Expressing gratitude opens the heart and, practiced regularly can change the way that brain neurons fire into a more positive patterns. Giving gratitude is an emotion of connected-ness. It reminds us that we are all connected to something greater than ourselves. Gratitude is being thankful, counting your blessings, taking note of simple pleasures. It means living your life as if every thing that comes your way is a blessing. Seeing the details that make up the bigger picture.

I’m a lucky lady…. a wonderful husband, three kiddos, a job I love, friends, adventures…. I try and keep a daily gratitude list, to remind me of all the little things that make my life so special.

If the only prayer you say in your life is ‘thank you,’ that would suffice.

Begin your own gratitude journal. You can use the printable that I have shared here, or just a scrap of paper, or write it in your journal. Whatever feels right. As you begin to take note of all that you have to be thankful for, spread a little thanks around. Bake some cookies for a neighbour, write a thank you note, take part in acts of pay-it-forward, tell your children you love them a hundred times a day.

The kiddos and I spent the day in the woods. A twenty minute walk from home and we’re surrounded by nature. The smell of wild garlic and the sound of birdsong. We saw some baby lambs, and a mama sitting on her nest of eggs. We played in the Wolf’s Den at Erddig for a couple of hours – this natural play area is a fantastic place to visit, being mid-week we had the place to ourselves! We’re lucky to live so close to somewhere so beautiful – being in the middle of the woods, away from all the world is my favourite place to be.

These are actually from the weekend before this one…. but they were so good, and judging from all the comments I got on Instagram and Facebook you all thought so too! They were quick and easy to make, make an impressive looking dessert and tasted amazing! I think these will be getting made more often!

You’ll Need:

digestive biscuit dough {recipe here}
Caramel Sauce {I used this one}
Banana
Whipped Cream

Push a little of the biscuit dough into the bottom of your mini tins – you could also make one large one, or even super mini ones in a muffin tray. Bake at 180C, 350F for about 8 minutes. Leave to cool completely. Spoon a little of the caramel sauce over the base, then add a few slices of banana and a squirt of cream. That’s it!

There have been a few personal changes and shifts in the past couple of months. I had my eyes opened wide, and a few truths came to light. I realised, that in real life, I would never tolerate negative, mean people – so why should I online?? My priorities have and always will be my family. I have three daughters, who are with me 24/7, a house to run, animals, home-schooling, a veggie plot to nurture PLUS a business… I’ve made some changes, mainly in regards to my online life. I cut out several groups I was in, I was sick of all the drama – seriously, it was like school all over! I thought we were all grown ups!! The past couple months I’ve been spending way less time online… apart from sharing blog posts, Instagram is the only social media site I use regularly these days. I’m so much more at peace now, so much happier focused in my world.

For a while, my creativity was stifled, tangled up in other things. Now I have cleared the clutter away, it is back! I have a couple of craft fairs coming up, and plans to give my shop a breath of fresh air. SO. Until May 21st everything in my shop is 40% off. Me and glasses don’t have a good history. I’m pretty short-sighted, and have been for a very long time. I’ve had many pairs of glasses, but have never really worn them. I always felt a little weird in them, and over the years I’ve gotten so used to everything looking a little blurry! But, too often I walk past someone as I didn’t see them, or wave to realise they weren’t waving at me! So when Firmoo contacted me to see if I’d like to try out their glasses, I knew it was time to give glasses wearing another shot.

After I picked out a pair of glasses and a pair of prescription sunglasses that I liked, I placed my order and waited for them to arrive. Ten years old! I can remember turning ten and being excited to be into double figures. I can’t believe my baby is ten already – the years fly by far too fast. Such a sweet, loving girlie…. I wish I could press pause and keep everyone just the way they are.

I am excited to see the girl she’s growing up into and am so blessed to be her mama.

Weekends in our house are about relaxing, gardening, family time, but mostly cake… I’ve posted a recipe for carrot cake before, but I got handed this one by a friend, tried it out and was smitten! It makes the most moist, delicious carrot cake ever. It’s a keeper!

You’ll Need:

1 cup flour
2 cups carrots, grated
1 cup sugar
3/4 cup vegetable oil
2 large eggs
1 tsp baking powder
1 tsp bicarb of soda
1/2 tsp salt
1 tsp cinnamon

Butter and dust with flour a 7 inch cake pan, and preheat your oven to 180C, 350F.

Sift flour, baking powder, bicarb, cinnamon and salt together into a bowl. In a seperate bowl, mix the eggs and sugar until fluffy and light, slowly beat in the oil until well combined. Then gradually add in the dry ingredients and mix for about 2 minutes. Fold in the carrots and pour into your cake pan. Bake for around 40-45 mintues. Allow to cool completly before frosting.

We made cream cheese frosting – 1 cup of cream cheese, 1/4 cup butter and 1/2 icing sugar beaten together. Sprinkle a little cinnamon over the top and tuck in!
