The northern Italian version uses white wine while the southern version uses red. This dish takes about an hour to prepare on a low simmer, and can be enjoyed over pasta or with some rustic bread.&lt;br&gt;&lt;br&gt;I couldn&amp;#39;t be more happy with the result. Hope you all were able to successfully battle the crowds and hope you all had a wonderful Thanksgiving with friends and family. I spent ours at a friend&amp;#39;s home and was asked to bring dessert. I wanted to bake something fairly traditional, reminiscent of the holidays; yet I didn&amp;#39;t want to make the typical holiday dessert - aka. a plain ol&amp;#39; pumpkin pie.&lt;br&gt;&lt;br&gt;For some reason, I never liked pumpkin pie growing up. But I liked pumpkin as a flavor and ingredient. So, I decided on making a pumpkin cheesecake (along with a double crust french apple pie, more on that later). And, instead of the typical gingersnap or graham cracker crust, I made an almond cake as the base. It turned out amazingly moist, light (as far as cheesecakes can go), yet creamy and rich with flavor. It was the perfect end to a great Thanksgiving meal. It will also be perfect for Christmas, so do give it a try. I&amp;#39;ve been on a hiatus from blogging mainly because my life&amp;#39;s been so crazy these past two months. It&amp;#39;s not that I haven&amp;#39;t cooked or baked, I just haven&amp;#39;t had time to share my creations. Between finding out we&amp;#39;ll be plus one next year and moving into a new place, it&amp;#39;s just been a battle to find time for anything.&lt;br&gt;&lt;br&gt;So, I&amp;#39;m finally back. Last night, I hosted my official house warming party - a potluck of sorts. I baked 2 desserts - a chocolate &amp;amp; rum pecan pie and a roasted pear crème brûlèe tart; &lt;i&gt;and&lt;/i&gt; I made two mains - an amazing pulled pork sandwich with the best coleslaw you can imagine, along with a &lt;a href=&quot;http://www.phoodista.com/2011/08/grilled-rib-eye-steak-with-chipotle.html&quot; target=&quot;_blank&quot;&gt;rib-eye steak&lt;/a&gt; with chipotle honey glaze topped with a red pepper relish. I knew at that moment that I wanted to make mango salsa.&lt;br&gt;&lt;br&gt;The first thing that comes to mind when I think of mango salsa is the one from the mexican grill restaurant, &lt;a href=&quot;http://www.lasalsa.com/&quot;&gt;La Salsa&lt;/a&gt;. Although it is by no means the world&amp;#39;s best mango salsa, I always look forward to it since it&amp;#39;s only in season for a few weeks out of the year. Plus, I always eat spoonfuls of that salsa on its own, and &lt;i&gt;love&lt;/i&gt; it.&lt;br&gt;&lt;br&gt;I decided to grill some jerk chicken and pair it with some homemade mango salsa. I love how sweet and spicy things always complement each other so well. The jerk chicken is perfect enough to eat alone. If you simply add the glaze to the jerk chicken and stop there, the flavors will dance in your mouth. Add the mango salsa, and you will have fireworks. This is truly a meal that holds insanely well together, yet can be thoroughly enjoyed in parts. Through time, I&amp;#39;ve come to realize not everything that tastes good requires a ton of fancy ingredients. I&amp;#39;ve also discovered not everything that appears complicated is actually complicated. And, although it&amp;#39;s hard to admit, not everything that is complicated will end up tasting good.&lt;br&gt;&lt;br&gt;This is pure comfort and simplicity at its best. Slow roasted vegetables and chicken seasoned with fresh herbs are an excellent weeknight dinner meal as it doesn&amp;#39;t require much hands-on preparation time. I love how the fresh rosemary and thyme really enhance the flavors of the roasted carrots and potatoes, and how the olives bring out the flavor in the herbed chicken leg. It is an amazing provençal dish and really brings back flavors of comfort food in southern France. A buckle is a type of coffeecake made with fruit (usually blueberries) and a sugar-spice topping. The name apparently comes from the way the cake &amp;quot;buckles&amp;quot; as it bakes (rising around its fruit topping, which is also sinking) so that the cake finishes with an uneven top surface.&lt;br&gt;&lt;br&gt;I decided to make a traditional blueberry buckle and added some almonds for an extra crunch (that, and I love almonds). It is a very moist cake and is best served hot out of the oven (with whipped cream or ice cream), or warm. If you let it sit over 12 hours or so, the buckle starts to become mushy. Somehow, it just feels wrong when you have to smear out jam like you&amp;#39;re spreading jello across a buttered toast.&lt;br&gt;&lt;br&gt;The best part of homemade jam is that you can make it without pectin. The flavors are richer as you can add more fruit, make it a bit chunkier [or not], less sugary, and skip all the preservatives. But after all the days of taking my uncle around from the coast to wine country, I was a bit tired from all the fun I was having so I didn&amp;#39;t want to spend more than half an hour to prepare a meal. &lt;br&gt;&lt;br&gt;Yes, there are days when I feel so lazy that I don&amp;#39;t even want to go out to find food. Sometimes, it&amp;#39;s simpler just making dinner yourself. This is a quick and simple way to serve salmon. I love the fresh basil paired with the tangy pineapple and a kick of spicyness from the jalapeño. You can easily serve the salsa over chicken as well. I never liked the lemon meringue pie (or any meringue pie for that matter), mostly because I thought meringue tasted strange. But as I got older, I think meringue grew on me. This pie is a perfect one for summer - a slightly tart but sweet lemon curd balanced out perfectly by the fluffy meringue. Last weekend was the first day the farms opened for blueberry picking. I was so excited that despite the rain - typical of Portland, atypical of the summers - I still went. It wasn&amp;#39;t quite as fun with the rain and the muddy fields. I gave in after less than half an hour mainly because I found several critters falling from the plants into my berry bucket (spiders and pincher bugs, yuck). I spent most of the time trying to fish them out with a stick that I thought maybe blueberry picking isn&amp;#39;t as fun as strawberry picking. Maybe there are more bugs in blueberries.. or maybe it&amp;#39;s just the rain? A taco can be made with a variety of fillings which makes it a versatile dish. Plus, you eat it with your hands, so there are no utensils to wash later :).&lt;br&gt;&lt;br&gt;Usually on those lazy evening when I don&amp;#39;t feel like cooking yet I don&amp;#39;t want to go out and eat, I make taco&amp;#39;s with pork or chicken. But this time, I decided to try a fish version - with tilapia. I grilled some bell peppers, onions, and some sweet corn. Then I pan-seared some tilapia with a sprinkling of a cumin, chile, and garlic.
