This recipe can be made as either muffins, or mini-loaves. 

This amount made 8 mini loaves and 12 muffins for me.

For the muffins, I used paper liners in the pan and for the mini loaves, I just brushed the pan with oil.

Somehow the
weekend got away from me with dance recitals and hockey games and I forgot to

Today I thought I’d share a cake decorating idea. I made
this one for my niece’s 5th birthday, as requested, in the style of

Sometimes a dessert comes along that can make you forget
about other desserts.&amp;nbsp; This is that

This isn’t a new recipe. The cake recipe I used for this graduation cake is my Very Vanilla Cake recipe. I just switched up the decoration process. Instead of fondant, I used a salted caramel swiss meringue buttercream (just a swiss meringue buttercream with added homemade caramel sauce) for in between the layers and covering the whole cake. Mmm chips and sauce.  Being gluten free doesn’t mean we should miss out on anything.  Like yummy snacks.

Great for parties, get-togethers, movie nights, football or hockey games on tv, weekend lunch sides with a salad, or for an appetizer just because the weather is nice - finally.  Chips and sauce go with almost anything to me.
