life now manifest under grace in perfect ways!&#8221; She defined the divine plan of one&#8217;s life as perfect health, wealth, love, and self-expression. So I hope I&#8217;ve inspired you to read, learn or remember your favorite books.
