Due to a minor flaw in a brewing program, we lost some of the mash when it was transferred to the brew kettle.    &lt;br /&gt;Our goal when playing with non-traditional ingredients is to find balance between the ingredient and the beer. For Scratch #54-2011 – our third foray into cocoa – we wanted to design a drinkable (under 6%), subtle and satisfying beer.     &lt;br /&gt;    &lt;br /&gt;Starting with a base recipe for a mild porter, we added cocoa powder from Ghana and Ivory Coast to the brew kettle during final hop addition. The powder, made from “dutched nibs” typically used in baking, adds a slight bitterness and a rich chocolate aroma.     &lt;br /&gt;    &lt;br /&gt;After fermentation, we aged #54 on Ghanaian vanilla beans and medium roast Ghanaian cocoa nibs for ten days.     &lt;br /&gt;    &lt;br /&gt;The malt has a slight roast but is designed with a lighter body to let the cocoa flavors show through. The packaging line is coming together in its new home and the T1 fermenters are filling the new cellars. T2 is crawling with German welders, engineers, and fabricators, as well as a ton of local electricians, riggers, welders, and assembly guys. We have a mountain of new equipment and processes to learn, but we’re still finding time to brew. To date we’ve made 500 bbls of Hopback, 600 bbls of Troegenator and 300 bbls of Pale Ale, and close to 1000 bbls of Mad Elf. One new thing we’re all excited to use is the &lt;a href="https://fbcdn-sphotos-a.akamaihd.net/hphotos-ak-ash4/381579_10150382582626738_99353136737_8220630_1582349972_n.jpg"&gt;15 bbl Scratch brewhouse&lt;/a&gt;. So far we’ve brewed 3 small batches: Munich Helles, a small batch of Hopback to feed our ale yeast, and Cocoa Porter.     &lt;br /&gt;    &lt;br /&gt;&lt;/p&gt;  &lt;p&gt;We christened it with what was meant to be a &lt;a href="http://www.bjcp.org/2008styles/style01.php#1d"&gt;Munich Helles&lt;/a&gt; lager in honor of our German friends from &lt;a href="http://www.braukon.de/braukon2/index.php?id=1&amp;amp;L=1"&gt;BrauKon&lt;/a&gt;. Due to increased mash efficiency and higher boil-off than anticipated, our starting gravity was much higher than a traditional Helles. We started with a base of Bohemian floor-malted pilsner malt and added a bit of Munich malt for character giving us a post-boil gravity in the 16-17 Plato range. Hersbrucker hops, known for their pleasant, grassy/floral aroma, were used in 3 additions with a target of around 20 IBUs. We fermented with our house lager yeast and it’s currently in conditioning. Look for our &lt;a href="http://www.bjcp.org/2008styles/style05.php#1a"&gt;Helles Bock&lt;/a&gt; in the coming weeks.     &lt;br /&gt;    &lt;br /&gt;&lt;/p&gt;  &lt;p&gt;Next up was an easy small batch of Hopback for yeast propagation. Not much to say. It was Hopback and we used it to grow up a pitch for a 300 bbl brew.    &lt;br /&gt;    &lt;br /&gt;&lt;/p&gt;  &lt;p&gt;Most recently, we took what we learned with our &lt;a href="http://www.troegs.com/blog/?p=145"&gt;chocolate stout&lt;/a&gt; and put it to use in a cocoa porter. Starting with a good look at the Dead Reckoning and Scratch #27 recipes, we lowered the starting gravity a bit and reigned in the “burnt” character by cutting the black malt and reducing the roasted barley. The addition of a bit of lactose to the boil rounds out the mouthfeel a touch and brings a little sweetness to the table. We used a blend of black and red cocoa powders this time around, mostly out of curiosity. If you remember, cocoa nibs were used in the hopback and conditioning tanks in our previous chocolate excursions. We anticipated some bitterness from the cocoa powder so reduced the hops to around 30 IBUs of Warrior and Cluster in 3 additions. Yesterday we racked this from the fermenter to a conditioning tank where it will sit on a pile of cocoa nibs and vanilla beans. The first brew through the new brewhouse was designed to research yield and extraction rates, test our new boiler system and dial in the hop dosing system and hopback.     &lt;br /&gt;The results? Our fermentable extraction rate was higher than expected meaning T2 Ale is a bit higher in alcohol than planned The hop dosing system and new boiling system were equally efficient creating an intense, lingering bitterness stronger than expected.     &lt;br /&gt;    &lt;br /&gt;Scratch #52 will be served two ways – filtered(available Nov 9th in tasting room) and unfiltered (available today Nov 8th in tasting room) – so try them both. It may be a touch hard to see because the photo was taken from the upper level of the milling room, but the bag you’re looking at is actually a huge 2-story cloth-like silo for grain.&amp;#160; Apparently the township doesn’t allow outdoor grain silos, so everything is indoor and there are several of these bad boys in the room.&amp;#160; What’s also very cool here is that the blue frame not only supports the grain silo. but also weighs it.&amp;#160; The control panel you see allows the guys to weigh the grain in the silo and I can attest that it was sensitive enough to record my weight (in kilograms) when I sat on the frame.&amp;#160;  &lt;p&gt;Cases of Mad Elf Ale and Scratch Series No. 50, a Belgian style brown ale, are for sale. &lt;/p&gt;  &lt;p&gt;So are Dead Reckoning Porter T-shirts and flying discs, dog collars and beer glasses emblazoned with the &lt;a href="http://www.troegs.com/Default.aspx"&gt;Troegs Brewing Co&lt;/a&gt;. name. &lt;/p&gt;  &lt;p&gt;A scent of hops and malt waft in the air. &lt;/p&gt;  &lt;p&gt;Much to the delight of beer lovers in central Pennsylvania, Troegs has begun brewing at its new facility along East Hersheypark Drive in Derry Twp. &lt;/p&gt;  &lt;p&gt;The opening has been a gradual one. Last week, a gift shop opened inside the microbrewery in tandem with the release of Troegs’ signature &lt;a href="http://www.troegs.com/our_brews/mad_elf_ale.aspx"&gt;winter ale, Mad Elf&lt;/a&gt;. &lt;/p&gt;  &lt;p&gt;Later this week, they expect to open a 150-seat tasting room with a bar crafted from Pennsylvania hickory wood, 70-foot long table, industrial ceilings and views of the brewing equipment. Brewery tours, which include up-close views of the beer-making process from fermentation to bottling and packaging, will kick off in early November. &lt;/p&gt;  &lt;p&gt;“People are curious and they are trickling in,” said co-owner Chris Trogner. &lt;/p&gt;  &lt;p&gt;More than a year ago, Chris and his brother, John Trogner, brewed interest among beer enthusiasts when they &lt;a href="http://www.pennlive.com/midstate/index.ssf/2010/06/troegs_brewing_co_moving_to_he.html"&gt;announced the nearly 15-year-old microbrewery would be moving from Harrisburg to Hershey&lt;/a&gt;. The Harrisburg facility on Paxton Street closed about three weeks ago. &lt;/p&gt;  &lt;p&gt;Troegs’ expansion comes at an economic time when many businesses are cutting back. &lt;/p&gt;  &lt;p&gt;“A lot of companies have plans to expand, but because of the way the economy is, they’ve had to back off a bit,” said David Black, president and CEO of the Harrisburg Regional Chamber. &lt;/p&gt;  &lt;p&gt;The craft beer industry is booming. Sales came in at just under 10 million barrels in 2010, an 11 percent annual increase, while total U.S. beer sales were down 1 percent, to 203.5 million barrels, according to the Brewers Association based in Colorado. &lt;/p&gt;  &lt;p&gt;Troegs has done a great job creating and expanding their brand, Black said. While most microbreweries are in urban areas undergoing revitalization, Troegs took an interesting route by moving to Hershey. &lt;/p&gt;  &lt;p&gt;“Why not go to a tourist hub in Hershey? It’s a win-win for both Hershey tourism and Troegs,” Black said. &lt;/p&gt;  &lt;p&gt;Troegs opened in 1997 off of Paxton Street. Space quickly became an issue as the craft beers, including Troegenator and HopBack Amber Ale, gained a national and international reputation. &lt;/p&gt;  &lt;p&gt;Recently, the brewery added to its growing collection of medals, winning a gold for its Troegenator and a silver for its Sunshine Pils at the Great American Beer Festival in Boulder, Colo. &lt;/p&gt;  &lt;p&gt;“Something had to give,” Chris Trogner said. “We were going somewhere. We always thought of ourselves as a central Pennsylvania brewery.” &lt;/p&gt;  &lt;p&gt;The Hershey facility is three times bigger than the one in Harrisburg and will allow Troegs to expand in more ways than one. &lt;/p&gt;  &lt;p&gt;Troegs brews 30,000 barrels of beer annually and expects to eventually double its capacity to 60,000 barrels, Chris Trogner said. As a comparison, D.G. Yuengling &amp;amp; Son Inc. and Samuel Adams both brew 2 million barrels annually. &lt;/p&gt;  &lt;p&gt;The staff has grown to 65 employees, double what it was about two years ago. &lt;/p&gt;  &lt;p&gt;More space and better equipment will also allow the Trogners and their staff to produce more beers under their Scratch Beers series. The experimental beers are made in limited quantities and have become popular among craft beer fans. &lt;/p&gt;  &lt;p&gt;“If we can dream it up, now we can brew it,” John Trogner said. &lt;/p&gt;  &lt;p&gt;Fans will be able to sip samples and order pints of their favorite Troegs beer in the tasting room. They also will be able to order Java Head Stout floats or root beer floats along with snacks like popcorn, chips and pretzels. &lt;/p&gt;  &lt;p&gt;In addition, Troegs also hopes to capture more people on its tours. Tours, which were held on Saturdays only in Harrisburg, became so popular people were often turned away at the door. &lt;/p&gt;  &lt;p&gt;The new facility has been designed for walking tours. Guests can take free self-guided tours (during hours when the gift shop is open) as they sip beer purchased from the tasting room. Signs posted along the way describe the process. &lt;/p&gt;  &lt;p&gt;Or, for a more in-depth experience, guided tasting tours at a cost of $5 will be held up to two times a day Monday through Saturdays. Participants will be able to ask questions, drink samples and take home a commemorative Troegs glass. &lt;/p&gt;  &lt;p&gt;“You are going to hear everything, smell everything. If a keg drops, you are going to hear it. It could be noisy but we think that’s is all part of the tour,” Chris Trogner said. &lt;/p&gt;      &lt;p&gt;   &lt;br /&gt;&lt;/p&gt;  &lt;p&gt;&lt;b&gt;IF YOU GO&lt;/b&gt;&lt;/p&gt;  &lt;ul&gt;   &lt;li&gt;Troegs Brewing Co., 200 E. It may be a touch hard to see because the photo was taken from the upper level of the milling room, but the bag you’re looking at is actually a huge 2-story cloth-like silo for grain.&amp;#160; Apparently the township doesn’t allow outdoor grain silos, so everything is indoor and there are several of these bad boys in the room.&amp;#160; What’s also very cool here is that the blue frame not only supports the grain silo. but also weighs it.&amp;#160; The control panel you see allows the guys to weigh the grain in the silo and I can attest that it was sensitive enough to record my weight (in kilograms) when I sat on the frame.&amp;#160; Very cool.     &lt;br /&gt;&lt;a href="http://lh6.ggpht.com/-saG_9LXqdYE/TqHI8-h5HLI/AAAAAAAAL0c/JC56JtJJz8s/s1600-h/Troegs13Oct%2525202011%252520057%25255B3%25255D.jpg" target="_blank"&gt;&lt;img style="background-image: none;
