Mother's Day is one of my absolute favorite Holidays. I feel so blessed that God chose me to raise my sweet children and they are my world. The bond between a Mother and child is like no other and I cherish them so much. They are incredible kids who are a joy to be around, my cup runneth over! I can't believe how quickly they grow up... seems like one day you are changing diapers and the next they are preparing for college! I am so thankful for the amazing Mother in my life and for always being there for me. She has been such an inspiration and incredible role model for me. So, I got a phone call a few weeks ago telling me that my doctor wanted to see me after she got
my bloodwork back. Apparently, at 35 years old, I have high cholesterol. I decided then and there that I was going to start eating healthier, so I got online and did some research. I found a recipe for homemade granola that I wanted to try, so I went to my local grocery store and got the ingredients and loaded up on a bunch of produce as well. The next day, I made the granola and it was so good! So, I thought I would share the recipe with y’all. I actually found it on the internet and I can’t remember what website I got it from, but it is super easy and yummy!

So many of us live busy lives, so busy that we don't often take the time to consider the foods we eat as a mid-morning or mid-day pickup. A candy bar or bag of chips, maybe some fries from the local drive-through. We need something small, something to keep us going until the next meal but then wonder why we feel tired a just few hours later.

It's probably your choice of snack, or the absence of a snack at all. Yes, believe it or not, no snack at all can be just as bad as an unhealthy choice.

When we eat smaller, healthier meals every three or four hours, it helps to keep our blood glucose levels stable. So those snacks, as long as they are healthy snacks, are important to our bodies. They help to keep us going. They help keep us alert. They carry us into the evening and help to prevent late night snacking during the time of day our metabolism begins to slow, leaving us not processing the foods as effectively.

With a little planning, a quick and healthy snack can be ready to grab and go. 100 calorie snack portions can be prepared in advance and made ready to tuck into your purse, briefcase, backpack or diaper bag. So when that mid-morning or mid-day hunger strikes, you have a healthy, 100 calorie snack at your finger tips, ready to go.

Another benefit of preparing your own snacks in advance is you won't be as tempted to run out for a fast food treat or nosh on something from the convenience store. Healthy snack options are often times rather frugal, making them not only kind to your health, but kind to your wallet.

Healthy 100 Calorie Snacks

1 banana
3 cups of air popped popcorn *sprinkle it with a tablespoon of nutritional yeast to add B vitamins and lend a cheesy flavor
1/2 cup of plain Greek yoghurt with a dash of cinnamon and a teaspoon of local honey
1/2 cup of baby carrots and 2 tablespoons of hummus
1 cup of grapes *try them frozen
1/2 cup shelled edamame
homemade trail mix - 1 tablespoon of peanuts and 2 tablespoons of dried cranberries
1 cup of unsweetened applesauce, sprinkled with cinnamon
1 string cheese and 2 whole grain crackers
10 tortilla chips and a 1/4 cup of salsa
1/2 cantaloupe
1/2 cup of pistachios, about 25
dark chocolate, 1 block or 3 squares
1 cup of berries topped with 2 tablespoons of plain Greek yoghurt and drizzled with local honey
1/2 cup of kale chips
1 stalk of celery and 1 tablespoon of natural peanut or almond butter
18 mini-pretzels or 40 pretzel sticks
1 hardboiled egg and a Melba toast
40 Goldfish crackers
14 almonds or 8 cacao dusted almonds *this, by far, is my favorite healthy snack - the beneficial lipids in almonds help to decrease blood glucose levels.

When you live out of the way, going to a grocery store daily or even weekly, may be out of the question. My sister would faint if she didn’t have a Wal-Mart within 1 mile of her home. I'm starting to get excited for Valentine's Day! Are you? I love my holidays and I feel that they are worth going all out for, without breaking the bank of course! I recently found a STEAL of a DEAL at my local CVS (I found Revlon Nail Polish marked at a 75% off Clearance!! And, I had several $0.50 coupons for any Revlon nail products, making each bottle about $0.75!) and now have a variety of nail polish colors! There are many variety of reds and pinks, even white too, in my new stash of Nail Polish shades. When it comes to Valentine's Day, I try to "doll" myself up a bit for my hubby. And, wanted to decorate my fingertips for the up and coming holiday... Pinterest, here I come! There is a PIN for everything isn't there? There has to be a pin for nail decor, right?

So, you want to make a heart-shaped cake for your sweetie but don't have a heart-shaped pan? What do you do? Well, I found a PIN for that! As long as you have a square and a circle pan (of equal size, i.e. both 8") you can make your heart-shaped cake! It is a very simple baking project, even easier than what I thought it would be. If I can make a heart shaped cake by improvising, so can you! Let's check out that PIN...

As you can see I baked both a circle and a square cake, about 8" in diameter. If you have smaller or larger pans, that is okay! Just be sure that the square and circle pans that you chose have the same diameter. We do not want a lop-sided heart now do we? :)

Now, for the hardest part! Cut the circle piece in two... right down the middle:

You will need to transfer both your intact square cake and the two circle halves onto a larger plate. I utilized a Christmas Cookie platter (just because of it's size) to construct my heart cake. Place the square cake down first, and then place on the circle halves. See below for a visual aid:

Lastly, just ice your heart cake in any fashion you would like. I chose a fluffy vanilla icing and a Valentine's sprinkle mix from Wilton's. The possibilities are endless. They say a way to a man's heart is through his stomach! As long as you start with a yummy cake, I'm sure he will not mind how it's decorated. So, don't stress if you are not a professional cake decorator. As you can see, I'm not!
