			<content:encoded><![CDATA[<p>This past week several of us got a chance to be a part of a great local gathering of specialty coffee professionals over a three day period in Easton, Pa&#8230; the Mid/Atlantic Northeast Barista Jam. During the event we heard from one of the pioneers in the organic coffee industry, Mark Inman, of Taylor Made Farms who spoke of the benefits of local and regional coffee companies being viable vs. the national and international companies. We had a roundtable on sustainable coffee and how to best work with the coffee farmers. Oswaldo Acevado, the grower of our Colombia Mesa de Los Santos, was on hand to speak on the issues and to share his knowledge and love of coffee with us.  He is truly a pioneer and an inspiration to many of us who use his coffee. </p>
<p>On the first evening, I got to be a judge for the espresso extraction competition. One of our top three from our machine came in second place over all! Scott competed and did very well especially considering he is not a barista by trade. On day two our espresso was used for the baristas to practice extraction and latte art.  We had a bunch of positive feedback on the espresso. We were also able to sit in on two excellent sessions during the day, the first was on proper barista technique and espresso extraction and the second was on the theory and practice of Latte Art, both were informative and practical. </p>
<p>On night two I got to judge the Latte Art throw down.  We had some amazing competitors and some really nice free pour artwork. During the whole event, we got to experiment with all sorts of brewing techniques, met a lot of great people in the industry and had a lot of fun and camaraderie. If you are a barista, shop owner or roaster in the area, come on down next time.  It’s a blast and a lot of valuable knowledge is shared so that we all can produce and make the best coffee for those who love the brew.</p>

Here are the instructions on how to brew our regular iced coffee and how to make our maple syrup iced coffee.  Enjoy!<br />

<p><strong>How To Brew Iced Coffee</strong><br />
• Brew 3 tablespoons of One Village Coffee Artist Blend per 1<br />
cup of hot water or brew the same amount of coffee you normally<br />
use  with half the amount of water<br />
• Pour into an airtight pitcher and let cool in refrigerator for<br />
several hours</p>
