The texture is absolutely perfect, the taste is delicious and the only downside was I had to divide it into TWO portions.   It doesn't taste like avocado, it tastes like...chocolate pudding!  Yay!!

Ok, last week I used a zucchini.  This week I tried a legit spaghetti squash.  The label said to pierce the outside and cook it whole for 1 hour at 350.



When I removed it, I let it cool a few minutes then sliced it in half.  The very middle has seeds similar to that of a pumpkin.  I scooped those out with a fork and then started shredding the squash.

Last night, my wonderful in-laws made a pit-stop as they migrate to S. Texas for the winter.  Wanting to have most of dinner prepared in advance so I didn't have to spend family time busy in the kitchen, all of these dishes were prepared in advance so they could be popped in the oven or tossed together and served.

Needed to make a dessert and had several darkening bananas left over from Christmas, so I found this recipe on Pinterest and decided to give it a try.  As you can see, we are a house divided, so I put a LOT of chopped pecans on my end!

In my Pinterest adventures, I came across this delicious suggestion of an egg, fried into the middle of an avocado slice.  No more difficult than that.  It was mouth-watering to look at, so I decided to try it.
