<p>I&#8217;ve gotta be honest with you guys. </p>
<p>Searching for a home abroad (when you&#8217;re not physically abroad yet) can be a little weird. Think House Hunters International, but with more marital stress and less money. I mean, I was fully committed to at least three different places all within the same hour and when I changed my mind for the 4th time, Bjork went for a drive to McDonald&#8217;s. At least we have some stress management tactics.</p>

<p>To avoid emotional and physical meltdowns at the airport, we had planned to leave all our stuff here and find a furnished apartment that would have everything we&#8217;d need. Silverware, desks, espresso makers&#8230; that sort of thing.</p>
<p>But then we found out that &#8220;furnished&#8221; apartments are those that come with refrigerators, stoves, and beds. And maybe air conditioners and definitely not water heaters.  Extra sweating and shorter showers.  This is turning out to be a real adventure after all.</p>
<p>If someone is going to have to haul my blender over there in a suitcase with a cooler of malt ingredients in order for me to have a healthy double chocolate malt every morning, I volunteer my husband. Because these malts are BOMB. Wait, I think I said that about the <a title="Rustic Garlic Butter Pasta with Roasted Broccoli" href="http://pinchofyum.com/rustic-garlic-butter-pasta">pasta</a>.</p>

<p>I&#8217;m sneaking bites of brussel sprout salad from the fridge every 3 minutes. I think that means I&#8217;m a grown up now.</p>
<p>Brussel sprouts in and of themselves are kind of fun, but really, how fun are <em>shaved </em>brussel sprouts?  This salad is full of fun things. Like using a nifty mandoline, making your house smell like bacon, and whisking emulsions. Just try saying that. Emuuuulsion.</p>

<p>But it’s not fun to get cut with the mandoline, eat all the bacon impulsively, and whisk dressing onto your new shirt, so don’t do any of that.</p>
<p>DO make this salad and be happy with your crunchy little self, because it is a flavor and texture wonderland. There’s so much to love: smoky bacon, chopped almonds, sharp shredded cheese, citrus and shallot vinaigrette, and those cute green balls of joy – brussel sprouts – shaved into adorable, um, shreddings.</p>
<p>My crazy adorable brothers are proof that this salad is serious YUM.  Even these wild ones looooved the sprouts.</p>

<p>Speaking of new shirts with oil on them, remember that other shirt that I told you about? The Mossimo swim cover-up that I thought was a REAL shirt, and then made fun of myself for buying more Mossimo?  It all came full circle yesterday.  As I was making this salad, Bjork asked me where I got my new (oil-stained) shirt.  After giving myself a minor neck injury trying to see the tag when I really could have just asked him to look for me, good ol’ Mossimo made its second appearance in my life within, like, 48 hours.</p>
<p>Does Mossimo make you think of a suave middle-aged man with dark longish wavy slicked back hair?</p>
<p>I don’t know. I just try to be honest.</p>
<p>Now let&#8217;s eat bacon.</p>

<li class="ingredient">1 cup grated Pecorino-Romano cheese</li>

<li class="instruction">Cook and crumble the bacon.</li>
<li class="instruction">Squeeze the juice of the lemon and orange into a large bowl with the shallots. Pour the oil into the bowl in a steady stream, whisking to form an emulsion (it should appear more creamy and less transparent). Season generously with salt and pepper. Refrigerate until ready to use.</li>
<li class="instruction">Using a mandoline, shave the brussel sprouts (not including the stems) into thin slices to make a shredded/slaw texture. I rinsed and dried mine again after shaving them just to be sure they were totally clean.</li>
<li class="instruction">Place the almonds in a food processor and pulse until chopped coarsely. Add 3/4 of the almonds, cheese, and bacon to the shredded brussel sprouts; toss to combine. When ready to serve, toss with the dressing and sprinkle remaining almonds, cheese, and bacon over the top. If needed, add a few more tablespoons of olive oil and toss.</li>

<p>This morning I melted butter, vanilla, and brown sugar into a sauce and pretended like it didn&#8217;t have full control of my life.  </p>

And as I&#8217;m typing this I&#8217;m seeing an ad on my sidebar showing an Under Armour girl doing a yoga and a head stand.  I&#8217;m sorry for false advertising.  I am not doing yoga and headstands today.  I am eating this sauce.</p>
<p>This cake is <em>so</em> good.  </p>

<p>I wish I had better words for it but my brain comatose with chocolate. If I were to sum up what I learned today, it&#8217;s that gooey chocolate cake should always be topped with caramelized bananas and melted peanut butter and that it should be eaten for breakfast.</p>

<p>But what I really learned is that Alex and Sonja (from A Couple Cooks) are on to something here.  They pretend to be doing this <a href="http://www.acouplecooks.com/2012/04/cambodia-the-daughters-project/">good-hearted work</a> that&#8217;s helping people in Cambodia, but come ON.  They&#8217;re just in it for the yummy food like this cake.</p>
<p>(I&#8217;m totally kidding.)  </p>
<p>Alex and Sonja recently went to Cambodia, and if you haven&#8217;t already looked at their gorgeous photos, please stop reading. Go <a href="http://www.acouplecooks.com/2012/04/cambodia-snapshots/">check them out</a>.</p>
<p>But besides taking gorgeous photos of this beautiful country, they are working on a unique cookbook featuring recipes from the <a href="http://www.acouplecooks.com/2012/04/cambodia-at-the-green-mango-cafe/">Green Mango Cafe</a>, which is a vocational program for at-risk women and girls. The cookbook will be a fundraising effort to help support the Center for Global Impact, which is the organization that helps the Green Mango cafe to be thriving place for Cambodian women and girls to learn and work.  </p>
<p>I am honored that they would trust me with such a deep, dark, chocolatey, buttery, sugary task such as making and photographing this cake. Rest assured, I take my job as dessert eater veryveryvery seriously.</p>

<li class="instruction">Preheat the oven to 350 degrees and lightly grease or butter the sides of a 9&#215;13 glass baking dish. In a medium bowl, whisk the flour with the baking powder, salt, and cocoa.</li>
<li class="instruction">In a standing electric mixer, beat 2 sticks of butter with the granulated sugar at medium speed until very fluffy, about 5 minutes. Beat in the eggs one at a time. Add the vanilla. Beat in the flour mixture and the milk.</li>
<li class="instruction">In a small bowl, blend the remaining stick of butter with the brown sugar and spread it in the baking dish. Arrange the bananas, cut sides down, in the dish. Spoon dollops of the peanut butter into the dish and fill in the gaps with the chocolate batter. Bake for 45 minutes. Let the cake cool for 10 minutes, then loosen the edges with a knife and invert in onto a platter. Let the cake cool slightly, then cut into squares and serve.</li>

<p>I made HALF of this amount and baked it in a smaller dish. It still took a full 45 minutes to bake through.</p>
<p>For an extra gooey addition: mix 4 tablespoons of butter with 1/3 cup brown sugar and 1/2 teaspoon vanilla, then melt it in the microwave for 20 seconds at a time, stirring after each interval, for a total of 1 minute. Pour the warm sauce over the cake.</p>

<p>I didn&#8217;t actually discover that it was a swim cover up until after I had bought it and imagined myself wearing it about 50 different adorable ways. Then I spotted the word &#8220;swim&#8221; floating amidst the pile of clothes on my bathroom floor.  I pulled it out from under my weeks worth of wannabe-summer outfits only to find that my new adorable shirt wasn&#8217;t actually a shirt.</p>
<p>And&#8230; it was Mossimo brand. Ew.</p>
<p>I thought Bjork would encourage me to keep it and wear it anyways because that&#8217;s how cute it was. After telling him the sad story of how my new shirt wasn&#8217;t really a shirt, I brought it out to him and waited for him to give his approval.</p>
<p>He commented on the weird fabric instead.</p>
<p>Why and how does my husband care about fabric? Come to think of it, he ate an avocado smooshed on naan and topped with olive oil and sea salt for dinner. If I could ignore how proud I am that my very own man made such a wonderful dinner, I would wonder if everything&#8217;s ok with him.</p>

<p>Oh, hey, this happened, too.  Between the &#8220;shirt&#8221; and the one-shot-photo-shoot, I&#8217;m a winner today.</p>
<p>I dunno, maybe it&#8217;s all the butter soaked mushrooms I&#8217;ve been eating. Maybe it&#8217;s the smell of sauteing garlic messing with my head.  All I know is that this pasta is BOMB. I&#8217;ve always loved crispy roasted broccoli, and I&#8217;ve always loved cheese, but mushrooms?  Dang.</p>
<p>You guys, I would not lie about this. The mushrooms.are.ahhhmazing. It&#8217;s incredible what a little butter and garlic can do to make me fall in love with fungi.</p>

<li class="ingredient">sea salt</li>
<li class="ingredient">sharp, hard cheese for topping (like Parmesan)</li>

<li class="instruction">Preheat oven to 400 degrees. Toss broccoli, oil, and herbs; scatter on a baking sheet and season with salt and pepper. Roast for 20-30 minutes, stirring every so often to avoid burning. I usually roast until the outsides are just slightly crispy.</li>
<li class="instruction">Cook pasta according to directions. Melt butter in a large saucepan over medium high heat. Add mushrooms and garlic and season very generously with salt. Stir frequently until the mushrooms have a lightly browned outside and are soft, buttery and tasty (about 15-20 minutes).</li>
<li class="instruction">Stir in the flour with the butter and mushrooms if there is too much moisture. Add pasta and stir until well combined. Stir in roasted broccoli and top with cheese.</li>

<p>I know a lot of people don&#8217;t love showers, of the gifting variety, but I love babies and I love baby showers.  All 3 that I&#8217;ve ever been to, anyways.  My best friend is having a baby (squee!) so this weekend we threw a little baby shindig for her soon-to-be newborn baby boy.  </p>
<p>To honor his precious life, we shot cutesy dessert shooters, which sounds way more trashy than it was.  It was more classy. More like licked desserts out of mini glasses and ate the Oreo crumbs off the floor.  And then sniffed candy bars melted into diapers for a prize.  Why is that fun?</p>
<p>In my perfect world, I would pay someone to massage my scalp with one of those little head scratcher thingies that looks like a stick with wire legs while I ate, took, shot, inhaled, licked shooters of peanut butter pie filling.  </p>
<p>Then I would pay that someone not to tell anyone about how my face smelled like cream cheese, or about the Oreo crumbles in my hair, or about the way I&#8217;d intentionally put less filling in each shooter glass so I&#8217;d have extra to lick out of the bowl.  And on second thought, I wouldn&#8217;t pay them, because it would be my perfect world.</p>

<li class="instruction">Beat cream cheese and peanut butter until smooth.</li>
<li class="instruction">Add sweetened condensed milk and vanilla and beat until smooth and creamy. Add powdered sugar and beat until the mixture thickens slightly.</li>
<li class="instruction">Fold in whipped cream, or add liquid heavy whipping cream and continue to beat until the mixture gets a little bit fluffy. Refrigerate mixture until ready to serve.</li>
<li class="instruction">Stir melted butter in with crushed Oreos and press 1 teaspoon crumbs into the bottoms of dessert shooter cups. Pour peanut butter mixture into a plastic baggie, snip the corner, and pipe into the cups (on top of the crumbs). Sprinkle the tops with another 1/2 teaspoon of crumbs. Top with a sprinkle of sea salt for an extra sweet-salty combo. Refrigerate until ready to serve.</li>

<h2>Things we learned in March</h2>
<h3>It&#8217;s okay to take a break.</h3>
<p>Blogging is hard work. Posting two to three times a week (or more!), maintaining a job, taking care of energetic kids, staying involved in church, getting ready to <a href="http://pinchofyum.com/young-and-wild-and-free" title="Young and Wild and Free">move abroad</a>, doing the 1,000 other things you have to do&#8230; it&#8217;s crazy sometimes to imagine all that you have on your plate. The hard thing with a blog is that it often times seems like if you miss a few posts then everything will fall apart. </p>
<p>It&#8217;s true that you want to do your best to maintain a good stream of quality posts, but it doesn&#8217;t hurt to take a break. Especially if you&#8217;re feeling overwhelmed.</p>
<p>Lindsay decided to take last week off to take some time to breathe and prepare for our year long trip to the Philippines. Here&#8217;s the thing: On Monday, when she didn&#8217;t post anything, Pinch of Yum saw it&#8217;s #2 highest traffic day in April (24,404 pageviews) and #1 most profitable income day in April ($229.22).</p>

<p>Imagine your blog is a coal powered train. Every post you do is putting coal into the fire that powers the train. The higher the quality the coal is, and the more often you put the coal in, the faster the train goes. If you stop putting coal in for a little bit, will the train suddenly stop? Not at all. It will keep chugging along at a pretty good pace. If you stop putting coal in all together, will the train stop? Yes. But it&#8217;s okay to take a break for a little bit and then start back with your regular routine. The train can keep going forward from the coal you&#8217;ve put into it in the past. </p>
<h3>The best product is your own product.</h3>
<p>Pinch of Yum officially has it&#8217;s own product! As you can tell from the numbers, we&#8217;ve learned that one of the best products is your own product. </p>
<p>It was a ton of work to create the eBook and video tutorials that make up Tasty Food Photography, but it&#8217;s been such a rewarding experience to finally put it into the world. The highlight of this whole process has been getting emails or messages from people who have gotten their first food photo accepted to Tastespotting or Foodgawker using the tips the learned in Tasty Food Photography. <h2>Tips and Takeaways</h2>
<h3>Super Sidebar</h3>
<p>We&#8217;ve been experimenting with the sidebar on Pinch of Yum. </p>
<p>I&#8217;m excited about the current setup that we have, and I think it will the most lucrative setup that we&#8217;ve ever had for the sidebar. Here&#8217;s the setup:</p>
<ul>
<li>A 600 x 300 BlogHer ad at the very top of the sidebar (we just added this May 1st).</li>
<li>A 600 x 300 AdBrite ad that shows up with BlogHer doesn&#8217;t have any ads to show.</li>
<li>3 200 x 250 Google Adsense ads spaced throughout the sidebar.</li>
</ul>
<p>One of advantages of this setup is that BlogHer pays based on total page views (CPM), while Google AdSense pays based on the number of clicks (CPC). There are times when Google AdSense will run a campaign that has a really high CPC, like last month when we earned over $100 dollars in a day with just AdSense. However, with a food blog, it&#8217;s more likely to get people that are just visiting to see a recipe and then leave. Food blogs aren&#8217;t going to get a lot of people clicking on ads. That&#8217;s why the BlogHer setup (that pays based on page views) is important to have.</p>
<p>The AdBrite ad is just a backup in case BlogHer doesn&#8217;t have any ad to show. The reason we are using an AdBrite ad for backup instead of another Google AdSense ad is because Google AdSense only allows you to use three image/media ads per page.</p>

<p>A change that involves Bjork and I moving to the Philippines for a year. The one in Southeast Asia that’s made up of 7,000 islands. The one that&#8217;s 8,000 miles away. In 6 weeks. Moving. There.</p>
<p>BAHHHHH!</p>

<p>It&#8217;s seriously 100% true. We’ll be there for one year, and I would love to tell you that we’re just going to be soaking up the tropical sun, but that would be bad news for one white-skinned-spf-100-extreme-sunburn Scandinavian boy.</p>
<p>Instead, we’ll be working in the shade at an orphanage in Cebu City. It’s called the <a href="http://www.cscshelter.org/">Children’s Shelter of Cebu</a> and you might have seen it mentioned <a href="http://pinchofyum.com/about/childrens-shelter-of-cebu">here</a> before because my siblings Roselyn, Romeo, and Rodrigo lived at this shelter for several years before being adopted. Up until this point, we have donated all of our blog income to the shelter because we really love what they are doing for kids. And now&#8230; we&#8217;re going there ourselves!</p>

<p>Here’s the official FAQ.</p>
<p><strong>How did it happen?</strong> We were planning to visit Cebu this summer – Bjork has never been there, and we wanted to do some international travel, so it seemed like a fun way to spend three weeks in June. A few weeks ago, we got a call from the director of the organization asking us if we’d be willing to extend our stay from three weeks to one year. After some serious conversations, prayer, and extreme-<a title="Salted Double Chocolate Muffins" href="http://pinchofyum.com/salted-double-chocolate-muffins">stress-eating</a>, we decided we were ready and willing.</p>
<p><strong>What will you be doing?</strong> I’ll be teaching a small class of Level C (upper elementary) kids from the orphanage at the Children of Hope school. Bjork will work remotely part-time in his current job. He’ll also be volunteering at the shelter with technology-related projects and leading epic games of t-ball, because he does stuff like that.</p>
<p><strong>Where will you live?</strong> In a furnished Cebuano apartment, which, from what I hear, comes with a few free baby lizards. Not cool.</p>
<p><strong>How will you get around in Cebu? </strong>Hello <a href="http://www.youtube.com/watch?v=tuIQHiAHExg">Jeepney</a>.</p>
<p><strong>What will you do with your house?</strong> Rent it out!</p>
<p><strong>What will you do with your cars?</strong> Sell them! If you’re in the market for a sweet SUV, comment below. I’ll even throw in a pan of brownies with the deal.</p>
<p><strong>What will you do with your stuff?</strong> Pack it up and store it in Grandma’s basement. Thanks, Gma!</p>
<p><strong>What will you do with your hair in that heat and humidity?</strong> I feel a 365-day pony tail nub coming on. And yes, I meant to say nub.  I did not time that haircut well.</p>
<p><strong>What do you think you’ll miss most?</strong> Family time, wide open spaces, appropriate temperatures, appropriate hair, and our bestie couples’ soon-to-be newborn baby boy.</p>
<p><strong>What are you most excited for?</strong> Friends and family to come and visit, trying out a non-Western lifestyle, and a changed heart.</p>
<p><strong>What will happen to Pinch of Yum?</strong> The flavor (literally) might change, you might see less chocolate and more Filipino kids, and mangoes could take over indefinitely. But really, I plan to keep things going with posts about our new life in the Philippines as well as the same ol&#8217; yummy recipes.  Hopefully you guys can handle the American-style Filipino flair.</p>

<p>To all you out there who can just “forget” to eat lunch, I can’t sympathize. To forget to eat lunch would be like forgetting about that big pile of miscellaneous garage sale stuff sitting in our living room. AS IF.</p>

<p>One of the most glamorous things about a teacher’s job is eating in a teacher’s lounge. Imagine a rainbow of educational goodies on every wall, the sweet music of lunchroom chaos every time the door opens, and the overabundance of smallish plastic sporks, which, by the way, are really good at making you look like you don’t know how to eat. </p>
<p>This is why lunch – the actual lunch &#8211; better be seriously good.</p>
<p>When I saw Sara&#8217;s <a href="http://www.wherethecookiesare.com/2012/04/12/spinach-and-edamame-salad/">yummy salad</a> a few weeks ago, I knew it was the ultimate epitome of lunch. So I made it, and made it again, and made it yet again using a tiny bit more grains for my big lunch appetite.  I love it. Love love love.</p>
<p>It’s portable, it’s healthy, it’s pretty, and it’s loaded with texture and flavor. The bulgur and edamame anchor the whole deal; the grapes, walnuts, caramelized onions, honey, and blue cheese are the crowning glory that makes it all come together. The fresh handful of spinach at the end keeps things feeling fresh and green. I like to feel fresh and green.</p>
<p>Don’t eat almonds and Diet Coke for lunch.</p>
<p>A sweet, nutty, powerhouse salad is calling.</p>

<li class="ingredient">1 cup uncooked bulgur or other grain</li>
<li class="ingredient">3/4 cup walnuts</li>
<li class="ingredient">1/4 cup honey</li>
<li class="ingredient">1/4 cup water</li>
<li class="ingredient">fresh baby spinach</li>
<li class="ingredient">crumbled blue cheese</li>
<li class="ingredient">salt to taste</li>

<li class="instruction">Melt the butter in a medium saucepan over low heat. Add onions and saute on low for about 30 minutes, stirring occasionally, until onions are soft, golden brown, and almost sweet tasting.</li>
<li class="instruction">While onions are still cooking, pour bulgur and 2 cups water into a saucepan; bring to a boil and cook for 15 minutes, until most of the moisture has absorbed and the grains are soft enough to eat. Let cool for 15 minutes.</li>
<li class="instruction">When onions are done, stir into the bulgur so the butter is absorbed by the grains. Season with salt.</li>
<li class="instruction">Combine grapes and edamame in a large mixing bowl. Add cooled bulgur and walnuts. Whisk water and honey; pour over mixture and stir well. Add fresh baby spinach and crumbled blue cheese just before serving.</li>

<p>Like that one time when I was going to make bread in my bread maker but found it to be “missing”. Never mind the fact that I was retrieving it out of the closet, where it lived for most, ok, ALL, of its life. Or that it had a setting to program the time so I could make bread in the middle of the night, which made it the coolest bread maker in the world. Or that I wanted to keep it forever.</p>
<p>It’s probably in somebody else’s kitchen baking cinnamon swirl bread and making their life perfect. I think I hear a Brad Paisley song…</p>

<p>I’m consoling myself over the loss of my sentimental treasures by making these Cinnamon Roll Pancakes. Because I want my kitchen to sing Brad Paisley songs, even if I don’t have a bread maker anymore.  And the healthy part? Let’s just say I’ve been experimenting with cookie dough stuffed cupcakes and I could use a little health in my life, especially when it comes in the form of gooey, sweet, cinnamony pancakes.</p>
<p>As much as I wanted to bake the cinnamon filling right into them, it just wasn’t happening. I fried, I griddled, I baked, I parchment papered… it just wasn’t meant to be. So I topped the pancakes with the filling instead. And oh my yummers, they were so tasty! The end result: wheat bran pancakes topped with the spicy cinnamon filling and drizzled with sweet glaze. And no guilt! Hallelujah.</p>

<li class="instruction">Mix the first 7 ingredients (flour through egg whites) until well-combined. Pour 1/4 cup batter on a medium-heat griddle and cook until bubbly; flip and cook again until light golden brown and cooked through.</li>
<li class="instruction">Stir together pumpkin, brown sugar, and cinnamon. Add ground walnuts or bran if the filling needs to be thicker. Place a in baggie, snip the corner, and spiral filling on the tops of the pancakes.</li>
<li class="instruction">Whisk Greek yogurt and honey until smooth. Place in a baggie, snip the corner, and drizzle over pancakes in a zigzag pattern. Top with additional walnuts.</li>

<p>Truthfully, making salmon usually stresses me out.  It always gets too burnt on the outside but not cooked on the inside.  Maybe I should turn the heat down, or maybe I should start buying skinnier salmon filets, or maybe I should make it more than twice a year, or maybe I should stop playing Draw Something on my phone and start watching the skillet.  </p>
<p>Speaking of normal things that shouldn&#8217;t be stressful, how about that Monday-morning-pre-work-meeting-mocha? Drive through lines are sweat-inducing and bad for the heart when you&#8217;re running late and the whole city of St. Paul would also like a drive-through mocha.</p>
<p>But the salmon. </p>
<p>The beauty of this salmon (other than the deliciously spiced flavor and lightly crispy texture) is that there is no need to be stressed out.  You&#8217;re going to end up pulling the skin off at the end and stir it all up, which makes the cooking process (for a twit like me) wayyy less intimidating.  Once you&#8217;ve got your salmon all prettied up, you&#8217;re going to plop it on a bed of rice and beans and top it with fresh mango and avocado salsa. Why? Because it&#8217;s life changingly yummy, and you deserve it. And because Cadbury eggs for dessert are good.</p>

<li class="ingredient">1 lb. wild caught salmon filet with skin (in one or several pieces)</li>
<li class="ingredient">1 teaspoon oil</li>
<li class="ingredient">1 1/2 teaspoon cumin</li>
<li class="ingredient">1/2 teaspoon curry</li>
<li class="ingredient">1/2 teaspoon chili powder</li>
<li class="ingredient">1/2 teaspoon allspice</li>
<li class="ingredient">1/4 teaspoon cayenne pepper</li>
<li class="ingredient">1/4 teaspoon cinnamon</li>
<li class="ingredient">pinch of sea salt</li>
<li class="ingredient">2 cups cooked white rice</li>
<li class="ingredient">1 12 ounce can black beans, rinsed and drained</li>
<li class="ingredient">2 mangoes, peeled and diced</li>
<li class="ingredient">1/2 large red onion, diced</li>
<li class="ingredient">1 bunch fresh cilantro, chopped</li>
<li class="ingredient">1 squeeze lime juice</li>
<li class="ingredient">1 avocado (optional)</li>

<li class="instruction">Stir the spices together. Rub over salmon filets (on the meat and also the skin if you want). Sprinkle with sea salt.</li>
<li class="instruction">Heat the oil in a skillet over medium high heat. Add salmon, starting skin side down, and cook for 3-5 minutes. Add more oil as necessary to prevent from sticking. Flip the salmon and cook another 3-5 minutes on the meat side. The salmon will start to get a brown crust on the outside from the spices.</li>
<li class="instruction">When salmon is mostly cooked, pull off the skin, leaving just the pieces of meat in the skillet. Break up into smallish pieces and leave on heat until completely cooked through (not translucent). Once the pieces are cooked, remove from heat &#8211; salmon dries out quickly if you overcook it.</li>
<li class="instruction">Combine mangoes, red onion, cilantro, lime juice, and avocado in a small bowl and stir until combined. Season with sea salt.</li>
<li class="instruction">Stir together rice and beans and season with several pinches of salt, adding a tablespoon water if necessary.</li>
<li class="instruction">Divide between bowls, layering the rice and beans, salmon, and salsa into each bowl.</li>

<p>The reason I take the skin off is because I never have good luck cooking whole salmon filets and it allows me to make sure all of the fish is cooked through. Also, it makes for great texture in the bowl!</p>
