According to the website &lt;a href="http://www.diabetes.org/"&gt;www.diabetes.org, &lt;/a&gt;1 in 5 Americans are at risk for developing diabetes.  This is what they had to say:&lt;br /&gt;&lt;blockquote&gt;Everyone should be aware of the risk factors for type 2 diabetes. We know that preventing diabetes is better than fighting the disease after it has developed. We also know that the Mediterranean diet can prevent the development of diabetes in the first place. Thus, in theory, we should be able to apply this approach to prevent the development of the disease.&lt;br /&gt;&lt;br /&gt;It sounds easy enough, but the solution is not so simple. How, for example, does one become Greek, or French, or Spanish, or Italian, if you live on this side of the Atlantic? Yes, they are healthy. And, yes, the closer you adhere to their diet, the less likely you are to develop diabetes. But we are not them, nor do we have their food, their relaxed lifestyle, or their cultural predisposition toward daily life activity.&lt;br /&gt;&lt;br /&gt;So how do we take the Mediterranean diet out of the Mediterranean, and still make it work for us? The key is, just as they do in their region, to relax a bit. Don’t try to force fit every iota of their food choices and behavioral habits into our lives. More specifically, don’t try to rigidly mirror the fats, carbs, and proteins of their diets. They aren’t micromanaging molecules, and you shouldn’t either.&lt;br /&gt;&lt;br /&gt;The alternative is to try a bit softer. Emulate the principles of the Mediterranean diet rather than the exhaustive details. So what are those general rules?&lt;br /&gt;&lt;br /&gt;Eat food. If it ain’t food, don’t eat it. All healthy cultures eat food, and avoid synthetics. Whether they’re eating brie on baguettes, pasta al pomodoro, or a standard Greek salad, everything they do eat is a real food – no synthetics, no hydrogenated oils, and no dyes. Just food.&lt;br /&gt;&lt;br /&gt;Love your food … really. To love your food, you need to eat small by the bite. Have you ever watched Italians eat? No one is gobbling their burrito in the car at the red light, no one orders massive quantities of food, or feels that 39 cents justifies an extra pound of French fries. As importantly, if you love your food, you need to take your time. You have to take 2 hours to eat your lunch, but at least take 30 minutes to enjoy it.&lt;br /&gt;&lt;br /&gt;When you eat small and take your time, not only do you enjoy it more, but you give your brain a chance to register that you are full before you overeat. Thus, you control portions; thus you control calories; thus you control your weight. And all you have done is learned to love your food again.&lt;br /&gt;&lt;br /&gt;The Mediterranean diet clearly helps prevent the onset of diabetes for those living in the Mediterranean region. To get those results on our continent, we can’t teleport to and from the Portofino piazza, but we can apply the general rules that make their successful lifestyle work.&lt;br /&gt;&lt;br /&gt;Relax. Eat food. Love your food again. But just imagine how much worse it would be if you got a diagnosis of a long term health condition that you could of prevented or reversed!&lt;br /&gt;&lt;br /&gt;World Kidney day is this Thursday, March 12. The article, &lt;a href="http://news.yahoo.com/s/livescience/20080911/sc_livescience/naturalcurespackdangerouschemicals"&gt;"Natural Cures Pack Dangerous Chemicals,"&lt;/a&gt; reports about a study completed by Boston University that found dangerous levels of chemicals in some well known "natural cures."&lt;br /&gt;&lt;br /&gt;The cures they studied are part of the Ayurveda tradition from India.  The article wrote:&lt;br /&gt;&lt;blockquote&gt;A team from Boston University found that more than 20 percent of nearly 200 samples of various ayurvedic cures contained dangerous amounts of lead, arsenic and mercury. Sometimes the presence of metals was a result of sloppy manufacturing; other times the metals were added deliberately as part of the cure.&lt;/blockquote&gt;&lt;br /&gt;As you may have suspected, the study was not cited and I can't find it online!  But it does help to raise the bar to the level of awareness that we should all have when buying and using natural medicines.&lt;br /&gt;&lt;br /&gt;Some critics of the article say the study used unreliable sources that were purchased from online companies only.  They also point out the fact that there are reputable brands that sell Ayurveda solutions.&lt;br /&gt;&lt;br /&gt;The very makeup of the Ayurveda tradition makes me question the fanatics on both sides.  First, the Ayurveda tradition of natural medicine uses a combination of herbs, metals and gems to develop tailored mixtures for each person.  The intake of metals along is enough to make me question who is selling this to me and what is the source of these ingredients.&lt;br /&gt;&lt;br /&gt;The key to buying herbal and natural medicines is to research, learn and ask questions.  There are naturalistic practitioners, such as Dr. Darrell Misak of &lt;a href="http://www.pittsburghalternativehealth.com/"&gt;Pittsburgh Alternative Health&lt;/a&gt; who spoke at the Farm to Table conference last year, that can help guide you through this process if you are hesitant to trust information you find for yourself.&lt;br /&gt;&lt;br /&gt;Ironically, Dr. Misak's recent newsletter was talking about this same issue.  Dr. Misak recommended the &lt;a href="http://www.consumerlab.com/"&gt;Consumer Lab web site&lt;/a&gt; to research the supplements you are using.  He also warns that in times of slow economy, people should not sacrifice the quality of health supplements and food they intake.&lt;br /&gt;&lt;br /&gt;Dr. Misak states:&lt;br /&gt;&lt;blockquote&gt;I have told you that your body is composed of water, protein, fat, carbohydrates and nutrients.  Unfortunately, every molecule you consume or absorb through some body orifice must be broken down and either become supportive or a burden to your body.  We are bio-accumulators!  Your body has and continues to store multiple chemicals and environmental toxins as proven within the article found in &lt;a href="http://ngm.nationalgeographic.com/2006/10/toxic-people/duncan-text"&gt;October 2006 National Geographic magazine&lt;/a&gt;.  So why would you want to take supplements that possibly add to your toxin load or don't actually have enough nutrients in them to accomplish what you are taking them for?&lt;br /&gt;&lt;/blockquote&gt;&lt;br /&gt;&lt;br /&gt;This is advice that we can take to the bank!  The best advice I can give is to talk to someone who you can trust.   I like to contact local experts that I can really relate to and whose advice is not a sales gimmick or lost in translation. &lt;br /&gt;&lt;br /&gt;You can find local practitioners in the yellow pages or online directories. &lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;A note about conducting medical research online&lt;/span&gt;&lt;br /&gt;There are many sites on the web that cater to expert and non-expert medical knowledge. You have go to their web site if you want to learn how to preserve your food or even if already know a few techniques.&lt;br /&gt;&lt;br /&gt;They talk about the different methods of canning: methods you should and shouldn't use, methods for different types of produce, safety methods, and even a troubleshooting guide.&lt;br /&gt;&lt;br /&gt;They talk about more than canning! I can only imagine how much I would be drooling had this burger been in chili and I had just come in from some outdoor activity that occurred in two feet of snow... I'm just glad that you can purchase local meat in bulk. I got an 1/8 of a cow from Ron and it only filled up 3/4 of my small freezer. There was 18 lbs of ground beef in 1 lb bricks. They looked smaller than what you usally get in the store, but that's because it's not shot full of air and layed out over a pan of styrofoam. So you can easily fit 1/8 of a cow into your freezer.&lt;br /&gt;&lt;br /&gt;Other local products that you can buy during the winter are bread, flour, eggs, cheese and milk. Someone from a local apple orchard told me they preserve apples over the winter by placing them in a storage container and continually removing the gas that contributes to the decay of apples.&lt;br /&gt;&lt;br /&gt;Some farms have greenhouses that they operate throughout the winter. Off the top of my head, I can think of Mung Dynasty and &lt;a href="http://www.milestonecentersinc.org/" target="_blank"&gt;Milestone&lt;/a&gt;, both local to Pittsburgh. Mung Dynasty grows a variety of sprouts, while Milestone grows specialty produce through a hydroponic system.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Patronizing Local Restaurants:&lt;/strong&gt; Although we should all strive to eat at home as much as possible, if you are going out to eat, there are several restaurants in the Pittsburgh area that use local food within their menu. A big one in my mind is the &lt;a href="http://www.bigburrito.com/%20" target="_blank"&gt;Big Burrito Group&lt;/a&gt; and they have several different types of restaurants. Also &lt;a href="http://www.sixpennkitchen.com/" target="_blank"&gt;Six Penn Kitchen&lt;/a&gt; in downtown Pittsburgh is a beautiful restaurant and they are owned by the Eat n Park Hospitality Group. Both chefs from these restaurants came to our first Farm to Table conference.&lt;br /&gt;&lt;br /&gt;The Pittsburgh Post Gazette has a good article entitled &lt;a href="http://www.post-gazette.com/pg/06183/702183-34.stm" target="_blank"&gt;"Restaurants here serve up trend of buying —and eating —locally"&lt;/a&gt;, written by my favorite local journalist, Marlene Parrish. Marlene states:&lt;br /&gt;&lt;blockquote&gt;There are about 50 restaurants and chefs in Western Pennsylvania buying fresh, local and seasonal products. Purchases can be as homespun as potatoes and onions or as upscale as micro greens and cheeses. The design features more reliable navigation, easily accessible contact forms, a fully integrated blog and easier access to important information. &lt;br /&gt;&lt;br /&gt;A key feature includes a new &lt;a href="flu_shot_events.html"&gt;Flu Shot Event Locations&lt;/a&gt; listing page.  Throughout the flu shot season, Pathways to SmartCare organizes in-house flu shot events for businesses, organizations, community centers and local health events.  Although there are many locations for private businesses, we have only published those that are open to the public. We had some really enthusiastic people give us some feedback and here are the amazing results from the first quarter of 2008:&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Weight Loss&lt;/span&gt;&lt;br /&gt;•72% have noticed a change in weight&lt;br /&gt;•Participants who lost weight averaged 6.96 lbs lost in the first 8 weeks of the program&lt;br /&gt;•66% reported their clothes are fitting looser&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Nutrition&lt;/span&gt;&lt;br /&gt;•89% report they have decreased their portion size&lt;br /&gt;•83% report they have decreased snacking in between meals&lt;br /&gt;•100% have decreased the amount of "fake foods" consumed&lt;br /&gt;•88.9% have decreased their intake of trans-fat-hydrogenated oils&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Stress Management&lt;/span&gt;&lt;br /&gt;•77.8% of participants have incorporated the program's stress management techniques&lt;br /&gt;•Exercise: 35,608,299 Steps taken in the first 8 weeks. Here are a few local food resource suggestions sent in from some of our readers:&lt;br /&gt;&lt;br /&gt;A great resource for local organic grass fed beef is &lt;a href="http://www.organicgrassfedbeef.com/" target="_blank"&gt;"VanBuren's All"&lt;/a&gt;, a family run operation out of Lisbon, Oh.  It's about 35 miles west of the Pittsburgh Airport.&lt;br /&gt;&lt;br /&gt;Also,  a few of our friends from last year's event have sent us their web site links.  The &lt;a href="http://www.alleghenyfront.org/" target="_blank"&gt;Allegheny Front&lt;/a&gt; provides "environmental radio for Western Pennsylvania".  Their site has articles, podcasts and resources not only for local food but for environmental issues that affect all Western Pennsylvanians.    &lt;a href="http://www.hahnnaturalfoods.com/" target="_blank"&gt;Hahn Natural Foods&lt;/a&gt; is a locally owned company that offers hard to find natural foods and is a great supporter of the local food movement here in Pittsburgh.  Lastly, &lt;a href="http://www.slowfoodpgh.com/aboutus.html" target="_blank"&gt;Slow Food Pittsburgh&lt;/a&gt; is a business that describes themselves as "an international educational organization".  They organize events to call attention to local food resources and the celebration of cooking.&lt;br /&gt;&lt;br /&gt;On a closing note, local food has a very active advocate at the Pittsburgh Post-Gazette.  &lt;a href="http://www.post-gazette.com/pg/07219/807579-34.stm" target="_blank"&gt;Marlene Parrish&lt;/a&gt; is a columnist for the Food section and maintains a &lt;a href="http://www.post-gazette.com/pg/07219/807579-34.stm" target="_blank"&gt;blog&lt;/a&gt; writing of her experiences trying to stick to eating only local foods.  Her blog started early in the 2007 growing season.  It should prove interesting through the winter. That's not too far off, less than a month!  The program is focusing on getting 250,000 employees in the Pittsburgh region to pledge to get healthy this year in honor of Pittsburgh's 250 birthday.&lt;/p&gt;&lt;br /&gt;&lt;p&gt;For the first month, employees will record their current health status through screenings and lifestyle review.  Then, for January participants will learn their first step to getting healthy with Dr. Will Clower's healthy eating program "The Path".&lt;/p&gt;&lt;br /&gt;&lt;p&gt;The Path program was designed by &lt;a href="http://www.willclower.com/about.php"&gt;Will Clower&lt;/a&gt;, who holds a doctorate in nueroscience and has studied cultural eating habits while studying and working in France.&lt;/p&gt;&lt;br /&gt;&lt;p&gt;Pathways to SmartCare has teamed with Dr. Clower to deliver a combination of both of our powerful wellness program offerings. We continue to set up new drop off sites, as well as adding several for the subscription program that we are now calling "Farm to Pitt" because of the large number of subscribers and locations we are setting up in the Oakland and Pitt Campus area.&lt;/p&gt;The produce received the first week included ripe strawberries (that were delicious), kale, salad greens and a loaf of wheat berry bread among others.  Last week, the rhubarb was in fine form.&lt;br /&gt;&lt;br /&gt;&lt;p&gt;There are more resources listed on our &lt;a href="https://pathwayswellnessprogram.com/farm_to_table.html"&gt;Eating Healthy resource list&lt;/a&gt; on the website, including recipes that you can use to cook up some of the food subscription produce.
