For quite a few months, I’ve been telling people about this recipe and they’ve been asking. It’s super quick to make and it’s very kid friendly. I have had the photos taken and have tried for a while to get this post up, but it seems to slip to the back burner over and over.. So I am taking the time to get this up for everyone who has asked! Here’s the recipe for my Taco Pie.

I’m always in love with casserole type dinners because they are also very quick to make and kid friendly. Here’s the list of ingredients that you will need:

- 2 cups shredded taco cheese blend
- 1 pound hamburger
- 1 package of taco seasoning
- 1 package of taco or mexican rice
- 1 can (8oz) Mexicorn
- 1 can black olives (optional)
- 1 cup crushed corn tortilla chips or cheese (or taco flavored) doritos
- 1 box pie crusts
- 1 8-9″ pie tin

Preheat the oven to 350* F. Cook the taco meat using the hamburger and taco seasoning as directed on the package. While that’s browning and cooking start your rice. I make the rice is a taller pot (so in the end when you need to mix things you have a bigger pot to do that). While everything is cooking lay your pie crust into your pie pan. Make sure you push it down in the corners and everything so that you have no air between the pan and the crust. I use a glass pyrex pan, but any pie tin will do. I’ve even made this is a square dish before (your crust won’t completely cover, but it still works).

Once your hamburger is browned and you have mixed in the taco seasoning, you will mix that in the pan with your rice (make sure that’s fully cooked first). I find that both take about 7-10 minutes so they are done at about the same time. Mix the rice and hamburger together. Add in the Mexicorn and the 2 cups of cheese. Mix until you have it all mixed together well. Put your mixture in your pie crust. Cover with the 2nd pie crust and twist your edges to seal it. Make a few slits in the top to allow the heat to escape.

Top the crust with your crushed tortilla chips or doritos. It just gives it a little extra crunch that you miss without the hard taco shell. Bake this at 350* F for about 30 minutes (or until your crust is golden brown). Serve.

I serve mine with sour cream and a little taco hot or mild sauce. You can season to please. From start to finish this dish is ready in about 45 minutes and quick to serve up. This recipe is filling and serves my family of 4 with a few extra pieces for the next day. If you have a larger family or want more leftovers, double this recipe and make 2 pans. The extras are great reheated the next day or even in the microwave for a quick after school snack!

Please stop back and let me know what your kids and family think!

The back shows us all as a family, including the fish and the dog.. But the inside bottom with the text is by far the most heart warming thing I’ve gotten to date from her! <3 It reads: “Dear Mom, I love you very much. You are the BEST mom ever. You are the best cook EVER! I’m very glad you are my mom! I will keep praying for you so that you get better! I can’t wait till you’re better so that we can do things together again. BEST MOM EVER! Love your favorite and only daughter, Mariah (she signed her whole last name I blurbed it out).
Mother’s Day is right around the corner. As a mom, I know that we never get quite enough time to ourselves. We always have a child in the bathroom with us or someone to feed. It’s not uncommon that we sacrifice something for ourselves for our children. As a mother, it’s not even a thought, we just do it. This Mother’s Day Beauty by Buford is looking to pamper mom. Beauty by Buford, a Denver plastic surgeon, offers a wide range of services and products that will help you achieve a beautiful glow and that will in turn make your confidence better.

Recently with my accident, I’ve been exposed to using the services of a plastic surgeon. This isn’t something I ever thought that I would do. I think natural beauty is really the key. Here’s the thing.. I wasn’t prepared for a lot of the information I was given. I thought I had a great cleansing system and facial process. I had no idea that a plastic surgeon takes care of so much more then those imperfections or things we wish were different. I ended up getting a whole new facial cleansing line, some amazing cover up and sunscreen in one (one shade for everyone, makes it nice that I don’t have to buy 20 colors and blend them) and even some make up that was better for my skin. While I am using the services of a plastic surgeon, you really can benefit from a simple visit and things like stem cell therapy and so much more. Dr Budord has many testimonials on his website as well as before and after photos of what different services and products can do. Consultations are complimentary.. So go ahead.. Pamper Yourself!

GIVEAWAY: ONE lucky reader will get a $50 VISA Gift Card to use as you please. Please note this gift card is being sent from Dr Buford of Beauty by Buford.

These days the world of technology really is taking off. It’s no surprise because if you connect to the internet you can find anything you need. You can also find entertainment, like movies, games and more. I have to admit, as much as my time is stretched, I still find time for a few games. OnlineBingo.com (sign up now) is a great place for me to spend some time along with having some fun. I’ve enjoyed bingo since I was a child, so this isn’t really all that shocking.

Online Bingo!

I love the world of online games and I have picked up playing so many of them. My children are also very found of the computer and online games. I like them because many of them are free and many of them are strictly online, which means nothing is being downloaded to the computer and I am not spending money on expensive game cartridges that they lose or don’t end up playing with them much. Down the road from us is the veteran’s hall and they frequently (1 night a week) have bingo playing. The age ranges from young teens to grandmothers. It’s fun, but often by the time I can sit down and enjoy my game, I’ve done homework, made dinner, cleaned up dinner and the dishes, got the kids bathed and ready for bed, and I am plain exhausted! Playing from home while relaxing in my recliner or my bed is the best way for me! AND I can play in my pajamas! Double win for mom!!

What is your guilty pleasure? Do you play any online games? How about games in general? Maybe your choice of games is an old card game or an app on your phone. I know the list is growing for me, but online bingo definitely is the one I am playing when I am on the computer!

When it comes to allergies, I think my family pretty much has it covered! Seriously everyone in this house has allergies of some sort, including the dog! My son had a ton of food allergies from birth and still has some and mine are also most food allergies. My husband and my daughter, both suffer from seasonal and outdoor allergies. My husband especially. He goes outside to mow the law and he comes back in sneezing, running nose and watery eyes. I needed to find a solution. The problem is coming up with a solution that doesn’t make him drowsy, which most of them do. Claritin-D has worked wonders for him. He takes one tablet and has 24 hour relief. His allergies are under control and we don’t have to worry. Claritin does make a children’s version, however my daughter takes it more as needed then daily. For her it’s more of spikes in the pollen and a few other things, so she can take it as needed and still get the benefits from it.

Merck, the makers of non-drowsy Claritin products, has teamed up with Dancing with the Stars host Brooke Burke-Charvet this spring to create a new short film titled “The Difference is Clear”. The film is a crazy, over-the-top look at two versions of one busy woman’s day who is juggling work, life and family while also dealing with allergies. I have a little sneak peek for you:

When I seen the video for the first time, I had a great chuckle.. This is SERIOUSLY how my husband is with his allergies. They are literally disabling to him. I can tell if he’s taken his Claritin or not. Since I’m a smart woman, I keep some extras in my purse for those times when we suddenly find ourselves outdoors and he has forgotten to take it.

Last Wednesday I posted some pictures of my tie dyed cupcakes that I made. I received quite a bit of feedback wanting to know just how I pulled them off. I decided to share my simple trick. It’s a lot of fun and the kids really loved the more colorful cupcakes. I do have to say that the tie dyed cupcakes were inspired by Serendipity Mommy’s Rainbow Cupcakes. I loved the deep bold colors in her cupcakes. I loved the layered look too, but I wasn’t sure I had the patience to pull it off.. As it turns out, once I started I didn’t have the patience or the energy to pull off the layers. It didn’t matter because at the same time that hit me, it also hit me that I really could make these unique with a simple technique.

I started out with a box of Pillsbury’s Moist Supreme White Cake. I mixed it all up according the to directions. I grabbed cupcake holders (I chose to use a white holder so it would be neater to see the color through). I placed them in my cupcake pan. The recipe made 24 cupcakes, so if you don’t have 2 cupcake pans, you will have to bake one pan, then bake the other. They baked up good in 20 minutes, so it wasn’t too bad. Once you have your white mix completely mixed up, divide the batter into 4 bowls (or more depending on the amount of colors that you would like). Four colors is a really good amount for these. Too many colors could lead to a brown mess when you mix them. I started with my first color, which was red. I put a spoonful down in each of the 24 paper cupcake holders. Next I added a spoonful of blue, followed by a spoonful of yellow and a spoonful of green. Keep in mind you are looking to fill the cupcake wrappers only about 3/4 of the way, so the spoonfuls are actually small and not a heaping amount. You can add more or less of each color though and that will make each of the cupcakes unique.

Once you have them all in the cupcake wrappers, I tapped the pan a little on the counter. This flattened the batter into the wrappers and took out some of the air bubbles in the mix. I took a butter knife and went into the middle of each of them and did a quick swirl. Remember, you are NOT stirring to mix them (or you get a brown messy colored cupcake) you are just swirling to intertwine the colors and make them tie dyed. I chose to frost my cupcakes with orange buttercream. Orange wasn’t in my cupcake, so it was just another way to add a color. The buttercream recipe is simple and homemade. Before frosting, make sure you have completely cooled all of your cupcakes. If they are warm, your frosting will run. Here’s what I used for the frosting:

- 1 stick of unsalted butter (stick butter works better then tub butter)
- 1 Teaspoon of Vanilla Extract
- 2 1/2 Tablespoons of Milk (I used 1%)
- 1/4 Cup of Crisco
- 3 Cups of Powdered Sugar

If your frosting is too firm, you can add a little more milk. If your frosting is too runny, you can add a little more powdered sugar. I like the frosting more on the firm side because as it’s in your piping bag and warm hands it will get a little more runny. It’s also easier to pipe firmer frosting on to cupcakes.

You can add sprinkles or any decorations you wish to make them more colorful or fun.

Since I had some extra batter left after I made the 24 tie dyed cupcakes, I decided I would make a couple other fun creations. Since we are coming up on the NFL Football season and we live in an NFL town, I decided to make a few trials of game day cupcakes. These didn’t turn out as neat as the tie dyed ones, so I need to try again. I don’t think I swirled them enough.

Although I really liked the blue/green ones, the green and yellow ones didn’t really blend well. It’s really the swirl that makes the difference. You don’t want to scrap the sides, just a quick swirl, but if you don’t go down into the cupcake deep enough, you will end up with the second photos, which look more layered. I am going to try these again for game day, but will swirl more next time. The less colors you have the more swirling you have to do.

At any rate, that’s the simple trick to making a cute and fun cupcake that the kids and everyone will love! These cupcakes got so many compliments and they were eaten up right away! Just remember that when you are baking, things like cupcakes, that there are NO RULES. You can be as creative as you want. It’s your creation and your cupcake.. Bake and decorate them as you’d like!

I laugh.. Hard. Mostly because I could see myself doing this to my husband. The dreaded flash on my phone kills everything so it’s always off.

Never share news of a pregnancy via text message! LoL I do however, love the “No Longer In Service” message! Cleaver!

Awkward is right! I’m so glad that texting wasn’t a thing when I was a child. Based on my mother’s current texting skills I can imagine I’d have many of these!

I love autocorrect, but there are just some times.. just some.. It leaves you in a humored mess!

Even though April 15th is long past, there are still many people working on taxes. If you owe in your probably on a plan to take care of your debt. If you got money back, you’re working on how you can get more back next year! It’s a never ending cycle. I am forever saving receipts and trying to keep everything organized so that next year the process goes smoother and I am not in a frantic search at the last minute. The problem is, no matter WHAT I do, it happens. Every. Single. Year.

My husband suggested that we contact some IRS Tax Lawyers and see if they have a better format and system. Fried & Rosefelt are located in Washington DC, right near the IRS. They are going to be a great resource. There are many computer programs and even apps for your phone that allow you to scan receipts and organize things. It’s not so much the fear of the IRS or even taxes that bother me (of course we’ve never had to pay in), its more the worry that I will do something incomplete or worse mess up numbers and get audited years later. I am really happy that I have an accountant to help me with the process and if we aren’t sure, we just don’t include it. I am sure that is playing it safe, but better that then an audit.

For us, we don’t plan on our taxes every year. We never know what the tax refund will be from year to year, so we really just don’t plan too much on this extra money. It usually comes to us and we use it for a fun weekend with the kids, dinner, maybe a new toy for each of them and a gadget or something hubby and I want and then we put the rest in the bank and through the next 6 months it magically disappears. I’ve been saying for YEARS that I want to take the taxes and take a family vacation with the kids. With the price of airline tickets and all the other expenses of a vacation, we haven’t been able to do that yet. We are planning to do it soon though. My other problem was I didn’t want to take them when they were too young and wouldn’t remember. At the age of 8 and 11, I think they will remember everything well. Since my trip to Florida and Disney 2 years ago, the kids really want to get to Disney. We are currently working on that plan.

How do you work on your taxes? Are you organized through the year or a rush at the last minute person? Do you save your taxes for something special or do you use it to catch up on bills from the year?
