I am looking forward to making this soon, I did have one question about "aging" this cheese is it possible without adding a culture of some kind? I am considering aging then smoking for a few hours.

I don't think it makes sense to add food miles together like that. (Or at all actually). If we took away all the other ingredients and just ate a big serving of your "Ingredient 3", we'd lose most of the food miles. Would that be better?

And what if I eat a bowl of local potatoes but add half a teaspoon of dried mint from the other side of the world?

Hi, your recipe doesn't state when you put the coconut in but I'm assuming it's folded into the egg mixture once you've added the sugar. They look great, I can practically smell them from the laptop screen! I've tried making the other kind of macaroon with the filling in between which didn't end up so fantastic (they looked like chocolate cow poo) but this one I will try and will nail it. Thanks.

Found this on Tastespotting.com a few months ago, and I have since cooked these for friends multiple times, particularly when wishing to thank someone (or impress them). I'll admit I don't usually use mascarpone--just regular cream cheese--and one time I couldn't find any Kahlua so I just added extra coffee, but regardless they have always been a huge hit and most times, people ask me for the recipe later. : ) Thanks for posting!

Look, ghetto refers to an impoverished, neglected, or otherwise disadvantaged population. When someone uses the term ghetto-rigged, it means something is poorly done with little effort. It has no racial connotation, and if you want to project that context onto it then that's on you.

Why don't we also begin using words like cracker, homo, and redneck to describe things?? When someone uses the term "ghetto" as an adjective, I make assumptions about the person's level of intelligence. What does that MEAN?? That "ghetto" is supposed to be synonymous with clumsy? Ill-configured?? Tacky?? Why don't we begin using "cracker" in that regard, instead? Fool.
