					<description><![CDATA[<p>Instant Pot twice-baked potatoes good and they can also be a great way to get a serving of vegetables. We have been struggling to find filling and healthy dinner side dishes to fill up the whole family (holy smokes, growing kids can eat!). Recently, twice baked potatoes have become really popular. We&#8217;ve started mixing in chopped spinach to our twice-baked potato mixture. Adding the spinach is the perfect way to fill everyone up with vegetables and it eliminates huge after-dinner snacking (not completely, these kids eat every 2 hours). How do you pick the potatoes? I use russet potatoes. The larger russet potatoes that are about a half a pound each (8 ounces) are what we used in this recipe and are a perfect size. They usually take 15 to 16 minutes to pressure cook and then we do a 10 minutes natural release. I have used the monster-sized russet potatoes as well (closer to one pound) and cooked for 18 minutes with a 10 minutes natural pressure release. The smaller potatoes that come in a 5 lb bag are usually 5-6 ounces and only take 13-14 minutes. Basically, pick a uniform size and judge its size accordingly. For Baked [&#8230;]</p>

					<description><![CDATA[<p>This Instant Pot Turkey soup with farro is a great hearty recipe that&#8217;s perfect on a cold or rainy night. Or whenever. The holidays always equals turkey leftovers. This inspired us to come up with an Instant Pot Turkey Soup recipe. Soups are so easy in the Instant Pot, especially when you&#8217;re just repurposing leftovers. The past few years, rather than cooking an entire turkey, we have cooked a brined turkey breast. For Friendsgiving we ended up cooking two. No one complained about not having dark meat. And the bonus is that the turkey was moister and way more flavorful! For the soup, we throw in any leftover turkey we have with broth we make from the turkey bones (and cooked in the Instant Pot, of course!). If you are feeling less ambitious or don&#8217;t have any turkey bones, feel free to use chicken or vegetable broth. We tend to love lots of vegetables in our soups. The usual suspects &#8212; onions, celery, and carrots plus spinach for a healthier kick &#8212; but, we also wanted to feature a grain. In the end, we went with farro. Lately, we&#8217;ve been buying a lot of challah bread from our local bakery (which is dairy free, but not vegan because it is made with eggs) and using it to make french toast for breakfast on the weekends. Our kids love it, but I don&#8217;t do so well with dairy so I wanted to make dairy-free french toast so I could enjoy it as well! Keeping your French Toast Dairy-Free A lot of traditional french toast recipes call for both butter and milk. If you want to keep your french toast dairy free then you just need to substitute in your favorite non-dairy milk and then either drop the butter or again find a suitable dairy-free alternative. We love almond milk and it worked well so we used that instead of regular milk. When greasing the pan we use either coconut oil or vegan butter. We&#8217;ve recently made it a larger priority to batch meal prep a couple of times a week in order to have grab and go food on hand and ready for busy days or nights. Batch meal prep means choosing recipes that are easy to execute and that&#8217;s one of the reasons we love this Thai salmon bowl with peanut sauce. We cook both the quinoa and salmon in the Instant Pot (we have a small and large Instant Pot, so usually we do both at the same time). While it&#8217;s cooking we chop up the vegetables and microwave some edamame from the freezer. Once the salmon and quinoa are cooked and the vegetables chopped, we arrange the ingredients in our favorite meal prep containers for several meals. Sometimes we keep everything separate if we&#8217;re in a hurry and know we&#8217;ll have time the next day at lunchtime (it does last longer if separated).
